I’m a big fan of Contrast Wellness. They’ve really nailed the wellness experience offering both infra-red and traditional saunas as well as ice baths and IV drips. The rooms are equipped with Netflix capable TVs, so I can switch off and engross myself in an episode of Friends while I rid my body of toxins and relax. @contrastwellness
We recently stayed at Bab Al Nojoum’s Al Mugheirah resort in Abu Dhabi. We opted for an Airstream, which was furnished modernly. Cliché as it may be, an afternoon in the desert is always a winner for our family. We like to head out past Al Qudra with a picnic in tow and spend the afternoon admiring the sand dunes, the ducks in the lake and enjoying the view looking back on the city.

At the turn of the new millennium, the era of celebrity was at its peak, and the names and faces filling TV screens and Walkmans defined pop culture. Among those at the very top of their game were The Spice Girls: a five-piece British band that embodied girl power. By 2000, five had become four, and each member of one of the world’s biggest groups had begun working on their own material, with solo stardom in their sights. When Mel C, also known as Sporty Spice, made her solo Dubai debut in March 2000 (The Spice Girls had performed as a group back in 1997 at then-hotspot, Cyclone), she spoke exclusively to What’s On in one of her most in-depth interviews as a solo artist. She shut down rumours about a possible Spice Girls split (although the band would later break up in February 2001), opened up about stage nerves, and shared her struggles coping with life in the limelight. That issue, our 263rd, was particularly star-studded, and also featured an interview with outspoken popstar, Boy George. Having reformed Culture Club in 1998, his interview was an entertaining reflection on life in the 1980s, his musical influences, and the evolution of his performance style. But this wasn’t What’s On’s first foray into celebrity exclusives. Back in 1982, I scored an exclusive interview with boxing legend, Muhammad Ali, when we were one of the Muhammad Ali and myself in 1982 first titles to sadly learn of his Parkinson’s diagnosis. Two years later in 1984, football superstar George Best also spoke exclusively to me during a visit to Dubai. And in
the years that followed, several big names from the sports and music worlds have graced the cover of What’s On, solidifying our position as the region’s number one entertainment magazine. UB40 frontman Ali Campbell talked all things music in What’s On’s February 1999 edition; we interviewed tennis ace Roger Federer in February 2008 on his love for the city; and in February 2009 we had an audience with that year’s Dubai Jazz Festival headliners, James Blunt and John Legend. On the subject of festivals, this month Dubai is gearing up to host its first mega festival, Untold Dubai. Expect huge headliners, a fabulous festival atmosphere, and unforgettable memories at Expo City Dubai from February 15 to 18.

their Antipasti Misti section, including the tonno di tonnara, citrus marinated tuna carpaccio with fennel, spring onions and orange salad. Refreshing and light, it echoes our sun-soaked table, overlooking the gorgeous Al Maryah Island canal. We’re served the mulinciani alla norma next, fried eggplant with roasted cherry tomato, basil puree and baked ricotta cheese, bursting with classic Italian flavour. Spheres of fried arancini with rice, saffron, veal ragout and mozzarella arrive in the arancini alla Siciliana, offering pure indulgence in every bite. Among bites of le panelle, the crispy chickpea
chips and a slice of the pizza a taglio, you’re introduced to a tremendous tide of Sicilian indulgence. The brunch cart swiftly returns with the pasta al forno, with baked rigatoni, veal ham, beef ragout and a medley of proteins. Hearty and tasteful, we’re satiated and then some. But if you aren’t, the Viaggio in Italia cleverly offers an optional main course, with solid additions such as the dentice al forno con potate, for an added Dhs100. Our dessert for the afternoon is the cannoli de ricotta, which only tops the mouthwatering torta di pistacchio cake because we’re lifelong connoisseurs of the former. A
bu Dhabi’s The Galleria Al Maryah Island’s steady metamorphosis into a burgeoning beehive of innovative concepts has capitalites and visitors speculating what the hulking lifestyle hub has in store next. Teetering on the threshold of 2023’s final quarter, we wondered that, too. Enter Perlage, the Tashas Group’s uber-chic, sleepily glamorous bubbly bar, and Galaxy Bar’s sultry little sister, where refined luxury comes to you six days a week. We find ourselves walking through the curtains in to one of the more unique concepts we’ve been introduced to. Shimmering deep red hues entice you as you’re seated at a lounge exuding an aura of its own, as red spheres float mesmerisingly up above, almost akin to the bubbles in our glasses. Servers and mixologists are clad elegantly in uniforms that complement the décor, all part of one big masterpiece. Chances are you’d choose to sit by the bar and admire a life-sized sculpture of a
bottle of bubbly, but we sink into one of Perlage’s cosy booths, plush couches cradling us after a demanding week. We’re handed our menus: chic and pocketsized, complete with red velvet binding and gold lettering that unravel a cleverly crafted, pun-punched, impeccably concocted cocktail menu. We order the Cool Bananas (Dhs98), complete with Perrier-Jouet grand brut, clarified banana and verjuice, bringing an almost tropical, sweet beverage to the table. Perlage does fruit-based cocktails oh-so-well, and grain-based beverage lovers that we are, we’re served the How ‘bout them Apples (Dhs75) next. With pomme soda and black cardamom, every sip unlocks a different note. The Born to be Wild (Dhs120) is surprisingly tame, in that you can take your time savouring every sip and flavour it packs amid strawberry, crème de cacao
and notes of cedarwood. For connoisseurs of more traditional beverages, you can explore an endless range of bubbly, aperitifs, mezcal and more as the willingness to linger at this venue only grows as your night progresses. Some nights are serene here, mirroring Al Maryah Island’s placid charm as you lose yourself in Perlage’s elegance, on others, this is where the party is. One attribute, however, is a mainstay: this concept truly is the pearl necklace on the stunning silhouette of Tashas Group, true to its French moniker. A new Mediterranean restaurant bringng affordable and tasty fare to Yas Marina

rom the minds behind a series of stunning, yet diverse concepts that’ve sprouted like mushrooms on Yas Marina, comes Éla Éla. From the same team as the classy Penelope’s jazz bar and the Japanese dim-lit charmer Mr. Moto, Mediterranean dining has a new address at Éla Éla, which translates simply to ‘Hey Hey’ in Greek. Located right by the ‘grammable #YASMARINA sign, the exciting Greek restaurant boasts an ambiance that’s equally enjoyable indoors as it is alfresco. Inside, there are large tables for big groups, while a more discreet seat can be
found at the picturesque bar. Whichever you choose, you’ll be served specialities from the mezze list such as the taramasalata or the oysters, or dive into super starter selections we’ll elaborate on in a second. We begin with the tzatziki dip (Dhs35), a fresh, tasty mezze pick topped off with dill oil, dill powder and cucumber, on a cool afternoon. For starters, we opt for a classic Greek salad (Dhs65), which is interestingly missing the black olives we’re used to, but packs in terrific taste via feta, olive tapenade, and oregano oil. Crispy calamari with lemon mayo (Dhs55) allows us to indulge, and for mains, the whole grilled seabream (Dhs215) with caper vinaigrette and dill packs Mediterranean goodness in every bite, as we savour this classic seafood special with a side of Greek potatoes (Dhs35). “W
e shouldn’t keep what we know to ourselves, if we want to grow and become creators,” star chef Alain Ducasse said recently in an interview. “Sharing of knowledge is essential.” He was discussing the latest string to his bow: Ecole Ducasse Abu Dhabi Studio, the first Middle Eastern outpost of his acclaimed culinary institute, which opened in December at Cultural Foundation Abu Dhabi. A partnership with Erth Hospitality, it is a fusion of the French finesse that Ducasse-trained culinary maestros are renowned for, given regional flavour through the local knowledge and talents of Erth Hospitality’s own culinary disruptors. The result is a creative and educational space that aims to welcome all, from casual cooks looking to improve their at-home skills, to top chefs in Abu Dhabi’s top kitchens that wish to hone their craft to Michelin pedigree.

Located on the third level of the Cultural Foundation, the industrialfeeling, state-of-the-art class studio feels like it’s been plucked straight from the set of a fancy cooking show, with workstations in metal and stone in-built with hobs and neatly arranged with professional pots, pans, and essential utensils. The space is flooded with natural light that streams in from a wall of floor-toceiling windows that opens to the rooftop Ecole Ducasse Café, where food cooked by the masters – rather than the students – is served. It’s all been very thoughtfully designed, with a neat row of fridges and ovens on one side of the workstations, and a wall of ingredients and extra utensils on the other. Just beyond that, there’s a lovely small lounge area where guests can relax once their work in the kitchen is done and enjoy the fruits (or pastries) of their labour. There’s also a second side to Ecole Ducasse that’s less like an interactive classroom and designed more as a reallife replica of a professional kitchen, where advanced one-on-one sessions are delivered for trained chefs to have the opportunity to learn from the best. Back in the classroom, we’re here for one of Ecole Ducasse’s most popular amateur sessions at the studios in Paris, Manila, Bangkok, and India: a macaron masterclass. Tasked with turning us into Ducasse protégé’s is chef Farhat Lahmer, who heads up the Abu Dhabi studio as executive pastry chef. By the time we’ve picked our workstation and aproned up, he’s already weighed out the dry ingredients for our macarons, and we’re quickly sifting the almond powder, icing sugar and cocoa powder, then whipping up our meringue from egg whites and granulated sugar, before folding the powder into the shaving foam-like egg whites.
There’s a printed recipe sheet that’s easy enough to follow, but we enjoy hearing tips and tricks from chef Farhat, who patiently demonstrates each step in a clear and encouraging way, showing us the best way to fold the mixture to retain the air, and the right vigour to put behind the gentle mixing of the ingredients. The next part is one of our favourites, and once we’ve filled the piping bag with the chocolatey mixture and attached the right nozzle, we’re delicately piping each macaron disc onto a baking tray. Then, we leave them to crust (something chef Farhat tells us many pastry chefs neglect), before putting them in the oven for a precise 14 minutes. During this time, he passionately shows us around the kitchen, discussing some of his own creations (chocolate is his area of expertise) in a way that inspires us to want to return for the chocolate class, before moving on to demonstrating how to make our rich tonka bean ganache for inside the macarons. We bring to boil the cream, butter and tonka beans, allowing the beans to infuse with the creamy liquid, before pouring it over disks of milk and dark chocolate in a jug. We whisk it up, then let it set, without allowing it to become too firm.
The final act is to put the two parts together, and we get to go back to piping – this time the rich ganache – onto our cooled macaron shells, making a generous, neat ball of ganache on one half, then covering with a second shell by lightly pressing the two together. It’s somewhat of an art to put the two pieces together without cracking the shell, which takes us several goes to master, but the result pays off, and we leave impressed with our final product. We’re about to tuck in when chef Farhat gives us his final piece of advice: “You need to refrigerate them overnight for the best consistency and taste,” he smiles, seeing our slightly disappointed looks at having to wait another 24 hours to put them through the taste test. He was right, of course, and the next day we’re rewarded with indulgently chocolatey sweet treats far superior to anything we’ve made in the kitchen before. abudhabi-ecoleducasse-studio.ae

Since pop diva Mariah Carey opened the show on January 6, Saadiyat Nights music festival has welcomed a string of A-listers to one of the world’s most picturesque isles. The inaugural Saadiyat Nights music festival has been a showcase of local and internationally renowned musical icons, each belting out their biggest hits at the purpose built, open-air Saadiyat Nights stage. STING At the turn of the new year, Sting took to the stage at Atlantis, The Palm, performing some of his biggest hits from his illustrious solo career as well as his time in The Police. TOM JONES Did Sir Tom Jones imagine he’d still be belting out his biggest hits at 83 when he released them? Probably not. But here we are, and he’s still entertaining sellout crowds, well over 60 years after his career began. The Welsh singer’s unmistakably robust voice has lent itself to myriad genres over the last six decades, from pop and rock to country and even gospel, a true testament to Jones’ diversity and mass appeal. His record sales have topped 100 million worldwide, and his tracks have landed him in the UK Top 40 no less than 36 times. Most notably, this has been with tracks such as his very first number one, It’s Not Unusual, which landed in the charts in 1965. It was followed up with still-popular songs like What’s New Pussycat? later that year, and then
Green, Green Grass of Home in 1966. His smash hits also include sing-along treasures like Delilah, She’s a Lady, Mama Told Me Not to Come, and many others But Tom Jones’ mass-appeal is as much about his stage presence as it is about his catalogue of award-winning hits. JOHN LEGEND A singer, songwriter and pianist, John Legend’s signature sound that fuses soul with sultry R&B has earned him a sensational tally of awards includes 12 Grammy wins, an Oscar, a Golden Globe, a MOBO and an Emmy. Not a bad collection for a musical man whose career began singing in the church choir, when he went by his birthname of John Roger Stephens. His career was catapulted to stratospheric heights in 2004 with the release of his first major label album, Get Lifted. Buoyed by the now beloved ballad Ordinary People, it kickstarted a two-decade career for Legend that would see him release nine studio albums and 39 singles. Almost everyone will have heard of what is this appropriately named song man’s biggest 13 x Platinum hit – All of Me. A track that tops many a first dance wedding playlist, All of Me was originally written for Legend’s wife Chrissy Teigen and has been streamed on YouTube no less than 2.3 billion times. But his range and musical flexibility beyond this sort of emotion-laden ballad is truly impressive. Four categories will comprise this section of the event, as the ‘World Cosplay Summit Preliminaries’ offers contestants an opportunity to travel to Japan and represent the UAE at the World Cosplay Summit finals in Nagoya. At MEFCC, you can also participate in, and witness entries across three cosplay categories, namely ‘Best Craftsmanship’, and ‘Best Performance on Stage’ with a prize pool of Dhs35,000 up for grabs, and the ‘Best Kids Cosplay’ category where every young ‘un is a winner. WHO’S COMING TO THE CAPITAL? Fans can meet Troy Baker, the American voice actor and musician best known for his role as Joel in The Last of Us, as Snow Villiers from Final Fantasy XIII and Jonesy in Fortnite. orn a Crime funnyman Trevor Noah brings his Off The Record tour to Abu Dhabi this month for some capital laughs. Born in Johannesburg during the Apartheid legislation, he has accounted in his biography and on stage the struggle he went through growing up as a mixed-race child. He attests a lot of his comedic flair to this. In the beginning of his career, Noah regularly played the comedy circuit across South Africa, before relocating to the United Sates in 2011. His rise to fame was steep and steady, until 2015 when he landed his biggest role to date, as the host of The Daily Show. But his love affair with the stand-up stage continued, and through the course of the last decade he’s hosted a string of Netflix specials and countless comedy shows around the world.

A frequent visitor to the UAE, back in 2016 he praised the emirates for their diversity. He told What’s On, “There’s an old anecdote that travel is the antidote to ignorance and every time I come to the UAE I see and learn something new.” Adding further praise for the cultural diversity and harmony among different backgrounds here, he described how enjoyable it was to see how well it all works. Injecting his signature observant comedy into the interview, we laughed out loud when he likened Dubai’s taxi drivers to F1 drivers. HAMILTON We knew Hamilton was good, we didn’t know it was this good…
H
amilton is in Abu Dhabi after long days and nights of anticipation – and what an entry it is. The brainchild of performing arts everyman LinManuel Miranda, who does just about everything - from singing to composing to songwriting to acting to rocking men’s stockings circa the Regency Era (the casual stack of awards, one of which is a Pulitzer, no less, is the evidence of that) – it is a spectacle of pure theatrical excellence. But we knew that, didn’t we? We’ve read the praise, leaned in to the wordof-mouth hype and caught glimpses of it on social media. The international rendition of the show, different to the original, pioneering production only in terms of the performers, is every bit a Broadway dream of lyrical acrobatics come true on the Etihad Arena stage. For the uninitiated, Hamilton, as the name would suggest, follows the life and times of Alexander Hamilton, one of the Founding Fathers of the United States of America and the first Secretary of the Treasury during George Washington’s presidency. Hamilton came from nothing – he
didn’t have much to his name, but he had intelligence and the power of the pen, which he wielded to make waves and drive change. The magic of Hamilton is less the folk-heroesque glory of its namesake protagonist, because the true story of that world is more divergent than what we’re told in this interpretation, and more the heightened, enlightened juxtaposition that comes from the incredible rap, hip-hop and R&B that makes this musical. It’s more the story of the people around Hamilton – his wife and lifelong companion; Eliza Schuyler, Angelica Schuyler, his sister-in-law and a woman for whose wit and wonder he held deep respect; his companions in revolution John Laurens, Marquis de Lafayette, and Hercules Mulligan; his rivals, Thomas Jefferson, Aaron Burr and James Madison and his mentor, George Washington. The storytelling is stellar – the words draw you in and hold you there till you’re transported to a time you never knew through a portal you’d never expect. Jason Arrow as Hamilton is faultless, quite literally, with a voice and emotion that sounds so much like Miranda’s, it’s almost trippy. The rest of the cast are
just as perfect, if not more, taking on their roles with conviction. The singing? Top tier. The stage design? Accurate but still theatre-stage friendly. The costumes? Incredible to witness, as the actors break it down in dance moves most definitely not Regency. Essentially, every part of the production hits the spot. Hamilton does not romanticise the hero, does not glorify him as this pinnacle of perfection. It talks openly about his affair, how he broke his wife’s heart by not only bringing another woman into their lives, but also by airing their dirty laundry out in the open in order to save his own name, how he was loud and obsessive and self-absorbed and the cause of the country was the damaging cause of his life. How perhaps, he held more than just admiration for Angelica. So, yes, you root for Hamilton, but you also hate him a little bit, and that’s just the reality of larger-than-life personalties like his. Critically acclaimed director Farah Nabulsi talks to What’s On about her Palestinian roots, what gets her creative juices flowing, and what’s next after The Teacher…
The Present (2020) is one of the most moving, emotionally-charged pieces of cinema you’re likely to find anywhere in the Netflix catalogue. At its narrative core it’s the story of a man taking his daughter on a trip to buy an anniversary gift for his wife. Which doesn’t sound like the most compelling plot recipe until you learn that this father and daughter are from Palestine, and their journey requires them to pass through multiple checkpoints within the Israel-occupied West Bank. The short film won more 50 International Film Festival Jury and Audience Awards, a BAFTA Award and an Oscar Nomination. This month its director, the justly-acclaimed Farah Nabulsi, premieres her follow-up piece, ‘The Teacher’ which was also filmed on location in the West Bank, and tackles those same subjects of surviving purgatory, human connection, and – with tragic topicality – the realities of living under occupation. We were lucky enough to catch up with Farah ahead of its GCC release on February 8. This is what she had to say… For both The Present and The Teacher, there seems to be deep value attached to the importance of human connection. Is this something 48 FEBRUARY 2024 | WHATSON.AE
you deliberately try to focus on, or is it just a natural product of the setting or the way you like to tell stories? For sure it’s just a natural result of the way I like to tell stories, but in the end I believe each storyteller is influenced sub-consciously by their own outlook on life, relationships, upbrining, personal belief system and experiences. I am a mother of five children, and someone pointed out to me recently that all my films so far, (except my very first one) seem to focus on the parent-child connection in some way or another, and I was blown away, because I hadn’t actually realised that – but it’s absolutely true. In The Teacher specifically, the Father-Son relationship plays a significant role in the film. You could say it’s even the glue that holds the entire story together. The love of a parent and what they would be willing to do for their child, to cope with their loss, to get them back, or deal with guilt in relation to their child – is integral to everything that takes place, whether it be the BasemAdam, Basem-Yusef or Simon-Nathaniel father-son relationships in the film.
As a mother myself, it’s this love for my own children, and that human dynamic and connection as a parent to them, that defines so much of who I am and speaks to so much of what I know and feel as a human being. There is no doubt that translates into who I am as a filmmaker. As somebody born in raised in the UK with Palestinian heritage, how do you feel this duality has informed the sorts of themes you’re attracted to? I am acutely aware that I have had the privilege of having one foot in the West and one foot in the Arab world, especially Palestine – and I think that has been part of influencing the themes I am attracted to and has served me in having my own unique approach to them and the way I explore them as a storyteller. That said, in terms of themes specifically that I am attracted to, it’s less about my cultural or ethnic background and more about wanting to make films that matter to me not just as a creative, but as a human being. I like to explore themes and subjects that matter to me on a deep and personal level.
I read an art critic who said: “We cannot make art without a sense of identity, but it is identity we seek in making art.” That resonated for me. I think it’s making films about things that interest me and matter to me, but at the same time I am figuring out who I am, both as a filmmaker and as a human being, and as I actually make my films I am also learning what interests and matters to me in the process as well. Where does your creativity come from? Is there an organic process to evolving your ideas? For me, the creative process is certainly more organic than it is structured. I am not the “sit down and write three hours every single day no matter what” kind of writer, filmmaker. Sometimes the ideas come gushing out during an exercise or yoga session, or

while lying in bed trying to sleep, and I have an entire scene thought-out or a new twist in the story has emerged, or I’ve figured out how I want to shoot a particular scene, if I’m at that stage of the creative process, and I rush to write it down. Other times I might go days, even weeks when nothing is flowing, nothing is coming to me or even inspiring me. It seems to be peaks and troughs, floods and droughts for me. I think all artists also have an element of divine grace downloading through them and in some ways we are conduits. Pragmatically, I do keep notes though. Lots of notes. Which elements within The Teacher do you hope audiences pay attention to most of all? I think it would have to be the theme of Justice or Injustice. The idea that having no recourse to justice is quite literally one of the most painful things a person has to contend with in life. What it means when you or someone you love has been wronged or subjected to such cruelty, criminality, violence or oppression, and then having no recourse to justice. What that can do to an individual or to a whole community, is something I hope audiences will contemplate. What can you tell us about what’s next for Farah Nabulsi? I much prefer to hold my cards close to my chest and tend to refrain from talking about something until it’s well on its way to being made. But I have started working on a new screenplay, based on a story I had worked out during Covid. It’s a story about identity and what one would be willing to risk to be able to achieve an ultimate dream. I really hope I’ll be able to direct it and see it through to that finish line. bu Dhabi’s own WTA-500 tournament is almost here, and we’re super excited that the second edition of the Mubadala Abu Dhabi Open (MADO) is coming to the capital. For those tennis lovers that have been around in Abu Dhabi long enough to remember when the Mubadala World Tennis Championship came to town all those years ago as an off-season exhibition, you’ll realise how big MADO is for the tennis scene here in the capital, in the UAE and in the region.
