A season of success The opening of Dubai’s second airport, Al Maktoum International at Dubai World Central, Dubai Duty Free’s 30th anniversary and the 42nd UAE National Day are just a few of the events that the country is marking at the moment. His Highness Sheikh Mohammed bin Rashid Al Maktoum, Vice President and Prime Minister of the UAE and Ruler of Dubai, recently opened the airport ’s new passenger terminal, which soon after was the venue for one of the greatest airshows ever recorded, making history with a record breaking 60,692 trade attendees, 1046 exhibitors from 50 countries, and a total order book of over US$200 billions. Al Maktoum International is now operational with low-cost airline Wizz Air, Jazeera Airways, and Gulf Air flying from the airport with Qatar Airways to join them early next year.. Once fully completed, the UAE’s newest transport hub is set to become the largest in the world, with five runways and capacity for 160 million passengers and 12 million tonnes of cargo. The whole country will join together on December 2 to celebrate with street parades, fireworks and a range of exciting events, the 42nd anniversary of the formation of the UAE in 1971, four decades of unprecedented growth and development that have lead to the creation of what is sometimes described as a new world capital. Thriving design, fashion and business initiatives mark only the beginning of a new era of development and success for Dubai and the UAE. Dubai Duty Free has been at the forefront of Dubai’s commercial and cultural success for the past 30 years: it is now time to look back and celebrate the milestones that saw a small team of pioneers setting standards that have been of example to countless others, creating arguably one of the best Duty Free in the world, with a projected US $1.8 billion year-end sales for 2013. As part of the celebrations, we captured some of the highlights of this extraordinary story of excellence. In this season of giving, we did not forget the victims of typhoon Haiyan in the Philippines: the UAE government pledged support and assistance for US $ 10 million, in addition to the many fundraising events organized by UAE residents all over the country. Guinness World Record on the Corniche Thanks to its spirit and tenacity, Abu dhabi is the new holder of the Guinness World records title for “The most People Waving chequered Flags”. An amazing 258 chequered flags were seen on the Abu dhabi corniche, creating an incredible sight and firing up the citywide celebrations ahead of the race. This year’s dubai Airshow will be remembered for the record-breaking business deals and for the glamorous musical performance by Kelly rowland and The Swingle Singers. words Laura VoLpi
T
he Dubai Airshow 2013, held at the new Dubai World Central aerotropolis, has been the largest in its 26-year history, with over a thousand exhibitors from both civil and defense aviation industries (such as Airbus, Alenia Aermacchi, BAE, Boeing, Bombardier, Dassault and many more), up to 60,000 trade attendees, and the largest sales numbers in any airshow history, with the total order intake exceeding US$200 billion. Whilst in the UAE to support the Dubai Expo 2020 bid, UK Prime Minister David Cameron toured the custom-built 645,000 square metre airshow site, which this year also features 121 UK companies and a UK pavilion.
The UAE has long held close business ties with the UK and the Prime Minister is also supporting BAE’s campaign to sell its new Typhoon fighters. This year’s five-days show has been characterised by a wave of orders, options and intercontinental accords. Gulf airlines invested billions in new plane deals underscoring a shift in power in the aviation industry. The biggest aircraft order announced at the show came from Emirates Airlines with a US$99 billion deal to buy 50 Airbus A380s and 150 Boeing 777X aircraft. Etihad Airways, the national airline of the UAE, selected CFM International’s advanced LEAP-1A engine to power 26 Airbus A321neo, in a US $ 2.8 billion order; a partnership has been december 2013

sealed between Boeing and Abu Dhabi’s Tawazun Precision Industries (TPI) to set up a production aerospace surface treatment facility in Abu Dhabi, and Mubadala Aerospace signed a combined US $ 1 billion deal with Rolls-Royce and GE Aviation to set up a component manufacture in Nebras Aerospace Park in Al Ain, all significant steps for the UAE’s aerospace industry. N
ational Day is a very important date in the UAE calendar, as we remember the day on which the United Arab Emirates was born, giving rise to the nation we know and love today. The birth of the union is celebrated every year across the seven emirates with a series of events, shows, festivities and ceremonies for all ages. In Dubai the national flag will be hoisted to the notes of the National Anthem and Emiratis will take the street dressed in colourful clothing and driving decorated cars, with flags waving from every window. Every shopping mall will be decorated in red, white, black and green, and many schools will host events where children will dress up in the national dress and perform folkloric dances. A large foot parade and colourful car parades will take place around the city. The streets of Dubai will host live performances of traditional dances while the city's parks, including Creek Park, Zabeel Park, Mushrif Park, Mamzar Park, Safa Park and Jumeirah Park, will host many fun activities for the whole family, such as dolphin shows, family bicycle rides, horse and camel rides, swimming pools, boat rides, kids' games and barbecue areas. All historic buildings will be open for visitors, and lit with the colours of the flag. Many other events will be organised around the city, such as old car exhibitions, poetry evenings, traditional arts and crafts bazaars, traditional band shows, and historical and digital photo exhibitions. The traditional art of falconry will be showcased at various venues around the city, and there will be many opportunities to be pictured
with these majestic animals. Traditional henna artists will also be ready to offer their handicrafts to those interested in carrying a piece of UAE tradition on their skin for a while. Ceremonies will be held to remember the UAE Father, His Highness Sheikh Zayed bin Sultan Al Nahyan, the Ruler of Abu Dhabi and the first President of the UAE – a post he held for over 33 years – who was the principal driving force behind the formation of the United Arab Emirates. A big concert featuring Emirati folk music and international and Emirati singers and dancers will be held in the evening, just before a stunning fireworks show lights up the night sky, bringing the celebrations to an end. Abu Dhabi will also be hosting several events: starting from 28 November, the capital city will be lit by several fireworks displays designed by Spanish fireworks specialist Pirotecnia Igual, the company behind this year’s Rio de Janeiro Revellion celebration, which was watched by a live audience of over two million. A series o women-only activities will run on Al Bateen Beach and National Day parade celebrations will be held on Yas Island, including a huge car parade on Yas Leisure Drive. This year's celebrations also coincide with the Al Ain Aerobatic Show 2013, a family event paying tribute to the country's rich culture and heritage with a series of UAE-themed aerial displays and on-ground attractions, performances and activities. ubai Airports recently launched passenger services at Al Maktoum International at Dubai World Central (DWC), turning over a new leaf in Dubai’s aviation history. Hungarian airline Wizz Air landed at Al Maktoum International on 27 October 2013 amidst a two water cannon salute. Paul Griffiths, Dubai Airports' Chief Executive Officer, labelled the opening a “historic moment” for Dubai and its aviation industry. Jazeera Airways also started operations from the new airport from October 31, with two weekly flights to Kuwait. In addition, Bahrain’s national carrier Gulf Air has also announced its intention to start daily operations to Bahrain from 8 December this year, while Qatar Airways is expected to begin operations with twice daily flights to Doha from March next year. More airlines are expected to follow these pioneering carriers. Dubai Airports is in talks with several other airlines on starting operations from Dubai’s second airport and additional services are expected to be announced soon.
Dubai World Central (DWC) is a master-planned aerotropolis which will cement the emirate’s position as the leading global trade and logistics hub. Spanning an area of 140 square kilometres, DWC has been designated as a self-sustained economic zone that will support a multitude of activities including logistics, aviation, commercial, humanitarian, residential and leisure-related businesses. The US$132 billion DWC project comprises a multi-phased development of six clustered zones that include Dubai Logistics City, Commercial City, Residential City, Aviation City and Golf City, and at the heart of this development stands Al Maktoum International. Dubai World Central is the region’s first integrated, multi-modal transportation platform connecting air, sea and land. It takes advantage of its proximity to Jebel Ali Port (the largest container port between Singapore and Rotterdam) and seamlessly connects it to Al Maktoum International through the dedicated Dubai Logistics Corridor. This forms a single custom-bonded zone, reducing time on the ground and accelerating the flow of sea-to-air/ air-to-sea cargo. With direct access to the major trans-emirate road networks, DWC provides unprecedented levels of connectivity, speed and efficiency.
AL MAKTOUM INTERNATIONAL FOOTPRINT Dubai Airports owns and manages the operations of both the Dubai International and Al Maktoum International airports. While Al Maktoum International has been open for freight traffic since June 2010, only last month did it commence passenger flights. Griffiths said with the opening the passenger terminal completed, the next step would be to expand existing facilities to “cope with incremental traffic growth”. Located in the Dubai World Central aerotropolis, Al Maktoum International currently operates 24 hours a day with an A380-compatible, 4.5-km runway. Facilities include 64 aircraft stands, a state-of-the-art air traffic control tower, cargo facilities, line maintenance services, a fuel farm and a 66,000-square meters, single-level passenger terminal. Upon completion, the UAE’s newest gateway, Al Maktoum International, will be the largest in the world with five runways and a capacity for 160 million passengers and 12 million tonnes of cargo each year. Currently, the airport’s new passenger terminal can handle up to seven million passengers annually. dECEMbER 2013

Spanning 2,500 square metres, DDF retail area at Al Maktoum International presents an extremely attractive and convenient shopping environment to passengers. The departures retail features a central outlet that showcases all the DDF favourites such as perfumes and cosmetics, luxury goods, fashion, confectionery and electronics. On either side of this central area are the liquor and tobacco and food and confectionery areas. SkyCargo’s new cargo terminal at DWC will start operations in April 2014 while Air France-KLM already relocated its regional hub in August this year. With a current capacity of 250,000 tonnes a year, the airport has quickly established itself as an emerging cargo airport in the region with 36 airlines operating from it. A commemorative display has been unveiled at the presence of a delegation of local dignitaries and aviation officials which toured the facility. “Al maktoum International at dubai World central will play a vital role in the future development of dubai as a centre for trade, commerce, transport, logistics and tourism. SUrprISE CoNCErt At tErmINAL 3 International music superstars Kelly Rowland and dJ mitchell Niemeyer recently surprised passengers by arriving at dubai Airport Terminal 3 for a surprise performance. A crowd quickly gathered as soon as the popular dJ started playing the tunes that saw him travelling the world from clubs in his native Holland to Ibiza, London, Hong Kong, New York, Las Vegas and miami. The excitement peaked when Rowland appeared to perform her global hit ‘When Love Takes Over’. Grammy Award winner and current US X Factor judge, Rowland took the chance to surprise dubai Airport passengers whilst in town to perform to a VIP audience at the dubai Airshow Gala dinner, an exclusive concert held at Atlantis, The Palm. She also made time during her stay to meet her fans at the Hour choice store in the mall of emirates. The pop-up performance at the airport was organised by dubai International, dubai duty Free, and TW Steel. Rowland and Niemeyer are also TW Steel global brand ambassadors. “It was a lot of fun to do something a little more ‘out of the box’,” said Kelly Rowland after her performance. “You could see the surprise on people’s faces as all of a sudden a concert breaks out in the middle of the airport terminal. 30 years on... back in 1983, a ten-man team arrived in dubai from aer Rianta in ireland. Their mandate was to start dubai duty Free. words mark atkinson

mong the team were Colm McLoughlin and George Horan. McLoughlin remains at the helm as executive vice-chairman and Horan as president. By 1984 the company had achieved over US$20 million sales – impressive for just one year of business. By 2013 the figure had reached US$1.8 billion. By 2018 it is projected to grow to US$3 billion. “In 1984, just one year after we started our operations, we had 120 staff,” says Horan. “Today we have 6000. “We had three million passengers compared to the 66 million we have now.” In numbers The company processes 75,000 sales transactions every day. Of the company’s total 6000 employee head count, around 5200 are on the ground, staffing 112 outlets across its different concourse locations. There are more than 500 cash registers in operation across 26,000 square metres of pure retail floor space. Around 500 pallets are delivered from Dubai Duty Free’s automated warehouse to the airport every day. “In 1989 there was the first major change to the existing shop floor at that time when we doubled our floor space,” recalls Horan. “In 1998 we opened Terminal 2, another huge step forward. In 2000 we opened what is now Concourse C (formerly Sheikh Rashid Terminal). Concourse B (Terminal 3) followed in 2008. In January 2013 we opened Concourse A.” Dedicated to A380 aircraft, Concourse A currently contributes 19 per cent of Dubai Duty Free’s overall sales. 52

October 2013 saw the opening of Dubai World Central. “We currently have a small retail facility there of 2500 square meters,” says McLoughlin. “In the long-term there is a retail space allocation for 64,000square meters. There’s a government edict that Dubai Duty Free will operate all of it.” Running such an expanding operation means keeping abreast of the latest technologies. In 2008, Dubai Duty Free opened its automated warehouse distribution centre, which needed to be fully commissioned and opened to stock the new Terminal 3. It also needed to double its capacity to around 20,000 pallets and 27,000 bins or ‘totes’ in preparation for the opening of Concourse A. Today it runs at around 90 per cent automation. CommunIty footprInt There have been many memorable highlights. 1992 saw the opening of Dubai Duty Free’s sports and leisure property, The Aviation Club. The Dubai Tennis Stadium and The Irish Village followed in 1996, and the cosmopolitan Century Village promenade of restaurants a couple of years later. Through its continuing popularity, The Irish Village’s outside area has recently been through a major expansion, with a new second outdoor bar called Lakeside and additional seating capacity of 200. In 2012, Dubai Duty Free opened its first hotel, managed by the Jumeirah Group. The Jumeirah Creekside Hotel is a uniquely positioned as an art hotel, with 480 pieces of original Middle Eastern contemporary art specially commissioned to 51 regional artists, displayed throughout.

All these leisure properties are situated within minutes of each other by foot, and to one of the company’s most enduring successes, the Dubai Duty Free Tennis Stadium. “From early on we had identified sports sponsorship as a good way of reaching a wide target audience, and one that can generally be measured quite well,” says Salah Tahlak, SVP corporate communications. “We tend to invest around 2.5 per cent of our turnover on marketing.” One of the company’s earliest sports forays in 1988 was the Dubai Duty Free Snooker Classic, which attracted big names of the time. The ATP (Association of Tennis Professionals) championships followed, first held in 1993 after two years lobbying the ATP. The WTA (Women’s Tennis Association) event was added in 2001. In 2013, Dubai’s ATP and WTA events attracted more than 100,000 stadium spectators and generated a global television audience of millions with gross media value of US$528 million. Dubai Duty Free is also prominent on the horse racing circuit. In Dubai it is a founding sponsor of the world’s richest horserace, the Dubai World Cup. Overseas, it is a major sponsor of high profile events such as the Dubai Duty Free Irish Derby, and in the UK the Newbury race meet in April and September with the Dubai Duty Free Shergar Cup held at

It has sponsored the Omega Dubai Desert Classic at the Emirates Golf Club since its inaugural year in 1989, and sponsors a number of prominent golf fixtures in Dubai including the Dubai Duty Free Golf World Cup which attracts over 120 travel retail executives from all over the world. October 2004 saw the launch of the Dubai Duty Free Foundation, under the auspices of HH Sheikh Ahmed Bin Saeed Al Maktoum, President of Dubai Civil Aviation Authority and Chairman of Dubai Duty Free, which raises funds for worthy causes, specifically those aimed at benefiting children. Causes include the Smile Train charity in the Philippines which helps 3800 children with cleft palate deformities, providing more than 750,000 eye treatments in India through the Sightsavers charity, financing a sports facility at a school in Haiti, providing educational sponsorship to children in Mongolia and in Vietnam. In 2013, three Dubai Duty Free staff members went on the Great Asian Cycling Challenge through Vietnam and Cambodia with Dubai charity Gulf for Good, to raise funds for 90 poverty-stricken children in Vietnam. In Dubai, the company contributes to the education of special needs children and in 2013 donated Dhs3 million, in support of the Ramadan Campaign of HH Sheikh Mohammed Bin Rashid Al Maktoum, Vice President and Prime Minister of the UAE and Ruler of Dubai, to clothe deprived children around the world. the mIdas touCh In 1989, Dubai Duty Free pioneered its Finest Surprises car raffle draw, which has since been emulated at airports globally. Explains McLoughlin: “The car draw started with our first major expansion in 1989. We needed a promotion and it had to be something that would have a big impact.” 54

DDF charity walk and run
The winner of the first car, a Bentley Mulsanne was Simon Simonian from Lebanon. Since then, winners from 72 countries have laid claim to more than 1500 luxury cars. In monetary terms this equates to more than US$100 million worth of vehicles. Cost of the tickets remains at the original price of AED500 (around US$139) each and generates a huge amount of publicity. In 2002, the promotion introduced motorcycles such as Harley Davidson and Ducati, allowing people to enter the draw at a lower cost of US$28. To date there have been more than 200 winners. TENNIS PRO dubai duty Free Tennis championships 2013 won the event marketing trophy at the 7th edition of the International Sports events management (ISem) Awards, presented during a black-tie dinner at the cumberland Hotel, London in November. The ISem Awards, marking the culmination of a 2 days conference which attracted over 250 delegates, exhibitors and speakers, honour sport management industry leaders for their performance in the organisation of major sports events. ANOTHER GEM IN THE CROWN SALES GOAL GETTING CLOSER All is set for dubai duty Free to break another record. The goal of achieving double digit sales growth for the year does not seem so far, considering that at the end of their 10th month of sales ddF registered an impressive dhs5.23 billion (US$1.43 billion ), 11% more than the same period last year. The focus now is on reaching year-end sales of dhs 6.6 billion (US$1.8 billion). Perfumes remain the most successful category, with sales raising to dhs835 million (US$229 million) whilst gold increased by 7% to dhs503 million (US$138 million). Notable growth was also seen in the sale of cosmetics, up by 18% to dhs352 million (US$ 96 million), watches and clocks, showing a 15% increase to dhs356 million (US $ 97 million), and confectionery, which rose by 12% to dhs424 million / US$116 million. both departing and arriving passengers contributed to these excellent results. Terminal 2 has shown an incredible 22% increase, whilst Terminal 3 has seen sales growing by 16%. Setting the bar dubai duty Free’s profitability is driven not only through numbers, but a unique company ethos. Colm McLoughlin, executive vice-chairman, gives dubai Voyager his own insights into what makes the company tick. words mark atkinson and catherine belbin
W
hen McLoughlin talks about the company he has been instrumental in building, his voice rings with genuine pride and sincerity. “When we started 30 years ago we had just 100 staff and still have 44 of the original team with us,” he recalls. “A recent group photo had 38 of the 44 – I think the rest were on vacation at the time.” The aspect of staff retention has been an enduring feature throughout the company’s 30 year history. Dubai Duty Free only recruits externally for entry-level sales and warehouse staff. All other roles are filled internally. “I think a very successful part of our business has been the development of our staff,” says McLoughlin. “Many years ago we introduced an internal promotion policy. We haven’t recruited a senior 62

person in Dubai Duty Free for the past 13 years. All managers and supervisors are people who started with us from operative level and worked their way up.” Coming up through the ranks has given them valuable insights into the issues staff face on the ground. Streamlined operationS Dubai Duty Free now alternates with Incheon Airport in South Korea as the world’s largest duty free sales operation. In 2013 the company is expected to achieve sales of US$1.8 billion. It sold 75 million pieces of merchandise and had 25 million transactions through its tills. It moves the more than 500 pallets of product from its 27,000square meters, 90 per cent automated warehouse in Al Ramool to its retail areas across Dubai’s different airport concourses. But the overarching aim is that customers should not even be aware a delivery is happening.

Every pallet is X-rayed and sealed before leaving the warehouse. In this respect the company receives excellent support, speedy access and good security from Dubai Police and the airport authorities, McLoughlin acknowledges. “Things do run very smoothly. Of course, like all companies, we make mistakes but I think the whole thing runs so independently because of the effort and the ethos of the company. “I honestly believe we have the best team in the industry anywhere in the world. If somebody is in charge of one functional area, operations for example, and sees a problem elsewhere they flag it up. Every night we have a senior manager on duty, and we always have senior representation on weekends and public holidays. We are all here and accessible. It’s part and parcel of the job.” Operational performance translates into the company’s sales figures. “In 1984 our average sales per head was US$5. Last year it was US$48, and we don’t think all of that is attributed to inflation. Last year we sold to 49 per cent of departing passengers. At Heathrow, Singapore and Hong Kong airports, the figure is more like 20 per cent, so Dubai Duty Free is considerably higher. Of course to some extent, our sales figures grow in relation to Dubai’s own passenger traffic. Emirates Airlines is now the world’s fourth largest carrier with 48 million passengers per year. flydubai has become the second biggest carrier into Dubai with around 60 routes. 64

But our aim is to have our sales ahead of passenger traffic and through the 30 years we have been good at that.” Staying ahead Dubai Duty Free has more than kept pace with the Dubai aviation industry’s phenomenal growth. In an independent study conducted in 2012, the company was chosen as a case study in innovation by the Emirates Competitiveness Council (ECC) and featured in the Best Practice Report launched at the Global Competitiveness Council Forum held in Dubai. The study showed that over 28 years, traffic through Dubai International Airport had grown by 1700 per cent while Dubai Duty Free business had grown by 8200 per cent. At the same time, Dubai Duty Free enjoys huge support from the government. McLoughlin describes his boss, HH Sheikh Ahmed Bin Saeed Al Maktoum, President of Dubai Civil Aviation Authority and Chairman of Dubai Duty Free, as a ‘superstar’, incredibly busy but always willing to lend support. “Because Dubai Airports and Dubai Duty Free are both governmentowned, there is great co-operation between us. Design and layout are discussed before any construction begins. This means Dubai Duty Free is all-integral to the expansion plan from the very beginning. “We are also part of the ICD (Investment Corporation of Dubai),

so whatever the Dubai Government decides we should do with our profits is their decision and since year one we have been helping to finance projects at the airport. More than a year ago we borrowed US$1.75 billion, which has now been drawn down and has gone towards projects such Concourse D.” In terms of the company’s contribution towards the wider Dubai economy, “72 per cent of everything we sell, we buy in Dubai,” he says. “Of course we import some items which are not economical to buy locally, but we buy around US$1.23 billion worth of merchandise from Dubai. Our import to Dubai is 6000 staff, who all live here and are paid here, so that’s quite a contribution.” There’s been the recent opening of the company’s Dubai World Central Operation with a longer-term retail space allocation of 64,000square meters. With a further 6200square meters of retail space at Concourse D due to open in 2015, Dubai Duty Free’s sales are forecast to reach US$3 billion by 2018. As part of its 10-year plan, expansions will see the company recruit more operational staff, increasing the headcount from its current 6000 to 9000. With this in mind, Dubai Duty Free constantly has its eyes fixed on staff accommodation options, which range between rented and owned properties based on prevailing circumstances. “We have 13 plots in Silicon Oasis, which we might do something with in the future, but could be staff accommodation,” says McLoughlin. “We also have 735 apartments, or 15 blocks, at Discovery Gardens, which we bought with our future expansion in mind – especially at Dubai World Central. Over 2,000 staff are living there currently.” 66

Staying relevant Advanced point of sale systems feed daily sales information back to head office to be analysed at daily morning strategy meetings. “We change our product range all the time, taking into account the change of traffic through the airport and shifting customer needs,” comments McLoughlin. “25 years ago during the Iran-Iraq war, Iranian passengers wanted to buy a US-made fleece-lined anorak. When Russians started coming they wanted fax machines and car accessories, so in Terminal 2 where Aeroflot flew from at the time, we sold car kits, jacks and things like that. “Nowadays it’s all talk of the Chinese and we’ve conducted studies and surveys on what kind of products they like – certain brands of watches, luxury liquor and perfumes. We have 577 Chinese staff as that’s what’s needed, and we’ve installed dual language as required. Although Chinese passengers currently make up just four per cent of Dubai’s airport traffic, they account for 16-18 per cent of our business.” In terms of the overall future of the global duty free industry, “I think it’s good and secure,” feels McLoughlin. “The total value of the global duty free market is US$50 billion, half of which is at airports. Despite ongoing efforts to control the sale of tobacco and cigarettes by the relevant associations, the duty free industry continues to grow, so there’s a very positive feeling about it globally. “I think that we have a great company. We want to provide good value and we do.” dv

dv asked George Calombaris of MasterChef Australia to reveal his culinary
travel secrets during his most recent trip to Dubai.

eorge Calombaris makes tough judgments for a living, both as a judge on the hit Network Ten series MasterChef Australia and when he’s creating for his flagship The Press Club Restaurant, which inspired the eponymous cookbook. Named by Global Food and Wine Magazine as one of the world's Top 40 Chefs of Influence, this Australian chef is conquering the world as a restaurateur, author and TV personality. Inspired by his Greek heritage, he began his career at Melbourne's Sofitel, cooking under culinary geniuses Gary Mehigan and Raymond Capaldi. Soon, his own signature style earned him international accolades, as winner of the Bonland National Apprentice of the Year and as Australian representative at the Bocuse d'Or International Culinary Grand Prix in Lyon, France. Despite his great success, he has never forgotten that his adoring Australian fans are what propelled him to become a homegrown hero. The Press Club was Melbourne's first Modern Greek restaurant, and put Calombaris’ culinary prowess on the map, locally and internationally. In 2008 it was named 'Best New Restaurant' and Calombaris was awarded 'Chef of the Year', making Melbourne's list of Top 100 Most Influential People.
What is your favourite travel destination? Greece, for me, is wonderful. I love the feeling, the people and the food. My favourite spot is a little untouched beach called Agious Sostis in Mykonos, but please don’t tell too many people!
What's the best way to integrate travels with a passion for good food? Travel is a great way to inspire your cooking at home. When you travel you should be looking out for cultural foods that will inspire you, giving you an opportunity to share that with your family when you get home.
What is your favourite airport restaurant?
Where is your favourite spot to relax in Dubai?
I have to confess: when I am in Dubai airport, I had to have a Shake Shack burger!
Olive oil. Greek, of course! (Laughs)
Bloomingdale’s Dubai is brilliant. I have picked up many pieces from the home store to use in my restaurants. Also, Atlantis, The Palm is my home when I’m in Dubai so I love it there. I really get very well taken care of. I even swam with the dolphins!
What is your biggest travel pet-peeve?
What is your favourite restaurant in Dubai?
A dirty plane. Speaking of food, I take my own on board; it makes me happy.
I recently discovered an Armenian restaurant called Mayrig. It’s very traditional and very tasty. Make sure you try the munti.
What is your long-distance travelling beauty regime?
Do you ever bring anything that reminds you of home? I bring my own snacks to get me by, and I listen to my own music.
Can you describe your culinary impression of Dubai? I think I have been to Dubai about a dozen times in the past 10 years. I see it grow every time I am back and it’s great to see more local concepts opening. This is the way to go, I believe: embrace the local culture.
Is there any culinary “don’ts” when one travels? I would try to eat as much local food as possible. Your best friends are taxi drivers: ask them where they eat.
Any advice for those about to enjoy Dubai’s culinary scene? Source cool local stuff but also check out the top chef’s places: try and do a bit of both.
How do you entertain yourself on long flights? I like to write menus, as there are no distractions.

I like to eat light. It helps you get into the time zone easier. When I land, it’s all about embracing the local culture and cuisine.
NYC has some of the most amazing restaurants and cafes, but Melbourne has it all too. dv
