From Naples with love NAPOLETANA PIZZERIA STAYS FAITHFUL TO FAMILY RECIPES, WITH TASTY RESULTS Story by Dale F. Bentson | Photos by Veronica Weber

t was the authentic Neapolitan pizza I went for, but it was the spaghetti carbonara ($16) that I loved and dreamed about for days afterward. A large, glorious bowl of pasta, eggs, pancetta, Parmesan and olive oil in perfect harmony. It sat before me like a golden nest, velvety but not runny, the sauce adhering to the fork as I twisted and spun the noodles around a spoon. No cream in the sauce, just raw eggs cooked by the hot pasta. According to Costas Eleftheriadis, owner of Napoletana Pizzeria in Mountain View, all the recipes he uses are from his grandmother in Naples. Nonna was a great cook. Carbonara has been fancified since its humble origins. Alan Davidson in “The Oxford Companion to Food” suggests that spaghetti alla carbonara was created in Rome in 1944 with American occupation troops sharing their abundant rations of eggs and bacon with local chefs. Naples isn’t Rome, but the way Napoletana makes it, it’s about the best carbonara I’ve had either here or in Italy. The fettuccine alla Bolognese ($18), made with minced beef and tomato sauce, was also delicious, with an abundance of meat and not overly sauced. In Italy, ragù alla Bolognese dresses the pasta, not drowns it. The kitchen at Napoletana struck the right balance. The

sauce was made with Italian plum tomatoes, garlic, carrots, onion, celery, and was modestly seasoned and abundantly delicious. Napoletana is famed for its authentic Neapolitan pizza. Eleftheriadis earned his VPN certification in 2010 from the Associazione Verace Pizza Napoletana, an international organization established in 1984 to cultivate the culinary art of Neapolitan pizza. The organization offers classes, workshops and training. It’s not like earning an MBA in pizzamaking, but the Associazione teaches methods and techniques and has specifications to maintain the best Neapolitan standards. One VPN requisite is a woodfired dome oven that maintains a temperature of at least 900 F. Pizzas are fully baked in 60 to 90 seconds. Fortuitously, Eleftheriadis found a spot that had an existing wood-fired oven when he opened in 2011. The small space, adjacent to Cost Plus in a strip mall, had housed a hodgepodge of restaurants over the years and the oven had been idle for some time. He uses a combination of walnut, almond and oak hardwoods in his oven. “They burn hotter, with no smoke and maintain a nice even heat,” Eleftheriadis said. Eleftheriadis only uses flour, water, salt and natural yeast to make his pizza dough. The

wheat flour, type “00” or doppio zero, is imported from Italy. It’s lower in protein and gluten than American flours, mellower, more supple and easier to shape. The resulting pizza crusts are light, airy and have a crisp snap, with just a slight blistering around the edges. Eleftheriadis changed careers when the company he worked for as a pilot and flight instructor consolidated local operations in Connecticut. He became

interested in pizza-making while visiting family in Naples. All the pizza varieties Eleftheriadis makes are combinations found in Naples — no pepperoni, no bacon-stuffed crusts and no pineapple. The Napoletana pizza ($18) came topped with tomato sauce, fresh mozzarella, a generous amount of homemade Italian sausage, basil leaves and drizzled with olive oil. It was my personal favorite, though

Eleftheriadis says the Margherita is his best seller. The Napoletana looked as good as it tasted, with succulent slices, luxuriously layered, slightly aromatic and a slight tang to the crust and hint of spiciness in the sausage. was covered with fresh mozzarella and garlic and topped with sweet Parma prosciutto curls and crisp, peppery arugula. Napoletana seats just over 40, so arriving early is advisable. The restaurant doesn’t deliver, but it does offer take-out. Besides pizza and pasta, there is a small selection of soups, salads, antipasti, and a dozen reasonably priced wines and beers. I was fascinated by the dessert menu’s eight options, all frozen and imported from Italy. Not only were the desserts tasty, the presentation was high-quality. The limoncello tartufo ($6) with

lemon gelato and a frozen limoncello core came covered with meringue sprinkles. It was zesty, clean and vibrant, a yellowy dome of creamy delight. Coppa mascarpone ($7) was luscious chocolate cream layered with silky mascarpone, and topped with crunchy amaretto cookie crumbs and tiny

KING ARTHUR: LEGEND OF THE SWORD 00

That most flexible of ancient legends gets a new workout in Guy Ritchie’s “King Arthur: Legend of the Sword.” Certainly, this is the first version of the King Arthur story to feature a character referred to as “Kung Fu George,” but let’s just say Ritchie’s take on Arthurian legend isn’t going to surprise anyone who knows what’s up at the multiplex these days. We get a “King Arthur” in which the displaced royal — cast off Moses-like after the murder of his parents — grows up thinking he’s “the bastard son of a prostitute,” raised in a Londinium brothel to become a gangster with a crew. The film, however, feels like a rather desperate attempt — in design, music, and even casting — to score some of that sweet “Game of Thrones” cash. And since “Batman Begins” remains

Despite some striking visuals and the occasional evocation of “Robin Hood: Prince of Thieves,” this newfangled “Arthur” comes up short on grandeur or even old-fashioned matinee adventure. GUARDIANS OF THE GALAXY VOL. 2 001/2

Don’t think too hard about “Guardians of the Galaxy Vol. 2,” although there’s probably little danger of that. It’s exactly what you’d expect writer-director James Gunn to deliver as a sequel to the 2014 Marvel space adventure he likewise spearheaded. Everything that made the first film well received is back: the goofy cast of characters, arch jokes, lively interstellar action, and a rainbow-sherbet color scheme. The mercenary Guardians (including Zoe Saldana’s dead-serious

Nicola Yoon’s young adult romance novel “Everything, Everything” proffered a canny allegory for teenage girls: parents who don’t let you do anything resembles having a disease that keeps you housebound. Heroine Madeline Whittier has SCID (Severe Combined ImmunoDeficiency), effectively making her the Girl in the Plastic Bubble, but when love comes knocking, Maddy answers the call. Maddy (Amandla Stenberg) lives with her mother Pauline (Tony winner Anika Noni Rose), who also serves as her doctor (uh oh), in an elaborately tricked-out suburban home. “Simple viruses can kill me,” Maddy explains, and the specters of a dead husband and child fuel Pauline’s intense fear for Maddy’s health. Nevertheless, events conspire to give Maddy a great adventure: She turns 18 and a cute boy moves in next door. And with a name like Olly Bright, he’s got to be prime YA romance material. And indeed he is. His curiosity piqued by the glass-encased beauty next door, Olly (Nick

Robinson) begins reaching out, mostly through text messages and pantomime from his window, but eventually more boldly. I’ll avoid spoiling the movie (the trailer does a good enough job of that), but suffice it to say that when desire meets with an obstacle, love finds a way (and a credit card). Also, writers find a way, sometimes by not doing justice to their own premises. Screenwriter J. Mills Goodloe and director Stella Meghie show the most imagination in staging Maddy and Olly’s conversations when they’re physically apart. Since Maddy aspires to a career in architecture, she envisions talking to Olly in buildings that thus far only exist in her mind and as scale models in her house. Sadly, pretty much everything, everything else in “Everything, Everything” adheres to cliché. When the young couple first kisses, literal fireworks appear at precisely that moment, and there’s an image deeper into the film depicting Olly running across a golden field toward Maddy. Since Maddy’s wanderlust involves the

ocean, there’s also a fair amount of footage shot on Mexican beaches doubling for Hawaii. The novel’s known for its swoony lines, and the film follows suit (“When I talk to him, I feel like I’m outside”), but much of the generic YOLO (you only live once) dialogue works as a sleep aid. When all is said and done, though, “Everything, Everything” plays fast and loose to give teens (and, more likely, preteens) what they want. The more the story panders, the less interesting it gets — which is not to say it was terribly interesting from the start. As a character, Olly is little more than an ideal-boyfriend foil for Maddy, who’s not terribly deep herself. Soft-touch kids may enjoy the smooth-jazz romance of this ludicrous fantasy, with true love challenged by caring but misguided parental overprotectiveness, but the story fails to deal honestly with its what-if scenarios. Rated PG-13 for thematic elements and brief sensuality. One hour, 36 minutes. — Peter Canavese

Gamora, Dave Bautista’s belly-laughing dum-dum Drax, and cute lil’ twig Baby Groot, voiced by Vin Diesel) start out on a job, get themselves in trouble, and wind up rescued by a mystery man who claims to be the father of rogue space orphan Peter Quill (Chris Pratt), a.k.a. Star Lord. Since the mystery man introduces himself as Ego (and he’s played to the hilt — is there any other way?— by Kurt Russell), it’s a fair bet he’s telling the truth. After a story that occasionally succumbs to bits straight out of Looney Tunes, anything resembling feeling is kind of an impressive pivot. And the pivotal realization—that, in the end, using your heart beats using your head — works as a pithy instruction manual for this diverting but disposable adventure. Rated

PG-13 for sequences of sci-fi action and violence, language, and brief suggestive content. Two hours, 16 minutes. — P.C.

Tower emerged as a superstar chef, reached a pinnacle, then disappeared from the scene. A friend of 40 years maintains, “Nobody knows Jeremiah.” Seen striding alone, Tower himself muses alone in voice over, “I have to stay away from human beings, because somehow I am not one.” The prelude describes a mystery and teases another: will the film you’re watching realize its seeming goal to penetrate that mystery? The answer, alas, is “Not really.” But that doesn’t mean the film isn’t worth watching, only that Tower treated his participation in the documentary like everything else in his career: something to be approached strictly on his own terms. Rated R for language. One hour, 43 minutes. — P.C.

JEREMIAH TOWER: THE LAST MAGIFICENT 001/2

Lydia Tenaglia’s documentary “Jeremiah Tower: The Last Magificent” looks at the life of local chef Jeremiah Tower, who is credited with developing the culinary style known as “California Cuisine” and had ties to Palo Alto during the 1990s when he opened a branch of his famed San Francisco Stars restaurant on Lytton Avenue during the height of his career. With her documentary, Tenaglia begins by establishing the enigma of her subject:
