Roasted Potato Salad (with green beans)

Great for summer Barbeques!! 1/2 pound fresh green beans, cut into 1-1/2 inch pieces 1 large whole garlic bulb 2 pounds small red potatoes, quartered 2 medium sweet red peppers, cut into large chunks 2 green onions, sliced 1/4 cup chicken broth 1/4 cup balsamic vinegar 2 Tablespoons olive oil 2 teaspoons sugar 1/4 teaspoon crushed dried rosemary 1/2 teaspoon salt In a large saucepan, bring 6 cups of water to a boil & add green beans. Bring to a boil & cook beans covered for 3 minutes. Drain and pat dry. Remove papery outer skin from garlic-without peeling or separating cloves. Cut top off of bulb & place cut side up in a greased 9”x13” baking pan. Add the potatoes, red peppers, onion and beans. Drizzle with broth. Bake uncovered at 400° for 30-40 minutes or until garlic is softened. Remove garlic & set aside. Bake vegetables for another 30-35 or until tender. Cool for 10-15 minutes. Squeeze softened garlic into a large bowl and stir in vinegar, oil, sugar , rosemary and salt. Add vegetables; toss to coat. Yummy served warm or cold. 26

problematic kashrus situations: restaurants, concession amusement stands in parks, ice cream trucks, and rest stop food m Keep in mind what to watch for and verify that what you purchase meets the proper standards of Kashrus. Kosher consumers must take the following steps: 1. Check for a kosher certificate. This is usually on the wall or behind the counter. Sometimes we pick up a product like a candy bar and thatfeel it’s sure kosher because we’ve seen the kosher symbol on this product before. But it’s important to check each time u buy! before Theyoproduct could change certifications, the hechsher have expired and the product may no longer be under supervision, or you recognize a similar company and think avethe picked up is kosher. Not all products made by a company sher. (For are ko example, a chocolate company can begin makin cream. Just because the chocolate has a hechsher doesn’t mean the ice-cream will too.) Remember! When you go into a new store, rest stop,concession, or food keep these rules in mind. Check for a certific and carefully read it.
