Spicy Jerk Chicken 3 – 4 Fresh Scotch Bonnet Chilies 8 Green Onions, chopped 4 Shallots, chopped 4 cloves of Garlic 1 inch pc of Ginger, peeled & chopped 3 tbsp fresh Thyme, chopped 2 tsp ground Allspice 1 ½ tsp Pepper 1 ½ tsp Salt 1 tsp ground Cinnamon ½ tsp freshly grated Nutmeg ½ tsp ground Clove 1/3 c Vegetable Oil 10 Chicken Legs, thighs & drumsticks separated

Remove stems, seeds & ribs from chilies, roughly chop. Blend the first 13 ingredients together in a food processor to form a paste. Rub paste all over chicken. Let marinate, covered & chilled for at least 2 hrs & up to 24 hrs. Prepare grill to medium heat. Lightly oil the grill rack & cook chicken skin side down over direct heat turning frequently, approximately 10 minutes. Then move to indirect heat and cover to finish grilling, approximately 15 to 20 minutes or until the internal temperature reaches 165F. Squeeze some fresh lime juice over the chicken pieces, serve with rice and black beans and enjoy!
