A Heart Healthy Hamburger Soup

INGREDIENTS

• 1lb 93/7 ground turkey

• 2 stalks celery, diced

• 1 clove garlic, minced

• 1 (14.5oz) can no-salt-added diced tomatoes

• 3C no-salt-added beef broth

• 1 whole yellow bell pepper, seeded and diced

• 1 whole red bell pepper, seeded and diced

• 1 whole green bell pepper, seeded and diced

• 3 large carrots, peeled and sliced

• 5 baby red potatoes, cut into quarters

• ½ tsp each kosher salt, black pepper

• 1 tbsp Italian seasoning

• 1 tbsp reduced-sodium soy sauce

• Mozzarella cheese, shredded, for serving

INSTRUCTIONS

1. In a large pan over medium-high heat, brown the meat with the celery and garlic. Drain.

2. Add the meat mixture into a large slow cooker with the rest of the ingredients.

3. Cook on high for 4-6 hours, or until potatoes are softened. Serve with cheese.
