Where healthy meets lifestyle

MOTHER’S CORONA DEL MAR OPENING DECEMBER 15, 2021

Mother’s is excited to announce the opening of “her” 11th location in Corona del Mar on E. Coast Hwy between Iris and Jasmine Avenue. Long-time CdM residents may remember Mother’s Kitchen that was located in the village, in the early 70’s, very close to the new location. The name and many of the deli favorites were gifted to the founders of Mother’s Market & Kitchen in 1978 when the first location was opened in Costa Mesa. Since 1978 in Costa Mesa, Mother’s has opened stores in Huntington Beach, Irvine, Laguna Woods, Santa Ana, Anaheim Hills, Brea, Signal Hill, Manhattan Beach and Sunset Beach.

The Corona del Mar Mother’s, named Mother’s California Market, is a smaller and intimate shop. The Corona del Mar location – which will share building occupancy with incoming CVS - will offer the most popular selection of all Mother’s favorites including a full traditional grocery shop with natural and organic food choices, fresh organic produce, an organic juice bar and homemade ready-to-eat healthy meals. The store will house beauty, supplements and body care items as well as a curated selection of beer and wine. Mother’s looks forward to serving the community and being the spot Where Healthy Meets Lifestyle.

LETTER FROM THE CEO It’s time to celebrate. Here comes Thanksgiving. For sure, it’s awesome that we can finally gather with family and friends to celebrate, watch football and eat too much! Wouldn’t it be awesome if this year, you hosted a plant-based dinner? … but, of course, just in case, as a backup, you should cook the organic turkey for your grandpa because there’s always one who definitely can’t just do mashed potatoes, green beans and vegan loaf! Here comes Hanukkah. The celebration of hope and light. Miracles happen. Really, they sometimes do. Here comes Christmas. Tree up. Lights on. Presents wrapped? Roast or mushroom risotto on the stove. Cookies made. Here comes Santa Claus. And Happy New Year! Resolutions aside, let’s use the 2022 calendar reset as an excuse to celebrate all the challenges we have overcome and instead of saying what we want to do in 2022, let’s take a moment to reflect on all we did to keep going in 2021. Cheers to togetherness. Happy Holidays,

Dorothy Carlow Mother’s Market CEO

In 2007 Ed Nejad purchased a 16 acre property off Ortega Highway that only had a few fruit trees and a home. He never anticipated that ten years later, he would end up manifesting the land to becoming a fruit, berries, nuts, and flower orchard, now known as Upper Loveland Ranch. Ed dedicated himself to creating an orchard outside of his full-time business that would provide homegrown style, truly organic, and unique food. He feels that it is important to spend the time to determine how to maintain sustainability so that what comes out of the ground can provide for the growth of a crop.

What started as a few trees has turned into a ranch with over 3,000+ trees over the past ten years. Ed’s main crops are Pomegranates, Mulberries, Stone Fruits, Figs, and Protea Flowers. The key to his success? Ed says that

one sure ingredient that brings positive results for his farm and his family is “love” — sharing it all year round, no exceptions! He hopes to continue to provide good and honest food to the locals and loved ones.

Upper Loveland Ranch is sourcing Mother’s with its wonderful variety of Pom Arils. Pom Arils are the seed pods inside the pomegranate, which have a red and clear fruit that surrounds a tiny seed, all of which is edible. Mother’s loves partnering with local vendors, and we are excited to be working with Upper Loveland Ranch!

22 | Organic Living Magazine

How does doing something for your health improve the health of the world? Solaray began an inititative to plant one million trees in countries like India, Malaysia, and the U.S. (starting with our own backyard in Utah) by 2025, giving back to regions that provide the natural resources to create our products. As part of this venture to plant one million trees, we have partnered with One Tree Planted to plant 50,000 trees in the second half of 2021 alone. Through planting these fruit-brearing trees, this effort will also support the incomes and food supplies of farmers and their families. We are proud to team up with One Tree Planted, a 501(c)(3) nonprofit dedicated to global reforestation that plants trees to restore nature, biodiversity and community.

Post-consumer Resin and what it Means for your Impact on the Environment. Solaray is transitioning to using Post Consumer Recycled (PCR) resin for bottle production. PCR is recycled plastic waste that has been gathered and sent to recycle centers where it is sorted, sterilized and repurposed to produce plastic resin pellets to make new bottles. When using PCR, no new fossil fuels are required, shrinks your carbon footprint, lowers the amount of plastic being sent to landfills, and reduces the negative effects on the environment. When consumers care about the environment, they choose to make their purchase count toward helping to preserve the environment while also contributing to their own health. Sharing the same values as their customer, Solaray makes it easy for you to Live Brighter and achieve a healthy lifestyle that supports global environmental initiatives.

At-home wine tasting

A TASTE OF EUROPE AT A GREAT PRICE When the weather gets cooler, we tend to stay indoors more and enjoy the comfort of home. If you’re looking for a fun activity to do for a cozy night-in, try doing an at-home wine tasting! Not sure where to start? We recommend trying some of the fantastic wines imported by the Mosaic Wine Alliance.

Pierre Lemieux, a Southern California native, founded the Mosaic Wine Alliance 30 years ago and has traveled to Europe for years in search of small family wineries making the highest quality wines at exceptional prices. He visits every winery he imports and prides

22 | Organic Living Magazine

himself on the unique relationships that develop over time. Mosaic Wine Alliance currently imports wines from France, Spain, Portugal, and Italy, and the wines are only found in the finest restaurants and specialty retailers in Southern California.

For your wine tasting evening, pick up the bottles of wine listed below, all of which are imported by Mosaic Wine Alliance and available at your local Mother's. 2020 Raphael Midior - Sancerre Raphael Midior carries on the tradition of five generations of winemakers. At the family estate located in the village of Chémery, in the heart of the Loire Valley, Raphael is ensuring the quality of his light & fresh wines from their vineyards is of the best quality. Crispy, fruity, and delicate with mouthwatering citrus aromas, this Sancerre pairs perfectly with asparagus, fish, or salads with goat cheese.

2019 La Selva Privo – Organic Rosso In the 1980s, Karl Egger founded this organic farm in a small town called Magliano, a southern region of Tuscany near the coast. Karl’s philosophy is to make wines using organic methods using the highest quality fruit to create the highest quality wine. Karl’s Sangiovese is from the oldest vineyards in Tuscany planted between 1945 to 1950. This wine is not “natural” to be trendy. La Selva has been certified organic for 42 years, and it is the first winery to be certified in Tuscany. The wine is also made with no added sulfites. Luscious and jammy, the fresh palate features raspberry, cherry, and white pepper and is mediumbodied with ripe tannins and bright acidity. Pair with pasta with red or meat sauce, BBQ’d marinated pork ribs, or roasted vegetables. *Must be 21+ to enjoy

2019 Gota, Azahar, Vinho Verde Beautifully crafted in Portugal, Azahar wines exemplify the wine region in which they are made. Azahar is named after the fragrant white flowers from the orange trees that perfume the entire country. Since the vineyard is close to the Atlantic, creating a maritime influence, a beautiful salinity is added to this sustainable and organic wine. Bright, lively, and fresh, with delicate orange blossom aromas and vibrant minerality, Azahar wines pair nicely with fresh salads, lighter pasta, fresh oysters, and grilled fish.

2019 Les Vins de Vienne Cote du Rhone - Amet On the edge of the Rhone River in the town of Chavaney, three partners, Yves, Francois, and Pierre, started on a great adventure. In 1996, these friends, who were passionate and established winemakers, formed Les Vins de Vienne out of their love and respect for viticulture. These superstars of the Rhone Valley continue making certified organic wines today with passion and pleasure. Cote du Rhone wines are incredibly food-friendly. With a smooth textured finish, these wines are perfect for anything coming off the grill.

Expertly crafted

MUST-TRY ARTISAN CHEESE

Cheese warehouse from 1906 In the cheese city of Woerden, which lies about 25 km south of Amsterdam, the van den Wijngaard family has been making cheese for generations. Near the old city centre, on the banks of the Old Rhine river, you will find a historic cheese warehouse dating back to 1906. It is there that you will find a commitment to craftsmanship, which has been handed down from generation to generation, that has never been compromised. For example, the countless cheeses in the old warehouse are still turned and wiped down by hand. Another essential characteristic of the century-old warehouse is its natural fluctuations

in humidity and temperature. These variations occur during the day, as well as throughout the year, accelerating the ripening process as temperatures rise and slowing it down as it becomes cooler. The variations in natural conditions during the ripening period are important. The cheese always adapts to the changing circumstances. In warm weather, the cheeses slowly become warmer and the ripening accelerates, and in colder weather exactly the other way around and slows it down. The natural differences create depth and complexity in flavors and fragrances.

Reypenaer The van den Wijngaard family’s signature cheese they make is called Reypenaer, a special variety of Gouda that’s nothing like the factory-made cheeses. What is it about Reypenaer that gives it its distinctive aroma, flavor, and smoothness? The answer lies in authentic craftsmanship and the old family warehouse. The gradual improvement in the aroma, taste, and texture of Reypenaer results in what specialists refer to as a complex taste with a great depth.

28 | Organic Living Magazine

The Wijngaard Cheese Family Grandpa Piet started trading cheese in 1936, actually as a medium of exchange for groceries. At the time, he supplied these to farmers in the vicinity of Woerden and he was paid in cheese. Cheese became increasingly important over time. Son Jan took over the company in 1946/47 and devoted himself completely to the ripening of cheese. The company developed slowly but steadily. The cheese was increasingly appreciated in the Netherlands. In 1975 the third generation presented itself with daughter Riet, son Jan and since 1995 son Rien. From 2019, the fourth generation also presented itself with Jan, son of Rien.

About Wijngaard Cheese – Reypenaer Wijngaard Cheese is a family business with a long tradition of artisan cheese making going back more than 100 years. The current Wijngaard brothers who run the cheese business are the 3rd generation that are responsible for these fine, award-winning Gouda cheese. The cheese of the Wijngaard family are made from milk from grass-fed cows. Cows fed on fresh grass give milder and better milk and the cheese made from this milk ripens better. Milk supply of this type is limited, since summers are not that long

in Holland. The cheese is ripened in historic, custom-built cheese cellars in the historic town of Woerden. It is the unique micro-climate in these cellars, with fluctuating temperature and humidity, that influences the flavor of the cheese greatly. If you ever visit Amsterdam, go to the Reypenaer Tasting Room in center of Amsterdam where you can personally test and evaluate the flavor, the aroma and the qualities of the Reypenaer cheese, all under the guidance of an expert cheese taster.

2. Preheat the oven to 350°F.

• 1 tsp sugar

3. Place the flour, sugar, and salt in a mixing bowl and whisk. Add in the butter in small bits and mix in with two forks or a pastry cutter. The consistency should look like sand with small pebbles in it.

Tips and tricks

THANKSGIVING COMPOSTING This Thanksgiving, make sure to have an eco-friendly holiday with our composting guide. Whether it’s meat, bread, fruits or vegetables, dessert, or coffee, here are Mother’s tips and tricks for effectively composting and repurposing leftover food!

Turkey, Roasts, Other Meats

Bread

Fruits and Vegetables

Do not compost meat! Consider reusing leftover proteins for soups, broths, and sandwiches, among other tasty leftover meals. You can even freeze meat and eat it at a later date.

Oftentimes, sliced bread and rolls go stale very quickly when not stored properly. Instead of tossing your rolls out, you can chop them up into tiny squares to use as salad croutons or use for homemade breadcrumbs. As a last resort, bread can always be composted if it has begun to mold or if there is no other use. However, if composting, make sure to bury it in the backyard, so you don't attract pests.

Whether raw or cooked, peeled or chopped, molded or not, all fruits and vegetables can be composted. Extra veggies are also great to add into soups or eat with leftover dinners as a side dish. Fruit also serves as a great healthy option to snack on throughout the day or add into nutritious smoothies.

Dessert and Coffee

Cans, Glass, Plastic

Our favorite Thanksgiving staple pumpkin pie, along with other desserts, is compostable. Still, it is important to remember, like bread, to bury this compost under the soil, so you don't attract pests. For coffee lovers who need a cup of coffee with dessert, save your grounds and even the filter to add into your compost pile. Coffee helps to add Nitrogen to your compost and can act as fertilizer for your soil.

Like always, make sure to clean out remnants and extra residues from cans as well as glass and plastic bottles and containers before recycling. You can even separate your cans and bottles to bring to your local recycling center for some extra spending money.

Sweet and easy

SUGAR COOKIE RECIPE 'Tis the season to celebrate one of our favorite holiday traditions, spending time with loved ones making holiday cookies. No matter the occasion, whether it's for National Cookie Day on December 4th or for the perfect cookies for Santa, we have a delicious, festive sugar cookie recipe for you. Deliver some cookies to your neighbors or even arrange a cookie swap with friends and family. What better way to get into the spirit of the season than by spreading some holiday cheer with a classic seasonal treat.

DIRECTIONS: 1. Mix the softened butter and brown sugar until creamy. Add in the vanilla, egg, and whipping cream to the mixture. In a separate bowl, combine the flour, cinnamon, baking powder, and salt. Slowly sift the mix of the dry into the wet ingredients until a smooth dough forms. 2. Separate dough into two. Use a rolling pin to flatten out the two halves of dough between two sheets of parchment paper. Move the dough still sandwiched between the parchment paper to the fridge. Chill for at least one hour or overnight. 3. Preheat your oven to 400°F.

INGREDIENTS: • 1 egg, slightly beaten • ¾ teaspoons baking powder • ¼ teaspoon of salt • 1 ½ cups of flour • ½ cup of butter, softened to room temperature • ½ cup of sugar • 1 ½ tablespoon of whipping cream • 1 teaspoon of vanilla • ½ teaspoon of cinnamon

FOR ICING: • ⅙ cup of canola oil or softened butter • ½ pound of powdered sugar • ⅛ cup of milk • ½ teaspoon of vanilla extract 38 42 || Organic Organic Living Living Magazine Magazine

4. Remove the top sheet of parchment paper and choose your favorite cookie cutters to cut out festive holiday shapes. 5. Transfer the cookies on the parchment paper to a cookie sheet and cook for 5-8 minutes. Remove the cookies once they begin turning a golden color at the base of the cookie. Repeat with remaining dough and dough scraps. Let cookies cool completely. 6. To make the icing, beat together the canola oil (or softened butter), powdered sugar, milk, and vanilla extract until smooth. If the icing comes out too thick, add small amounts of milk to the mixture until the icing is the perfect consistency to spread evenly. Separate icing to different bowls and add food coloring for your desired colors. 7. Decorate with your icing and even add sprinkles for a more festive touch.

Get creative SUSTAINABLE HOLIDAY WRAPPING With so much waste produced and an extra emphasis on recycling this holiday season, it is important to consider sustainable ways to celebrate! Here are three easy ideas to ensure you are taking advantage of the simple and cost-efficient ways to be an eco-friendly gifter this year.

1. Reuse Cardboard Shipping Boxes & Packaging Materials Online shopping has become increasingly popular over the past few years, and with it comes a lot of packaging to keep your items safe while in transit. Once your products are delivered, be sure to save the shipping boxes, envelopes, and packaging materials, such as bubble wrap and extra brown paper, and use them to wrap gifts.

2. Wrap with Brown Paper Bags Have a stash of brown paper bags from weekly grocery runs? Grab some tape, white paint, ribbon, twine, or string -- essentials for creative DIY gift wrapping. Wrap the presents with the blank side of the brown paper bags, then comes the fun part. Decorate your present using white paint or stamps to add festive designs and pictures for a personalized touch. Tie it all together with ribbon, twine, or string for the perfect finishing touch. You can even tie on a candy cane or add a bow for some extra holiday flare.

3. Wrap with Old Newspaper Start collecting all of your old newspapers now for an easy and unique way to wrap this year. Just use tape and add ribbon or twine. Then you can add a candy cane, mini pine cones, or Christmas tree sprigs for an individualized gift wrap that's sure to be a hit. Pro Tip: Use the comics section to add some silly cartoon fun.

Easy holiday appetizer CHARCUTERIE BOARD ESSENTIALS Charcuterie boards always find a way to bring people together, just like the holidays! What’s great about charcuterie boards is there are so many different options, and they’re always evolving. Originally, charcuterie boards contained mainly meat and cheese. Now there are many ways to make charcuterie boards, including gluten-free, vegetarian, or vegan, so that everyone can enjoy them! Not sure what to include on your board? Here are some tasty ideas!

Cheeses

Organic Fruits

Incorporate a mixture of soft and hard cheeses as well as mild and sharp options. The more variety, the better!

Because so many people love fruit, you can't go wrong with putting some on your charcuterie board. Fruits such as apples, berries, figs, and grapes match perfectly with various cheeses and bring a sweetness factor, while mini peppers, cucumbers, and carrots are great ways to add more fiber and texture.

Meats Go with a variety of flavors and textures! We love including calabrese salami and prosciutto. 56 | Organic Living Magazine 52 | Organic Living Magazine

Organic Nuts and Dried Fruit

Spreads

Organic pecans, walnuts, almonds...there are so many nut options to add to your board. Mother’s has a large assortment to choose from in-store. As for dried fruit, try organic dried cranberries or Turkish apricots.

For added taste, try including a small jar of honey or jam. Mother’s Homemade Grab & Go Hummus is also a great option.

Chocolate or Candy Break up some pieces of a few chocolate bars or add some semi-sweet chocolate chips to make it even easier. Tasty tip: Unreal Dark Chocolate Peanut Butter Cups are the perfect sweet addition.

Miscellaneous It's always fun to add a few surprise factors that people normally would not expect on a charcuterie board. We love adding in pretzels, olives, hardboiled eggs, and breadsticks, just to name a few!
