“Insalata Caprese” is one of the most eaten and appreciated

italian

starter,

known

and

enjoyed

worldwide… This recipe was born in Capri (a beautiful island just offshore from Naples) from which it takes its name: CAPRESE!


- 3 to 4 large ripe tomatoes - 500 gr. of fresh mozzarella - (buffalo milk if possible) - 8 to 10 fresh basil leaves - a pinch of oregano - olive oil - salt


- Slice the tomatoes and the

mozzarella cheese.

- Arrange slices of tomato and slices of cheese on a plate, alternating slices. - Put basil leaves in the center of the plate. - Drizzle olive oil on top.. Season with salt and oregano as desired. - For best flavor, refrigerate for 30 minutes prior to serving.

150 gr. of cornmeal 150 gr. of white flour 1 egg+1 yolk 1 sachet of Vanilla 150 gr. of toasted almonds 140 gr. of butter 2 teaspoons of baking powder 150 gr. of sugar 150 gr. of ready-made puff pastry


- Preheat the oven to 170째 - Mix sugar, eggs and soften butter - Add flour, baking-powder, almonds, vanilla powder and mix with your hands until they are just combined, make big crumbles with your fingers - Place a sheet of grease-proof paper in a baking-dish - Sprinkle the mixture in the baking-dish. Do not press down hard - Lay the unpeeled almonds on the top - Sprinkle a tablespoon of sugar over the top - Bake at 170째-175째 for 25 minutes, until golden brown - Turn off the oven, open it a couple of times, then close it again and allow the cake to cool
