Meet the Cover Stars The Mum’s Mail team is still going strong and still as cuckoo as ever! We thought maybe when Alice left we would lose some of our craziness, but with the arrival of our new bosses came a new brand of nuttiness!

Beverly is the resident “Sales Guru” – she has been at Mum’s Mail the longest out of all of us (we won’t say how long). She’s always ready with a chirp and she could sell ice to an Eskimo. Wendy the graphic designer (missing from cover pic) is a mother to two gorgeous boys who keep her on her toes. She is also kept very busy here at Mum’s Mail and comes up with some wonderful creations for our clients!

Mellisa is another new addition to the sales team. She always has a smile on her face The team has undergone quite a few and a story to tell. Al Husna School of Cooking and Baking From humble beginnings, Mumtaz Dawood, founder of Al Husna School of Cooking and Baking, began her home-based cooking school in 2006 from a small premises in Overport. Her passion for cooking started when she was 11 years old and her love for the kitchen has motivated her to continue teaching and inspiring women. Christmas Fruit Pies

Ingredients: Makes about 18 • 250g cake flour • 1 tablespoon castor sugar • 2 tablespoon corn flour/Mazina • ½ teaspoon salt • 185g soft butter • 1 egg (separate yolk and white) • 1 teaspoon fresh lemon juice • 1 tablespoon ice cold water • 1 jar minced fruit • 1 green apple, peeled and grated • 1 tablespoon of brandy (optional) • A small handful of chopped nuts (e.g. almonds ) • Castor sugar for decoration

Method: • Preheat oven to 200˚C. • Mix flour, castor sugar, corn flour and salt. • Cut butter into the flour mix with a knife. Use your fingers to gently mix the butter into the flour – it must be like bread crumbs. • Add the yolk, lemon juice and iced water. Mix together with a knife and then your fingers. Keep working the mixture until you get a soft pastry. Let pastry rest in fridge for 15 minutes. Gently knead the pastry and roll out. Spray a shallow muffin pan with oil. • Cut out pastry bottoms. Put the pastry bottoms at the bottom of your muffin pan. Prick with a fork. • Put half the minced fruit into a bowl. Peel apple and grate into fruit mix. Add a handful of chopped nuts and a tablespoon of brandy. Mix together. • Put one spoonful of fruit mix into each pie bottom. Roll out the pastry again and make ‘lids’ for the pies using a star cutter. • Use a little fork to push around the edges of the pie. Prick the top. • Beat the egg white with a fork and brush a little around the edges of the pie and on the lid. Bake for 10 to 15 minutes. Allow to cool and dust with castor sugar. Dr Rashinta Moodley: Specialist Paediatrician and Paediatric Nephrologist Dr Rashinta Moodley is a general paediatrician and paediatric nephrologist in private practice in Durban. She manages both general paediatric conditions as well as paediatric nephrology. The subspecialty of paediatric nephrology involves the treatment of urinary tract and kidney diseases in babies, children and adolescents. This includes acute and chronic dialysis as well as kidney transplantation. Dialysis is especially challenging in an acute setting where even the littlest of babies may present with kidney failure. Many babies may be born with renal and urinary system abnormalities. Nephrotic syndrome, obstructive urinary tract abnormalities and post infectious kidney disease are the most common types of renal disease in children. These can occur as a result of congenital abnormalities, or because of genetic or immune abnormalities, or infection. Urinary tract infections are also common and often can be associated with bladder and kidney abnormalities.

When Is The Right Time To Send Your Child To School? Most preschools accept children between the ages of two-and-a-half and three years old, but that doesn’t mean the child is magically ready for preschool at that age.

Sticky Sights You will need: craft glue, food colouring, baking paper, cookie cutters or stencils and glitter. Add a few drops of colouring and glitter to the glue. Mix well. Place the cookie cutters on the baking paper. Now add enough glue inside the cookie cutter to create a thin layer. Leave to dry. Once dry you can peel it of the paper. A small hole can be added and string threaded through to create hanging ornaments. A dab of glue to the back and they can be used as present decorations or window art. Help Your Child to Flourish in a New School Environment

Go to the orientation day. Walk around the school and show your child where their classroom is, where the bathrooms are, where their lockers are and where you will fetch them at the end of the day. Introduce yourself to your class teacher. Be a part of your child’s education and get involved with the school. Be positive and patient. Some children take a bit longer to settle and sometimes it is harder on the mum than the child. Young children do not have a concept of time. Work through the day’s events with them before school so that they have a timeline to follow. Routine and structure provide a sense of security. Young children are less anxious when they feel secure. Ensure your child gets enough sleep and starts the day with a healthy breakfast. If they are still struggling after a few weeks, go and see their teacher and seek professional help for assistance if necessary. The above are short-term fixes. Executive functioning skills help children learn to plan, organise, learn emotional control, develop their memory, become more flexible etc. ‘Helicopter parenting’ and over parenting often take away the opportunity for children to develop these very important skills. Play with Your Children There is so much pressure on children these days and sadly also on the educators that teach them. In the first four years of life it is imperative that children are given the opportunity to explore and mess as much as possible. They are firstly developing physically, then emotionally, and only after the age of four is the window period for intellectual development. That does not mean that our children should not be taught information or that they do not develop intellectually. It just means that we should focus on the physical first. They need to physically touch and be involved with the things they are learning about. Do not just tell them about a plant – let them plant a seed, watch it grow, look at the roots and transplant it. This is a simple game created from kitchen utensils and recyclables that will have kids holding their breath as they test their ability to stop what is certain to happen.

We catch the bus at the bus stop near Suncoast on the promenade (opposite Suncoast Pirates Surf Lifesaving Club), have a bite to eat or a treat at uShaka and catch the bus back to our car. The ride only costs R5.50 each way and it’s a fun outing! Or you can buy a day pass for R16 and explore Durban! They do a beach line and a city loop.

You will not find this game easy. It involves a skill that has eluded children since time began. That’s right – you have to be quiet. Told you it was hard! You will need blindfolds, bells or keys and string or ribbon. Begin by blindfolding all the players except one. This person will need to have some bells attached to some string or ribbon tied around their ankles or wrists. For those of you who don’t have a ready supply of ankle bells (really? No ankle bells? How odd!) – then you could tie on some keys (just make sure you ask permission first). The aim is for the jangler to avoid capture. They can move away from the blindfolded players trying to catch them, but to do so may also give away where they are, as moving will make them jangle.

Uncle Jumbo’s Christmas Party Uncle Jumbo’s Christmas Party in Kloof is an annual pantomime performed by the members of Kloof Round Table, their wives and kids. The set creation, script writing and acting are done by Kloof Round Table members and their families, in their spare time, during a two-week period prior to the show. The show generally runs for nine days. This year you can catch Uncle Jumbo’s Christmas Party from 1 to 10 December at the Kloof Civic Hall from 7pm to 8.30pm daily (no show on Sunday). Tickets cost R50 per person and all proceeds go to charity. Money collected via admissions is used by Kloof Round Table to help the local community by means of donations. The public is urged to bring wrapped presents, unwanted toys, blankets or food to be placed in the charity box which is then collected by a designated charity each evening. In this way at least R80 000 is raised each year to help fund projects in the Kloof community. The first night is a charity night where service clubs in the area bring orphans and children from other places of safety to watch the show. The kids are treated to something to eat and drink and each receive a present from Father Christmas, purchased by the service club that brought them. The remaining nights are open to the public. The show has standard characters in the form of Mr Plod, Noddy, Big Ears and Uncle Jumbo - each year other characters that are popular with the kids are added in to the show. Kit Kat Cake If you’re contemplating your child’s next birthday cake and want something that’s easy, quick and has plenty of “wow factor”, the Kit Kat cake is the answer. Ingredients • 10 packs Kit Kat chocolate • 1 chocolate cake • 2 packs M&Ms Buttercream icing • 300g butter (softened) • 5 cups soft icing mixture (sifted) • 3/4 cup cocoa (sifted) • 5 tablespoons milk Break up your Kit Kats into two-finger pieces. Use your favourite chocolate cake recipe and divide the mixture into two 9-inch (22cm) cake pans. Once cooked (when a skewer comes out clean), allow to cool completely. Once the two chocolate cakes are cooked and cooled, remove from baking pan and trim off the “dome” that forms on most cakes so that the cakes are perfectly flat on the top and bottom.

To make the buttercream, use an electric mixer to beat the butter until it is pale and fluffy. Add the icing mixture and cocoa a little at a time until fully incorporated. When this is fully combined add the milk, and the chocolate buttercream will become light and fluffy. To assemble, put a dollop of buttercream on the serving plate or cake board and glue down the first layer of cake. Then, cover the first layer with buttercream and lay down your second flat layer of cake. Cover the whole cake completely with icing and be generous!
