BE A RESPONSIBLE TOURIST

Stellenbosch is a town of tradition and diversity, nowhere is this better reflected than in the town's approach to sustainability and community. Stellenbosch is conscious of the many social, environmental and economic challenges its people face, confident that with time and unity they will be met.

the transition to an integrated town with progress often being slow, but commitment and innovation are at the forefront of the battle against this third world challenge. Business development in previously disadvanted parts of the town, art and craft markets and industries as well as community centres with a focus on entrepreneurship are all features of the town's commitment to redressing imbalances of the past. In many instances community projects are interwoven with key elements of sustainability, ensuring that communities who benefit do so in the spirit of “learning to fish rather than being given fish. Stellenbosch is proud of what has been achieved this far in sustainable tourism, community upliftment and development, but as with all great destinations, strives to do more and encourage new and higher goals to be achieved.

Sustainable r e s o u r c e utilisation is a feature of many businesses, as it is of municipal management, urban planning and town expansion. Many tourist-related businesses strive to offset their carbon footprint through innovative nature and community based initiatives that place Stellenbosch at the forefront of responsible tourism. Spier Estate is a world leader in the field of recycling and biodynamic resource management, while many of the surrounding vineyards produce award winning wines with a strong consideration for biodiversity. Stellenbosch is a town of integrated green spaces and open areas, whilst Jonkershoek Nature Reserve, one of the most biodiverse areas on the planet, offers world-class nature experiences. Community development and upliftment are major obstacles in

4

This proud tradition is best reflected in our desire to share with you, the visitor to our town, a few of the many projects that are in daily operation. You may choose to do this formally on one of the many tours offered to communitybased projects, or in your own time by simply visiting one of the listed options below. Whichever your choice we thank you for the contribution you make simply by choosing to visit Stellenbosch.

11 Tips and Tricks for Greening your stay: 1 2

Unplug Appliances drain energy even when they’re not on. If you just spend 2 minutes unplugging items you will already have made a difference. Hang your towels and save the environment one towel at a time.

3 Don't open all the soap bars, move them from shower to bath to wash basis. 4

Stick the “Do not Disturb” on your door for short stays. Or just call housekeeping and tell them you won’t need their services during your stay.

5

Adjust the thermostat. By lowering the temperature by 2 degrees in the winter or raising it by 2 in the summer you will save a lot of energy. And you won’t notice the difference.

6

When you leave the room turn everything off: • Lights • TV • Thermostat (if weather is mild)

7 Flush less frequently. 8 Bring your own toiletries. 9 Take shorter showers. Sometimes a long, hot shower feels incredible. But do you need that every day? 10 Leave the pen (and other freebies) behind. Do the earth a favor. 11 Recycle. Find out about the hotels' recycling policies and try to obey them. 12 Use less lights. If you are not using a room, switch off the lights. 13 Switch off the TV when you're not watching.

THE HISTORY OF STELLENBOSCH

The documented history of Stellenbosch dates back to 1679 when this name was given to a small island on the Eerste River by Simon van der Stel, the then commander of the Cape. It can, however, be assumed that prior to its official naming, the Stellenbosch surrounds were home to various indigenous communities. The Eerste River, which today still ripples through Stellenbosch, was so named as this happened to be the first (‘Eerste’) river the Dutch settlers came upon after leaving their Cape Town base. After its establishment, Stellenbosch was quickly identified as an area in which to settle which had real potential for agriculture. The very first documented farmer to start cultivating in this area was Stevenz Botma who broke ground in the region in 1679, his farm was called Welgevallen. The main tasks of these farmers was to grow grain, trade in livestock with the indigenous tribes, and supply food to the settlement in Cape Town. The soil in the surrounding areas proved to be very fertile and had a conducive climate for producing vegetables to sustain the ships passing by the Cape of Good Hope en route to the other Dutch colonies in the East. Add to this the thirst of the Dutch and Stellenbosch soon saw its hills and valleys planted with vines by the end of the 17th century. The earliest building in the Stellenbosch area dates back to 1689 and can still be viewed on the historic wine farm of Muratie. In the town itself, solid, white-plastered buildings arose. Besides its rapid growth in becoming a hub for the flourishing wine industry, the founda-

10

tions for Stellenbosch’s heritage as an educational centre were laid in 1859 when a theological seminary was established. In 1918 a university was founded and to this day the University of Stellenbosch remains an internationally recognized educational institution and one of the leading universities on the African continent. The heart of Stellenbosch still resonates with a historical atmosphere and cultural allure. The buildings reflect over three centuries of occupation including Dutch, Georgian and Victorian architecture. A myriad of museums and places of interest are found along the oak-lined streets. Besides its status as a leading cultural, education and leisure destination, it is wine that has made and continues to make Stellenbosch famous. In 1971 three Stellenbosch visionaries, and winery owners, namely Frans Malan of Simonsig, Spatz Sperling of Delheim and Niel Joubert of Spier established the first wine route in South Africa. Today the Stellenbosch American Express® Wine Routes include 5 sub-routes, all colour coded on the map for easy identification to make it easy for the visitor to plan their visit. Today this buzzing University town is also lovingly known as the Town of Oaks or “Eikestad”. The reason for this is obvious when you stroll down the oak lined streets. Local students believe that it is a sign of good luck and that it will go very well with your examinations if an acorn falls on your head. So if you are in need of good luck go for a stroll under the oaks.

1971 - 2011 Celebrating 40 years

46

1971 - 2011 Celebrating 40 years Stellenbosch is known world-wide as the wine capital of South Africa. But would this have realised without the vision and determination of three wine men that had a dream, 40 years ago? The American philosopher and poet, Ralph Waldo Emerson said: “It is a lesson which all history teaches wise men, to put trust in ideas, and not in circumstances.” These words could not have been more true in the case of the three pioneers who brought on the birth of South Africa’s first wine route. To realise their dream, they had to overcome a number of challenges including beaurocratic red tape and legislation which had to be rewritten. By example, very few farms bottled wine under their own labels and at the time, it was illegal to sell bottled wine from your winery, and it was also not permitted to serve meals from your farm. But let’s start at the beginning… Like the well known Brian Adams song, it all started in the summer of 1969. Good friends Frans Malan and Niel Joubert from Simonsig and Spier respectively went on a European tour. Back home they convinced Spatz Sperling from Delheim to complete the now famous fearless threesome, and so they started their very own organisation representing wine farms in the Stellenbosch region. This organisation would change the face of wine tourism in South Africa, and was the very first wine tourism initiative in the South African wine industry, even though the term did not exist yet. The pioneer Stellenbosch wine route was officially launched by the then minister of Agriculture, Mr Hendrik Schoeman in April 1971.

vines in South Africa, Stellenbosch represents 18% of the vines planted under the Wine Of Origin Stellenbosch umbrella. Advertising mogul Bruce Barton hit the nail on the head when he said that the most successful men have not achieved their distinction by having some new talent or opportunity presented to them. They have developed the opportunity that was at hand. We therefore salute, honour and thank the three visionaries that helped establish Stellenbosch as not only the number one wine tourism destination in South Africa, but also one of the most successful and recognised wine regions in the world. Cheers!

Think quality... drink Stellenbosch!

Today there are 16 Wine routes in South Africa, but Stellenbosch remains the most visited and most recognised brand among them. From humble beginnings the Stellenbosch American Express® Wine Routes now boasts 152 wineries as members, making it the biggest wine route in South Africa. Of the 100 200 hectares under 47

The Dumas family has been making wine on the estate for three generations. The present owner and winemaker is Cornelis assisted by his son, Hannes. We produce wines using traditional French techniques. Fermentation is allowed to develop spontaneously from the natural yeast cells on the skins in open tanks. Colour and flavour is extracted by punching through the cap regularly into the juice. Using only the free-run juice this method allows for subtler but deeper flavours where tannins are less evident, so distinctive of Jacobsdal Pinotage.

THE PHILOSOPHY. The source of distinctive wines is quality grapes and thus the vintner’s work begins in the vineyards. Vines vary greatly in their soil, climatic and topographical requirements. No single vineyard can satisfy the needs of all grape varieties. We select vineyards where individual varieties excel. Emphasis placed on caring viticultural practices by dedicated growers together with careful winemaking contribute to this pursuit of excellence in the art of winemaking. “A pursuit of quality, nothing less.” - Neil Ellis

It’s not often in life that one gets the chance to create a name for oneself…The name arose from the joining of two natural elements – one a symbol of foundational strength; the other a necessity for refreshing life. "Waterstone" tells of the partnership of people working together with Mother Nature, to create something of pleasure and enjoyment. And in the process of working hand-in-hand, an amazing story unfolds… …proof that great things are done by a series of small things brought together.
