Yangon is not short of Japanese restaurants; the Bento box is swiftly becoming as ubiquitous as the Probox, and you’ve probably found your favourite spot already. But it is good to broaden your horizons occasionally, and with this in mind I venture into Edo Zushi. The rooms are uninspiring, the lighting not dark enough to be cosy or bright enough to be useful, so we head to the counter - always the best spot anyway. The menu is comprehensive, and the staff outnumber us three to one and do that intimidating ‘hover over your shoulder’ thing - we order quickly. The salmon sashimi is simply served with daikon and wasabi; it is an excellent start, and just the thing to get the juices flowing. This wasabi isn’t the florescent green novelty toothpaste squirted onto the edge of your plate; this is a more complex animal altogether. Darker green and fibrous, this wasabi treats your taste buds to a brief sweetness that bursts into flames in your mouth. It is a fabulous accompaniment to the sashimi and not a distraction; but be warned it is dangerously addictive. The sushi platter comes next and the chef skilfully moulds each one like a conjurer performing close-up magic and carefully places each on the plate. The rice is still warm, solid enough to withstand a dip in soy, yet delicate enough to collapse on the tongue. The fish is tasty, the squid melts in the mouth and the salmon roe pop perfectly under pressure. The Futomaki and salmon rolls are nice and tight with just the right balance of textures and flavours. Overall the bill comes to just over $30, including a draught Kirin and a glass of surprisingly agreeable crisp white wine. Edo Zushi are not going to win awards for ambience or service but that matters not when you’re presented with some of the best sushi you are ever going to eat in Yangon. Pan Pacific’s Saan Buffet BY DUNCAN HINES The newly opened five-star hotel Pan Pacific connected to Junction City in downtown Yangon has launched Saan, a classy addition to the city’s fairly cramped buffet scene. Days before its official opening on Friday, December 8, Myanmore was invited to sample some of the dishes and chat with Tony Choo, the chef behind the establishment. “Everywhere you go there is a lot of fancy food – like molecular fusion,” says the 56-year-old Singaporean. “All of this will not last. I’m going back to basics, comfort food, quality.” Choo is a celebrated chef in his homeland, the author of two cookbooks and a favourite among the island’s leaders and celebrities. He has made it a point to train local chefs for Saan – meaning ‘rice grain’ – including the Myanmar sous chef. But the focus is not completely on the food. Saan's staff tout the vista from the floor-to-ceiling windows of Holy Trinity Cathedral and Shwedagon Pagoda. It’s a view to be enjoyed both day and night while delving into the buffet scene, a broad scope that includes roast beef, Peking duck, pastas, grilled fish and sushi. Indeed, the seafood game is strong, with a huge icy pool of cooked lobster, mussel and crab. The dessert corner is packed with addictive fun-size cakes including crème brulee and tarts of viscous chocolate that glimmer like oil slicks. Be warned, however, there is a cheese-shaped hole in the offerings. “We are figuring out what guests want,” says Choo, who has been in the industry for over 40 years. “The European market will like cheese but a lot of Asians won’t appreciate it. We have to find the balance for our clientele.” Because of the superb location, “we will capture not only the local market but also the tourists,” added Choo. The breakfast buffet including juice, coffee and tea costs US$22, lunch costs $38 and dinner including free flow wine and champagne costs $45. A la carte is also available.
