These included presentations about WE Scare Hunger and WE Walk for Water, two action campaigns that help to combat food insecurity and ensure access to clean water for developing communities. he West Island Cancer Wellness Centre (WICWC) is excited to announce that a generous benefactor, Mr. Tony Bartolini, has offered the Centre a house to be used for wellness retreats. As a result, the West Island Cancer Wellness Retreat Centre will soon be launched in a beautiful location 45 minutes north of Montreal. The retreat centre makes it possible for the WICWC to meet another important need of people living with cancer. “We are so incredibly grateful to Mr. Bartolini for the opportunity to hold cancer wellness retreats for our participants. His gesture allows cancer patients the opportunity to get away. In most cases travel is no longer possible because of a change in finances, restrictions due to treatments or lack of insurance,” said Debbie Magwood, Executive Director of West Island Cancer Wellness Centre. A cancer diagnosis affects much more than the part of the body with cancer. Along with the physical consequences, it has an impact on a person’s spiritual, emotional, social and financial well being. est trend in the industry – microblading. Elina started initially started on her own four years ago and was one of the first people performing this technique. Nowadays, every Instagram model and celebrity has done microblading one way or

another. Her studio does not only focus on microblading, but it is also renowned for her permanent makeup. The studio is filled with high trained professionals who specialize in permanent makeup which includes lips, eyebrows and lash lines. What is permanent makeup? According to Elina Ross permanent makeup the way we may have known it has largely changed over the years. “The blue brows that had a bad rep were using tattoos pigments and were going too deep into the skin,” she says. “We weren’t thinking about undertones. Microblading reached the market and boomed the permanent makeup industry.” Permanent makeup is a form of tattooing without having to go as deep in the skin. It’s a superficial tattoo that creates a makeup that will create a long term

natural effect. If clients want the makeup to last longer it may take a few more appointments, however, this isn’t necessary for longevity, the client’s skin type is and is the chosen factor for lifespan results. Today, people are asking the right questions in regards to the procedure. They’re more aware and are doing more of their research explains Ross. The result of the treatment is not absolutely permanent, but yet semi-permanent. “When we say semipermanent, it doesn’t go away completely, but requires a maintenance. Our host for the evening, coowner Tom McQueen, explained to us that he and his partners Manny and Dalton Barnoff ship their products as far as Western Canada, to long-term faithful customers in Calgary and even the Yukon! My dining partner Wes and I decided that we wanted to try as many of the items on the menu as possible and our friendly waiter Nelson gladly brought us many dishes. We started with a Caesar salad ($7, or $10 with added chicken). It was quite good, served with plenty of bacon bits, big crunchy croutons and good homemade dressing. Quebec or Vermont Maple Syrup?

S

ometime during mid-February and early March, while the nights are still cold and the days grow warmer, a clear liquid, which looks like water begins flowing from 'tapped' maple trees in eastern North America. The 'sap' from the trees, with just a hint of sweetness, flows into buckets or through extensive plastic tubing and then transported to what is called a sugar house. There it is carefully boiled down until all the water evaporates and it becomes the thicker, rich amber or golden delight we all love and know as Maple Syrup. It takes at least 40 gallons of sap to make just 1 gallon of syrup - explaining why many call it 'liquid gold'. Soon the festivals and 'sugaring off' parties will begin at the Cabanes à Sucre or 'Sugar Shacks'. Different qualities of maple syrup will be liberally poured over waffles, pancakes and fresh fruit, used in baked bean recipes or as glazes for meat or poultry, or even a little shot in an alcoholic drink. But the best delight is still found when it is poured over fresh snow, rolled up with a stick and enjoyed like a popsicle. But where is the best maple syrup produced? The two top producers of syrup in the world are Quebec and Vermont, who could both claim being the best. So who gets the gold for their 'liquid gold'? The Green Mountain State or La Belle Province? Quebec is the world’s largest producer of maple syrup, with over 90% of the syrup made in Canada tapped in the province. Last year Quebec produced a record 13.5 million gallons. Vermont, our neighbors just across the border, is second. Last year they produced a record 1.9 million gallons - and it

might not seem like much in comparison, but their production has been growing steadily over the years. Quebec’s global share fell from a high of around 80% in 2003 to just over 70% last year - whereas in Vermont, production has more than doubled over the past decade. Is it because it tastes better than Quebec's - or is it simply the economics of a growing industry, regulations and more trees being tapped? Not all maple syrup is the same. There are many factors that can affect the taste of syrup; like the weather, the soil the trees grow in and their overall health. The sugar maple is the preferred tree that is tapped, but there is also the red maple, black maple, ash leafed maple and silver maple - but the sugar content of those is only about 1%, compared to the sugar maple at 2% which is far more desired. Then there is the experience, care and artistry of the people making it. It's something like producing a fine wine, and not all are appreciated in the same way. Much depends

on the taste buds of the consumer - and poorly produced maple syrup can sometimes taste bitter, metallic or musty. There is also the grading system, with syrups labeled as 'Grade A Fancy', 'Grade A Light

Amber' and 'Grade B Medium' or 'Dark Amber'. Sounds confusing? Not really, it just depends on how strong a maple flavor you prefer and how you want to use it. Many people prefer a darker syrup for baking because of the stronger taste of maple that stands out, and a lighter syrup for dribbling on things like french toast, ice cream and even as a sweetener for coffee. And when not over-

used, maple syrup also has many health benefits. It has better nutritional value than honey, white sugar and even brown sugar. It is an excellent source of manganese, riboflavin and zinc. Minerals found in maple syrup like magnesium, calcium and potassium have been shown to decrease the risk of hypertension or stroke - and the calories in maple syrup are lower than in corn syrup and honey. If you haven't already had the opportunity to compare both syrups to each other, next time you plan a visit to Vermont (or even parts of Maine and New Hampshire) why not take a moment to stop at a roadside stand or market and pick up a bottle or can of the same grade of your Quebec brand then decide for yourself which is better? Personally, I like my maple syrup the Quebec way, especially when it is

in season and fresh dribbled on anything from scrambled eggs to pasta, in salad dressings (it works great with garlic) and even a drop or two in my oatmeal. I've tasted Vermont syrup many times and it is good, but perhaps it’s the Canadian in me (after all our flag features a maple leaf) but Quebec syrup wins hands down. It is all you will find on the shelves in our kitchen or in the refrigerator where it can stay fresh for over three months, but never lasts long enough for us to find out if it does. (I must also confess to licking the spoon clean and even the plate once the crêpes are finished.) Have you tried both syrups? Did you find one tastes better than the other? very year the Quebec Midget Football League (QMFL) holds its award ceremony to honour its best players, this year was clearly the year of the Hornet. On February 2nd at the Sheraton Hotel, Sun Youth won 14 different player awards in addition to being named Coaching Staff of the Year. The awards included both MVP offence and defense, multiple all-stars across every position group and an academic bursary of $500 for achievement in the classroom. In 2018 the Hornets midget team went undefeated; winning both the Provincial and Interprovincial Championships. Honoured Hornets players were: Damien Chiu, Deion Thompson, Eloa Latendresse-Regimbald, Mathieu Texeira, Marc-Antoine Deslauriers, Abdela Tramore (2 awards),

Zachary Caesar, Riane Chelghoufi (2 awards), Liam Masley, Mendel Joseph, William Montpetit (2 awards) and Wassim Abouzeid. See the Sun Youth website for all details on the awards received by the Hornets The league also held a tribute to our late cofounder and coach Earl De La Perralle who was a pillar of the Quebec football community and a founding member of Football Quebec. The president of the league and close friend Renzo Fraraccio opened up his speech with a few kind words about Earl. “On June 19th, 2018, we lost an iconic figure in Montreal. Earl De La Perralle made his life’s work to ensure everyone had a place to play the sport they loved. And I know first-hand that Earl truly loved football, it really was his favourite sport. Countless young men

found their way to universities throughout the United States and Canada with Earl’s help. Although he founded Sun Youth he never looked at the colour of a uniform; if you had the talent and the heart to go play and study at a higher level, he helped you. One thing was for sure: you knew you were not going to get there and embarrass coach Earl. Unfortunately in our ego driven society, there is a stigma about wearing masks in public. Seeing someone wearing one on the streets or at work, often makes one pause and perhaps move as far away as possible from them wondering whether they are dealing with a potentially fatal, contagious disease. The routine doesn't always fit into the reality of being a city dweller, but there's no interdiction that says you have to be wearing ski boots to pop open the same bottle you'd enjoy on Tremblant or Sutton.

Smoking Wings on the BBQ

am not a big fan of Buffalo wings. I like spicy food but any Buffalo wings I have tasted are just too overpowering with red hot sauce. The rest of my family won’t touch anything with a bone in it. It is just too unladylike! My buddy, Don Urquhart, brought over some wings for me to try. His Buffalo wings were the talk of his kingdom. He was always being asked to bring them wherever he went. His wings are very good but not being a big fan I thought I might try something a little different using some of my own expertise on the BBQ. Smoking wings on the BBQ involves indirect heat, wood chunks and chips, a dry rub for the chicken and a glaze to finish. Of course, with any smoking project, the most important ingredient is time. You can not rush a

good smoking! I used Mesquite wood chunks and maple wood chips for this smoking. I wrapped them up in a double layer of tinfoil and poked air holes all around for the smoke to escape. I set the BBQ up for indirect heating, meaning the foil pack of wood would be set over the hot burner and the wings would be smoked on the other side of the BBQ over a cold burner. The maximum temperature for the smoking was 250ºF. I washed the wings and dried them with a paper towel. I used a spice rub consisting of black pepper, onion powder, garlic powder, chili powder and seasoned salt. All ingredients were of the same measure except the pepper which was twice the amount. The wings were liberally sprinkled with the rub and tossed in a bowl to coat.

Once the BBQ came to 250ºF and the smoke was evident, I laid the wings out over the grill and closed the lid to wait. I smoked the first side for 30 minutes. I opened the BBQ and flipped the wings and smoked the other side for another 30 minutes. Meanwhile I made the glaze, which took about 5 minutes. It was 1 cup honey, 3/4 cup BBQ sauce and a splash of Jack Daniels (you could use apple juice) and stirred it up. Simple and easy. Once the second side was smoked, I turned on the second burner under the wings. When the temperature reached 350ºF, I flipped the wings and brushed the glaze over the wings. With the lid open, I finished cooking the wings, glazing as necessary until they were nicely caramelized. About another 20 minutes. I asked Don to try them and he said they were ok.
