Let’s take a minute here, and pat ourselves on the back. Yes, we spent the last few weeks geeking out at Dubai’s answer to Comic-Con, laughing at Maz Jobrani’s self-deprecating humour and revisiting Lionel Bart’s legendary musical OLIVER!... but also doing good across the UAE. The second ride of the Pink Caravan campaign was launched with its ongoing aim of spreading breast cancer awareness, over 200 runners raced up the 52 floors of Emirates Towers to raise Dhs170,000 for Médecins Sans Frontières, residents participated in Walk Now for Autism to highlight the need to integrate special needs children in the community, and the Terry Fox Run returned for its 18th edition with 100 per cent of proceeds going towards UAE-based cancer research. The streak continues through May with philanthropic efforts taking place at home and abroad: Sacha Jafri’s The Child Within Us installation will be auctioned to raise funds (an expected amount of over Dhs1 million) for the Al Noor Training Centre for Children with Special Needs in Dubai. The artwork was inspired by the artist’s incredible journey visiting refugee camps and orphanages in 42 countries across 5 continents over 4 years. Soon after, locally-based charity Gulf for Good will take off for its Wild Wall Challenge, during which a group of 25 thrill-seekers will hike along the magnificent Great Wall of China to raise funds for the country’s most deserving children’s charities. Bon appétit Say aloha! to the one thing that was missing from the ingenious mix of whimsical décor, eclectic tunes and fresh fruit cocktails at Mahiki: food. Thanks to chef Marcus Chant at the reins, you now start your evening with the delectable new menu of appetisers, signature entrées and off-menu favourites like tuna tartar steak and pan-fried scallops… all served with hints of Polynesia, of course! and if a night on the couch is called for instead, you might be of use to the folks at Red Tomato Pizza: the pioneering pizzeria is the first in the world to trial the VIP Fridge Magnet, a gadget that allows customers to order from home with the press of a button.

Live and learn With improv comedy, writing and tap dancing classes on the menu, the spring schedule at dubomedy arts – the region’s first and only comedy and urban arts school – is better than ever. Catering to everyone from the "just for fun" crowd through to aspiring professionals, classes kicking off this month include From the Page to the Stage with six weeks of writing and performance workshops taking place from May 7 – June 11. Starting May 13, a high-powered, one-week workshop entitled Acting For Film & Television will be led by guest coach bashar atiyat, who’s been involved with several Hollywood projects including Syriana, bel air, The Landlord and more.

Let the beatlemania begin: Harvey Nichols dubai will bring a taste of Liverpool’s award-winning Beatles Story attraction exclusively to the Middle East to mark the band’s 50th anniversary. unveiled this month will be a window scheme showcasing a visual journey through its musical career with a variety of graphic elements and exclusive footage. You can also expect to see recently discovered photographs of the Fab Four shot in 1963 and 1964, hear live music by tribute band The Mersey beatles, buy special beatles memorabilia at the unique pop-up shop and catch four original Madame Tussauds waxworks of the band on display.

Running until June 16, the solo exhibition will portray the diversity and fragility of human emotions and experiences. Carbon 12 will host photographer Jamie baldridge and painter bernhard buhmann at an exhibition entitled Versus from May 7 – June 15. discover both artists’ contemplative approach to their media as they tackle the relationship between acceleration and demise. From May 9 – July 15, Referencing History at Green art Gallery will bring together a selection of renowned arab and Eastern European artists. all are united in their fascination with history after growing up under a restrictive regime and witnessing its disintegration.

Comic relief We still remember Whose Line is it Anyway? as one of the funniest improvisational shows to hit uK and uS screens. acclaimed comics from the uK Comedy Club have people worldwide laughing with their startlingly fresh and on-the-spot comedy… and they’re back at The First Group Theatre from May 10-12. The format of the show is simple: you shout out a suggestion and they act it out in a hilarious, zippy (and sometimes out of control) manner. The laughs continue with the funniest member of Monty Python's Flying Circus – that’s basil Fawlty to you Fawlty Towers fanatics – during An Evening with John Cleese from May 23-26.

It’s time to turn a blind eye to that calorie-counting app on your cell and celebrate the "Your body is your temple" mantra as International No Diet Day encourages us to appreciate the bodies we have. Mary Evans Young of the British group Diet Breakers created this day in 1992 after personally experiencing anorexia. Festival De Cannes is a private film festival held annually in the French resort town of Cannes. It was founded in 1946, when an international cinematographic festival was created in France in response to fascist Italian and German governments selecting films for the Mostra del cinema di Venezia. Cannes is now an important and prestigious showcase for European films. Moonrise Kingdom, the new film by American screenwriter and director Wes Anderson, will open the 65th edition of the festival. Famous Italian actor and director Nanni Moretti has been named President of the Jury, while Marilyn Monroe was selected as this year’s icon to mark her 50th death anniversary.

Formally known as Les Internationaux de France de Roland Garros, the French Open is held in Paris and has the widest global broadcast audience of any tennis event. It is the second of the four annual Grand Slam tournaments, and the only one still held on clay. Because clay courts slow down the ball and produce a high bounce, the advantages of big serves are taken away. Consequently, the French Open is widely considered to be the most physically demanding tournament in tennis. This year will see Na Li attempt to defend her historic victory as Asia's first ever singles Grand Slam winner while Rafael Nadal will be shooting for a record breaking 7th Roland Garros title.

International No Diet Day

The World Health Organisation estimates that over 300 million people worldwide are asthmatic with 250,000 deaths attributed to it annually. Asthma is a chronic lung disease characterised by recurrent breathing problems and symptoms such as wheezing and coughing. The Global Initiative for Asthma (GINA) has been organising World Asthma Day since 1998 in collaboration with health care groups and educators to raise awareness about the disease and improve related care. Taking place on the first Tuesday of May, each World Asthma Day has a theme that is chosen by GINA, which then prepares and distributes materials and resources; this year’s theme is You Can Control Your Asthma.

is dubai maintaining its love of superlatives? Guilty as charged. dv looks back at the 17th running of the dubai World Cup, the world's richest horserace. words Samia qaiyum

T

he Dubai World Cup is the city’s biggest and most anticipated social and sporting event: where else would you find a group of horseracing enthusiasts, VIPs, international celebrities, Dubai’s most qualified partygoers and people looking for yet another excuse to dress to the nines? Held at the Meydan Racecourse, the 17th running of the Dubai World Cup was full of equestrian firsts and dramatic events, but more on that later. The $10 million Dubai World Cup race was a fitting finale as Monterosso, ridden by Mickael Barzalona, outclassed an impressive field to win for the Godolphin operation of HH Sheikh Mohammed Bin Rashid Al Maktoum, Vice-President and Prime Minister of the UAE and Ruler of Dubai. Speaking to CNN’s Winning Post, Sheikh Mohammed said: “We haven't won this race for a few years. So to win it really… it's a great, great feeling. Not only for me, but for the United Arab Emirates and all our people.” The 18

group 1 race gave him a 1-2 finish as Capponi took second place, with Emirati jockey Ahmed Ajtebi on board three lengths away. While Godolphin’s previous Dubai World Cup winners were prepared by Saeed bin Suroor, Monterosso and Capponi gave their Dubai-based trainer Mahmoud Al Zarooni his biggest success. The stable also had Prince Bishop and Mendip in the world’s richest race but it was evident that Monterossa and Capponi would steal the show by putting the pressure on hot favourite So You Think from the 600-metre mark. Planteur, ridden by Ryan Moore for Newmarket-based Marco Botti, finished in third. Barzalona marked his victory with the same flamboyance as his success in last year's Epsom Derby, standing high in the saddle with his arm in the air as he crossed the winning post. “I just had to, I had no choice,” he said. Courtesy of this recent win, the 20-year-old is rapidly carving his name into racing history

and he will soon join the Godolphin stable at Newmarket in England as a retained jockey. Earlier in the day, racing fans were provided with one of the greatest races of the day when Cityscape, ridden by British jockey James Doyle, accelerated to victory to claim the $5 million Dubai Duty Free Race. The winning horse, owned by K. Abdulla, was trained by top British trainer Roger Charlton. Cityscape took the lead at the top of the stretch to post an impressive four-and-a-half length victory over Christophe Soumillon’s Mutahadee in a time of 1 minute, 48.6 seconds. This was a first group 1 victory for a horse with a series of near misses on his record, most notably in Hong Kong in December when he was denied in a photo finish. The winning jockey was ecstatic: “This horse has an amazing turn of foot. He just kept finding; he was even idling a little in the closing stages. It was a great feeling and the biggest day in my life.”

A spectacle as grand as the world’s richest horserace calls for a spectacular closing event: enter Toni Braxton. The Grammy-winning singer made her debut in Dubai with a selection of her greatest hits; she hit the high notes to Unbreak My Heart and belted out the Man Enough For Me before moving on to some of her newer tracks. The party continued as DJ Dirtcaps from Amsterdam kept partygoers on their feet until well into the early hours.

She came, she broke into a sport that traditionally feels like a boys' club and promptly found herself the centre of attention – meet Canadian jockey Chantal Sutherland, the first woman to ride in the $10 million Dubai World Cup race. The 36-year-old was hoping for victory on Game On Dude to cheer trainer Bob Baffert after he had suffered a heart attack in Dubai earlier that week, unfortunately for both, the horse wound up in 12th place. Here’s hoping she’ll return for the Dubai World Cup next year.

Doyle was also delighted to accept a special invitation to take part in the Dubai Duty Free Shergar Cup, the world’s premier international jockey’s challenge. Presenting the invitation were HH Sheikh Ahmed Bin Saeed Al Maktoum, the president of Dubai Civil Aviation Authority and chairman of Dubai Duty Free, George Horan, the president of Dubai Duty Free, and Sinead El Sibai, the vice-president – marketing of the company, together with Charles Barnett, the CEO of Ascot race course. To mark the 17th edition of the Dubai World Cup, HH Sheikh Hamdan Bin Rashid Al Maktoum, Crown Prince of Dubai, presented Horan and El Sibai with the Sponsor’s Appreciation award earlier in the afternoon. As group 1 race sponsor of the Dubai World Cup, Dubai Duty Free entertained more than 150 guests in the Meydan Grandstand, an elegant suite that overlooks the racetrack. The evening, which featured entertainment between the nine races, culminated with an extravaganza of fireworks lighting the sky before the Dubai Duty Free race kicked off. As part of the evening’s celebration, the airport retailer conducted a special Finest Surprise draw and announced Dubai-based Ali Mallah the winner of a magnificent Bentley Continental Flying Spur. The Dubai World Cup takes place under the patronage of Sheikh Mohammed. dv

The $1 million Dubai Gold Cup was added to the World Cup card this year and its debut will be remembered for years to come after the dramatic race saw Fox Hunt euthanised after breaking both his forelegs in a horrendous fall just past the 300m mark in the 3,200m contest. Jockey Silvestre de Sousa escaped without injury but was understandably shaken up. The group 3 race was initially declared void but was later rerun, with jockey Frankie Dettori emerging victorious on Opinion Poll.

Race? What race? Even more important (to the ladies, at least) was the glitz and glamour of the whole deal. Ambitious as ever, they donned overthe-top hats, brightly coloured dresses and heels not actually made for walking to secure a winning spot in the Jaguar Style Stakes. Whether you think of bartolomeo Scappi, Marie-antoine Carême or Julia Child as the world’s first celebrity chef, it’s time to journey east to meet the pioneering culinary stars that have unveiled the trendier face of asian fare. WORDS Samia Qaiyum

o fully explore the colours, flavours and fragrances of Asian cuisine would be a daunting – albeit deliciously daunting – task… one that neither my wallet nor waistline can take on at the moment. Think about it: the southwest style has its roots in the Persian-Arabian civilisation and comprises cuisines from India, Pakistan, Sri Lanka and Burma while the northeast traditions of China, Korea and Japan emphasise the use of fats, oils and sauces. In

contrast, the southeast style spans Thailand, Cambodia, Vietnam, Indonesia, Malaysia and Singapore, where foods are supplemented with delicate spices and seasonings. Throw in an endless array of regional variations and historical influences, and you can start to see my point. The immense popularity of – or rather obsession with – Asian fare across the globe is undeniable and to learn more, I decided to turn to the experts. My research led me to a list of the 10 most searched for celebrity chefs

on the Internet, which included names like Jamie Oliver, Bobby Flay, Wolfgang Puck and Mario Batali. One thing that didn’t surprise me? That the vast majority of the chefs are male. One thing that did? Asian chefs were notably absent from the list. Luckily for me, three big names from the culinary world were recently in Dubai and took time out between TV appearances, writing cookbooks, greeting groupies and opening outposts in glitzy cities to discuss their unwavering talent, love and passion for Asian cuisine:

BOBBY CHINN

A journalist once approached him in a supermarket in Hanoi, asking: “What the hell are you doing here? You are wasted here. You should be in London, New York, L.A.” With his trendy eateries serving fusion-style dishes, many may share this sentiment about Bobby Chinn, but the Vietnam-based chef assures me he is staying put. Our conversation – one brimming with expletives and hilarious anecdotes from his childhood – revealed that his path to becoming the country’s most sought-after chef was an unconventional one.

Born to a Chinese father and an Egyptian mother in New Zealand, Bobby famously refers to himself as an “ethnic mutt”. He was schooled in the UK, discovered his passion for cooking in the USA and trained as a chef in France after working as a stand-up comic and Wall Street financier. Prompted by his father, he moved to Vietnam in 1995 to learn about the food and has stayed for everything else. With its fresh herbs and subtle seasonings, Vietnamese food can be considered one of the world’s healthiest cuisines and is rapidly gaining popularity worldwide. Bobby jumped on the bandwagon early, figuring it would be the next ‘big thing’: “The Vietnamese are masters of grilling, salads and broths. They are able to learn from both the East and the West in addition to borrowing some Chinese cooking techniques. They basically created modern cuisine 1,000 years ago as compared to Western haute cuisine chefs who had only begun discovering the beauty of simple, light food 20 years ago." The chef’s colourful background is more than visible at his two outposts: the awardwinning Bobby Chinn Hanoi and the recently opened Bobby Chinn Saigon, where French techniques meet Middle Eastern spices and South East Asia’s finest flavours to produce Pan-Pacific cuisine like no other. His signature dishes at the Hanoi outlet include green tea smoked duck, roasted squab wrapped in crispy rice paper and rice dumplings with mung bean purée, while the Saigon eatery draws inspiration from Chinese traditions with small plate entrées for shared meals.

What really brought Bobby into the limelight, however, was his World Café Asia show on the Discovery channel; it took the nomadic restaurateur through cities like Beijing, Taipei, Chennai, Malacca and Manila as he explored local flavours through markets and street stalls “Food all over Asia is off-thecharts good,” he raves. Vietnam, according to him, is the best spot on the world map for a true epicure because of its street food. “Bangkok is also fantastic. I never go to the really swank restaurants; I’m eating where the transsexuals are eating: it’s cheap, it’s good and it’s where it’s all happening,” he adds. One thing you have to know about Bobby? People either love him or love to hate him… something not lost on the charismatic chef. And how does he feel about the ‘celebrity chef’ label? “It’s embarrassing and very humbling because there are so many great chefs who hate my guts and think, ‘Why is that guy on television? I can cook better than him’. And it’s true. I’m just lucky… am I lucky or is it a curse?” Only time will tell.

NOBUYUKI MATSUHISA If there’s one gastronomic destination where an A-list celebrity sighting is practically guaranteed, it’s one of the many Nobu outposts peppered around the world. The chef-proprietor behind the world’s most recognised Japanese restaurant is Nobuyuki Matsuhisa, known simply as ‘Nobu’. Once referred to as “the man who re-invented Japanese food” by Jean-Georges Vongerichten, his empire consists of 24 Nobus and 5 Matsuhisas worldwide. What few know, however, is how he survived a fire and subsequent bankruptcy on the route to culinary stardom. I met the Michelin-starred chef just before the signing session for his Nobu's Vegetarian Cookbook; several of his fans were clamouring for a photo-op and he graciously obliged before we began. I quickly see an unexpectedly cheeky sense of humour lurking behind his language limitations: “Yes, I’m married,” he says with a wholehearted belly laugh when I tell him my next question is going to be a tricky one. Like Bobby Chinn, he finds Asian the most exciting of all cuisines: “Asia has a long history, and a very strong food history.” He resides in Los Angeles and constantly travels to check on his restaurants. “I would go to my birthplace, Japan, exclusively for the sushi.” Nobu realised his dream of becoming a chef at the age of 12 and worked his way up from washing dishes at a Tokyo restaurant to becoming co-owner of a small sushi establishment in Peru at 24. His time here triggered the beginnings of his signature style: incorporating South American

ingredients into traditional Japanese dishes. He credits his Ceviche Nobu Style as the most creative dish he has ever created, and it was in Peru that he first paired sashimi with lemon juice.

After a brief stint in Argentina, he opened a restaurant in Alaska that burned to the ground during an ill-fated night away and left Nobu debt-ridden. He managed to work his way back to solvency in Los Angeles, and later opened Matsuhisa in Beverly Hills. An instant success, it was here that his friendship and business relationship with Robert De Niro began. The actor invited Nobu to set up a restaurant in New York in 1994… and the rest, as they say, is history. So what’s next for the globetrotting chef? “We have a new project called the Nobu Hotel in Las Vegas; the expected opening is in November.” The Nobu-branded hotel will be the first of its kind in the world. “We’re then opening one in Riyadh in the first or second quarter of 2013,” he continues. Considering all the hardships he’s faced along the way, I ask what advice the Nobu of today would give to the 18-year-old who started his culinary journey as a dishwasher. “Be patient and passionate,” he says. “My philosophy is that one should make everything with passion: love, food, music, paintings… everything in life requires passion.”

ATUL KOCHHAR “Diversity would be the one word I’d use to describe the beauty of Indian food,” says the London-based celebrity chef and restaurateur Atul Kochhar… and we agree. During his time at Tamarind in London, Atul rose to fame as the first Indian chef to be awarded a Michelin star. He received his second after opening Benares, which features contemporary Indian dishes like cuminbraised lamb and Goan-spiced mackerel on the menu. He personally recommends the soft shell crab appetiser: “I’ve drawn inspiration from East India, so I marinate the crab in mustard oil, garlic and chili paste.” About growing up in India – where being a celebrity chef is not something many aspire to – he says: “I believe in doing what your heart says. Find your passion, not your bread-winning formula, and you’ll wake up with a new energy every morning.” Atul faced the all-too-familiar pressure to follow a traditional career path, and found himself in medical school… only to drop out mere weeks later. Like Nobu, the acclaimed chef is credited for re-inventing the cuisine of his motherland. Unsurprisingly, Atul – like his counterparts – is incredibly fond of flavours from all across Asia. He enthusiastically tells me about his favourite London-based eatery: “There’s a Thai restaurant called Busaba Eathai; I don’t eat there because it’s cheap, but because I love it. They’ve probably made a lot of money because of me so they’ve expanded to three or four branches now.” The conversation then turned to ingredients: “I’m embarrassed to admit that you’ll always find the cheapest possible slices of cheddar cheese in my fridge. They make my children go ‘eeuugghh!’ but I’m just hooked. I often return home tired, and make myself a cheese sandwich… for me, that’s very fancy! Chaat masala is most versatile Indian ingredient; it’s a classic blend and has all the spices you can think of. You can sprinkle it over fruit, finish sauces with it and use it to marinate meats. Chilies are overrated because we Indians don’t use them for a kick of heat, we do it for flavour.” And what’s underrated? “The vegetarian food of India: we don’t portray it well; it has a very dull image abroad. French chefs have suddenly started cooking more vegetarian options and the whole world is going ooh la la. I say, look at India: over 75 per cent of the population is vegetarian so they should learn from us. If – one day – I could open a purely vegetarian restaurant, I would actually

charge more because it’s more effort, more science and more skill.” The months ahead promise a lot more excitement for Atul and his many fans: he’s currently writing his third cookbook entitled Curries of The World and is due to open Rang Mahal, a fine-dining Indian restaurant, in Dubai at the end of this year. “My book celebrates the use of spices; people often describe spicy food through the word ‘curry’ so it just made sense to use it in the title,” he explains. On a final note, I ask him which one ingredient is most akin to his personality. “No one has ever asked me that before!” he replies baffled. “I would love to say I’m as cool as a cucumber, but I’ll say I’m like cinnamon or fennel: they both have a very calming effect, and so do I.” dv

here are some who believe that Hercules was the founder of Barcelona, and it’s easy to understand why. With more than five million people, the largest metropolis on the Mediterranean has a cultural stronghold on Europe. And as the capital of the autonomous community of Catalonia, it's infused with traditions found nowhere else on the continent. The entire city is designed to honour its many adopted children with monumental gifts – Miró, Gaudi and Adrià, to name a few. Enjoying life’s pleasures is serious business in Barcelona and investing guarantees a wonderful return.

The Catalan architect and artist Antonio Gaudí is the unofficial godfather of Barcelona. This master of Modernism used his palette of ruled geometric forms to create six masterpieces throughout the city. His most famous work is the Catholic Church, the magnificent Sagrada Familia, which he started designing in 1883. The cathedral has already been deemed a UNESCO World Heritage site, although its construction still hasn’t been completed. Visitors can view the details by visiting the nave, crypt, museum, shop and the Passion and Nativity towers, even though it won’t be fully finished until at least 2026.

The city’s central corridor, Las Ramblas, is a well-trodden path for tourists and locals alike. Actually a series of small broken-off streets, the 1.2-kilometre promenade runs between the historic Barri Gotic and the diverse El Raval districts. It connects Plaça de Catalunya in the centre with the Christopher Columbus Monument at Port Vell. Street performers, including 14 “human” statues, dancers, musicians, magicians and marionettes perform atop pavement mosaics by Miró and alongside the cafes, restaurants and small shops whose wares include everything from songbirds to Gaudi replicas.

Even those who aren’t gastronomically inclined are familiar with Ferran Adrià, a father of contemporary cuisine. His El Bulli restaurant, which closed on July 30 last year, brought Catalan cuisine to the world and spawned international culinary movements. But food lovers need not fret: Tickets, Adrià’s newest restaurant, pairs his avant-garde sensibility with Barcelona’s tapas culinary tradition. With his brother as his partner, Adria’s approach is more democratic, with a circus-like atmosphere (including a maître’d with top hat) that quickly dispells any notion of pretension over pleasure. It’s the city’s most charming and most visited museum. Since opening in 1963, the Museu Picasso has revealed how Barcelona was instrumental in the artist’s formative years (his father taught only a short distance away). More than 3,800 works make up its permanent collection, a firm wish of Picasso before he died. The museum’s collection of fine art, jewellery and other objects is exhaustive up to the artist's Blue Period, and features a series of other activities to cultivate dialogue through education and research about Picasso’s work and legacy.

The elegance of Barcelona is most evident in its jewelbox corners and pockets of cultural life, and Cafè de l’Òpera is the city’s premiere location for watching the city live and breathe. Located on Las Ramblas, it was created in the 18th century as a tavern and by the mid-19th century it had blossomed into a chocolateria following the craze for Viennese-style coffee houses, complete with a collection of classical mirrors conserved to this day. Just a few years later, it blossomed into a cafe-restaurant for the upper classes and aristocracy, and in 1929 was acquired by its current owners and hasn’t stopped running its 18-hour a day business, even during the Spanish Civil War. After several renovations it still boasts a classical style, but has warmly embraced the city’s modern aesthetic with open arms.

It’s the only modernist concert hall to be declared a UNESCO World Heritage site: the Palau de la Música Catalana. Since its construction between 1905-1908 by Lluís Domènech i Montaner, its bright, light-filled concert hall has been the centre of Barcelona’s cultural life. In the ensuing century it has been updated twice under the direction of architect Oscar Tusquets and today it still hosts concerts of all genres and styles, as well as congresses, conferences, social events and exhibitions. Visitors can tour the different halls in the Palau and also purchase tickets for upcoming programmes. A must-see for music lovers and architecture addicts.

Overlooking Barcelona is Monjuic, a large and shallow hill offering an unmatched view overlooking the city. Boasting the metropolis’ largest park, it plays host to the botanical gardens and The Joan Miró Foundation, as well as the cemetery where Miró is buried. At the foot of the hill is Mies van der Rohe's German national pavilion, demolished in 1930 and rebuilt in 1988. Visitors can get to the top of the hill using the Funicular de Montjuic, a funicular railway that operates as part of the Barcelona Metro, and then a gondola lift.

globalvista While hundreds of passengers embark on a recreation of the Titanic voyage to mark the tragedy’s centenary, others travel in search of spirits to explore the spookier side of Florence. words Catherine belbin

Modelled on four ships hulls, the Titanic Belfast, the world’s largest Titanic visitor attraction has opened, on the site where the ill-fated cruise liner was built. The 14,000-squrare-metre building, clad in about 3,000 aluminium shards, houses nine interactive galleries that explore every aspect of the Titanic story, as well as the Titanic-themed banquet venue and suite. An almost identical replica of the ship’s Grand Staircase is another focal point of the museum, which is expected to attract over 400,000 people in the next year. The opening of the Titanic Belfast, located on the banks of Belfast’s River Lagan, is part of multi-million-dollar waterfront regeneration project that aims to put the Northern Irish city, already named as one of the top 20 travel destinations for this year, firmly on the world tourist map. If spirits and spooks are you thing check into the Savoy Hotel in Florence and sign up for their sinister tour of the city. Join the ghost hunters – accompanied by a sentinel who was tasked to protect the city more than eight centuries ago – and discover its mysterious dark side. Enjoy an eerie historic walking tour through the ancient Roman streets leading to encounters with ghosts inside forbidding towers and learn about San Miniato, the beheaded saint, murders and mysteries before returning from the nerve-tingling alleyways. It’s certainly a far cry from the usual tours of the Ponte Vecchio and the Uffizi gallery. Man’s eternal fascination with flying continues to soar and so does the demand for the world’s first flying car. Called Transition, the prototype of the two-seater flying machine took to the skies recently for an eight-minute flight flying at just 427 metres (commercial jets fly at 10,668 metres). Massachusetts-based company Terrafugi is developing it and already has deposits from more than 100 pre-launch customers who want to own one, even if the price tag is just shy of $300,000. The vehicle, which drives like a normal car and is equipped with foldable wings, will not be seen soaring from bottlenecks on the highway though as it needs a runway for take-off. Drivers will also need to obtain special licences to pilot the Transition. Since the 1930s, inventors have been attempting to create a flying car and this is the closest that anyone has come yet to achieving this feat. Butlers chocolates are already favourites with travellers through Dubai International and the company is now planning to open a number of Butlers Chocolate Cafés in the UAE as part of its 80th anniversary celebrations. The award-winning concept was conceived in Dublin in 1998 and now serves chocoholics across the world from Britain to New Zealand and Pakistan. Founded in 1932, the Irishowned manufacturers of luxury chocolates exports to more than 40 countries and will soon be serving their speciality hot chocolate at their exclusive cafes in the UAE, the first of which is scheduled to open before the end of this year. dv

The big picTure dubai airports’ conservation efforts are paying environmental and financial dividends as the organisation recently reported the results of 2011 energy and fuel saving initiatives: CO2 emissions were reduced by 72,793 tonnes, 131.9 million gallons of water were saved and dhs15.9 million in fuel savings was achieved. “We take our environmental responsibility very seriously and as we step up efforts to limit our footprint, it’s becoming increasingly clear that green business is good business,” said Paul Griffiths, CEO of dubai airports. dubai international (dXb) is an efficient global hub whose two largest airlines (Emirates and flydubai) have young, fuel-efficient fleets featuring the latest aircraft technology. That – combined with dubai’s geocentric location that effectively reduces flying time and the number of required connecting flights – limits associated emissions. aside from these efficiencies, dubai airports continues its aggressive campaign to conserve water and reduce power consumption across both of its airport properties. by installing energy-saving lamps and occupancy sensors, re-setting air conditioning by a mere three degrees (from 21 C to 24 C) and implementing chiller management systems, dXb managed to save over 21.4 million kilowatt/hours of electricity worth dhs8.13 million, equivalent to 9,993 tonnes of CO2 during 2011. at dubai World Central (dWC), the conservation of 2.242 million kWh of electricity saved dhs1.04 million and equivalent 1,906 tonnes of CO2 during the same period. Water conservation efforts led to a reduction of 126.45 million gallons and savings of dhs5.06 million at dXb last year. dWC saw water savers introduced in all facilities, resulting in the conservation of 696,000 gallons of water worth dhs27,840. additionally, the use of treated sewage effluent water for irrigation has resulted in the saving of 4.75 million gallons of potable water worth dhs190,000. during the year under review, the company also set a new standard in the region with the installation of the largest solar panel array for any airport in the Middle East. Thanks to the considerable contributions and support of longstanding partner air bP, the array consists of 92 panels of high efficiency photovoltaic cells providing 21.6KW capacity. Located atop the airport's Car Park b, it provides enough power to fully offset the energy consumed by the lighting and plasma displays in the airport’s historical photo exhibition. The installation has a lifespan of 25 years and will continue to provide free, clean energy to dXb during its lifetime. another successful initiative, which continues to yield substantive fuel and CO2 savings, is the airport’s stand hold policy that limits the number of aircraft taxiing and queuing at the runway; the intention is to absorb any delay time on the stand whilst the aircraft engines are shut down. This contributes to a fuel saving in addition to keeping the airfield free of congestion whilst providing an optimal flow to the runway. Last year, this policy generated 530,621 minutes of reduced engine run time and saved 5.3 million gallons of fuel (or 19,332 tonnes) and reduced CO2 emissions by 60,894 tonnes. dubai airports also joined other energy-conscious organisations across the world on March 31 to mark Earth Hour by switching off all non-essential lights across dXb and dWC. The former’s demand for electricity dropped by 17 Megawatts from 82 MW to 65 MW during the one-hour event. “Our ultimate goal is to contribute to the development of a clean, sustainable future in which airports, aircraft and all ancillary services are carbon-neutral,” added Griffiths. “aviation’s sustainability is of vital importance to dubai. it currently supports over 250,000 jobs and contributes over dhs80 billion in economic activity. by 2020, that contribution will increase to 320,000 jobs and dhs161 billion. as an industry, we still have a long way to go to achieve our environmental goals but each incremental step forward we take is a step in the right direction.”

Freight forward dubai international (dXb) won another prestigious industry accolade as the best airport for Cargo in the Middle East at the air Cargo Excellence awards, recently held in Kuala Lumpur, Malaysia. Their outward nine got off to a rocky start with a double bogey six on hole number one their tenth, they showed great determination and came back with two birdies to recover and post 37 on their back nine for a total of 73 to win by three from Simon doyle and adrienne Fullerton. The pair of Nick and Rea Tarratt went one better this year by winning the Nett division; they narrowly lost out by one shot in 2011, but posted a brilliant 67 to win by three strokes. If you could perform at one venue repeatedly, which would it be? It’s in Paris: le Puy du Fou. It was recently awarded a prize for the best park in the world and is really unique. I sing at a special show there every year around Christmas time.

How do you train and maintain your voice? If you study singing, it takes about seven to eight years to adequately prepare your voice because it’s not easy to call yourself a professional classical singer. I love working indoors, with space and without a microphone. To perform indoors, you have to be taught the right techniques and go through years of training. I have to do breathing exercises to stay in good form, which is most important, and I also work with a coach. It’s very special work that involves your body, except that you can’t see what’s going on inside… you can only feel it so it’s important to have someone trustworthy who acts like a mirror.

How would you explain opera to an alien that’s just landed on Earth?

AriAs in ArAbiA Classical mezzo-soprano Edita Adlerova rose to fame when she played the title role of Georges Bizet's Carmen at only 19, becoming the youngest to do so in Czechoslovakia’s illustrious opera history. She has since established her reputation in the concert repertoire and was recently in Dubai to perform at the Stars, Food & Art gala event. Is this your first trip to Dubai? It is, and the entire experience of being here and performing was a real joy. Dubai is a wonderful place; I’m proud to have been able to sing here. Today is my only day off as I spent yesterday preparing for my performance… I hope I’ll be able to see everything around town. Everything is so huge! I’m from the middle of Europe, which is an old place with very old buildings. It seems so small after comparing it to Dubai.

You’re performed in all over Europe, Morocco and now the UAE. What is your favourite destination as a tourist and as a singer? I don’t get to travel much as a tourist because when I go somewhere, I’m there as a performer. And the few days I get off, I love to be at home and just relax. I’ve been able to see a lot of places during my travels as a singer, but I don’t have a favourite. Every 66

country is interesting in its own unique way. One that is wonderful, though, is a venue where I performed recently: the Palau de Música in Barcelona. It’s a very special hall with intricate sculptures and it was a very extraordinary experience for me.

How do you explore a new city? It depends on where I am and on my performance. If I have free time before my concert, I stay in my room; I have to be quiet and prepare myself. Afterwards, if I’m lucky and can stay in the city for a while, I’m always drawn to its major landmarks. But usually, my time is spent at the performance venue and the airport.

Best city in the world for an opera enthusiast? It’s definitely Milan, Italy. Opera was born in Italy and the best singing techniques came from there.

We’re living in a time when opera seems like a very old form of art. I’ve noticed that many famous opera houses have found ways to modernise it... sometimes it works, sometimes not so much! I perform more at concerts now than opera houses; maybe there’s a reason: there’s a very famous opera singer in the Czech Republic who told me I could be in the last good period of opera and even she doesn’t know when it’ll end. I’m finding other ways to keep singing. I need to be able to choose my repertoire, so I prefer the creativity of performing in concerts.

Can you share a surprising aspect about working as a classical singer? I can talk about the back view I experience as a performer. It’s not just that I’m on stage, and the audience is on the other side; I feel their presence and energy. For me, what’s most important is that I keep their attention. It’s a great feeling when they get involved. Classical music can sometimes feel very reserved, the audience can get detached. Initially, they’re shy and don’t know if it’s appropriate to applaud while I’m singing; I can see they want to so I encourage them. I love interacting with the audience, it’s why I’ve been doing this for so many years.

Which singer are you currently obsessed with? I love Jim Cullum, whose music is somewhere between jazz and pop. But you know what my all-time favourite sound is? Silence! When you work constantly with music, you just need it. dv
