SHAGWONG TAVERN by Sue Giustino
With one season in, the continued improvements to the nostalgic Shagwong Tavern and Restaurant on Main St. in the heart of Montauk are not just obvious to the eye, so get those taste buds ready. Darren Boyle, a graduate of Johnson and Wales University, is back in Montauk and the Shagwong is the lucky recipient of his talented culinary skills. Previously, among others, his experience includes the Harvest, Old Harbor House, Second House, the Ritz Carlton and most recently Salt in Sag Harbor. Surrounded by the historic photo’s that have been preserved through the changes, the Shagwong’s new menu and taste is worth checking out. Although Chef Darren had only been in the kitchen for a week when we had our visit, everything was outstanding. We told him to send out whatever he wanted to highlight, so after our friendly waiter Travis freshened our wines the parade of food began. Mussels in a white wine and butter broth, with shallots, garlic, and topped with parsley were a perfect size and balance of flavors. They were tender and fresh with just the right amount of garlic, not overpowering the flavor of the mussels. Next, were local Sea Scallops prepared to perfection with crispy peppered lardons, fig balsamic, and Brussel sprout petals all atop a creamy sweet corn puree. This was accompanied by their Baby Beet and Watercress Salad tossed with bacon, lemon, toasted walnuts and mountain blue cheese. So delicious and fresh, our meal couldn’t get better. Yet it did! A special of the evening, elegantly golden seared Blackfish perched on a tower of wilted spinach, salsa verde, and polenta encased in a thin crispy coating for the base… words can’t really explain how these flavors blended resulting in one of the best fish dishes I’ve ever eaten. When I asked Chef Darren about the fish, he said there was just seasoning and it was properly seared to form the golden outer crust of tender flaky fish. Just to round out the surf, our turf was the fork tender
Braised Short Ribs with a flavor-filled dark brown gravy served with creamy mashed potatoes and thick sliced gently crusted onion rings. Obvious to us after this elegant and delicious meal, through the years with an abundance of diverse experiences, Darren’s craft has been perfected. Dessert is always good, but after the meal we enjoyed we should have said no. However, how better to let you know what to try if we don’t go there? So out came the homemade Rumchata Bread Pudding and the Double Dutch Chocolate Torte. These two were worth every calorie- the torte was so rich and chocolaty and served with crème fraiche, dense creamy Grenache, and beautiful blackberries. While the Bread Pudding was, light, warm, accented with
harvest spices, and had a toasted almond crispy top with a scoop of creamy ice cream. After these two decadent treats, I can’t wait to try the trio of Crème Brule, the pumpkin Beignet, or the other special desserts to come. For an evening of fine food in a relaxed and friendly atmosphere – Shagwong Tavern is not just pub food! Dear EarthTalk: I’m finally ready to make the switch from my old gas guzzler to an electric or plug-in hybrid car. What are the best bang-for-my-buck deals on these newfangled vehicles? ~ Mickey LaMonte, Boston, MA With each new model year, automakers continue to expand their offerings of affordable and fun plug-in hybrid and all-electric vehicles. While consumers obviously want these new cars, this year’s phase-in of President Obama’s higher automotive fuel efficiency standards have given automakers another reason to step up the manufacturing of less consumptive vehicles that compete in price with their gas and diesel counterparts. Also, new car buyers can cash in on up to $7,500 in federal tax incentives (and possibly more from their own state—check out the Database of State Incentives for Renewable Energy to find out) to help defray the costs of getting into an EV or plug-in hybrid. What this means is that giving up gas has never been so easy—or cheap. A case in point is Ford’s redesigned C-Max Energi, a plug-in hybrid that gives drivers a range of up to 500 miles as well as 19 miles of all-electric driving for under $28,000 factoring in the federal tax rebate. Not to be outdone, General Motors’ Chevrolet brand is coming on strong with several of its own affordable EVs and plug-in hybrids. The Spark Electric gets more than 80 miles per charge and can be had for less than $19,000. Chevy fans looking for a beefier engine and torquier ride can opt for the Volt plug-in hybrid, which runs for 380 miles using its gas engine as a generator or 38 miles on electric battery power alone—all for less than $27,000. Meanwhile, German automakers continue to innovate on the electric vehicle front. BMW’s all-electric I3 EV zooms from zero to 60 in seven quiet seconds and, despite its punky look, drives just like a...Beemer. The all-electric base version of the I3 can be had

for around $35,000 and gets drivers 81 miles per charge, but owners can opt to add a small back-up gas engine (for another $4,000) turning the car into a plug-in hybrid with a 150-mile range. While Volkswagen may be in the dog house with environmentalists given its diesel emissions cheating scandal, the company is making some amends with the new allelectric version of its zippy sport-tuned hatchback, the e-Golf. Factoring in the federal EV tax credit, customers can drive off in a new e-Golf for less than $23,000—a great deal on a cutting edge fuel efficient vehicle if there ever was one. If even that seems like too much money, consider an even smaller electric car. Smart’s FourTwo Coupe is a two-seater, around-town EV that will set you back just $13,000 following the federal tax rebate. Another logical choice is Mitsubishi’s similarly compact I-MiEV for under $16,000. While all these choices are well and good if you need a car ASAP, those willing to wait until next year might want to hold out for Tesla’s forthcoming Model 3, a sporty all-electric sedan with a 215 mile range. The car will retail for $35,000, meaning that consumers should be able to get it for $27,500 after the federal tax rebate). Dear EarthTalk: How has wildlife been affected around the site of the Chernobyl nuclear meltdown in Russia three decades ago? ~ Walter Scinto, Hartford, CT The Chernobyl disaster confirmed everyone’s worst nightmares about the awesome power of nuclear reactions. When the Ukrainian reactor collapsed, the radioactive fallout profoundly contaminated the surrounding environment, affecting any living beings located within the so-called “Exclusion Zone” of 30 kilometers around the reactor’s shell. Acute radiation poisoning annihilated a large pine stand, since renamed “the Red Forest,” while many animals suffered significant physical or mental abnormalities. Invertebrates in the area suffered particularly dramatic population crashes, as most radioactive material resides in the topsoil layer where such insects survive and reproduce. Even apparently healthy wildlife was forbidden from resale because of the dangerous levels of radioactivity. The dangers of radiation led to a government-mandated eviction of the radioactive territory soon after the 1986 explosion. However, 30 years of isolation from humans has proven to be the most beneficial consequence of the disaster. After the initial devastation of the radioactive fallout, species began to adapt to the higher levels of radiation. Indeed, species diversity and populations are actually healthier now than in most other forests in Eastern Europe. This recognition from the Ukrainian government led to the Exclusion Zone’s establishment as one of the largest wildlife sanctuaries in Europe in 2007. Some rare and endangered species, including lynx and the European bison, have returned to the area and can be found in higher densities than in radiation-free forests. Even the Przewalski’s Horse, extinct in the area and artificially reintroduced to the Exclusion Zone in the 1990s, has flourished; the population has reached stability and is even starting to spread out beyond the protective fencing of the Zone. The question remains of how these animals are able to sustain such high levels of radiation without succumbing to its deadly effects. Recent studies of the Chernobyl region by wildlife biologists Anders Pape Møller and Timothy Mousseau have identified serious consequences of radiation, even within thriving populations. Mutations among affected Exclusion Zone species include higher rates of cataracts, partial albinism, and physical variation. However, it appears the deadly mutations took their toll on populations immediately. Subsequent surviving generations have shown amazing adaptability. Møller and Mousseau conclude that while radiation is inarguably bad for the environment, its impact on wildlife is far overshadowed by the effects of typical human development. While no one would have wished for the Chernobyl meltdown, environmentalists point out the silver lining of being able to monitor wildlife population in the absence of human populations and activities. Chernobyl is a primary example of ecosystem resilience as capable of overcoming radioactive devastation — and can teach us all a lesson about the importance of setting aside at least some wild areas just for wildlife. Furthermore, the experiences at Chernobyl and in the intervening years illustrate the benefits of preservation over conservation. While conservationists encourage sustainable use of natural resources as optimal for wildlife health, Chernobyl shows the incredible benefits to wildlife of just leaving vast swaths of land alone and letting the animals just get on with their lives.
