The sun is shining so our estate mixologist, Alex Archer, has delivered a deliciously refreshing cocktail for your days on the patio.

1.5 oz Wayne Gretzky Estates Muscat Artisanal Spirit

1 oz lemon juice

.5 oz maple syrup

5-6 fresh blueberries

1/2 can GoodDrink organic lemon or blueberry spritzer

Place 5 to 6 fresh blueberries in a shaker with lemon juice and maple syrup. Muddle until the blueberries are sufficiently crushed. Add the Muscat spirit and ice, shake well.

Over a tall glass filled with fresh ice, pour all contents into a bar sieve and into the glass. Use your muddler to press all the liquid into the glass. Top with the seltzer of your choice and garnish with a fresh lemon slice. Cheers and enjoy!

TIP: Each Seltzer will provide a different flavour to the cocktail. Switch up the fresh fruit or eliminate completely to get a new twist every time.

STYLE: Medium to full-bodied and fruit-forward

ALCOHOL: 40%

Distiller’s notes: Our winemaker, Craig McDonald, working closely with some of our long-standing growers, selected the finest Muscat grapes harvested from Niagara Peninsula vineyards. The juice underwent a slow cool fermentation to enhance and retain varietal expression, then it was presented to our distiller, Tim Wilson. The fresh and fruity Muscat wine was then double distilled in a copper pot still to bring forth a very clean, aromatic spirit with 89% ABV. The spirit was then aged for 2 months in a stainless-steel tank to soften the mouth-feel and enhance aromatics. Pure, naturally limestone filtered, UNESCO-protected Niagara Escarpment water was added to achieve 40% ABV and the perfect balance of aromatics and flavours. The spirit was then bottled, ready to be enjoyed.

Flavour profile: At first swirl of the glass look for elegant tear drops forming along the side of the glass. Aromas of tropical fruit, white grape, floral, and star anise rise from the glass. The mouth-feel is full and robust in texture, with notes of ripe fruit, almond and licorice. The finish is long, lingering, and warm with a hint of sweetness and fruity notes of citrus and apple.

Best served: Enjoy neat or on the rocks, mix with soda water and a twist of orange, or as a replacement for vodka in Martinis and other cocktails.

This spirit shines in a unique twist on a French 75 by adding 1oz of Muscat Artisanal Spirit, ½ oz lemon juice, and 1oz of simple syrup to a chilled sparkling wine flute. Top with Trius Brut Rosé and add seasonal berries as a garnish.
