D

o us a quick favor. The next time you call Bill Utter Ford and are put on a brief hold, pay attention to the voice on the other end of the line. That’s more than a standard automated greeting letting you know someone will be right with you – it’s the sweet and innocent voice of Bailee Utter, the granddaughter of the self-made man the dealership is named after.

“Hi, I’m Bailee Utter. Thank you for calling; we’ll be right back with you. …” the message opens. pictured above is Bill Sr. former owner of Bill Utter Ford and his son Bill Jr. when he was little.

KETO

Diet The Highs and Lows by Diana Risell

I

first heard of the Keto diet in the 1990s. My colleague, Joe, was following it to lose weight. He had a box of stuff that he bought at a pharmacy, and it seemed to

involve more diet pills, supplements, and urine strips

than food. Maybe he had some results, but what I recall

more vividly were his fatigue, irritability, and bad breath – which might have had more to do with the stress of his job as CFO of a large organization. Nevertheless, we teased him congenially about his diet that made him nasty. The Keto Diet might be all the rage right

now, but it’s not new: Joe was doing it in the mid-1990s, and it’s actually been around since the 1920s as a treatment for epilepsy.

We know a whole lot more about food and our bodies

than we did 100 years ago and even 30 years ago, and thank goodness most quality “diets” respect – and take advantage of – what we now know, such as the fact

that lower-carb diets are effective for weight loss and management, and fat doesn’t make us fat.

(That was a big ole lie from the 1970s when we were

told that fat was bad and it was taken out of everyday foods and replaced with crazy amounts of sugar and salt for flavor, at the expense of our health.) 12 | LIFE IN CASTLE HILLS | SEPTEMBER 2018

Eating to get your

body into ketosis –

even mild ketosis -- where you are using fat stores for energy is the foundation of many successful weight loss programs

because it works. (Nutritionally, it’s what I did to lose six dress sizes and half my

body fat 12 years ago). But the Keto Diet that we’re suddenly all talking about like it’s new is more than just lowering the

carbs. It’s about really low carbs (just 5%

of calories) and really high fat (a whopping 75% of calories), and that’s caused divided opinions and controversy about its longterm health effects. It’s good. It’s bad. The jury is out.

POSITIVE SIDE EFFECTS: You’re eating real food, not taking pills or eating processed stuff your body doesn’t recognize.

and avoid trans fats (fast food, snacks,

processed foods). You’re less hungry and eat less because fats are filling.

Keto Diet, try to focus on getting as many

vegetables as possible and a little fruit too. You need plant-based fiber and nutrients. Research which veggies and fruits are

lowest in carbohydrates so you can eat more of them.

You overeat. Know that one gram of fat has nine calories. One gram of protein or one gram of carbohydrate has only

four calories. So, up your fats on Keto but ensure you are still watching how much you are eating.

You can’t stay in ketosis. It typically takes

three to five days of following a ketogenic diet to get into ketosis. (I know I’m there

impeccable history of helping students create thought-provoking portfolios for college admissions.

In addition to teaching classes at their main facility, they also offer offsite courses, private lessons and host exhibits and events.

All you need to do is sign up and be serious about your future. “We have students who are getting accepted right on the spot to some of the top art schools in the world because of their portfolios and what they learn here,” owner and renowned artist Mary Hull said. “I don’t know of anyone else who is doing anything like this. It’s more intense than some college programs.”

The Academy’s Fall Semester runs September 3 through November 30. For more information on pricing, schedules, and availability, contact the Hull Art Academy at 972-394-6111 or maryhull@ hullartacademy.com.

Hull, who attended The School of the Art Institute of Chicago and holds a degree in art from the University of Central Arkansas, opened her Academy last year and has seen increased demand for her sessions.

Ask The Expert: Organization

DECLUTTER Your Responsibilities

E

very day, I get to teach people how to eliminate the mess that creates stress. But before I was a professional organizer, I was an overscheduled, overwhelmed, slightly stressed out mom. The house was a mess even though I felt like I was always cleaning. I would forget about appointments even though I was always looking at my calendar. I was tired even though I went to bed early each night. I knew there had to be a better way.

I’m going to share with you how I cleaned up my messy stress. I didn’t worry about what I should start doing. I focused on what I wanted to stop doing. Here are 3 things you can stop doing right now If you’re ready to begin your decluttering journey. 1. Stop multitasking. Moms tend to be talented jugglers. We always have lots of balls in the air. We are proud of this talent because we believe we are accomplishing so much more than other people who can only do one thing at a time. Guess what. It’s not true. Research suggests that multitasking is less productive. Multitasking tends to create unfinished projects, and unfinished projects create clutter. Piles of partially opened mail, unwashed dishes, and mountains of laundry actually disappear more quickly when we focus on completing one task at a time. 20 | LIFE IN CASTLE HILLS | SEPTEMBER 2018

2. Stop doing it all by yourself. Make

a list of all your responsibilities. Are you surprised by how long that list is? (I was!) At times, it’s impossible to get everything done because we expect so much of ourselves. Give yourself a break and get help. Delegate to the rest of the family. Teach your children to do their own laundry and pack their own school lunches. Have your spouse take over some of the daily chores.

like paying bills or working. However, it is

possible to stop over-scheduling yourself. Don’t enjoy that monthly networking

group? Maybe you should stop going and find other ways to connect with

colleagues. Don’t love volunteering for

every event at your child’s school? Good news! You are allowed to say “No, thank

you.” Be selective about what you put on your schedule.

Intentionally declutter your responsibilities and start to watch that messy stress melt away. You may notice your home and

schedule start feeling less cluttered. You may even have more energy. Don’t get

We recently conducted a Joint Online Solicitation Operations that resulted in 10 onsite arrest and three warrants for arrest for online solicitation of a minor. These sexual predators walk among us – five live in Denton County, and the others live in surrounding counties willing to meet our children for sex. This should infuriate us as parents.

“This operation was a huge success; I am extremely proud of all the dedicated officers that worked long hours to take these predators off the street. I want to thank all the agencies that participated in making this possible. This type of operation should open the eyes of parents

magine, if you will, that you are bringing home your brand new baby from the hospital. You survived the nine months

of pregnancy, and now you’re excited to begin your life as a family. At this point,

you’re stressing about every little thing, including how often your baby cries,

how much he is sleeping, and how much he is eating.

There are also more serious things to consider, unfortunately, anything can

happen to your baby even if he seems completely healthy.

With September being Baby Safety Month, it is important to bring up the terrifying

truth that all babies under the age of 12 months are at risk for SIDS, or Sudden Infant Death Syndrome. According to

medical journals, SIDS is also known as

“crib death” because this tragedy usually happens while an infant is sleeping in their crib.

Sadly, it is the No. 1 leading cause of death for infants.

As of now, the definite cause is unknown, but there are many factors to be

If a baby is born with brain defects, low birth weight, or a respiratory infection, they are more at risk, because in these instances, the infant’s brain hasn’t been fully developed or is otherwise compromised and may not be getting the oxygen it needs to survive. Here are a few tips you can do at home to lower the risks. While it is essential for your baby to

he Rabroker family was selected for this month’s Resident Spotlight. Get to know Jaime, Jonathan, and their 3 kids: Aeris, Drew, Wilson.

Q: What made you decide to move to Castle Hills? A: We wanted a family neighborhood that had an amazing community vibe. Castle Hills has exceeded our expectations. Q: What is one of your favorite family memories?? A: Our favorite memories are the times we traveled to Hawaii, our happy place! This summer we got the chance to helicopter over a volcano on the Big Island. Such an amazing experience for all of us. Q: What are some fun facts about your family? A: Laughter is important to us, we are constantly joking around. We love helping spread God’s Word to multiple countries, we love working with special needs, and we love relaxing in the Hill Country at a family members ranch. Q:What do you love most about living in Castle Hills?

Q: How did he become a part of your family? A: We adopted Hank from the Dallas Animal Shelter 11 and a half years ago. We surprised our daughter right after our middle son was born. She was a little jealous of her new brother as she had our undivided attention for 5 and a half years. He fit right in to our family. Q: Describe his personality? A: Hank is definitely NOT a smart dog, he does have lots of personality though that makes up for his dumbness. No one believes us at first; but after awhile they “get it”! He is definitely special and we love him so much! Q: Does he have any special talents? A: No! Lol! I think Hank might be the only dog that doesn’t know how to sit, shake hands, fetch a ball, etc. He really does think he is human. Q: What is his favorite treat? A: Hank has never liked treats; another example that he is not a normal dog.
