Beyond Bread: Grains Under Wraps If you’ve walked down the bread isle recently it is no longer a simple decision such as white, wheat or rye. Today sliced bread is only a small percentage of what you find on the bread isle. Now it is shared with wraps, flatbreads, pitas, bagels, English muffins and more! Did You Know? The survival packets found on each floor have a referral form to be filled out and faxed to Diabetes Education. This enables us to follow-up with patients after discharge.
Here is what to look for: - 100% whole grain (the first ingredient should list whole wheat flour, not enriched wheat flour). - No more than 200 milligrams of sodium - Less than 4 grams of added sugar - At least 3 grams of fiber Examples of the above are: - Pepperidge Farm whole grain mini 100% whole-wheat bagels

Healthy Chicken Casserole 2 cup sliced fresh mushrooms ¾ cup chopped onion 2 cups cooked brown rice 10 ¾ ounce condensed, light cream of chicken soup ¼ cup part skim mozzarella cheese (or your favorite low-fat cheese) 2 cups diced rotisserie chicken, skin removed Cooking spray Preheat oven to 350 degrees. Sauté onion and mushrooms in large skillet sprayed with cooking spray and cook until tender. Stir in the cooked rice, chicken, undiluted soup and ½ of the cheese until warm. Spread the mixture into a casserole dish that had been sprayed with cooking spray. Sprinkle remaining cheese over top. Bake uncovered until heated through and bubbly around sides. Let stand 5 minutes before serving. Makes: 6 one-cup servings. Dietary Exchanges: 2 protein and 2 carbohydrate

Kay received her bachelor’s degree in nursing from Kent State University, and her dual tract administration/education master’s degree in nursing from Gannon University. She is a certified diabetes educator with over 28 years experience in management and education. She is a member of the American Association of Diabetes Educators and on the board of the American Diabetes Association, from which she has been a past Diabetes Educator of the Year award recipient. She is also a past St. E's Employee of the Year.
