Needs a Home By Nancy Dewar
Since 2007, Fairway Mortgage has been a staple in the local business community in Newburyport, helping homeowners refinance and purchase the homes of their dreams. In that time, Fairway has processed more than 10,000 loans in 15 states. It is a relationship driven company and much of their business comes from repeat clients and referrals. Since Fairway’s focus is 100% on residential mortgage loans, they can offer more options than local banks, and in most cases, shorter turn times start to finish, when necessary.
Fairway Mortgage not only helps people get new homes but creatures, as well! The staff is committed to animals and passionate about helping animals find their forever homes. I recently met with seven of Fairway’s dog-loving team members, and between them, they have 14 dogs and another special one, who crossed the Rainbow Bridge last year. Many of these furry friends are rescues.
Branch Manager Dan Ventura and his wife, Dede, a huge animal lover, never had dogs as adults until eight years ago. However, that changed one fateful night while at a friend’s house. Someone had texted another party-goer about 2 dogs that needed to be re-homed, due to the owner’s health. As the evening wore on, Dan and Dede said, “Why not? We’ll take the pups!” Enter Griffy and Pappy, both appropriately named for their breeds! Griffy is a Brussels Griffon, a toy dog breed from Brussels, originally known as street dogs who were bred to hunt rats. Pappy is a Papillon, one of the oldest of the toy spaniel breeds, known to have enjoyed a pampered history among the European elite for over 700 years. I’m sure Pappy enjoys this same pampered treatment in the Ventura household.
Three years ago, Dede and Dan welcomed another dog in need into their lives. Madeline, also a Brussels Griffon, was a mess and desperately needed a new home. She was matted beyond words, and one could hardly even tell she was a dog from her photo. Not only did she look more like a mop than a dog, but she
was also 13. Senior dogs often have a more difficult time finding new homes. Dan laughed and said, “We fell in love with her; and shortly after had to take our names off the foster list, as we found it just too hard to give them up in the end”.
The Fairway team supports the local community in several ways, often focusing on animals. Just recently, the Newburyport team filled 8 vehicles with supplies for the victims of the Merrimac Valley gas explosions and fires. While 6 cars headed out with personal items needed by homeowners in shelters, another 2 headed to the MSPCA in Methuen with supplies for the displaced pets.
Fund’s primary fundraising event is the annual Flag Day 5K race that starts at dog-friendly Cashman Park in Newburyport and held in late spring each year.
As we all chatted, one of their team members said that his dog was “indescribable.” I think the word “indescribable” can be used for all of our relationships with our beloved animals. Each and every one is unique, trusting, loving and so much more. The depth of commitment between people and their pets is boundless and vast. How fortunate we are to share our homes and lives with each other.
Fairway Independent Mortgage Corporation is an active partner with The American Warrior Initiative (AWI). The mission of AWI is to educate, encourage and inspire Americans to give back to our military. AWI’s partnership with Fairway allows them to educate real estate and mortgage professionals on handling the home purchase needs of active duty and military veterans with true care and compassion. Last year, Fairway also sponsored three service dogs to be provided to local veterans. “We were so happy to help our local heroes out in this way” said Dan.
The company is also a strong supporter of the 1st Lieutenant Derek Hines Soldiers Assistance Fund. This non-profit was established by the parents of Derek Hines, a West Point graduate who grew up in Amesbury and Newburyport. Derek was killed in 2005, at the age of 25, while serving our country in Afghanistan. The

Lisa Richmond is the company’s Operations Manager, overseeing much of the behind-the scenes activity for the office. Lisa adores her 3 pups; Sampson, an 11-year-old black Lab; Rookie, an 8-year-old black lab & golden mix with “classic middle dog syndrome” and 6-year-old Zahli, a Pit Bull mix who was found, near death, in a ditch in Alabama in 2012. Nursed back to health by an amazing foster mother in Mississippi, Zahli was then brought north by Sweet Paws Rescue. Sweet Paws is an Essex-based shelter-less rescue group that places dogs in foster homes until their furever homes are found.

Loan Processor Samantha Bomba adores her two German Shepherds, Cash & Major. Cash is 2 ½ years old and still very much a puppy. Major is a year old and brother to Cash. Samantha takes them everywhere with her in her free time.
Rookie, Samson & Zahli Loved by Lisa Richmond Marketing Assistant Erin Meisner has a Golden named Saige who is 5. Saige is her family’s first dog who, according to Erin, gets “lots of beautiful white hair all over our house” and is smothered with love by their four children!

Closing Manager, Eric Byers and his family have a 9-year-old rescue from Arkansas, named Sparkles. She is a Jack Russell Terrier who loves to lounge by the pool and chase chipmunks around their yard in NH. At night, it’s all belly rubs and cuddles, which Eric’s 3 girls are more than happy to offer up.

A 6,000 Mile Journey…

A year ago this past summer, we lost our beloved old dog, Hazelnut. I’m an artist with a home studio, so for most of her 15 years she was my constant companion. After we let her go peacefully on a warm summer morning, it was months before we had the heart to start looking at online pet adoption groups and visiting local shelters, hoping to spot the one for us. Anyone who looks through the unending pages of available dogs knows that it is hard to land on one when there are so many sweet faces looking out from the pages in need of a good home. My husband and I have admired the beauty and temperament of our neighborhood’s ‘ambassador,’ a Golden Retriever named Rosa. The idea that there are rescue groups for Goldens didn’t occur to me until one night I googled dog rescues near me and landed on Yankee Golden Retriever Rescue (YGRR) in Hudson, Massachusetts. This led us to Molly – a moment of stars aligning, I believe.
They rescue Golden Retrievers domestically, taking in owner surrenders from the Northeast as well as working with groups in the South. However, many of the rescued dogs now come via their international rescue efforts in Turkey and China. Molly was rescued with 4 other dogs in China late last winter.
YGRR depends on volunteers and staff for these international missions. Volunteers who routinely fly to China will sign on to escort the dogs safely home to the US. The dogs are met at JFK or Logan for the journey to the shelter. YGRR works with rescuers in China who save these dogs from the meat markets, shelters and kill lists. They are examined, vaccinated, quarantined, treated and readied for the trip to the States. Reading of these heroic rescues, we believed this avenue for adopting our next dog was meant to be. YGRR does not take their adoption process lightly – with their application form, they question every aspect of their rescued dog’s life in your home. Dovetailed with the

questionnaire is a home visit and evaluation. Our interviewer shared her rescue and volunteer story while taking in our lifestyle, home and yard to determine a suitable fit. It’s an impressive and thorough process; all to help make the best matches possible for both the home and each dog.
Once we were accepted, we were provided access to view the available dogs on their web page and submit requests for adoption consideration. I continued to search other online rescue sites, but the stories behind the YGRR Goldens kept drawing me to these beautiful dogs who had experienced so much hardship in their lives overseas.
In mid-April I submitted a request for consideration on two dogs from China whose profile and personalities fit our own. One of them was Molly, whose shelter name was “Matilda.” We got the call from YGRR that we’d been chosen for “Matilda,” and would we like to come for a visit and introduction?

A note from the Executive Director of YGRR… We started our international rescue efforts in November 2015. Since then, we have rescued 149 dogs from Turkey, 55 dogs from China and 4 from Egypt.
We were excited and incredulous – would this dog, with her long journey behind her, find comfort with us as our other rescued dog and cats had? Now we had the opportunity to bring a new dog into our lives and hoped the fit would be perfect for her, as well. On the drive to Hudson the day we met Molly, we ran through every name we could think of that might suit her personality. We wanted to give her a new life and that included a new name. The name “Molly” struck the right note even before we met her. After a quick introductory meeting with Devon and another staff member, we were given details of her personality. She loved carrying toys and found comfort in them. She was gentle, yet highly energetic – her crashing entry into the meet and greet room was evidence enough! And they told us that while testing her for food aggression, instead of growling or biting the fake hand poking into her food dish, Molly picked her dish up and ran away with it. This was a dog whose survival skills in China neither brought harm to others or to herself. It was at that point that she stole our hearts,
and we knew that there was no question that she’d go home with us that day. She hopped in to our car without hesitation and settled in the backseat next to me with her head in my lap for the ride to her new home. Since adopting Molly, our life has been filled with fetching tossed tennis balls and long runs through the woods near our home. She’s added some weight to become healthy, lean and fleet-footed - a glorious sight when she’s stretched into a full run. We’ve never owned so many tennis balls, and our house is filled with floating tufts of fur again. She preens as we brush her coat into shiny waves but relishes a good roll in smelly muck. She’s a blend of street-smarts opportunist and charm for admirers. Stroke her ears and she’ll sit by your side forever…but watch that ice cream you’re holding! Our house and hearts are full now with this wonderful girl. You’d never know Molly’s early life included hardship. A year ago we lost our beloved Hazel. This year we found our beloved Molly. Thanks to the Yankee Golden Retriever Rescue…life is good.

In China, puppy mills are common and Goldens are a very popular breed. In many metropolitan areas, dogs must be less than 14” at the shoulder. If they exceed that limit and are spotted, the police will confiscate the dog. Goldens are usually over 21” tall. There are regular campaigns in which neighbors are urged to turn in offenders. If your dog is confiscated, you have no chance of getting the dog back. Municipal shelters euthanize after 7 days, and adoption is uncommon. Stray dogs are routinely killed, as well, in a misguided effort to control the population. In addition, many dogs end up in slaughterhouses. Many of these slaughterhouses operate illegally, and there is a network of animal welfare volunteers who work to stop them. Most of the Chinese population is opposed to slaughtering dogs. The amazing thing about the dogs we bring to this country is that, despite everything they have endured and the long journey they have undertaken to get here, they get off the plane and out of their crate and are typical Golden Retrievers. They are wagging their tails and are happy to make new friends. These dogs embody everything that is so wonderful about our breed, and we will continue to help as many as we can. HOW I MET MY TRUE LOVE

How lucky I was when I got a text from a friend about this cute little cat. Tom McLaren told me he was painting a house on Ocean Boulevard and there was a very friendly cat that the owner wanted to find a home for! He said they had the cat for nine years but the owner suddenly developed allergies and was keeping the cat in the basement for the past year. I wasn’t really in the market, and I told him I would ask around and also check with my brother and his wife, as they own Stratham-Newfields Veterinary Hospital and often know of people who are looking. So each day that week, Tom would send me a text with a picture (or without) and tell me how nice this cat was. He said she was very friendly and very soft.
By the end of the week, I told Tom to have the owner call me and I would take her. The owner called and asked me a lot of questions. She said she would talk to her husband and let me know. The next day she called and said I could pick Gracie up on Sunday. I picked Gracie up at noon and by 1:00 p.m. she was sitting in my lap, as happy as could be! ‘Just Dogs’ Adoption Event
Newburyport’s Just Dogs (boutique & dog bakery) teamed up with the local TD Bank branch and Last Hope K9 Rescue (LHK9) in September to find new homes for dogs in need. Judy Hoover, owner of Just Dogs, has provided immense support to various rescue groups over the years. Artist Francisco Colom also participated; donating proceeds from orders to Last Hope. LHK9 is a Boston-based all-breed foster/rescue dedicated to saving abandoned, neglected and abused dogs from high-kill shelters throughout the US. (LastHopeK9.org)
Clear the Shelters Event
Many wonderful families chose to adopt during the NH SPCA’s "Clear the Shelters" event in August. Forty-one animals were adopted in Stratham, and the event brought awareness to some “harder to place” senior pets. Joey and Jax are brothers that will remain together. Sweet Paws Rescue will be holding their 4th annual Barktoberfest on Saturday, October 13th from 11 am to 4:00 pm at 182 Southern Avenue in Essex, MA. This is Sweet Paws largest fundraiser and a fun festival for families. There will be music, food and a lot of tailwagging dogs. This is a great way to meet the Sweet Paws team and their Southern rescue paw-tners from Mississippi and Alabama, the women who’ve literally rescued thousands of dogs on death’s door from the side of the road. The sight of people riding horses on the beach is truly magnificent! Treat yourself to this sight on Saturday, October 27th at Cranes Beach in Ipswich for the 13th annual Horses Helping Horses Fall Beach Ride to benefit the Equine and Farm Animal Center at the MSPCA Nevins Farm. Does your dog prefer to simply snuggle on the couch rather than going for a romp? Apparently, many do! In fact, I found several articles that highlight dog breeds that tend to be a bit lazier than others; a.k.a. couch potatoes! Pugs, French Bulldogs, Shih Tzus and Great Danes seem to be on nearly every list!
If your animals sleep on furniture, how do you keep it looking presentable? I decided that Doug Abrams, owner of Allen Wayside Furniture, would be the guy to ask. Not only is Doug an expert in this area having been in the business for over 35 years, but his little black poodle, Toto, is also a consummate couch potato at home and at work. The first word out of Doug’s mouth was “Sunbrella.” This fabric has been around since the 1960’s and was originally developed for outdoor awnings and then became known for use on outdoor furniture.
Sunbrella now makes fabrics that can be used indoors on anything from sofas to chairs to window treatments and accent pillows. It has a soft and luxurious feel and look…and best of all for pet-peeps, it’s totally animal-friendly. It’s durable, cleans up easily with some bleach (yes, that’s right…you can put pure bleach on any stain) and it’s 100% color-fast. It will never fade, even if placed in direct sunlight. Sunbrella is available in an array of solid colors as well as nice looking prints and patterns. Doug said that leather is another great option. My first question was, “But doesn’t it scratch?”
He explained that through a process called “semi-aniline dyed” the color goes right into the hide, so it doesn’t show scratches, as the color penetrates and is absorbed by the leather. The quality and grade of leather is important; so, keep that in mind if looking at leather furniture. Another benefit; it’s easy to clean up mud, drool and spills with simply a damp cloth.

Slipcovers are another great option and are a big seller among Doug’s clients; many buy a second or third to switch looks for the seasons. It’s also a good idea to consider getting the fabric protection treatment option when purchasing new furniture.

THE GOLDEN GIRLS

Imagine being a young pup who recently discovered how truly enticing squirrels can be and one who happens to have a room with a view. Well, not simply a room with a view but rather a home with a view. Meet Ginger, Jonathan King’s and Jim Stott’s (founders of Stonewall Kitchen) 1 ½ year-old Golden Retriever who now spends much of her day on the squirrel-patrol! Jonathan and Jim renovated Maine’s oldest standing home, the Bray House in Kittery Point, which now includes a series of pavilion-like additions to the original 1662 home connected via glass walkways. Expansive walls of floor-to-ceiling glass in the new sections offer breath taking views of Pepperrell Cove, Whaleback Lighthouse and, of course, numerous squirrels scurrying across the lawn… much to Ginger’s delight!
The Bray House was on the market for 2 years prior to their purchasing it. Jim looked at the house simply out of curiosity and stated, “It got under my skin. It was just magical.” Following his daily walks at Fort Foster with their 3 dogs, Jim and the dogs would come and loiter and sit daydreaming on the property. After purchasing this historic home in need of enormous TLC, they hired architect Hugh Newell Jacobsen and closely collaborated with him on the renovation and additions. Mr. Jacobsen’s projects have been built and published world-wide, winning 114 awards for excellence in design. When we met at their amazing home, Jim laughed and said, “Ginger allows us to live here with her!” Both Jim and Jonathan are enormous dog lovers and usually had 2 to 3 dogs at once until just recently. All Goldens; all girls; all with botanical names, as both are passionate horticulturists. “We like girl dogs. They tend to be smaller, don’t run and wander.”

Holly was their first Golden; a Christmas gift from Jim to Jonathan and aptly named Holly Berry. They mentioned that she would have been 20 this past summer. Daisy and Violet joined the family next. Both Holly and Violet sadly battled cancer, but Daisy lived till the ripe age of 16. Their fourth Golden was Lilly, who they lost a year ago last June very quickly from a tick-related disease. She was only 9 and gone in two weeks. Losing her so unexpectedly was heartbreaking. After Lilly died, they believe Ginger understood her buddy was gone. “The first night after Lilly died…Ginger knew. Ginger always ate out of her bowl on the floor. Lilly had a raised bowl. We fed Ginger that night out of Lilly’s bowl, she hesitated for a long time and then finally ate out of it.” Their newest pup is truly a sensitive one. “Ginger would get the Sympathy Diploma at dog school,” Jim said. Jim and Jonathan met in Portsmouth and have been together for 29 years. Stonewall

Kitchen began serendipitously; it really was a fluke. Fresh out of college in 1987 with a load of student debt, Jonathan was bartending and working at a local nursery. Jim was building spec homes in Maine. They began making jams from the fruit Jim was growing, and a friend suggested selling them at the Portsmouth Farmers Market.
Jonathan said, “I thought if I could make a couple of hundred bucks a day and pay down my debt, that would make sense. Had my friend never suggested selling at the farmers market, none of this would have ever happened. The next thing I know we’re pouring things into bottles and selling it. At the end of the day at the market, we’d barter our goods for others unsold products. If we got a lot of pumpkins, we then made pumpkin butter!”
Twenty-seven years later their corporate headquarters in York is one of the top five tourist attractions in Maine with over a halfmillion people visiting annually. Stonewall Kitchen offers over 270 products, is sold in 45 countries, has a nationally acclaimed cooking school; and Jonathan and Jim have

written seven cookbooks. Blueberry Jam remains their best-selling product. This recipe came from Jim’s grandmother. It was her blueberry pie filling which they simply added more pectin.

Jonathan chuckled as he explained, “We really had no idea. If I had done a business plan, I’d not be in business. Early on we tried to get a $5,000 loan to buy a van to deliver goods. Not surprisingly, they rarely left home without the pups. Their pack was known as “the Stonewall Kitchen Dogs.” They would run around for meets, greets and treats and then return to their Dads’ offices. Because of the never-ending treats, they once sent an email to all employees, something to the tune of…” You’re not in trouble but just want you to know that you don’t always have to give the dogs cookies, as they are getting a bit chubby.” Every employee then received their own, never ending supply of Charlee Bear dog treats…only 3 calories each!

Animal rescue, spay & neuter and anything to do with creatures in need is near and dear to Jim and Jonathan’s hearts. Animal rescue, spay & neuter and anything to do with creatures in need is near and dear to Jim and Jonathan’s hearts. In addition to providing immense assistance to many shelters in Maine, they also are heavily involved in helping dogs in Vieques, a lush Puerta Rican island where they spend winters. This small island is 21 miles long by 7 miles wide and is home to around 9,000 people, 4,500 wild horses and overrun with stray dogs (known as Satos, Puerta Rican slang for the mixed breed dogs there). They are the largest donor to the Vieques Humane Society and have strongly supported the clinics spay & neuter program with funds for a second operating room, making it possible to double the number of procedures. Jonathan and Jim have also rounded up a few Sato strays themselves, flown them back to the States to new loving homes they found for them. Jim and Jonathan owned 100% of Stonewall Kitchen and built it with conventional financing. A share of the business was sold 3 years ago to an investment banking company. Jim then retired, and Jonathan says he is now a creative consultant, giving input
as needed/asked. There is no such thing as pure luck. These guys worked tirelessly with no vacations for 6 years, pulling allnighters to fill orders, attending farmers markets on weekends as well as bartending on weekends to make payroll. They would beg family and friends to kick in when more hands were needed in the kitchen. Jonathan shared a funny story about their first retail store. “My Mom worked at our first store in York. She’d get $42 a day that would be her go-out-for-dinner-with-girlfriends money! One day I walked in and there was smoke coming up by her behind the counter. ‘Mom are you smoking? You can’t smoke here.’ She said, “Just give me my $42. I’m going out with the girls tonight!” It seems that Ginger may be a bit like Jonathan’s mother…not one to be bossed around. “Ginger is the least of all of our dogs to follow commands. She’s either smarter than the others and simply ignores us…or she has our number and plays us.” What a gift to meet Ginger, Jim and Jonathan. I can’t wait to hear what they name their next furbaby, who will probably be in their home and hearts sooner than later.

Diet Choices for Cats By Dawn Price, Registered Dietitian Owner of The Natural Dog, Newburyport, MA

The natural diet of the feline consists of prey animals that are high in protein, have moderate amounts of fat and little if any carbohydrate. The typical prey animal for a housecat, usually a rat or mouse, consists of approximately 50 to 60% protein, 15 to 30% fat on a dry matter basis and 70 to 80% water.
Let’s compare the feline’s natural diet and nutrient needs to diet choices available today.
Protein:
Cats are obligate carnivores and they must consume primarily animal-based proteins coming from meat and organs in order to meet their nutritional needs. Felines lack the ability to digest plant proteins as efficiently as animal proteins. Obligate carnivores are designed to eat meat/organs not grains/ vegetables. Not all protein is created equal. Plant proteins do not contain the full amino acid profile required by an obligate carnivore.
Some dry foods may contain high levels of plant protein compared to meat protein. Canned foods and raw diets which contain more meat and organs is a better choice than dry foods when selecting a diet optimal in protein. A note about kidney disease and protein: Research demonstrates that diets high in protein have no detrimental effect on the kidneys, and animals with mildly decreased kidney function do not benefit from reduced protein diets. There is evidence that restricting protein may actually slow down the filtering action of the kidneys.
Carbohydrates:
Nutritionally speaking, cats have no dietary need for carbohydrates. In addition, they have a physiological decrease in the ability to utilize carbohydrates due to the lack of specific enzymatic pathways that are present in other mammals, and they lack a salivary enzyme called amylase. A diet high in carbohydrates will predispose your cat to diabetes, obesity, and intestinal
disease. Note that “grain-free” does not always mean “low-carb” since potatoes and peas are often used instead of grains. The average dry food contains 35-50 percent carbohydrate calories. Some of the cheaper dry foods contain even higher levels. Many canned foods and raw diets, on the other hand, contain approximately less than 10 percent carbohydrates.
Moisture:
As previously stated, the cat’s diet should be 70%-80% moisture. Feeding a diet low in moisture will predispose your cat to urinary tract diseases. Dry food only contains 8-10% moisture. Therefore, cats are only consuming 12-15% of their daily water intake if fed an exclusively dry food diet. It is important to note that felines have a low thirst drive so they do not make up for lack of moisture through their drinking water. Canned food and raw diets are very moisture rich and contain adequate moisture levels to help support urinary tract health. Interesting fact: A study of the urine of 198 feral cats eating a natural, raw diet found no evidence of urinary stones in any of the cats.
Dental Health:
Contrary to a popular myth, dry food has no beneficial effect on dental health and there is no scientific support for its use in preventing dental disease. It is often swallowed whole but even if it is chewed, it is brittle and easily breaks apart providing no abrasive force against the teeth. Canned food also does not provide any abrasive force and is no better (but no worse) for dental health when compared to dry food. Brushing your cats’ teeth daily is the best way to keep their mouth healthy. 26 seacoastbarkmagazine.com
What is the best choice for feeding your cat?
When choosing the best diet for your cat, consider one that provides high quality protein coming from animal source, minimal carbohydrate and high moisture content. Raw diets and canned food are excellent diet choices for cats. These diets contain adequate moisture as well as appropriate amounts of protein and fat. Never feed an exclusively dry food diet. If feeding dry food, only use it supplemental with the primary diet containing either raw and/or canned food. Transitioning your cat off a dry diet to a moisture rich diet may be challenging at first. Cats are finicky and it takes many attempts to familiarize them with a new type of diet that is different in texture from what they are used to. Be patient and don’t give up. Eventually they will begin accepting the new diet. A helpful tip is to offer them the new food when they are hungriest. Offer the new food by itself. After a couple hours, you may offer their regular meal if they refuse the new food. Never allow a cat to go without eating. It is dangerous for a cat to go too long without food and can quickly lead to dangerous health issues.

Maple Crème Fraiche
½ C crème fraiche (can be substituted with sour cream) 2 T maple syrup 3 large chopped sage leaves Mix all together
Toasted Pumpkin Seeds
Pumpkin seeds Cayenne pepper Olive oil Salt In a bowl, drizzle olive oil over seeds. Add cayenne pepper & salt. Place on baking sheet & toast till golden.
Roasted Butternut Squash Soup
with Black Truffles & Maple Crème Fraiche
Soup Ingredients 3 shallots 1 garlic clove 3 lbs. butternut squash ½ C light brown sugar 1½ qt heavy cream (or whole milk) 1 ½ T of molasses 1/8 C extra virgin olive oil 2 cinnamon sticks Sage leaves S & P to taste Pumpkin seeds
Soup Directions
Preheat oven to 350. Cut Squash into quarters & remove seeds.
Add 1 T of butter & equal parts brown sugar to each squash piece. Bake for 45 minutes or until soft.
Garnish:
Shaved black truffles Truffle oil Toasted pumpkin seeds Freshly grated nutmeg
In a separate pot steep cream with cinnamon, shallots & garlic for 20 minutes on low heat. Remove from heat & discard cinnamon sticks, retaining shallots & garlic in the cream. Cool squash & remove skin. Emulsify pulp with the heavy cream, olive oil & molasses in blender till smooth. Cool cream slightly prior to mixing with squash. Serve soup in a bowl & top with shaved black truffles, a dollop of maple crème fraiche & toasted pumpkin seeds. Finish with white truffle oil drizzled on top & freshly grated nutmeg. (Note: Soup can also be served in a halved and seeded pumpkin)
