Incoming President’s Message Hello to all of our FSNA members!! I am so excited to be serving as your President and I look forward to the journey ahead. First let me say that our Annual Conference in Daytona Beach was phenomenal. Not only was it a fabulous location, our FSNA office staff did a marvelous job organizing this event. By all accounts, everyone had a great time. As this issue of our Florida School Nutrition magazine is published we will be preparing for our Leadership Conference in Tampa. I will be introducing the President’s initiatives and a new awards program for the Region Directors. We will be working to make sure each new officer has the tools and information that they need to carry out the duties of their position. I hope to develop a plan that will make the transition of incoming officers seamless. I would like to see us place a new emphasis on the educational needs of our members this year by developing a mentoring program that will assist our members and employees in gaining the knowledge they need to be successful school nutrition employees. The knowledge and experiences we share with each other will make us all stronger. The stronger we are together, the better we can serve our children. I also hope to see a record number of our Florida members at ANC in Denver where Sandy Ford will be installed as the new SNA President. What an honor to have one of our very own serving our Association at the highest level. I hope that if you are able to come to Denver that you make sure to attend Sandy’s reception and also make sure to come have your picture taken with the rest of the Florida members. Also, make sure to come have some fun with us as we perform at “Puttin on the Glitz.” Once again Maggie Green has put together a fun and energetic skit for us. Maybe we can bring home a prize this time. As we all work together this year to meet the challenges of the new meal requirements I hope that we can remember why we are all here…to serve our children and teach them why good nutrition and exercise is important for a healthy mind and body. I hope that we can take the time to teach them where food comes from, how it grows and that eating is not simply the act of consumption. We can be the inspiration they need to become healthy, productive adults.

Working Together to Bring Fresh Food to Florida Schools and Students

By Jackie Moalli, Office of Food, Nutrition and Wellness, Florida Department of Agriculture and Consumer Services With the support of many members of the Florida School Nutrition Association, Commissioner of Agriculture Adam Putnam worked with members of the Legislature during the 2011 legislative session to transfer the state’s school food and nutrition programs from the Department of Education to the Florida Department of Agriculture and Consumer Services. In January 2012, the programs successfully transferred to the department. Now, Commissioner Putnam and his department’s new Office of Food, Nutrition and Wellness are working to make his vision – to improve the nutritional value of school meals by incorporating more locally-grown, fresh fruits and vegetables – a reality. This fall, the department will launch a new Farm to School effort, enabling schools to access more quality, locally-grown, seasonal, fresh Florida produce, at the best possible price. As a part of this effort, the department is establishing a statewide procurement bid for fresh fruits and vegetables during five periods throughout the 2012-2013 school year based on Florida’s eight month growing season, which coincides with the school year.

A key component to the success of the Farm to School effort is strong communications and understanding of the needs of the sponsors. To accomplish this goal, the department conducted a survey of the school districts throughout Florida to determine potential demand for seasonal products. Based on these findings and what staff learned from meetings with key stakeholders throughout the state, the department established a common menu of seasonal produce. That menu is designed around the following procurement schedule:

There are many benefits and opportunities around common menus. The ability to plan ahead helps farmers anticipate what produce to grow and in what quantity. Procuring through a statewide bid to meet the common menu schedule will also increase the purchasing power of each sponsor. Through the statewide procurement process, sponsors become reliable buyers with steady demand and volume from season to season. Farmers see the benefits of working to provide the best products at the best pricing. The

To help improve communications, there will be an opportunity for sponsors to connect with local farmers through the new Fresh for Florida Kids website to be launched prior to the beginning of the 2012/2013 school year. A new improved Farm to School section will be available where farmers can make schools aware of additional in-season produce and sponsors can list their needs. Farmers and sponsors will be able to log in to the section and update information in real time to meet immediate demand. Continued strong communication via the website and directly among the sponsors, farmers and parents will be key to realizing the success of Florida’s Farm to School program. Educational outreach materials are also critical to the success of Florida’s Farm to School effort. The opportunity to build education around featured locally grown Florida produce can lead to more consumption in school and at home. Research shows the more children know about their food, the more likely they are to try something new. The department is working on several ways to create messaging around the featured produce of the week. In cafeterias this fall, students, teachers, and parents can expect posters displayed with vibrant photographs of the weekly produce along with interesting facts about where, how, and when the produce is grown. The posters will also include a trivia fact and will feature chef inspired, kid-tested recipes using the featured produce. Each week, similar flyers will be available in schools to send home with students. The message will be reinforced with posters displayed in grocery stores statewide in the produce section to inform parents on what produce will be available that week in schools. Finally, nutrition education materials are in development for classroom use to support the produce of the week. Many additional opportunities exist for schools to increase awareness for fresh, healthy foods available, including highlighting the featured produce on the school menus, marketing the featured produce in morning announcements, creating contests around recipes or writing food journals which encourage students to try new produce every week both at home and in the cafeteria. The department will continue to work on ways to promote and foster connections between schools, local farmers, and chefs as a way to increase educational experiences offered to Florida school children. The department is enthusiastic about the newly improved Farm to School program and many other new initiatives we’ll be rolling out this year. We look forward to continuing to work closely with sponsors to achieve our common goal of providing healthy choices and encouraging healthy lifestyles in Florida’s school children.

Did you know that water is an essential nutrient for growth, development, and health? Did you know that humans can live longer without food than without water? We might survive without food for weeks, but without water our body will shut down within only a few days! Water is an essential commodity that very often we take for granted. In fact, the new Richard B. Russell National School Lunch Act (P. L. 111-296 Sec 203) recently signed by President Obama on December 23, 2010 found it necessary to provide specific guidelines to School Food Authorities. As per this enactment; “Schools participating in the school lunch program under this Act shall make available to children free of charge, as nutritionally appropriate, potable water for consumption in the place where meals are served during meal service.” Healthy, Hunger Free Kids Act of 2010. Water plays a vital role in energy formation and is the center in which all energy reaction takes place. In fact, two thirds of our body weight is water. But why does our body need so much water? Every cell in your body contains water which helps keep their shape and size. Water is your body’s transportation system. The fluids in your body form a heavily trafficked river through your arteries, veins and capillaries that carries nutrients, absorbed into the blood from food, to your cells and waste products out of the body. Therefore, water also helps solid wastes pass through your system easily.

In addition, water is the cooling system that helps your body maintain a healthy temperature through perspiration. Chemical changes occur when our bodies produce heat. Water absorbs extra heat and carries it to your skin. Perspiration is the effect of water and heat loss.

Joint Lubrication Water forms the makeup of cerebrospinal fluid, acting as the human’s shock absorber. This fluid helps our cells and tissues from changes or jolts that could cause damage. Water also forms the foundation for synovial fluid which lubricates your joints, helping them move easily with little wear and tear. Water your body! A simple step to stay healthy is to drink water. Drinking water increases metabolism, helps muscle tone, and reenergizes you after exercise. Listed below are a few tips to increase your water intake. 1. Drink 8 glasses (8 ounces each) of water a day to stay hydrated, especially if increasing your fiber intake.

2. Drink a large glass of water 30 minutes before a meal to help you reduce calorie intake during meal. 3. Keep water with you at all times when exercising, or performing intense physical activity.

4. Drink sparkling or seltzer water instead of diet soda. Diet soda might be calorie free, but it often contains caffeine, sodium, artificial sweeteners, phosphoric acid, and other chemicals, and has even been linked to metabolic syndrome (a condition that

can increase the risk of developing heart disease).

5. Foods that are high in water are usually low in calorie density. Eat foods high in water such as broccoli, mushrooms, lettuces, spinach, tomatoes, apples, berries, and watermelon and feel fuller while spending less of your calorie budget. 6. Encourage your active children to drink frequently to help regulate their temperature.

7. Fruits, in addition to acting as an antioxidant, are also full of nutrients such as Vitamin C and potassium. Dehydration We lose around 4 cups of water per hour of exercise, depending on our size and perspiration rate. If we don’t replenish fluid losses, you will fatigue early and your performance will be affected. How do we recognize that we are dehydrated? Early Signs

It’s easy to monitor yourself for dehydration warnings:

• Confirm your urine is odorless and no darker in color than straw. If you notice that it’s golden or deep in color with a strong odor, you need to consume more water.

• Be sure to weigh yourself before and after exercising. Fluid loss must be replaced immediately after exercise. • Stay alert for sore throat, dry cough, and hoarse. Also, a burning sensation in your stomach can signal the need for water in your body.

• Muscle cramps can also signal dehydration, while exercising.

Every day we must hydrate our bodies at regular intervals whether we feel thirsty or not. It is not reliable to use the sensation of feeling thirsty as indication for needing hydration.The National Trainers Association recommends the following hydration schedule for intense workouts.

In United States, the Food and Drug Administration (FDA) regulates bottled water and the Environmental Protection Agency (EPA) regulates the quality of tap water. Water comes in a wide variety of forms and flavors. Today, there’s fortified water, fitness water, herbal water, oxygen-enriched water, coconut water, and the list goes on. Be careful with sweetened waters, which have almost as much sugar as a can of soda. Make informed choices by reading the ingredients and nutrition labels. Fortified Waters. Fortified waters usually have a splash

of flavor and sweetness. Usually fortified with pre-dissolved vitamins and minerals.

Fitness Water. This type of water is low in calories (approximately 10 calories), and contains some vitamins.

Herbal Water. Herb enhanced waters contain popular herbs,

such as Echinacea, Ginkgo biloba, Siberian ginseng, ginger, or St. John’s wort. The herb enhanced water is usually flavored without sugar, calories, or carbonation.

Oxygen-Enriched Water. This type of water is normally enhanced with up to 40 times the standard oxygen concentration found naturally in waters.

Electrolyzed Water. This type of water is described as

water that has been separated into alkaline and acid fractions. The alkaline fraction is bottled with a pH of about 9.5. The process eliminates contaminants and most of the total dissolved solids but leaves in electrolytes such as calcium, magnesium, potassium, sodium, and bicarbonates. Claims for smoother taste, healthier water, improved hydration ability, and antioxidant properties.

Infused Water. I personally call this “value added water.” It is simply water and ice with fruit(s), vegetable(s), or fresh herb(s) added to it. Just throw a combination of them in a pitcher and allow the water to sit in the refrigerator for an hour to let the flavor seep out. Recommended fruits and vegetables are cucumbers, grapes, strawberries, raspberries, watermelon, oranges, lemons, limes, and grapefruit. Add popular herbs such as mint, rosemary, basil, parsley, cilantro, ginger, or cinnamon and enjoy.

Coconut Water. Coconut water is rich in potassium; a serving usually offers 559 mg, which is almost twice the amount of a banana. This mineral helps regulate blood pressure by counteracting the stimulating effects of sodium. It is also fat free, cholesterol-free, and naturally rich in electrolytes – the benefits claim to be endless.

Putnam County School District’s Middleton-Burney Elementary School Awarded Prestigious National USDA Gold Award of Distinction … Only ten schools have received this honor in the State of Florida Putnam County School District (PCSD), one of the smallest school districts in the state of Florida, is proud to announce that one of its schools, Middleton-Burney Elementary School, was the first recipient in the state of Florida to receive the prestigious United States Department of Agriculture (USDA) Gold Award of Distinction for the HealthierUS School Challenge. Middleton-Burney is one of 10 Florida schools to receive this national award, which recognizes school districts (3,500 schools in the state) and their participating schools who successfully implement the strict guidelines of the challenge.

Services for Putnam County School District. In order to receive the Gold Award of Distinction, Middleton-Burney Elementary School maintained an Average Daily Participation (ADP) of more than 70% in the program. To achieve this level of participation, the principal, staff and students committed to the stringent physical educational and nutritional requirements of the program.

“I am proud to say Middleton-Burney is the best of the best thanks to the partnership of the United States Department of Agriculture (USDA), Florida Department of Agriculture and Consumer Services (FDACS) and Putnam County School District brought together under the leadership of Karen Swartout.The teachers and staff of Middleton-Burney are second to none and know the importance of children’s health,” said Tom Townsend, superintendent Putnam County School District.

Melissa Johnson, the past food service manager of the Midd leton-Burney Elementary School, passed away in June 2010 with her two sons in a tragic accident; She enthusiastically spearheaded the HealthierUS School Challenge at her school in order to provide this valuable opportunity for her students. She saw the nutritional and physical activity challenges for her students and felt she could make a difference by implementing this program. Proudly, the program continues on at the school with its 781 students.

Hello everyone!

We finished up our year with a fantastic banquet. It was at the Eagles Club on West University in Gainesville, Florida. Donna Schwab, Valerie Permo, and Lenore Rothermel helped make a great dinner of Pot Roast, Baked Fried Chicken and Fettuccine with California Blend Vegetables, and Baked Potatoes. Then they topped it off with a wonderful dessert bar. We were entertained by Mr. October singing to us some oldies from the past. Very good! We swore in our new officers: Kathy Schmitt – President, Marivic Meyer – Vice President, Louise Lee – Treasurer, and Rhonda Sledge – Secretary. Our committees consist of James Davis – Membership, Arlene Bailey – Legislative, Delia White – Scholarships and Awards, Wendy Kientz – Ways and Means, Elizabeth Carden – Nomination, Carol Hambrick – Silver Circle, and Irene Durden – Chapter Chatter. We are so pleased to report that Alachua County has 27 schools as summer feeding sites where children up to age 18 years old can receive breakfast and lunch.

Brevard County saddle has spread better health and fun to members, students, staff and community. Many of our members attended the Florida School Nutrition Annual Conference. We had 7 Cafeteria Managers and 13 Food and Nutrition Services District Staff attend. Lori Nelson, District Dietitian Specialist, presented a session with The Dairy Council of Florida on promoting Fuel Up to Play 60 and grant writing strategies. Our district also celebrated the success of winning 3 awards and a silver medal. Lalanya Wilson, our BCSNA president won a silver medal for her president’s book. Our association thanks her for all her hard work and efforts though each initiative that she helped lead. Jennie Cheesman, Cafeteria Manager at Apollo Elementary, won SWAC of the Year. Jennie also won the Leadership Award for a Foodservice Worker or Manager. She was nominated by Harriet Carpenter, Cafeteria Manager at Lewis Carroll Elementary. Both of these awards show the outstanding above and beyond dedication that Jennie provides to her students and school community. Rebecca Castro-Speer won Super School Award for Secondary in a large district. Rebecca did a great job coming up with a creative way of promoting Florida School Breakfast Week. Rebecca created Minuteto-Win-it games that used breakfast foods. Our association is proud of all of our winners and grateful for their continued dedication to their students. Our association is also celebrating another special award. Lori Nelson, District Dietitian Specialist was awarded “Young Dietitian of the Year” for the state of Florida. Lori was nominated and then dietitians throughout the state voted on the award. Lori will receive her award at the Florida Dietetic Association Annual Symposium in Orlando in July. Our association closed out its year by

celebrating at our annual picnic. Members enjoyed playing “Let’s Make a Deal” and learning line dancing from a professional group. Grace Loiacono, Cafeteria Manager at Bayside High provided beautiful face painting for kids and adults. Children’s games were also available to spread the fun to all. Several awards were provided to our outstanding managers. Managers that received 100% BCSNA membership at their schools are: Linda Funke at Kennedy Middle School, Linda Walker at West Melbourne Elementary, Kate Thompson at Croton Elementary, and Jennie Cheesman at Apollo Elementary. Three scholarships were awarded to family members of Food Service workers. One of our scholarships is now the Virginia Thein Scholarship, in honor of a very dear member of the association we lost this year. Virginia (Ginny) Thein was the Manager at Eau Gallie High School and was employed with the Brevard County School District since 1991.

We also want to wish Harriet Carpenter, Cafeteria Manager at Lewis Carroll, well on her retirement. Harriet has been with Brevard County School District for

the past 30 years. She has provided an exceptional amount of dedication and commitment to service for her students and school communities, well beyond the hours of a school day. Broward County

Charlotte County

As the 2011-2012 school year comes to a close, it is time to look back and smile at all of the amazing accomplishments Broward School Nutrition Association has achieved this year. We can start with the launch of the MCS Point of Sale system – which has proven to be a huge success – to the launch of the “True 50/50” Raffle, the drive. Broward County also welcomed our new Food and Nutrition Services Director, Ms. Mary Mulder, after Mrs. Barbara Leslie retired. Mrs. Leslie was joined in retirement this year by Donna Mumma, Linda Filoso, Arleeta Karz, Carol Bill, and Betty Carr who we would like to thank once again for their many years of dedicated service.

Some of the other accomplishments this year were the launch of “Start Your Day the Parfait Way” which produced a fruitful new breakfast menu item. This year brought a new addition to our high schools with the meal vending machines where students have the ability to purchase reimbursable meals such as wraps and lunch parfaits at a slightly larger portion. The “Farm to School” initiative has been well-received by students in all grade levels. This has educated students about the various locally grown produce such as corn on the cob, collard greens, and fresh string beans that are available in our community, as well as the positive impact this initiative has on our local economy.

In closing, we would like to thank our current BSNA President, Nancy Nichele, for a great year. Nancy was able to complete all of her goals for the President’s book

“What Makes My Day” was the theme of the presentation that 15 staff members made to the Superintendent and School Board for “Child Nutrition Professionals’ Day.” Years of service photographs were shown to the audience as each staff member mentioned several things that “make their day,” such as “When a student says ‘thank you’,” “When teachers are role models in good nutrition for students” and “When a customer asks ‘When are we having that again?’.”

Several Champ’s Cafe team members attended the FSNA Conference in Daytona in late April. Managers, Pat Labella and Annette Joyce, as well as Assistant Manager, Sheila Hayes, and Operations Manager, Don Buck took advantage of the opportunity in the exhibit hall to meet with food and equipment vendors. President, Pat LaBella, earned a bronze medallion for her 2011-2012 President’s book, and her Murdock Middle School was selected as the Florida Smart Start Award winner for the medium-sized secondary schools.

How do you say goodbye to someone who has become such an integral part of your life? Well, we here in Citrus County have to do just that. These ladies who are beginning the next chapter of their journey have over 100-years of experience combined. They each have earned their food service stripes (for those in the industry you need only look at your forearms and you know what I’m talking about) and we wish them all the best that life has to offer during their retirement years. Who knows, maybe they will get bored and miss us all so much they will come back and become a substitute.

This year has created a lot of fun times and memories for all. We celebrated the holiday season with a party in December at the Country Club of Coral Springs and the W.O.W. Factor, where talents from all over the county were brought to center stage. In November, many of our members attended the Region VII meeting held in MiamiDade County and the Annual FSNA conference held in Daytona Beach in April.

It was “Lunch Ladies Night” at the Charlotte Stone Crabs baseball stadium on May 31st! The hometown team hosted Champ’s Cafe staff members, providing a free ticket to each dedicated child nutrition professional. Although our Stone Crabs lost the ball game, our Champ’s Cafe fans still had a grand time!

We pray that each one of these wonderful ladies will look back on their careers in the Child Nutrition Industry fondly and know that every day they set foot in one of our kitchens, they touched the lives of countless children. I’m sure some of those children will even recognize them out shopping or seek them out to thank them for the impact they’ve had on their lives.

Too often we hear about the negative things that we are allegedly responsible for and do not receive the recognition we so richly deserve. So, from our county to all of yours, we wish all of the retirees throughout the state a healthy, happy retirement and we thank you for your service to our children. It is our hope that each of you will stay active with your local association and the state association as well. It is always so wonderful to see those who have retired come back to conferences and meetings to share their wisdom and life experiences with the rest of us. First Lady Michelle Obama visited Naples recently to attend a fundraiser for her husband’s presidential campaign. In honor of Collier’s school district’s participation in the Farm to School program, Mrs. Obama invited 18 students from Mike Davis Elementary and Avalon Elementary to greet her at the Naples Airport.

March 5 - 9 was National School breakfast week. Collier school cafeterias celebrated with an Ultimate Breakfast Round promotion. T-shirts were worn by staff, posters were displayed, and students enjoyed their “UBR’s” for breakfast. 50,000 strawberry yogurt parfaits were

served by Collier County school cafeterias during February and March for the “Start Your Day the Parfait Way” promotion. Fresh strawberries, yogurt, and General Mills cereal made up a delicious breakfast for students and they took part in looking for winning stickers under the cups. A drawing was held for brand new iPads. The three student winners were Sandra Garcia from Poinciana Elementary, Luz Rodriguez from Cypress Palm Middle, and Jakari Clayton from Gulfcoast High. The cafeterias that sold the most parfaits during the promotion were also winners; staff from 6 schools won gift cards from General Mills. Each year Collier schools celebrate a fruit; this year was Peach Day on May 2nd. School cafeterias served menus featuring fresh and canned peaches, as well as competing in a contest. The criteria schools were judged on included costumes, decorations, music, stickers, posters, and contests. Congratulations to the following winners. Elementary Schools: Calusa Park, Manatee, Mike Davis, Palmetto, and Sabal Palm. Middle Schools: Cypress Palm Middle, Golden Gate, and Pine Ridge. High Schools: Naples High and Everglades City. The cafeteria staff for each school was treated to a reception at the Administration center. The summer feeding program is in full swing in Collier County. We welcome Mary Scattergood, our newest field supervisor who runs this program. Seven schools are open for summer school, and eleven summer park sites are receiving vended meals from our cafeterias.

Hello Fellow Food Service Professionals from Miami-Dade County. We have had a very successful year of feeding our students healthy well balanced meals. One of the ways we have increased our consumption of healthy choices is by adding middle schools to our Healthy Vending Machine Program. This gives students another option to make healthier food choices. The Florida Department of Agriculture – Food, Nutrition and Wellness has registered 52 elementary schools to participate in the Fresh Fruit and Vegetable Program during the 2012-2013 school year. This has been a wonderful program to introduce exotic fruits and vegetables to our littlest customers. We celebrated the end of the school year on May 18, at the Doubletree Hilton by having our annual DCSFSA Manager’s Banquet. This banquet is where the installation of officers takes place. The Association President Milly Chalas placed a pin on incoming President Evelyn Seaman and President-Elect Karen Galloway. This event is also the time to honor our retirees for their dedicated service and welcome our newest managers who have graduated from The Management Training Program. The Food Service Mangaer and Satellite Manager of the year are named and awarded at the Manager’s Banquet. This year the winning managers are: Sarita Cowins for Manager of the Year and Charlene Hazzard for Satellite Manager of the year. Congratulations ladies you deserve the recognition!! “Adopting a Healthier Lifestyle by Promoting Good Eating Habits for Our Children” is our Incoming President Evelyn Seaman’s theme for the next school year which is right in line with our new and improved wellness policy. She has great ideas to increase participation, raise funds for our local association. Homemade tropical jellies are already being made to sell as a fund raiser and they are tropically delicious. Nocatee Elementary School is enjoying their brand new kitchen for a couple of months now with their new manager, Tammy Jackson. Tammy has rejoined the local association and brought her entire staff back with her. Woohoo!!!! And with 100% local chapter membership at her site, her FSNA membership dues will be paid by the association. Tammy has been participating with the #10 steel can recycling program too. Now, her staff is involved with that as well. The new local chapter members from Nocatee are Reggie, Jennett, Angie, Donny, and Ella. We are so glad to have them as members. West Elementary School also has 100% membership to the local chapter again this year and Janet Wilson, manager will have her FSNA dues paid by the association. Janet also has her kitchen participate in the recycling program. Her husband brings their #10 cans and aluminum cans over to DMS to add to the recycle bin. We thank David and Janet for all of their effort to support the association. And we now have members from DeSoto High School! Jena Roberts, manager, is a local chapter Silver Circle member and she was a recipient of the 25/30 years of Service Award this year. Jena has 2 members signed up from her cafe.

DeSoto Middle School Panther Cafe manager, Pat Andrews, once again has 100% membership at her site. Pat is also the Treasurer for the local chapter and has handed the office of Secretary over to a new member. We thank you for being Secretary last year Pat. Pat will have her FSNA dues paid as well for having 100% membership. The steel can recycling has been very successful with the other schools bringing over their cans. This summer, the Department of Food and Nutrition is bringing back the Summer Training Institute. These training sessions were so popular with our part-time food service staff last summer that we have added two additional classes. These classes will be held at eight different locations to accommodate the expected 1,800 part-time staff. Some of the topics for the Summer Institute are: Customer Service, New Federal Guidelines for Child Nutrition Programs, HACCP, Facility Cleaning, Sanitation, Pest Control, Safety on the Job, Positive Work Environment and Food Production. In addition to the Department of Food and Nutrition training topics, the Florida Department of Agriculture Consumer Sciences, will be partnering with our department one day each week at the different locations to provide training in “Standardized Recipes that Work.” The full-time food service staff took this training during the school year, so it will be nice to have everybody trained and on board for the next school year.

School Food in Florida Summer 2012

Flagler County had a slow quarter in the 1st quarter of 2012 (at least in the way of exciting news). But one day in late January we received a call that got our hearts pumping! Preparations had been underway for establishing our staffing and menu for the Flagler County Home Show, which always draws a big crowd in these parts. Less than a week before the show, we were called to open our booth at the Daytona International Speedway for the Rolex 24.

Since the two events coincided on the same weekend, both booths needed to be operated at the same time (note: these locations are geographically separated by about 40 miles so two completely separate teams needed to be created to operate the different booths). Needless to say, the reallocation of our merry band of intrepid FSNA warriors (29 strong) with the guidance of Amy Holstein, Judy Gallo, and Debbie Vieira ensured our first ever Twin Event weekend was a rousing success! Way to go Flagler FSNA! As mentioned last quarter, Flagler County Food Services provides free breakfast for ALL of the children in the county. Since its inception, every single

school in the district has seen an increase in the number of children eating breakfast. While I don’t think we can take credit for any improvement in county grades, we all know that a child who receives a proper breakfast (the MOST important meal of the day) will have a better chance to succeed in learning and we are happy to do our part in making this happen! Greetings from Hamilton County.

Wow! It has been a busy and fun year for us! We are excited about the upcoming year and wish our Past President Candy Barber, one of our own from Region II, a blessed and restful retirement. To our 2012-2013 President, Mary Jane, we are ready to get to work. This year’s conference was great; we enjoyed the sessions, networking, and let’s not forget Daytona Beach! Congratulations to our local President Sally Bristol for winning a silver award for the President’s Initiative.

This year’s biggest loser challenge has led to a continuous lifestyle change not only for some of our food service staff, but also local teachers and others ladies in the community. Thanks to our local fitness expert, Beth Harris, who continues to provide us with opportunities to work

together and who encourages us all the way! The first was a Boot Camp that continues on Tuesday and Thursday weekly, then we added the Eight Week Fit Camp for April and May and for the summer we have of course – a six week Summer Fit Camp that began on June 11th. This has been such a rewarding experience.

We have been busy with spring and summer fund raisers. The Stephen Foster State Park has included our group as a food vendor for some of its Arts Festivals. Our second day working at the park was the 1st Saturday in May. On the 2nd Saturday in June we were part of our local Wild Blackberry Festival as a food vendor. On behalf of the Hamilton School Nutrition Association, I would like to wish everyone a wonderful Summer Break! I look forward to working closer with everyone this year. Time flies when you’re having fun! Our association had a great year and was excited to see some new faces at our monthly meetings! We held our end-of-year banquet at Bernini’s Italian Restaurant in historic Ybor City on June 9th. Members shared great food and fellowship while welcoming our new executive board. James Quennville will be our new President, Ann McIntosh will become President-Elect, Judy Harrison will serve as Secretary, and Heather Wellings will serve as Treasurer.

We are also busy planning for Denver and hope to have 10 members attend. We have a lot of first-time members attending conference, which is exciting. For the majority attending, this will be their first time visiting the exciting city! We are looking forward to a great conference!

Our fundraising activity at the Raymond James Stadium is almost over for the season. Greetings from Indian River County. We had a great time in Daytona during the state conference. Our county had 28 members attend and there were a record number of attendees at the conference.

President Elaine Brege, from Gifford Middle School received the Bronze award for her President’s book. We thank her for all of her hard work. Susan Brenton from Treasure Coast Elementary won the Super School award for the medium size district. Tammy Humphrey from Sebastian Middle School won the State Association Biggest Loser contest. She lost 49 pounds. Tammy received a $50.00 gift card, an autographed football, and $150.00 full registration to next year’s state conference. We applaud her in her hard work and commitment. This year our fundraiser was very successful. Our Local Association Officers worked out a deal with local restaurants so that when members and their families ate at the restaurant, 20% of the total bill went to the Association. It was great for the local businesses and for our Association.

Our members enjoyed themselves at our end of year installation banquet which was held at Captain Butchers on the water in Sebastian. The food was wonderful. We had 55 members that all seemed to really enjoy the dinner, prizes, dancing, and the DJ. Hello! Hello! Hope all is well with everyone! Here in Jackson County we are anticipating our summer break! Time to get refreshed and rejuvenated!

We are very pleased to announce that our Golson Elementary was one of 28 schools to receive a $7,000 HUSSC grant! Yay!! The cafeteria staff at Golson has been busy giving out treats on holidays (spoiling their kids) and having drawings for special endof-the-year gifts for their teachers. Manager Tammy Blanchette is very involved with her kids/school and we appreciate the extra effort.

The last couple of months have been busy with end-of-school year activities. We enjoyed a ‘Dance-Off ’ with X-Box 360 Live Dance Central at Marianna Middle School, hosted by Anthony Mendoza and Nicole Tokay to promote exercise to our children. Quite entertaining! Lift-Off got to dance and hang-out with the kids at Hope School, Cottondale Elementary, Golson Elementary, Grand Ridge, and Sneads Elementary for their yearly ‘Field Day’ activities! Round Lake Elem., Stacy Mathis – Manager; Minneola Elem., Ann Lackey – Manager; and Triangle Elem., Carol Brewer – Manager all took on the Healthy US Challenge with Triangle being one of 28 schools in the state that was awarded the grant.

Leon County had a total of 13 people attend the conference in Daytona. This was the first conference for five of them, who were impressed with the chance to see and learn new things related to their jobs. The sessions were very interesting and useful. Much time was spent in the exhibit hall looking at new products. Two of our schools expressed an interest in recycled napkin dispensers and were sent products that they are trying out in their schools. The conference was well-planned and enjoyed by everyone who attended from Leon.

This year we had three Managers that were voted School Related Employee of the Year. They are Traci Beck – Carver Middle, Mary Hatfield – Umatilla High, and Nancy Johnson – South Lake High. As a promotion this year, all of our high schools gave away an 8 GB iPod Nano and $10 iTunes gift card. Any student that purchased a reimbursable meal on May 15 was put in the drawing. Umatilla High indicated that their participation went up 6% for that day. A big congratulation goes out to Lou Ann Stubbs, Manager at Lake Minneola High, for being the winner of the Jennie-O recipe contest, “The Gobbler.” See picture. Everyone have a blessed summer break.

Our new President-Elect will be Marsha Nelson. She will have a lot of energy and new ideas to start our next year. Our last meeting and end of the school year party was held at Fun Station. Conference was off the chain. Everything from the classes, to the Friday night party (thank you M&B), to the banquet; what a great time we had. We want to thank Fran, Kathy, Lorie, Candy, Joanne and everyone that was involved. You all did a fantastic job. We want to put the spot light on Cheryl Allen of Cedar Key School K-12 for doing a great job all the time. She heads up our annual fund raiser at the Cedar Key Arts and Crafts Festival every year and the Seafood Festival out there as well. Cheryl also gets involved with her students by getting them to do projects for the cafeteria. This year she asked the students to draw pictures that were food related. Cheryl received an award for this and some of the pictures are now hanging in Tallahassee. Way to go Cheryl

Speaking of hard work, two hardworking food service workers retired in June. Mrs. Helen Watson was Manager at Williston High School. Helen was our Silver Circle Chair and had 26 years of service. Mrs. Janice Dean from Williston Middle School also retired; she had 20 years of service. Thank you for all your hard work and dedication. Manatee County School Nutrition Association sent two members to the Legislative Action Caucus in February. Jacque Allen and Linda Pardy both enjoyed the time they spent in Tallahassee. Linda told me that it is always a pleasure to attend the LAC and to be able to form relationships with our legislators. She said, “This year was nice because there were no pressing issues. We were able to give our legislators a big thank you for what they all had accomplished the year before. It is great that Food and Nutrition Services are under the Department of Agriculture instead of the Department of Education.” In April, we were able to send ten members to the State Conference in Daytona. Everyone had a great time and

we were all thrilled when Elaine Wells’ name was called as the winner of the Smart Start Award. Kelly Murphy, who is a new member, attended the state conference for the first time. This is what she had to say about her experience. “I had a great time meeting people from all over the state who are so passionate about child nutrition. Everyone had such positive attitudes about the changes coming in the 20122013 school year. It was amazing to walk around and see all the vendors that had all these great products! Where were they when we were kids? The speakers were very interesting and I think there was something for everyone, whether this was your first time or 100th. I can’t wait until next year!” While we were all enjoying the State Conference in Daytona, member Sandy Ford (SNA President-Elect), was busy at the National Leadership Conference in Louisville, KY. This is why no one saw her when her name was called as a recipient of the 25 years of service award. During her time at National Leadership Conference, Sandy shared the five pillars of the SNA strategic plan and the Association Plan for the upcoming year. “Transform School Nutrition” is the theme. Sandy stated, “Change has been all around us for the past year and now it is time to take all

those changes and make them a reality. State leaders from around the country had an opportunity to work together, along with many industry partners, to create their state association plans for the upcoming year. School Food in Florida Summer 2012

Welcome back! We hope that everyone is well-rested and ready for this new and exciting school year. Martin County is starting the year off with trainings for all of our staff members. Trainings will include the new meal pattern regulations in-service as well as a motivational speaker to get our year off on the right foot.

We also have some great projects to look forward to this year: 1. The “Start Your Day the Parfait Way!” promotion (October 2012 and February 2013) – courtesy of the Florida Dairy Council and General Mills. We will again offer breakfast parfaits three days a week to our students at all grade levels as one of their breakfast options. The students will have the opportunity to win great prizes for participating. 2. We added one more school for the Fresh Fruit and Vegetable Program. We would like to welcome JD Parker Elementary to this amazing program. The students at JD Parker elementary will be given a fresh fruit or vegetable snack three days a week. Nutrition education will also be provided during snack consumption. 3. We will be featuring a farm fresh, Florida produce to our monthly school lunch menus as a way to support our local Florida farmers. 4. New serving line set up will be installed at two of our secondary school sites so that the students will come back to a fresh and

The year has come to an end. It was a very interesting year. We had a lot of changes and a variety of lunch menus were implemented this year. Next year looks to be interesting.

We won a few awards at the conference held in Daytona Beach this year: Our President won the Gold Award , we are all very proud of Caroline Mohr for all the hard work she put into the Presidency this year and is deserving of the Gold. Desiree Contrejas won the award for Florida School Nutrition Association 2011-2012 School Year Nutrition Award Region IV. Congratulations Desiree for all the work

you put into you job. Also Donna Myers won the award for Nutrition Award and Smart Award for Secondary Schools in Large District. We are all very proud of Donna. Thanks to all of you for the hard work that is put into earning these awards.

We have a few employees retiring this year: Jose Fajardo, Mildred Missick, Evelyn Mangual, Paulita Conones, Julia Rivera, Roberta Barnet, Carol Clay, James Lehman, Geraldine Morrissey, Norma Calbasquin-Ruiz and Dorthy Courtney. Thank you to everyone for the many years of service that you have committed to serving the students in Osceola County. It was a pleasure working with each and every one of you. Good luck in your futures. We not only feed students during the week, we have 15 students that are fed on Saturday mornings at Michigan Ave Elementary School, in St Cloud.

It has been a pleasure reporting on Osceola County, I look forward to writing again next year. Happy summer to everyone. Rest up. Next year is looking to be another interesting year for all of us and our students.

Palm Beach County

Hi from Palm Beach County,

We have had a wonderfully year. We had our installation picnic and had a great turn out. We look forward to having our new President, Jeanine Swick, and PresidentElect, Edward Wells, take over next year and what a year they have planned for us.

This year we were able to help a lot of charities in our community. We almost reached our goal of 500 pints of blood for the Blood Banks. Reaching 479 pints was great. Four of our board members went over to Tampa for the Leadership Conference and we look forward to our new agenda and a great new year.

Palm Beach County will have an open campus summer feeding program this summer and have over 100 schools participating. Hopefully all the storms will stay at bay and Florida will stay safe. Have a great summer. Pasco County Reported by: Tina Follick

Wow, where has this year gone? A brief recap on what Pasco County has accomplished this year.

We sold Cookie Jars at the Region V Seminar. Many Pasco County Schools make Kumquat goodies to sell at the Annual Kumquat Festival in Dade City, FL. This was a huge success. We donated many toys to the Toys for Tots Program. We volunteered for the Pasco County Habitat for Humanity. This, I must say has made me appreciate carpenters in a whole new way. This was a lot of fun and I for one learned a lot.

We had an Employee Appreciation Picnic on May 19th, it was a lot of fun. It’s a great way to get together, away from the work setting, and just have fun. Our local Chapter President next year

will be Suzanne Pawelek. Congratulations to her; she will receive my full support. Until next year...

This school year has been exciting and busy; it seems to have flown by! We set a goal for all of our schools to participate in National School Lunch Week and I’m proud to say that we met that goal. Several of our schools took their participation to the next level this year and went above expectations. Four of those schools submitted entries for the Super School Award: Lincoln Elementary, Manager Carolyn Yates; Socrum Elementary, Manager Beverly Harwell; Southwest Elementary, Manager Diane Emmons; Valleyview Elementary, Manager Carolyn Smith. We are so proud of all the extra efforts these managers, and their staff, made for the students at their schools. Another accomplishment this school year comes from the award of a Florida Department of Agriculture grant. Horizons Elementary received a Team Nutrition “Go for the Challenge” Grant. We’d like to recognize the manager, Karen Dumke, for all her hard work in completing the requirements needed for the grant. Karen plans to use the grant funding to achieve her goal of receiving the Healthier US School Challenge Gold Award of Distinction. As the 2011-2012 school year comes to a close, it is with heavy hearts that we bid farewell to two very integral members of our work family. Diane Freeman has been a part of our district office staff for 9 years

and has been with Polk County School Foodservice for 30 years. Diane served our students, first as an assistant at Auburndale High School, then as the manager at Auburndale Central Elementary and before Diane made the transfer to the district office, she was the manager at Bartow High School. Diane has touched many people with her friendly personality and her warm smile! Our Director, Marcia Smith, is also retiring with 38 years of dedication to the students of Polk County. Marcia’s leadership and devotion will leave a legacy of greatness not only with those who worked directly with her but on the countless lives of those unaware of Marcia’s positive effect on their health and nutrition. Diane and Marcia will be dearly missed but they’re leaving us in good hands! We’re glad to announce that Susan Ehrhart has been selected as our new director. Susan has worked closely with Marcia for 26 years; we couldn’t ask for a more suitable or deserving person for the position. Congratulations to Diane, Marcia, and Susan! The end of the school year has come, and with it, a very successful year for the Saint Lucie County School Nutrition Association. The past few months have been full of activity as we have reached out to our community through the Saint Lucie County Fair, speaking with students and parents about our association and the level of commitment that our people have, and attending the Florida School Nutrition Association’s Annual State Conference.

We sent 3 people to LAC. What a great experience. We had 13 people go to the Daytona Beach State Conference. I didn’t hear a single complaint on this venue at all. I highly recommend we have more there. We received the Bronze Award for our President’s Book. Next year, we’re going for the GOLD!!!

Santa Rosa had an eventful Spring. On February 21st our County received 14 awards from the Under Secretary of Agriculture, we received 9 Gold with Distinction, which included Holly Navarre Middle School and 8 elementary schools. Not bad for a county of only 29 schools.

Many of our members have also sought to advance their skills and career through attending the Train to Train educational workshop and then going on to become Trainer Certified with the National School Nutrition Association. Our district invited the National Food Service Management Institute to Saint Lucie County to provide the Train to Train workshop with more than forty people attending and at least twelve members became Trainer Certified.

With education and advancement the main priority of our managers and food service professionals, it is no surprise that Carol Schutt, SNA member and manager of Saint Lucie West K-8 in Port Saint Lucie, Florida, along with two of her manager interns, Jessica Harrod and Laura Henry, registered to take the SNA Credentialing Exam this June in South Carolina. The ladies formed a small study group to assist each other in mastering the information required for this rigorous exam. These are just some of ways that our local association and district stay on the cutting edge of providing our district and

state with the most educated and skilled School Food Service Professionals.

Carol Schutt is also the recipient of the 2011-2012 Nutrition Award for elementary schools at the state level. Carol based her award on educating kindergarten students on the new My Plate recommendations for healthy habits and the students learned how to balance their food proportions and to increase their fruit and vegetable intake. Another recipient of the Nutrition Award for middle school is Eileen Kielbasa, manager of Southport Middle School in Port Saint Lucie, Florida. Eileen did her award on My Plate as well, however she conducted an art contest where the students in her school were challenged to create an individual poster encouraging their peers to consume more fruits and vegetables and other healthy food items. Each art entrant was judged by a panel of students within the school as well as the Saint Lucie County Health Department. Eileen is well known for integrating nutrition with art and has achieved great success educating children in nutrition using their artistic talent. In April we were pleased to send 18 representatives to Daytona Beach to welcome Mary Jane Dunlop as our new State President. A lot of old friendships were rekindled and we received some great training. We wish to congratulate Goldie Hurley for receiving the Thelma Flannagan Award, Maggie Scones for receiving the Heart of the Program Award, Marcia Sanford for winning the Presidentâ&#x20AC;&#x2122;s Award of Excellence, and Gladys Arauz for winning the Presidentâ&#x20AC;&#x2122;s Biggest Loser award for Region I. We were also pleased to share with the rest of the State, our District Superintendent Tim Wyrosdick, as the MC for the Saturday Evening Banquet. We closed our year under the guidance of Marcia Sanford by attending the Alan Jackson Concert May 4th and Disney on Ice May 12th. James Speer stepped up to the plate as our County President at our end-of- the-year Banquet held at Ryans Steak house, where James and his daughter Jennifer shared a video of the year highlights. Here it is; the end of another school year. What a great year it has been. This year included a really fun bowling fundraiser and four fun and informative association meetings. Several members were able to attend the regional meeting in Arcadia. A very

nice contingency from Sarasota County attended the State Conference in Daytona. Everyone agreed the conference was a worthwhile experience. With all of the changes in school food service, it is wonderful to have all these opportunities for professional development. On May 11th, Sarasota County had the end-of-the-year association banquet at Misty Creek Country Club. Here we celebrated the culmination of another exciting year and honored five of our finest 2012 Sarasota graduates each with a $350 scholarship. We worked very hard all year to raise money to be able to award these scholarships. Being able to help deserving students is such an inspiration to us. We also recognized five Food and Nutrition Services employees who were nominated for School Related Employee of the year. It was a lovely evening. Hello again from Suwannee County. We just got back from the conference; had a blast. I had a class on membership. Just when you think you know it all someone comes up with a great idea. So don’t miss those classes. This is the best time to learn new things. We have counties that are having a hard time so this is where we network. My county came back enthused and renewed.

This may be the ending of a year for some, but to me it is the beginning and the planning stage of our upcoming year. Our theme this year is “Let’s Beat Georgia in the Membership Drive.” Florida needs to be number one. Good Luck!

This year Volusia School Nutrition Association was busy with meetings, fund raisers, and community projects as well as other chances to get together and enjoy the camaraderie of each other’s company. One of the highlights of each year is our Annual Canned Food Drive. This year our association collected well over 10,000 pounds!! This was distributed to four local food banks in Volusia County which means that many families benefited from our efforts. We had many schools that were busy throughout the year with projects and activities to help our students learn all they could about wellness and good nutrition. They were all informative and fun. A couple of our schools were active with their SWAC, where students not only learned, but had fun and benefitted their community as well. Early March we celebrated another wonderful “Boss’ Night.” This is one of our biggest fund raisers each year. The main reason for this night is to recognize our school principals and all they do to support their School Way Café staff as well as our association. Most, if not all we do would not be possible without their support. The majority of our schools that attended put together baskets to raffle. There was every sort of basket you could imagine and the theme for the evening was a 50’s Soda Fountain. Members, staff, and principals participated with dressing for the theme which was GREAT!! Also recognized during the evening were the winners of our Star of School Way Café as well as our VSNA “Heart of the Program.” Out

of all members that attended meetings this year we also had a drawing for one of our members to attend State Conference.

And speaking of State Conference, we were absolutely thrilled and honored to have FSNA Conference in our own back yard at the Ocean Center in Daytona Beach!! Our SWC Director, Joan Young, made it possible for all managers to go to FSNA Conference for free so School Way Café and Volusia County Schools were well represented. We were especially proud to have 3 of our members submit awards and 2 of them brought home awards. Winnie Crockrell brought home the “Super School Award” and Teresa Azevedo brought home the “Nutrition Award” and the prestigious “Louise Sublette Award” which is the highest award given to a food service employee! We are very proud of all entries. Teresa will be representing Florida at the National Conference in Denver, Colorado. We wish Teresa the very best! As a matter of fact we have four members that are attending National Conference this July and one member, Valerie Hansen, is presenting two break-out sessions. We look forward to all that they will bring home to share with our association. Have a restful summer.

We are already having a fund raiser for the end of year breakfast. We are geared up for the membership drive this month. We are going to get going early so we don’t fall behind. I am excited to leave the Presidency to someone else so that I can do my thing which is membership and fundraising. Attended leadership training; this is also a place to network, there are always new ideas.

Member Spotlight on Brenda Rolfe By: Mary Jane Cardarelle-Hermans, SNS, FSNA Employee/Manager Section Chair

I would like to introduce you to member, Brenda Rolfe. She not only was a winner of the President’s Award of Excellence for the 2011-2012 school year, but she is also the Region II Director for the 2012-2013 school year. Brenda was born in Chiefland, Florida. Not only did she attend school from kindergarten through 12th grade right in Chiefland, she also lives on the same piece of property that her grandparents bought in 1957. Unlike many of us, she is a true Floridian, born and raised in this beautiful state.

Brenda’s favorite subject in school was FFA. For those of us who never took FFA, it stands for Future Farmers of America. Her favorite school food when she was a child, were the delicious cinnamon rolls and Shepard’s Pie which she always looked forward to having on the menu.

She has been married for 17 years to her husband Casey. They have one daughter, Samantha who is 13 years old. With Samantha being active in both volleyball and softball, Brenda and her family are always on the go. Her family also loves to hunt and fish. Spending time with her family is very important to Brenda. Brenda has always loved sports and if she were not in the school nutrition field, the other profession that she would be interested in would be teaching physical education. She has coached several volleyball and softball city league teams. To stay healthy, she walks 4 miles per day.

The person Brenda admires most is her mom. This is what she said to me about her mother. “I admire my mom for always being there no matter what. She loves us all for who we are and what we have done in each of our lives.”

Brenda has always worked in food service. She worked and managed a local restaurant for 18 years before getting into school food service. After getting married and having her daughter, she realized that the hours spent at the restaurant did not match the family life she was more interested in. It was then that she applied for a job in school food service. Thanks to her previous work experience, she was hired for her current position as an assistant manager in her school district. Recently, Brenda was promoted to manager for her school district. Shortly after she was hired as an assistant manager, she was approached by her local chapter’s membership chair and she was invited to a local chapter meeting. Brenda shared this with me, “The next thing I knew she got sick and quit. I was voted in as the membership chair and the next president-elect. My career in FSNA just took off from there!”

When I asked Brenda what she and her local chapter members did to enable her to win the President’s Award of Excellence, this is what she said, “We all worked together. I think many members who would be great as local chapter officers hold back because they don’t realize that it has to be a team effort. I had a very rough time starting out the

year. My manager lost her husband around Thanksgiving so I had to step in and fill her shoes. Also, our director of 40 years retired at about the same time. Then, I had two family members pass away within a month of each other. So, it was rough. But, I would look at the president’s book, call on certain members for support and give everyone something to do. The words of advice I have for incoming chapter presidents…YOU ARE NOT ALONE!” Well said, Brenda.

The final thing I would like to share about Brenda was her answer to the following question: Who is your dream dinner guest? This was her answer, “Well, I know I could probably think of many superstars. But I would love to have dinner with all the starving children in the world. Just to see their faces as they sit down at a table filled with food.”
