Paul Bunyan’s remodel Paul Bunyan’s Sandwich Shop has undergone a winter-long remodel, and is now operating with more than twice the seating. Owner Jim Ayres said the restaurant, located at 3150 Busch St., can now accommodate 55 diners. “The place was pretty much filling up with people,” he said. Ayres said they added new counters, carpeting, paint and lighting as Ayres part of a complete interior refurbishing. The work was completed in March though more additions, like new signage, are likely in the future. Butte-based Earhart Building Construction was the lead contractor, and a number of subcontractors contributed as well. “We really changed the appearance,” said Ayres. “We added big new windows so people have a view of the East Ridge.” The building had not been upgraded in at least 14 years it has been at its present location, said Ayres, whose family has owned the business for 30 years. It is locally owned, and not affiliated with other Paul Bunyan restaurants around the Northwest. “The main thing is now people can spend more time,” said Ayres. “The tables would fill up and everyone felt in a rush to get out here.” Ayres said 14 employees work at Paul Bunyan, and he has added two since the renovation. The business is open from 11 a.m. to 8 p.m. Monday through Saturday. For information, call at 494-7817.
