T
here’s something different about Gelataio, Palo Alto’s newest gelato shop and the first retailer to open at brand-new development Lytton Gateway. It might be the two faucets behind the counter, reminiscent of “Charlie and the Chocolate Factory,” out of which pour continual silky flows of milk and dark chocolate (in which employees dip wafer cookies, a traditional gelato accompaniment). Go see it for yourself if you don’t believe this reporter. It might be the visibly creamy rows of gelato — from hazelnut and chocolate to saffron and kumquat — that are made from scratch with all organic, as-local-as-possible ingredients in an open kitchen just feet away from the glass case the gelato is served from. But above all, it might be the sheer passion and commitment of a firsttime food operator with no experience in the industry, but who loves gelato so much that she traveled to Europe multiple times to do her own hands-on Continued on next page

research; attended immersion gelato programs in Italy; installed a test lab in her own kitchen to try out different combinations and methodologies; and spent a year and a half searching for a suitable space to open up shop in Palo Alto, finally doing so this month at 121 Lytton Ave. Christianne Mares, who originally hails from Mexico, says she’s always been passionate about (read: indulged in) ice cream, but was mostly used to the American version until she spent a decade living and working in Germany, where gelato is more common. “It was so good, so creamy and so different than what I knew,” she said. Fast forward to some years later, after she moved to Palo Alto and met her husband, Jorge Borbolla. The couple had three children and she eventually decided to take a break from her career in the tech industry. An indulgent family trip to Italy in summer 2012 solidified her passion for gelato and inspired her to bring what she learned and observed there back to Palo Alto. That summer, the family “went from gelateria to gelateria” throughout Italy, visiting Flor-

ence, Lucca, Bologna, Naples, Amalfi and Sardinia. It was at first for pleasure but soon became more serious, the couple said. “We noticed there’s better and not so good (gelato), even in Italy,” Borbolla said, “and we
very quickly started seeking out where we went.” What made the most critical difference, they said, was making the gelato fresh every single day, on site. Other techniques, such as how much fat to add (Gelataio recipes have 8 percent) or how
much air to let in (the amount of air is what distinguishes gelato from ice cream, with gelato being churned at a much slower pace so as to let in less air than ice cream), Mares learned in two two-week immersion programs at Gelato University. The school,
founded in 2003 by major gelatomachine manufacturer Carpigiani, offers crash courses on everything from best practices for making gelato to the science behind the Italian-style ice cream to how to develop a business plan for a successful gelato shop. Gelataio (which means ice cream man in Italian) is a merging of two worlds: that of traditional Italy, absorbed by Mares on these trips, and that of California, land of fresh, organic produce and a supreme appreciation of handmade artisan food. It fits well with Palo Alto sensibilities that have been applied over and over at local ice cream shops, but not yet to gelato. So inside Gelataio, customers will find chocolate gelato made from a special mixture of Toblerone chocolate, cocoa powder and other chocolates; pistachio made from a pistachio paste Mares made herself; and, if you caught it last week, a kumquat sorbetto made with kumquats from a neighbor’s tree. Available sizes and prices for cups are piccolo (small) for $3.99 (up to two flavors) and regular for $4.99 (up to three flavors). A grande size ($5.99) is coming soon, the menu reads. Get your fix in a piccolo cone for $4.50 or regular for $5.75. Take-home pints are

There’s also what Mares calls “alternative gelato,� such as popsicles (gelato frozen and then dipped in milk, dark or white chocolate), piccolino (adorable miniature ice cream cones that are filled with a miniature scoop of hazelnut gelato and then dipped in dark chocolate, then topped with chopped hazelnut, $3.15 each), gelato sandwiches ($3.99), and dairy-free gelato made with almond, rice or coconut milks. Four main flavors — chocolate, vanilla, hazelnut and mint chip — never leave the menu board, and the rest change every few days. On a recent afternoon, the case was stocked with hills of creamy stracciatella (chocolate chip), saffron, peanut marzipan and cajeta (Mexican caramel, this reporter’s favorite). There are no toppings besides the traditional wafer, which is dipped in your choice of either Callebaut Belgian milk chocolate or 71 percent dark chocolate from Guittard Chocolate Company in Burlingame). Everything is made in the on-site open kitchen. Mares even pasteurizes the milk herself before mixing it and blast freezing it (which creates a critically essential “crust� of cold that protects the gelato from melting, holding the air and consistency at the ideal level, Mares and Borbolla explained). It’s served at a temperature of 10 degrees Fahrenheit, rather than the typical zero degrees of a home freezer, Borbolla said. Down the line, you might see more unconventional flavors that Mares plans to develop (she

Despite all the abundant traces of traditional Italy, Mares said the shop is, at the end of the day, California-inspired. “In the end, as inspired as we were by the methodologies and tradition of Italy, one thing became very clear to us — and I really wanted to highlight that we have an amazing food culture here in California, and we have amazing fresh produce,� Mares said.
“We felt that we were actually far ahead of the mainstream in Italy as regards the use of fresh, organic ingredients. This was the last piece that was missing for us, and the element that rounded out the whole concept. We love California, and Gelataio is an expression of the best of both worlds.� V

WHEN THE GAME STANDS TALL 001/2 (Century 16, Century 20) In a sense, “When the Game Stands Tall” — the Hollywood-ization of De La Salle High School’s legendary Spartans football team — is about what it’s not about. It’s not about winning. It’s not even about the football. Rather, it’s a values-driven parable of character. Since Concord’s De La Salle is a Catholic school, it lends itself well to a “faith-based” film, though screenwriter Scott Marshall Smith and director Thomas Carter have the good sense to tread relatively lightly around the Jesus stuff. Noted Jesus portrayer (and fan) Jim Caviezel plays storied coach Bob Ladouceur, who oversaw the Spartans’ unprecedented 151-game winning streak. Unchallenged dominance doesn’t serve the drama of a sports movie, so of course the real story is in the dynasty beginning to crumble. Health issues sideline Ladouceur, just as son Danny (Matthew Daddario), a Spartan receiver, finally hoped to make something of his situation with a football-obsessed dad. A tragedy of gun violence fells a Spartan. And, yes, the streak ends, as the new batch of seniors takes its success for granted, and De La Salle steps up to face a well-matched rival in Long Beach Poly. Can Ladouceur put the pieces back together? And should he, given the toll on his family (including his wife, played by Laura Dern) and enticing job offers at the collegiate level? When the script focuses on process and philosophy, the film functions best. “When the Game Stands Tall” takes interest in how Ladouceur formed boys into men by empowering them to take ownership of their growth and success and care about excellence more than 24
wins. The players author “commitment cards” spelling out their achievable personal goals for improvement, practice and work out on a grueling schedule, get perspective by visiting wounded veterans, and formally gather to pour out their emotions to each other and thereby bond as a team. But this wouldn’t be a sports movie without hyped-up drama, and “When the Game Stands Tall” has its fair share of soap-operatic emotional displays, climactically capped by a schmaltzy, manufactured, arguably absurd “Rudy”-style moment. Carter previously helmed the high-school basketball film “Coach Carter,” also of local interest, about putting academics first. There’s little here about the student side of student athletes, but we do get a fictional running back (Alexander Ludwig) with an off-the-shelf jerky dad (Clancy Brown) that compares poorly to surrogate dad Ladouceur. Ludwig’s character insists, when seriously injured, “The only way I’m going out of this game is on a stretcher.” There’s implicit heroism in his attitude, disconcertingly so as the game soul-searches about its physical toll on players, perhaps especially school-age ones. Of course, we’ve seen the “Full eyes, clear hearts, can’t lose” ethic before on screen, and more winningly dramatized, but “When the Game Stands Tall” does a good, and family-friendly, job of encapsulating Ladouceur’s “winning” approach to life as well as the game: putting in a no-regrets “perfect effort from snap to whistle.” Rated PG for thematic material, a scene of violence and brief smoking. One hour, 55 minutes. — Peter Canavese

(Century 20) “Romance novels” function on idealization, including fulfilling a teen’s yen for drama — any kind of drama — to alleviate the tedium of school days and curfew nights. And so impossibly cute romance meets tragedy to mix up ye olde rom-dram formula, whether it’s “The Fault in Our Stars” or its on-the-heels screen sibling “If I Stay,” based on Gayle Forman’s YA novel. Chloë Grace Moretz plays Mia Hall, a cello-playing Yo Yo Ma fanatic growing up in Oregon under loving, attentive punk-rock-loving parents. They’re, well, impossibly cute: Isn’t it zany how Mom and Dad (Mireille Enos and Joshua Leonard) haunted rock clubs and Mia loves symphony halls? You just want to pinch their cheeks! But speaking of “haunted,” after a discreetly depicted car accident, Mia finds herself a Patrick Swayze-style ghost — make that a “coma ghost” — having the mother of all outof-body experiences. With time to remember and reflect on her life to this point, and the freedom to stalk her loved ones, Mia learns it’s up to her to decide if she lives or dies, her decision-making process forming the dramatic spine of the film. Never mind that this hardly seems like much of a choice. Especially since Mia was lucky enough to bag a cute guy, Adam (Jamie Blackley), a rock guitarist who gigs with a band, seems likely to get signed, and seems to love Mia madly. Too many of the characters are idealized, and despite a predictable, late-breaking “twist,” “If I Stay” poorly dramatizes Mia’s actual choice: at least the way the script and Moretz play it, it always seems like a no-brainer; hence, there’s little in the way of dramatic tension. The film’s spiritual bent (just a stone’s throw from “Heaven Is for Real”) never amounts to more than silly and, worse, the film can be read as implying that Mia’s only reason for living is the boy she likes. Paging the National Organization for Women ... National Organization for Women, report to Theater 7 ... Still, who doesn’t like being lovingly spoon-fed? R.J. Cutler’s film may be shamelessly engineered and sappy, but swoony romantics (c’mon, you know you are one!) may not much mind. Rated PG-13 for thematic elements and some sexual material. T
he real estate industry faces many challenges. The industry is made up of agents from all walks of life and educational backgrounds that range from a high school diploma to graduate degrees from the world’s best law and business schools. Past work experience ranges from none to many years as a builder, real estate attorney or interior designer. Similarly, individual experience as a real estate agent spans the gambit from a few months to 30 or 40 years, or more. While the diversity of backgrounds found in a typical office has its advantages, it also creates a lot of challenges for the management of real estate offices. Put simply, some agents are very qualified to advise clients in certain areas, but they would be dangerous advising clients in other areas. As a result, most brokerages train all of their agents not to give any advice
regarding legal, tax, construction or disclosure issues. Unfortunately, that leaves many clients guessing at the seriousness of items identified in disclosures, the meaning of contractual terms, or the likelihood of adverse consequences from a course of action. What’s worse, many clients don’t realize they are on their own until things go wrong. Reviewing disclosures When given a packet of disclosures, buyers may want to ask their agent to provide a written summary of the key items in the disclosures. While it is very important for the client to review the disclosures themselves, the agent’s summary will list what the agent feels are the “deal breakers” and reduce the client’s risk of not understanding the significance
of certain items. Although some agents will resist doing this from fear of liability if they miss something, an experienced and thorough agent shouldn’t miss anything. Real estate inspectors, like the entire real estate industry, have become very risk adverse. As a result, inspection reports include a lot of disclaimers regarding inaccessible areas, limitations on the scope of the inspection, and notations of relatively minor problems. All of this can distract from the major issues. Thus, clients should consider asking for copies of sample reports so that they can become familiar with some of the “boilerplate” language. Structuring offers Many agents revert to a practiced refrain whenever advising clients about the wisdom of including contingencies — they always seem to offer the same advice irrespective of the particular circumstances. Some believe that all offers have to be non-contingent in this heated sellers’ market. Other agents (or clients) believe that they always need to have contingencies “just in case.” There are too many variables for either
absolute to be correct all of the time. When structuring an offer, the agent and client need to carefully consider the real risk and only include the protections that may actually be needed given the facts and circumstances surrounding that particular transaction. Many offers get passed over due to contingencies that seem unnecessary. For example, some agents submit offers with financing contingencies even when the client purportedly has “great credit,” strong income and are only borrowing 50 percent of the purchase price. Like insurance, offer contingencies come at a cost — sellers should, and do, favor offers with fewer or no contingencies over offers with contingencies unless the other offer is significantly higher in price. Resolving disputes Although the vast majority of real estate transactions close with no major complications, sometimes things do go wrong. Unfortunately, most clients and many agents don’t fully understand the legal rights and responsibilities included in the contract they signed. For example, most buyers submit
offers that include the elective Liquidated Damages paragraph, yet many are surprised to learn that they relieved the Seller from their burden of having to prove the amount of actual damages by agreeing to that part of the contract. When there is a breach of contract, the clients should ask the agent to let them speak with an attorney. Each side will have certain rights and responsibilities, which need to be fully understood before the client takes any action. Far too often, people try to break real estate transactions down into easy-to-digest rules. Whether it is applying a formulaic approach to calculating prices based on square footage or deciding if they should include certain terms or contingencies in a contract, they overlook the nuances. Buying or selling a home is a very important transaction for almost everyone. The best advice is to do your homework and find an agent that is willing and able to give you clear, sound advice, in writing, so that you know that they are willing to stand behind it.
