PARAMI PIZZA
LITTLE BITS OF ITALY BY MAX TOOMEY
WHAT IT IS Parami Pizza, on Shwe Gon Daing, is the Italian restaurant’s second outing in Yangon. Like the Old Parami – or Parami, Parami – as the manager would prefers to call it – pizza is a big part of the menu. What’s different, according to head Chef Frank, is the ‘quality and quantity’ brought to the rest of the menu.
ATMOSPHERE The decidedly autumnal décor – reds, yellows browns and greys pervade – is modern subtle. Marble tables are nicely spaced out, and highchairs arranged around tables are cantilevered into the pillars – a neat way to maximise on space. The inclusion of a large Sicilian chef in the open kitchen is also a nice touch. Frank is a true product of his origins, born in Sicily and raised in New York. Everything he says though, is full of Italian passion.
RECOMMENDATION The passion certainly translates into the food. The pizzas are basically the same as Parami, Parami, excellent, probably the best pizza in Yangon. What’s new is the ‘Cicchetti’ portion of the menu. Think tapas, but Italian. Small delicious plates of food that range between $3.50 (lentil soup) and $10 (beef cheek with cauliflower puree). I didn’t venture for the former but the beef cheek was incredibly tender – a product of a twelve hour slow-cook process. While the ricotta and spinach ravioli did not do wonders for me, the spinach gnocchi in four cheeses did. Salads are served in a bread-bowl, literally a bowl made of pizza bread. The truffle salad is light and explodes with flavour. The rocket adds pepper to the rich truffles, while thin flakes of almond add a gratifying bite. The lamb shank fell from the bone and dissolved in the mouth. The glazed carrots served alongside, should be a side dish of their own. The ice-cream is excellent; the creamy, aromatic vanilla can only be described as proper Italian gelato.
FINAL THOUGHTS No dish was overly complicated or overly clever. Good Italian food is about good ingredients put to good use and Parami Pizza Shwe Gon Daing manages this very well. As promised, there’s a lot of variety and I’m sure to be back to try everything else I didn’t have the capacity for the first time.
