Cultural Adventures Maui’s rich history and culture are often brought back to life when visitors and kama‘aina (locals) alike stop and take the time to notice and appreciate its roots. One of the best ways to get to know a place is through its sites, sounds and flavors. And what better place to do so than on Maui? Get a taste for the plantation days (pages 12-13) as our story
THE HISTORY OF HAWAI‘I’S
native language dates back thousands of years. It began as a form of storytelling known as mo’olelo, which was a way for Native Hawaiians to express themselves and impart their teachings to the next generation. When the missionaries arrived in Lāhainā in 1823, a written form of communication was introduced as a way for outsiders to understand the Hawaiian phonetic system. A place to teach and create literacy in both Hawaiian and English phonetics was established in 1831 and called the Lahainaluna Seminary School. By 1834,
Hale Pa‘i: The Printing House textbooks and teachers’ aides were implemented and thrived at Lahainaluna Seminary. The school is also where the island’s first newspaper—“Ka Lama Hawai’i”—was published on February 14, 1834. Finally in 1837, construction began on a building that would become a permanent home for the school’s press. This home is known to this day as the Hale Pa’i or simply, The Printing House. Unfortunately, in the late 1960s, the building’s lack of upkeep resulted in deteroration of the space. But thanks to the Lāhainā Restoration Foundation, Hale Pa’i was

awarded the first grant in the state of Hawai’i’s history for the restoration of a state-owned building. The project was completed in 1983 and now serves as a printing museum and archive center where Hawai’i’s first paper currency and published manuscripts are on display. A Native Hawaiian scholar and one of Lahainaluna Seminary’s first students,
David Malo has his first edition “Mo’olelo Hawai’i” here, the island’s first written piece about Native Hawaiian history and culture. t turns out that Hawai‘i diners get a dollop of local history with their two scoops of rice and mac salad. Dating back to the 1880s, the ubiquitous “plate lunch” is said to have its roots among plantation laborers who hailed from Japan, China, Korea, the Philippines, Portugal and other areas.
“Workers needed hearty lunches, and would pile leftover rice and meats into these metal kau kau tins [traditional old Hawaiian lunch boxes],” explains Hawai‘ibased author Kaui Philpotts, who grew up on a plantation above the Pā‘ia Sugar Mill on Maui in the 1940s and ’50s. “A sandwich wasn’t quite going to cut it.” When the plantation era ended, these carb-loaded lunches remained, thanks in part to early entrepreneurs who had launched lunch wagons in the 1930s, and diners and drive-ins that emerged after World War II. Consumed regularly by everyone from surfers to businessmen to even former President Barack Obama when he vacationed on O‘ahu, the plate lunch is simple in form but varied in its elements. Its basis: two scoops of sticky white rice and a side of macaroni salad that’s laden with mayo. The protein portion reflects the mix of cultures and ethnicities in the Islands: kalua pork and laulau (Hawaiian), kal-bi and meat jun (Korean), chicken katsu and teriyaki beef (Japanese), pork guisantes and chicken adobo (Filipino). “The original plate lunch had to have a lot of rice and tons of meat,” Philpotts says with a chuckle. “And a main thing is that it had no vegetables or greens.” The macaroni salad component was added later and seemed to bridge many different tastes. Smothered in mayonnaise and sprinkled with a dab of salt and pepper, the mac salad was found to mix well with a piece of protein. After the kau kau tins, lunches were served on compartmentalized paper plates covered with aluminum foil. The entrees then graduated onto round paper plates with a piece of wax or parchment paper on top, which was bounded by a rubber band. (Rainbow Drive-In off Kapahulu Avenue and St. Louis Drive in Kaimukī still serve their plates in this fashion.) These days, though, most plate lunch eateries serve up entrees in those all-too familiar white plastic foam clamshells. “The plate lunch has evolved,” Philpotts says. “In the olden days, the meats were often simple items, like Vienna sausage, hot dogs, Spam or something teriyaki. You didn’t have fish because it would spoil in the heat, which is the same reason why you didn’t have mac salad back then.” Omelets with green onions and shoyu were also popular, but the ultimate plate lunch was—and still is among local residents—the loco moco: a hamburger patty topped with a sunny-side egg and smothered in gravy; it’s Hawaii’s quintessential comfort food.

And a main thing is that it had no vegetables or greens.“ Choices today, though, include more gourmet selections, such as furikake-dusted ahi, garlic shrimp, grilled steak and misoyaki Atlantic salmon steak. A healthier plate lunch has also emerged: brown rice substitutes for white, and Nalo Green salad is offered instead of macaroni. But it’s still a plate lunch and it’s still as popular as when the first plantation laborers packed their lunches in tin cylinders. “When you come to Hawai‘i, you’ve got to at least try a plate lunch,” Philpotts says. “It has such a long history that its cultural significance can’t be ignored. It literally represents Hawaii’s melting pot of flavors … with two scoops of rice and mac salad on the side.” w w w.wh e re t rave le r.c o m

LET’S SPAM TOGETHER A staple ingredient that you must try while here on Maui is none other than the versatile luncheon meat known as SPAM. Even if you’ve already tasted this processed meat, nothing compares to the creativity of local recipes and dishes, which have appealed to an entire new audience of foodies and SPAM lovers. And since Hawai‘i has the highest per capita consumption of SPAM in the United States, it’s no wonder chefs and local restaurants have embraced the product as a staple ingredient in many of their recipes. Favorite diners, such as Da Kitchen Cafe and Zippy’s, serve up their own versions of SPAM in either a fried rice dish or a SPAM musubi. Made exactly how it sounds, fried rice is cooked usually in a wok with ingredients that consist of soy sauce, sugar and oyster sauce. Throw in some scrambled eggs, green onions and of course SPAM, and you have yourself an all-in-one meal. SPAM musubi is also an absolute must-try when visiting the islands. A slice of SPAM is fried, placed on a block of hot rice and wrapped in nori (Japanese for seaweed wrapper). Sweet Indulgences If you’re not too full from eating SPAM, both fried or in musubi form, take a bite—or two—out of Maui’s favorite and mouthwatering sweet treats. Hawai‘i’s historic and unique blend of cultures and ethnicities has led to one true culinary factor: a fusion of flavors that’s unlike anything in this world. While it was the Portuguese who introduced the malasada (a fried donut covered in sugar), it was a Japanese family who served up our first taste of “guri guri” ice cream (a combination of a sherbert and ice cream). Despite the differences in geographical origin for most of Maui’s favorite indulgences, as long as something tastes good, news will travel fast.
• Shave ice continues its legacy as a favorite local dessert, as mom-andpop stores—and now even restaurants—have developed their own iterations on the colorful icy goodness. With all the fame and fortune that the ‘ukulele has brought him, Shimabukuro quips that he literally and figuratively “picked” a good instrument. The ‘ukulele has gained much more street cred and moved light years from Tiny Tim tiptoeing through the tulips, thanks to the Honolulu native. “I think, though, I’ve just scratched the tip of the surface with the ‘ukulele,” he says. “It’s a young instrument in terms of exposure but it’s old in age, dating back to the late 1800s; it has tons of room to grow and so much potential.”

Navigate Laid Back Lāna’i On Lāna‘i‘s southern coast, the clean, clear waters of Mānele Bay shelter one of the world’s best snorkeling and diving sites. Nearby Hulopo‘e Bay, Hulopo‘e Beach Park is one of the best swimming spots on the island. Manele and Hulopoe bays are both designated as marine preserves so visitors are asked to be mindful of the space and the aquatic life.

Not surprisingly, Paia boasts at least a dozen surf shops where you can buy
sport gear and board accessories. There is a wide range of chic cafes, juice bars and vegan restaurants plus shops sporting hemp-made products, East Indian imports and funky galleries catering to this community of mellowyet-obsessive outdoor enthusiasts. To arrive at Wailea is to enter the pearly gates of Hawaiian golf. It’s the only Hawai‘i resort with 54 holes of championship golf and a David Leadbetter Golf Academy. An hour south of Kā‘anapali, Wailea’s three courses—Old Blue, Emerald and Gold—embody the best of both classic and new design. Opened in 1972, Old Blue is a favorite among locals, who enjoy its wide and forgiving fairways. In the mid-1990s, architect Robert Trent Jones, Jr. designed the Emerald and Gold course layouts, taking full advantage of Wailea’s natural surrounding beauty.
From Market Street in Wailuku to Front Street in Lāhainā, and Baldwin Avenue in Makawao to the Azeka Shopping Center Mauka in Kīhei, Maui residents and visitors alike gather en masse every Friday to celebrate, eat and mingle in a bustling, carnival-like atmosphere. The party kicks off the first Friday of every month in Wailuku, followed by Lāhainā, Makawao and Kīhei. An initiative by the Maui County Office of Economic Development, these “Friday Town Parties” showcase the arts, food and music of each respective historical region.
With their proliferation and popularity, gastropubs transcend the “trend” label and have become a veritable dining genre. Restaurateur/chef Dave “D.K.” Kodama’s latest venture is Shearwater Tavern in Kīhei. Try the oven-roasted bone marrow served with crostini and mixed greens. At Pint & Cork in Wailea, the “Bib Burger” is aptly named because it’s gooey, thick and messy but well worth the extra napkins. Monkeypod Kitchen in Wailea is another favorite, featuring such hearty fare as wood-fired pizzas, bulgogi pork tacos and kiawe-grilled ahi.
