CHATRIUM HOTEL CHINESE NEW YEAR FEAST – CLASSY YET AFFORDABLE WHAT IT IS Chatrium’s Tiger Hill offers Chinese/Sichuan fare, tailored for an intimate date or group dinner through its a la carte menu. This elegant restaurant also offers set business lunches, dim sum, and dinner daily. A 9-course Prosperity Set Menu served family-style is available for a limited time from February 5th to 25th to celebrate the Lunar New Year. ATMOSPHERE Floor-to-ceiling windows brighten the dining area. This feeling of spaciousness is furthered by clean, modern decor accented with lotus blossom motifs. In addition to the main seating layout, the restaurant has five private rooms. RECOMMENDATION We had the Prosperity Set ($50/person), and any of these dishes are available a la carte. Peking Duck was served with pancakes, scallions, cucumber, and hoisin sauce – always a crowd pleaser. In this preparation, the meat was completely removed to spotlight crisp, perfectly roasted skin. Tender beef medallions with XO sauce and fried garlic were another standout. Grouper steamed Hong Kong style boasted of succulent, firm flakes that gave clear testament to being caught live from an onsite tank. The braised abalone and sea cucumber with black mushrooms provided chewy, crunchy, jelly contrasts – though this may pose strange textures for a novice. It is, however, one of Tiger Hill’s signature dishes. The true star was Yee Sang, a colorful salad representing treasures and good wishes for the New Year. Raw salmon (or sea bass) signified wealth. Pomelo and pickled radish stood, respectively, for diamonds and rubies. Shredded vegetables, seaweed, lime, plum sauce, pepper, and cinnamon lent crunchy, sweet, sour, and warmly spiced sensations with each bite. The best part – to attempt synchronized salad tossing with your meal mates while shouting “loh hei!” The higher it flies, the wealthier one gets. We tried to hit the ceiling, but propulsion by chopsticks got us only so far. Dessert was fried sesame/red bean mochi balls that though simple in ingredients, were so well executed and fresh off the fryer that they were better than the homemade mango ice cream. No easy feat as the latter was rich, creamy, and churned from the famed “sein talone” mangos of Myanmar.
