Lemon Lavender

FIZZ SODA

Recipe by: Brittany Wood Nickerson, guest herbalist Excerpted from Recipes from the Herbalist’s Kitchen Ingredients 7 1/2 cups water 1/2 cup raw, local honey 1/4 cup organic lavender flowers* 1 Tbsp. organic white wine vinegar 1 organic lemon, sliced into 1/4-inch rounds Directions Combine all ingredients in a clean, half-gallon jar, cover with lid, and shake well until the honey has dissolved. Set aside to ferment, covered, at room temperature for 2 days. After 2 days, strain out the lavender and lemon. Transfer the liquid into glass bottles with screw caps*, leaving about 1/2-inch of headroom in each bottle. The lids need to be tight fitting to contain the carbonation that will develop. If the lids do not fit tightly, the carbonation will escape from the bottles, leaving you with a delicious, but noncarbonated beverage. Set the bottles aside in a cool, dark place to ferment for 3 days. Then open one of the bottles. If the soda is still not carbonated, put the lid back on and let the bottles continue fermenting. Taste regularly. The length of time needed to produce carbonation will vary depending on the temperature and the activity of the yeasts in your fizz. Once the soda reaches the desired carbonation, transfer bottles to the refrigerator. The cold temperature will slow the fermentation process and maintain the carbonation level. Sometimes a bit of mold can form on the surface of the soda during the fermentation process. This is just surface mold, and the soda is still good. Simply remove mold and enjoy. *Offered by Mountain Rose Herbs

Marshmallow & Rose

PASTILLES

Recipe by: Irene, Chief Marketing & Customer Officer Ingredients 2 parts organic marshmallow root powder* 2 parts organic rose powder, plus extra for coating* 2 parts organic slippery elm bark powder* 1/2 part organic licorice root powder* Raw, local honey (or maple syrup) Herbal extract/tincture* of choice (optional) Directions Mix all powdered herbs together. The parts can be a teaspoon, tablespoon, or any other measurement depending upon how many pastilles you want to make. Slowly mix honey into the herb mixture and thoroughly blend until it has reached a dough-like consistency. Herbal extracts can also be added in place of some of the honey. We like osha, sage, elder berry, or echinacea, depending on your desired effect. Pinch off small sections of the “dough and roll into small balls, discs, or other shapes. Then roll in extra rose powder to coat. Set the finished pastilles on wax or parchment paper and place in a warm place to dry. A food dehydrator can also speed up this process. Once completely dry, wrap in wax or parchment paper and store in an airtight container in the fridge and ingest as needed. They will taste best if used within 1-2 weeks. *Offered by Mountain Rose Herbs
