Interactive Cuisine Stations These stations feature our professional chefs, carefully creating dishes to order, interacting with you and your guests throughout your event in a demonstration cooking style. * all interactive stations require a chef attendant

Gourmet Grits Bar A trio of three different styles of stone ground grits, served in small bowls. Each type will be topped with assorted toppings and cheeses.

Charleston Style Shrimp + Grits Sautéed shrimp in a smoked gouda cream sauce, topped with cheddar cheese, crumbled bacon and all natural chicken andouille sausage

Green Grits Sautéed spinach and basil with grilled fennel and onions

The following station will be worked by one of our chefs and will feature two selections of chef assembled street tacos on your choice of gluten free corn or flour soft tortillas. Choose 2 of the following.

Carnitas With tomatillo salsa, pickled red onions, cotija cheese and scallions

Mini–hibachi grilling presentation of assorted bamboo skewers.

Sesame Ginger Chicken │5 Spice Thai Chili Beef │Tandoori Shrimp

Each skewer will be plated with Mediterranean quinoa salad and paired with a signature dipping sauce featuring; ginger-miso dressing, sweet Thai chili sauce and mango chutney.

This station features our chefs assembling mini plates of upscale comfort food favorites.

Rappahannock Oyster Bar This station will feature our signature oyster partner’s, Rappahannock Oyster Company, whole oysters that our staff will shuck onsite for your guests.

Served with red wine mignonette, raw horseradish, cocktail sauce, spiced saltines and hot sauce bar * based on availability of Rappahannock Oyster Company

Pasta Station The following station will feature three signature styles of pasta for your guests to enjoy. Our chef will toss and assemble the following individual gourmet pasta dishes right at the station.

Signature Penne Smoked gouda cream sauce, olive oil, garlic, spinach, sun dried tomatoes, parmesan cheese, grilled chicken and crispy bacon

Garden Veggie Cavatappi Fresh summer market vegetables, herbs, charred red pepper marinara sauce, cavatappi pasta and mozzarella cheese * this option can be made vegan by changing to vegan pasta and mozzarella style vegan cheese

Cheese Ravioli Tossed with a fresh basil pesto-alfredo sauce and shaved parmesan

Classic Carving Station The following entrées will be carved by our chef at the event station. Each entrée will be served with rolls, assorted mini biscuits, whipped butter and sauces to pair to each entrée selection. Choose 2 of the following.

Bowl Bar The following would be assembled for your guest by our chefs. We will create a trio of gourmet hand held bowls filled with a variety of artisan ingredients. Choose 3 of the following.

Caesar Chop Salad Butter lettuce, romaine, pickled eggs, cornbread croutons, crispy country ham and parmesan, chopped and tossed with our zesty Caesar dressing

Poke Bowl Sticky rice, Ahi tuna poke, pickled ginger, wasabi sauce and crispy wonton strips

Farmers Market Lo Mein Seasonal local vegetables, scallions, ginger, garlic and soy sauce

Souvlaki Chicken Bowl Quinoa, blistered tomatoes, baby kale, kalamata olives, cucumber, feta and tzatziki (GF)

Brown rice, black bean + corn salad, shredded cheddar, blistered tomatoes and coriander lime vinaigrette (GF)

Quinoa, blistered tomatoes, baby kale, kalamata olives, cucumber, feta and tahini dressing (VG, GF)

Vegan Chef Station The following food station features assorted vegan dishes for your guests to grab and go.

Sweet + Smokey Brussels Sprouts Crispy brussels, roasted and tossed with smoked onion jam (GF)

Garden Slider Spicy black bean cake, sweet corn, roasted tomatoes and cilantro spread

Jackfruit BBQ Tostada Roasted and shredded jackfruit, tossed with our signature vegan bbq sauce and presented on a mini corn tostada with crunchy cabbage (GF)

Seared Chickpea Cake and Curried Cauliflower Moroccan spiced chickpea cake, roasted tomatoes, curry cauliflower, mango chutney, roasted sweet potatoes, dried dates and mixed greens with tamarind reduction (GF)


Seated Meal Options

The following descriptions are our offerings for a more formal meal service. Each of the following services include full table place settings for each guest.

Buffet This is the most casual of the seated meal options. This traditionally features salad, breads, entrées, seasonal vegetable and starch presented on a stationary buffet that allows your guests to serve themselves. Choose 1 salad + 2 entrées + 1 vegetable + 1 starch Moving forward all buffets will feature a raised decorative platform in front of all food items along with a 3’ separator in between the station and the guest to allow proper separation to all prepared foods. Each guest will be allowed through the buffet line, properly spaced out from the guest in front and behind them, while our team of Culinary staff will have access to the dinner plates and hand plate each piece of the buffet dinner offerings for each guest from the opposite side of the buffet. At the end of the buffet our staff will place the plate on a bar height platform for the guest to take back to their table.

Classic Single

Guests are served a plated single entrée, usually chicken, pork or beef, with seasonal vegetable, starch and bread. This can be a great option for smaller gatherings. Choose 1 salad + 1 entrée + 1 vegetable + 1 starch

Prime Dual Entrée Guests are served two entrées, usually meat and seafood, accompanied by a seasonal vegetable and starch with assorted house baked breads and butter. This is an excellent option for larger parties and allows for a fast, smooth, dinner service. Choose 1 salad + 1 meat entrée + 1 seafood entrée + 1 vegetable + 1 starch Moving forward these styles of service will require all service staff to wear face coverings over their mouth and nose along with latex gloves during dinner service and any interaction with guests. Gloves will be changed or washed every half hour or after any contact with a guest or change of service. This changing of gloves may cause a slight delay in service.

Watermelon Salad *seasonal Layers of freshly sliced watermelon, crumbled feta, mint chiffonade, microgreens and white balsamic-honey drizzle

Heirloom Salad *seasonal Heirloom spinach, baby arugula, smoked blue cheese, shaved fennel, watermelon radish, grapefruit supremes, crispy prosciutto and fig vinaigrette

Kale Salad Locally sourced kale, softened and chopped, tossed with shredded brussels sprouts, grilled cherry tomatoes, dates, sliced almonds, grated parmesan cheese, fresh lemon and olive oil

Fried Goat Cheese Salad Fried goat cheese, roasted grapes, grilled radicchio, smoked almonds, baby kale, shaved fennel with cranberry-ginger vinaigrette and crispy prosciutto
