Greetings! My name is Chef Kimba Kabaka. I am the Owner-Chef of Café Roots-N-Kulchah, 2018 Taste of St. Croix winner and 2018 Bush Cook Chef Cook winner.
Culturally I gravitated to the vegan diet and lifestyle through my ties with the Rastafarian spirituality and beliefs that one must preserve their temple for longevity. When you eat right, you think right. I learned to cook from a child but did not come into my plant-based lifestyle until I was 19 years of age respectively with no compromise. I am now 51 years of age and I feel great!
I later attended Living Light Culinary Institute in the early 2000’s becoming a certified raw food/vegan chef in 2003. As an aspiring Chef, I created my brand Root-N-Kulchah in 2004 but launched it in 2005.
My brand represents my culture, my lifestyle, vegan Caribbean Cuisines, wood turning and various other products or art forms that I make myself or have skill in. If you ask me what makes Café Roots-N-Kulchah different than its competition, I will say that I have a background in the culinary arts which gives me the edge in terms of knowing the science and nutritional facts about food preparation.
Roots-N-Kulchah offers fresh flavorful plant-based cuisines that is full of life, color, and vibrancy whether it is raw food, gluten free, cooked foods, or specialty diet foods. I am also the only plant based fine dining restaurant located in St. Croix that offers dinner service, live fine dining music and other services such as vegan organic wines and beer. Eat right.
