News from the Kitchen! By Caitlin Karrenberg, Kitchen Manager We’re really excited about all the new things coming out of the Kitchen! We’ve been trying new soup recipes, and they’ve been very popular! The Creamy Turnip Soup made from MVM Farm Turnips was a hit, in addition to the Chicken Lemon Caper Soup, made with Mary’s Free-Range Chicken. We’ll continue to try out new recipes so call us or stop in to either location to see which fresh soups are being featured. We’ve also been working with our Fresh Meat Department to include more fresh meat into our menu. Whole Roasted Chickens are now available in the Grabn-Go case. We make all the sauces and herb blends from scratch using whole, organic ingredients. So far, we’ve featured Herb Roasted Chicken, Cajun Roasted Chicken, Orange Ginger Roasted Chicken, Korean BBQ Roasted Chicken, Lemon Pepper Roasted Chicken, and the sinfully delicious Bacon-Wrapped Sriracha Roasted Chicken. We offer Organic and Free-Range options so call us or stop by to see what’s available. We’re always working to improve and expand our menu. We’re kicking up our Breakfast game to include freshly made biscuits and gravy, cheesy grits, breakfast burritos, and hot oatmeal. Down on the Farm

Come meet our new sheep!
March is an exciting month at the MVM Farm. It’s warming up very quickly and covering our crops at night is finally a thing of the past! We are almost done planting our Spring crops (beets, kale, carrots, arugula, etc.), and we’ve started our Summer veggies in the greenhouses (tomatoes, eggplant, peppers, basil, and more!). We are also gearing up the field for summer planting by preparing beds and making compost. If you haven’t already heard from our Facebook or Instagram, we’ve added heritage breed sheep to the farm. Three ewes and one ram are helping us by eating our bermuda grass and weeds and making fertilizer for our soil. By temporarily housing these animals at the farm, we are also helping a local farmer raise them for their wool. The wool will be sent off to the Navajo people who spin it into textiles. We are grateful for the sheep because they add to our biodiversity, make our manmade system more closely resemble a natural ecosystem, and create another educational opportunity for those who visit. Our NMSU interns, Deb, Veronica, and Ben, are also hard at work with their projects. Along with daily farm chores, each intern has selected a specific area of interest to concentrate on. Deb is working on adding native and perennial species to the farm, such as chocolate flower, cacti, and medicinal perennials like yarrow and echinacea. She is going to see how well they do here under different conditions. Veronica is identifying and raising different sources of fish food. Some of the potential sources include soldier fly larvae (which also have composting benefits) and crickets. We are hoping she will set us up for a sustainable food source for our fish into the future. Ben is concentrating on composting and experimenting to see if we can successfully compost bermuda grass under high heat so that it does not persist. He is also doing some work to perfect our bokashi composting methods. The farm is constantly growing, so this year is going to be even better than the last. Look out for more MVM Farm produce in the Co-op and at the Farmers’ Market at Ardovino’s Desert Crossing on Saturday mornings in Sunland Park. And as always, we love to have volunteers out every Wednesday and Saturday morning so come on out and help us pull some weeds, feed the animals, and plants some veggies!

I’ll be going over how to get ready for planting in April and how to make sure your plants thrive throughout the season without the use of harmful synthetic fertilizers or pesticides. Saturday, March 1st – 10 am to 12 pm Spring Planting Workshop: This workshop will demonstrate the who, what, where, and when of your organic Spring Garden. You will learn which plants to get growing, how to start them, when to plant them, different techniques of planting, and how to make sure they flourish throughout the season all without the use of any toxic chemicals.
