Zubereitungszeit ca. 45 Minuten: 1 Wirsing (ca. 400 g)
2 Scheiben Toastbrot 1 Bund Petersilie 500 g gemischtes Hackfleisch (halb Rind, halb Schwein) 2 Eier (Kl. M) Salz
schwarzer Pfeffer aus der Mühle
1 Lorbeerblatt 1 TL Kümmelsamen 1 große Dose Tomaten (425 g) Cayennepfeffer Zucker
200 g kurze Röhrchennudeln 50 g geriebener Parmesan 4 EL Olivenöl
Zubereitung: Vom Wirsing den Strunk und welke Blätter entfernen. Wirsing klein schneiden. Toastbrot in kaltem Wasser einweichen. Petersilienblätter von den Stielen zupfen und fein hacken. Toastbrot ausdrücken, mit Hackfleisch, Petersilie, Eier, Salz und Pfeffer verkneten und die Masse zu tischtennisgroßen Bällchen formen. 1 Liter leicht gesalzenes Wasser zum Kochen bringen. Hackbällchen darin mit Lorbeerblatt und Kümmelsamen bei milder Hitze ca. 10 Minuten gar ziehen lassen. Dosentomaten grob zerschneiden und mit dem Wirsing zu den Hackbällchen geben. Zusammen etwa 15 Minuten bei mittlerer Hitze garen. Mit Cayennepfeffer, Pfeffer, Salz und etwas Zucker würzen. Nudeln zugeben und weitere 5—7 Minuten garen, bis die Nudeln bissfest sind. Abschmecken und mit Parmesan und Olivenöl anrichten.
