Navigate The Polar Express Take a magical journey and experience the story of the classic children’s book “The Polar Express” by Chris Van Allsburg as it comes to life on this nighttime journey from Williams to the “North Pole” on the Grand Canyon Railway’s Polar Express, select days through Jan. 5. Settle in as the train winds through the starlit wilderness and listen to a special reading of the book while sipping hot chocolate and nibbling on cookies. Santa and his reindeer are waiting at the North Pole, with a keepsake present for every child. Total round-trip time: Approx. 90 minutes. 233 N. CAMELBACK MOUNTAIN— These are strenuous

summit hikes, and they forever change hikers’ admiration of the “camel’s back” from anywhere in the Valley. The Cholla trail rises from a neighborhood of mansions near The Phoenician’s golf courses and becomes narrow, steep and rocky in some parts. The Echo Canyon trail is so remarkably steep at some points that handrails and fences were permanently installed by park stewards. Trails meet at the summit, but the street-level trailheads are miles apart—so be sure to descend the same way you came. Echo Canyon: McDonald Drive east of Tatum Boulevard. [WHERE INSIDE]

Valley of the Sun

Christine Barone [CEO, True Foo d Kitchen]

Christine Barone, a former Starbucks executive, became a Scottsdale resident and joined True Food Kitchen as its CEO in 2016. Now a nationwide favorite, the True Food concept was launched 10 years ago in Phoenix, and was “inspired by the philosophy that food should make you feel better, not worse.” It was created by chefs, visionary restaurateurs, and Dr. Andrew Weil, a renowned doctor of integrative medicine. What is the appeal of True Food Kitchen? True Food Kitchen is special in so many ways— when I first discovered True Food, I realized there was something very unique about this restaurant. Not only are people drawn to True

Food for the delicious food and beverages, they’re also inspired by this sense of community you feel when you dine in our restaurants. The delicious, healthy food and warm hospitality that we deliver to our guests are not just the

72 W H E R E P H O E N I X + S COT T S D A L E I D E C E M B E R 2018

cornerstone of True Food Kitchen, but the foundation for a life well lived. Our mission is “to bring people together to eat better, feel better and celebrate a passion for healthy living,” and you can feel that when you dine at True.

What is Dr. Andrew Weil’s involvement in the restaurant? Dr. Weil is still actively involved. His main motivation in creating it was to show people that there’s no opposition between food that tastes good and food that’s good for you. He continues to seek out new nutrient-dense ingredients and meets regularly with our culinary team to share his insight and feedback on our seasonallyrotating menu. What are some of your personal menu favorites? In addition to our new seasonal favorites, I love the variety of our menu. Some of my current favorites are the Edamame Dumplings, Ancient Grains Bowl, and our Sunrise Bowl is one of my brunch favorites.

The restaurant recently celebrated its 10-year anniversary! Will any of the original menu items be brought back? Yes, we just celebrated our 10-year anniversary this fall, and in honor of that milestone, we hosted a community dinner featuring menu items from the past decade. We noted a few guest favorites and will be showcasing a few “throwback” dishes this winter. Our fans of the Onion Tart will be very happy… hint, hint! The restaurant launched in Phoenix at Biltmore Fashion Park. In how many states can you now find True Food Kitchen? [There are] 25 restaurants in 11 states throughout the U.S.... and growing! You travel to other markets often. Any travel tips you can share with our readers? I do travel a lot for business and have many tips that help me. I always bring my own hair dryer, I take direct flights whenever possible, I have my flu shot, I have a moisturizer that I love with sunscreen, and I always have a bag packed with essentials for lastminute travel so that I can pack in less than 10 minutes the morning I fly out. I also love walking to learn a new market and always bring a pair of comfortable shoes that work for a business meeting or a five-mile walk through a new city. Discover more at

What dietary restrictions can it accommodate? Our menu celebrates variety with dishes that not only satisfy any craving, but also appeal to nearly any allergy or preference—we welcome just about every dietary restriction, with several vegan, vegetarian and glutenfree options available. More importantly, each of our kitchens are led by expert chefs who are obsessive about making sure any dish that is customized to an individual’s dietary restrictions tastes just as great as our signature dishes.
