Value of Youth Programs Anchored in Future Co-op Leaders  BY B R U C E G R A H A M

Kansas Country Living and/ or those attending a cooperative annual meeting are keenly aware of our support for youth in rural Kansas. Practically every month, you can learn about scholarships, school safety programs, art contests and more in these pages. This month, one of the most impactful youth events for cooperatives in Kansas, and across the country, is about to happen. Called the Electric Cooperative Youth Tour, the weeklong opportunity of a lifetime runs June 13-20. It brings high school juniors and seniors to Washington, D.C., and this will be the 59th year Kansas Electric Cooperatives, Inc. and its member cooperatives have organized the leadership adventure. Without a doubt, it is one of our most rewarding programs. Students are selected for Youth Tour by their local electric cooperative and the process often includes an essay or speech and a personal interview. This year, 40 future leaders will convene in Topeka for a kickoff banquet, which will be the first opportunity for some to turn strangers into longtime friends. It will be the first opportunity for some to leave home, visit the Kansas Statehouse, fly, meet members of Congress and see our national memorials and museums. For many, it will also be the first opportunity to expand their horizons and practice skills that will serve them for a lifetime. “We promote valuable life skills for today’s generation like building relationships and enhancing leadership confidence. We also celebrate diversity on this trip and create a culture of inclusivity ... and the students thrive in that environment,” said Shana Read, KEC’s director of education and training. “Youth Tour participants often develop strong relationships with their sponsoring co-ops that include speaking or volunteering at annual meetings and other co-op events,” added Read. “The results are meaningful community service hours and experiences that have inspired local engagement as well as many career choices.” Read knows better than anyone the impact of this trip. She is the primary organizer and chaperone for the event that takes months of detailed planning and includes coordination with

colleagues across the nation. In fact, the Kansas contingent will be part of a collective electric cooperative network of 1,800 youth together for educational events that week. It’s not uncommon to hear parents of trip participants report that we brought home a different student than we took. They often note their child’s desire to be involved in the community or take on new responsibilities at home and work. I’ve listened to dozens of the speeches by Youth Tour participants at their sponsoring cooperative annual meetings. They use the platform to say thanks to the members for the life-changing trip and relive their highlights. Gaining a new perspective on politics is often an outcome and I think that’s important as we work to mend today’s divided and cynical political environment. “Getting to talk to the representatives and senators from my state was a very impactful experience,” said Tyler Kueser, 2018 participant sponsored by Heartland REC. “It is easy to see them as parts of an entity that does nothing but hold meetings, but getting to talk to them really opens your eyes to see that they are real people just like us who are really trying to make our country a better, safer place.” This is not the only youth leadership opportunity sponsored by the electric cooperatives in Kansas. In July, nearly 100 students from Kansas, Colorado, Oklahoma and Wyoming take part in the Cooperative Youth Leadership Camp in Steamboat Springs, Colorado. This has been a Kansas tradition since 1977 and the agenda focuses on a deeper understanding of their nonprofit, memberowned electric cooperative, the seven cooperative principles, as well as developing individual and team leadership skills. For the electric cooperatives though, the primary value of both events is anchored in our future leaders, one summer at a time, gaining knowledge and appreciation for their electric cooperative. They will make an impact somewhere, someday and members of their electric cooperative will look proudly on, and perhaps benefit from, their accomplishments. hearing about some new device or app that will save energy, but I wonder if they’re worth the time and money. I want to learn about simple ways I can use technology to save energy. Any advice on where I should start looking? – Lily D E AR LI LY: Every new piece of technology seems to come with a lot of promise, doesn’t it? Then we have to find out for ourselves if it lives up to the hype. Here are a few products we recommend.

Smartphone Apps

There are several energy apps available today, but two stand out. They’re free, easy to use, effective and available for both Android and iOS devices. ff JouleBug is a fun app that helps you save energy. You collect points for each energy efficient move you make inside the home, on your daily commute and in daily life. The app helps you make changes and build ongoing

energy-saving habits. It’s designed as a competition among friends and can help you and your family create an energy efficient household together. The app also includes fun, educational videos and links to helpful articles. ff There are several energy cost calculator apps

that help you identify where you use the energy most in your home. You can enter how many hours a day you use each appliance or electronic device (some have a dropdown of typical household items) and the rate you’re paying for power, which you can find on your energy bill. The app creates a total operating cost for that specific device.

How much is that hallway chandelier costing you every month, and how much would you save by turning it off for an additional hour each day? How about that second freezer or the big-screen TV? The answers aren’t exact, but they will give you a better idea of your overall energy use and help you focus your efforts on the opportunities that will save the most energy.

Smart Thermostats

A smart thermostat connects to the internet and your computer and/or smartphone through your home’s Wi-Fi and could shave $50 off your energy bill every year. Most fall within the $100 to $250 range. If the price for a featurerich model is more than you’re comfortable spending, ask yourself if it’s worth buying a lower-cost model, or if your current thermostat is doing the job. Here are some features to keep in mind if you’re considering a smart thermostat:

there are improvements that will be made over time. That said, if this is a technology you’re interested in, there are a couple of options that consumers seem to like. Hub-based systems like the Currant Dual Smart Outlet and Philips Hue smart lighting systems are highly rated and cost about $200 or more for eight to 10 smart outlets or light switches. That’s a pretty big investment, so we recommend using an energy cost calculator app first to decide if it’s worth the additional cost. We hope these reviews will be helpful as you consider smart technology that promotes energy efficiency. Blish-Mize Co. serves independent hardware stores, lumberyards, home centers, industrial supply and paint store retailers in 13 states throughout the Midwest, the Rockies and the Southwest. ONE OF THE COUNTRY’S OLDEST

In 1871 three brothers-in-law founded Blish, Mize & Silliman after making the long journey from Chicago to Atchison. David Blish, Edward Mize and Jack Silliman built a respected distributor to outfit wagon trains headed west from the Missouri River.

Constant family involvement has kept the business in Atchison—its headquarters are in the original downtown building, just a few blocks from the Missouri River—while a focus on innovation and customer service has kept it relevant. The business has evolved from the early days of providing axle grease and horseshoes for pioneers heading west to carrying power tools, something the founders never could have imagined, to today’s technology-driven warehouse stocked with 60,000 SKUs/items. “Inventions have constantly kept us on our toes,” said Jonathan D. Mize, CEO and president. “Remember, we started outfitting wagon trains going west. Our business has seen the invention of the automobile, the computer and even just a few years ago Google and Amazon. Each new invention revolutionizes the way we do business. We’ve been able to adapt and stay at the forefront.”

Fast Start in 1871 Sets the Tone for a Family Culture

On a trip to Kansas in 1870 for Marshall Field and Company of Chicago, J.B. “Jack” Silliman learned that a retail hardware store was for sale in Atchison, which had become a city just a few years earlier in 1855. Silliman saw unlimited potential for outfitting wagon trains headed to the expanding west from the Missouri River. Back in Chicago, he enlisted his brothersin-law E.A. “Edward” Mize, an insurance man,

and D.P. “David” Blish, a farmer, to join him in the venture. Silliman and Blish went west to make the deal, followed a few months later by Mize. In 1871, they formed Blish, Mize & Silliman using $4,500 as a down payment, plus personal notes at 1% per month interest for the remainder. They worked hard to build a respected distributor to outfit wagon trains and in just a couple of years the company was distributing all types of goods to more than 800

hardware stores, lumberyards and general stores throughout the Midwest. In 1888 it was incorporated as The Blish, Mize and Silliman Hardware Co. The second generation of the founders to helm the company was Edward’s son A.E. Mize, followed by A.E.’s son John Mize Sr., then John Mize Jr., who retired from active management in 2018 after 56 years on the job and was succeeded by his son, Jonathan. John Mize Jr. also has a daughter, who he named Blish Mize to preserve and honor the Blish name, as the Blishes did not have children. Blish Mize Connor is the company’s communications director. When he retired as CEO in May 2018, John Mize Jr. reflected on his tenure, which started in 1962 when he joined the company full time after college working sales territories in Colorado and Nebraska. He was later promoted to field sales manager and traveled the company’s entire servicing area. He held the position of executive chairman, president and CEO for about 35 years, and the company saw incredible growth and acquisitions under his leadership. “We are a family-owned, employee-focused company, and we are extremely dedicated to our customers,” he said when he transitioned out of active management and into the sole role of chairman of the board. “I look back on our history and feel gratitude to so many who have shown their faith in us.” He added, “There’s plenty of competition, and we have to prove ourselves worthy every day. Strong customer service and making sure our

customers know we care about their business is a huge part of that.”

Customers Feel the Family Focus

A fellow century-old Kansas business, Home Lumber and Supply headquartered in Ashland since 1905, says the family attitude makes a difference and has continued with the next generation of leadership. “We have a nice relationship based on mutual respect,” said Hervey Wright, assistant general manager for Home Lumber and Supply, which operates 14 full-service lumber and building materials stores in rural markets across the state. “They do what they say they are going to do. A phone conversation is as good as a handshake deal would have been back in 1905. A lot of our store managers and sales managers have business relationships as well as friendships with the Blish-Mize team. And when you go to the buying market, it’s a different feel than you get with other distributors, where it’s strictly business and there’s little interaction. At the Blish-Mize market, you see Jonathan Mize, Blish Mize and their dad there, shaking hands, talking to folks. In the evening, it’s like sitting down to a family dinner together.” Brent and Megan Melby have leaned on the Blish-Mize team for everything from purchasing inventory at prices that maximize profitability to redesigning the store they bought four years ago in Scandia in far northcentral Kansas. They say their sales rep for Melby’s Home Center visits often enough to be able to call their kids by

Probably the most important is that they are in rural America like we are. It’s a big selling point that I can say I got all of this from Atchison.” Nearly 150 years of family leadership has resulted in longtime customers who look to BlishMize for reliability and profitability for their independent stores, which range from one-off mom and pop shops to mini-chains. From pliers to paint to power drills, Blish-Mize distributes more than 60,000 different hardline products. Beyond distribution, they offer a variety of retail profitability services like marketing, pricing, planning and store design. “We treat our customers like family,” Jonathan said. “We view our work as a partnership. We also pride ourselves on our generations-old ethos of ‘the customer is always right.’ That sentiment is a rarity these days.”

Longevity Among Customers and Employees

In addition to long-time customers, it’s not unusual for employees to retire with 30 or 50 years of service at Blish-Mize. Corporate offices are in Atchison as well as the company’s main 500,000-square-foot distribution center. They employ 150 people in Kansas and in the other states where they serve customers on their own company equipment: Arkansas, Colorado, Illinois, Iowa, Missouri, Nebraska, New Mexico, northwestern Louisiana, Oklahoma, South Dakota,

Texas and Wyoming. They also operate cross dock facilities in Denver, Dallas and Houston. Their reach is even farther, though, as they ship nationwide to other hardware retailers, as well as provide e-commerce fulfillment services to some of the most well-known online retailers. The family counts embracing e-commerce as one of the turning points in the modern era of the business. Other adaptations that have allowed Blish-Mize to remain competitive include adopting a digital, rapid-turnaround warehouse; acquiring competitors when they go out of business in order to expand into more states; and offering online sales via Hardware House, the private-label brand that Blish-Mize recently took full ownership of and continues to offer thousands of high quality products in the major product line categories. As they evolve, the family said, they stay grounded in their roots, including staying in Atchison. “Atchison is more than our home” Jonathan said. “We are one of the strongest supporters of the Atchison community and many local causes such as United Way, Relay for Life, Chamber of Commerce, Amelia Earhart Festival, YMCA, local schools, churches, food pantry, just to name a few. Our company actively promotes volunteerism among employees by allowing time off with pay for certain community volunteer work. The town’s success is very important to us.” He started in the business at 24 and turned 50 this year, so it’s likely that Jonathan has many years remaining at the helm of the business. When asked if there is a sixth generation to continue the tradition, he enthusiastically said yes. “There are lots of great options to choose from in the next generation.” KCL JUNE 2019

The experts at the Power Tool Institute—the leading organization for power tool safety resources, information and education—recommend these tips for safe use, storage, transportation and disposal of lithium-ion batteries.

Use ffThe higher energy potential and small size

of lithium-ion batteries makes them ideal for cordless power tools but also pose additional safety risks when misused. ffBatteries are not interchangeable, so it’s important to only use batteries and chargers from the original power tool manufacturer. ffOriginal manufacturer batteries are engineered to communicate and work with specific tools and chargers. These components go through a rigorous certification and testing process. Third-party batteries are not always held to the same standard, and can pose fire, property damage or personal injury risks. ff Never modify, disassemble or tamper with a battery. IT’S SWEET POTATO TIME! With the threat of cold well behind us, it’s safe to get those sweet potatoes in the ground. Sweet potatoes are easy to grow and love the warm weather. These low maintenance, nutritious treats will bring you a bountiful harvest throughout the fall. Planting time for sweet potatoes begins around mid-May. Due to the intolerance for any cold weather, sweet potatoes should not be planted earlier. The spreading growth habit of sweet potatoes insists on adequate space in the garden. Vines can grow to be 8 feet long so space the plants at least 12 inches apart in rows that are 3 feet apart. The soil should be loose to support the fleshy, root growth and does not need to be overly rich in nutrients. Create mounds or ridges in the soil for planting. Sweet potatoes thrive in moderately dry conditions, but will require deep watering during the hottest months of the summer when there are extended periods without rain. While the plants are young, weeds should be maintained by hand or using a cultivator or hoe. Avoid turning the soil too deep which can damage the potato roots. Once the vines cover the soil, the weeds will be reduced and likely maintained by the sweet potato plants. Harvest season for sweet potatoes lasts throughout the fall. Potatoes that aren’t harvested will continue to grow in size without decreasing in quality as some crops do. All sweet potatoes should be harvested before the first frost otherwise they will rot. Harvested sweet potatoes do not have a sweet flavor. This flavor comes after the curing process, which takes one to two weeks. Place harvested sweet potatoes in a basket and keep in a warm, humid environment for about 10 days. Next, place the basket in a cooler location for about five more days. After this time, the potatoes are ready for consumption or longer term storage. Sweet potatoes can be stored for six months in a cool area with high humidity such as a basement. Avoid temperatures below 50 degrees. Sweet potatoes stored throughout winter can be used to start the following year’s crop. In early spring, submerse the roots halfway into a jar of water to promote sprouting. Cut the root into sections ensuring each section has a sprout. At the end of May/June plant the sprouted roots into the

garden for another growing season. Sweet potatoes are a member of the same family as morning glory and are susceptible to the soil borne, fungal disease called scurf, which is very difficult to eliminate once present. To prevent this problem, practice crop rotation by planting this season’s sweet potatoes in a different location of the garden from last year’s sweet potatoes. Ornamental sweet potatoes (Ipomoea batatas) are a popular herbaceous perennial. The intense leaf color comes in purple, chartreuse and many variations of each. This plant still produces a potato but is typically not consumed. Ornamental sweet potatoes have been hybridized to remain more compact than the edible counterpart, but the growth will become denser throughout the season. They make a nice addition to container plantings, hanging baskets and are a lovely groundcover in the landscape. Whether or not you decide to grow sweet potatoes for their health benefits, the plants contribute nicely to the landscape. The low demand they require of the gardener only enhances the value of the aesthetics and nutrition. Potluck Faux Pas: If Everybody Brings Something, What Could go Wrong?

I LOOKED FORWARD to attending an annual neighborhood potluck last summer, and I decided to bring my “A-game” in the form of a French Glacé Strawberry Pie from a recipe in a local historical cookbook. I proudly placed my pie, strawberries glistening like rubies beneath the clear plastic lid, on the dessert table. After visiting with neighbors and sampling some fare, I returned to the desserts and ... my pie had vanished! I asked the woman who had helped organize the event (a caterer, mind you), where my pie had gone and, after a moment (she waited out my panicked description of the pie as if I was describing a kidnap victim), she said, “Oh, I believe it’s under here,” and she lifted a tray of cookies off the top of it ... she had been using my beautiful pie as a pedestal. Whether this was a case of pie envy or shortage of table space (not the case), she should have known better. While potlucks can be fun, casual,

easy (sometimes) and have no “rules,” I’ve been to enough of them where some aspect of decorum has been violated that I think potlucks deserve a little etiquette.

The Plan: Sign-up Sheet or Leave it to Chance?

Would you believe one of the definitions of “potluck” refers to “a situation in which one must take a chance that whatever is available will be good or acceptable”? While this motto sounds adventurous, some potluck pre-planning is essential to avoid ending up with five seven-layer salads (that’s 35 layers, people), an entire table covered with brownies (hmmm) or tires squealing when it’s cleanup time. It might be too much to expect each guest to bring their own plate, cup, utensils and napkins (as one office potluck I attended demanded), but everyone can contribute something. If you are hosting/organizing a potluck, you should have a sign-up of some sort, with the usual categories of main dish, dessert, etc. You could also have people sign up to bring utensils and paper goods and backup cleaning supplies (like garbage bags), and volunteers for chores, like setup and cleanup.

My mom’s “recipe” for baked beans consists of a countertop covered in cans, bottles and jars from which she conjures, by “just dumping,” a roasting pan full of tangy, sweet-smoky goodness that disappears at every family potluck. I put my own spin on it here. ff 3 28-ounce cans barbecue-style

Heat ovens to 350 F. Mix all ingredients together in a large mixing bowl. Adjust seasonings to taste (you can taste as you go). Pour into a 3 to 3.5 quart casserole or Dutch oven. Lay strips of bacon on top. Cover and bake for 1 hour to 1 hour and 30 minutes (depending on depth of dish), uncovering for the last 20 minutes of the baking time. Serve warm or room temperature. Serves 12-15.

The Location: Risking Meat Wasps and Hungry Hobos

For a few years, I organized a picnic potluck at a local nature preserve, and I learned the hard way the risks and rewards of pot-lucking outdoors. One year, we had a line of unexpected and uninvited (human) strangers filing in to fill their plates (Note to self: do not post “Picnic” signs and arrows unless you want extra company). Another year, our potluck table was a-swarm with yellow jackets someone called “meat wasps” (who also happened to be vegetarian). Keep in mind how your location will affect your party—consider crowd comfort (like access to water and bathrooms), bug control and food safety (a platter of


shrimp on a 94-degree day might not be a good choice). Provide (or request) enough tables to create space for both food (and a plan of which foods go where), as well as table room and seating for diners.

The Portions: You Need a Bathtub-Sized Serving Bowl— Have You Made too Much?

Probably. But lots of people means the need for lots of food, right? Some good advice comes from author Ali Rosen in her book “Bring It!: Tried and True recipes for Potlucks and Casual Entertaining”(Hachette Book Group; 2018): “If you are having a ton of people bringing a ton of dishes, you don’t necessarily need to size up as much as you think; keep in mind that the more dishes available, the smaller the portions people will take from each.” Whatever you bring should be accompanied with its serving tool (ladle, knife, pie server), and you should manage food temperature, either bringing it in an insulated thermal container if the potluck is far from a kitchen, or checking with your hostess about storing and/or access to options for warming and cooling if the event is indoors. Better yet, bring something that can be safely served at room temperature. And when transporting your food, secure it—a trunk full of spilled green tea punch taught me that.

The Aftermath: Unclaimed Leftovers and Other Left-Behinds ...

I have had some bad post-potluck letdown in the form of folks leaving LOTS of the food they brought behind. A vat of chili is abandoned with an “Oh, you can keep it,” as if this is some sort of favor. Many potluck orphans will sadly end up discarded. Leaving leftovers is wasteful and just creates more work for the organizers. At many of our family potlucks, it’s a given that everyone share what’s left in to-go platters. Also, I’ve been the keeper of an array of leftbehind dishes, dippers, tongs and serving knives (which must be washed ... by someone), I say, take your belongings with you. And overzealous cleanup people (you know who you are), make sure you don’t cart off things that aren’t yours.

The Key: Is a Bag of Chips the Best You Can Do?

Bring your heart—whether in a dish or an offering to help—to a potluck and all will be well. If you are not a cook, pick up something delicious from the deli or bakery or offer to bring some needed item (like paper towels) or volunteer to help with event chores. If cooking, bring your best, a beloved family recipe (like my mom’s baked beans) or an established “hit” from your rounds on the potluck circuit. Label your dish, and maybe be willing to share the recipe if you get any requests. And hosts, be gracious and welcoming of every dish or offering brought to the table. No hiding of pies—or Aunt Edna Mae’s Broccoli Bites. Electrical Shock Drowning: Know the Dangers of Swimming near Docks, Boats WOULD YOU USE a plugged in electrical appliance while taking a bath? Of course not. Yet we don’t think twice about jumping into a lake near boats and docks—both charged with electrical power. Perhaps our indifference stems from childhood and the sweet relief experienced by taking a dip in the lake or pond never thinking twice about potential dangers, other than the mysterious monster fish our siblings swore lurked inches away. With an increasing number of docks carrying electrical power to accommodate boat lifts, lights and shore-power connections, electrical shock drowning (ESD) is in the news. It is the result of typically low-level alternating currents (AC currents) passing through the body causing the victim’s muscles to become paralyzed by the electrical current. He or she is unable to swim, and may ultimately drown. Higher levels of AC current in the water will also result in electrocution. The typical victim is a child swimming in or around a marina or dock where electricity is present. The electricity that enters the water and causes ESD originates from the wiring of the dock or marina, or from boats connected to the marina’s or dock’s power supply. ESD is a silent killer. There is no visible warning or way to tell if water surrounding a boat, marina or dock is energized or will become energized in seconds with fatal levels of electricity. Most often, electricity enters the water when an electrical fault occurs aboard a boat. Typically, the electric fault is intermittent. For example, the fault that places deadly current into the water may only occur when a light switch is turned on, or when another electrical device cycles on. Water can appear and feel “safe” and in a split second become energized with deadly electricity.

Technician. Boats with AC systems should have isolation transformers or equipment leakage circuit interrupter (ELCI) protection, comply with ABYC standards, and should be serviced by an ABYC-Certified® Technician. ffTalk to marina operators about the danger of

electric shock drowning. Ask them to install GFCI’s on all shore power pedestals and on all marina wiring circuits. Ask if their marinas are regularly inspected by qualified electricians familiar with National Fire Protection Association Codes: NFPA 303 and NFPA 70.

ffExtend a PVC-handled boat hook or wooden

(non-conductive) oar to try to reach the victim and guide them AWAY from the boat or dock.

The ideal rescue would be to paddle out in a non-metal-hull boat and pull the person away from the current, then try to haul him or her aboard. Baked Sweet Potato Fries with Lemon Meringue Dipping Sauce Sweet Potato Fries ff 3 large sweet potatoes, peeled and cut into matchsticks ff 2 Tbs. olive oil ff 1-2 tsp. kosher salt

Preheat oven to 450 F and line a baking sheet with parchment paper. Peel sweet potatoes and slice into matchsticks, roughly the same size. Place in a large bowl and toss with olive oil and salt. Bake for 20 minutes on the parchment-lined baking sheet, tossing halfway through to crisp both sides. While fries are baking, mix together mayo, garlic, lemon juice, lemon zest and a pinch of salt. Once fries are done, garnish with parsley and serve with lemon meringue dipping sauce. Serves 6.

In a blender, process strawberries until blended thoroughly. Pour strawberries into a large pitcher; stir in soda and pink lemonade. Serve immediately. NOTE: Ginger ale may be used in place of soda. May also substitute your favorite frozen summer fruits for variations on this spritzer.

In a skillet over medium heat, brown steak until it reaches 135 F on an internal meat thermometer for medium-rare doneness. Remove from skillet and set aside.

In same skillet, add onions, green and red bell peppers, salt, pepper and cumin. Sauté until tender, about 5 minutes. Add eggs and scramble. Return beef to mixture and heat for 1 minute. Heat flour tortillas on a hot skillet or griddle.

Evenly distribute beef and egg mixture into tortillas. Sprinkle with cheese and roll into burritos. Serve with your favorite salsa. Serves 4-6.

To make rub, combine ingredients in medium bowl. Place ribs flat in a non-reactive roasting pan. Using 3/4 cup of rub, sprinkle over both sides of each rack and rub lightly. Soak wood chips in cold water for at least 30 minutes. Set up grill for indirect cooking. Prepare a medium fire in a charcoal grill or preheat one side of a gas or electric grill on medium. Drain chips and sprinkle half over coals or place half inside grill’s smoker box. Place disposable foil pan under the grate to catch drippings. Brush grill grate with vegetable oil. Arrange ribs, meaty-side down, on the side of the grill without hot coals. Cover and cook for 45 minutes. Turn ribs and add remaining wood chips. Cover and grill another 45 minutes.

While ribs are cooking, combine barbecue sauce, liquid smoke, maple syrup and molasses in a bowl. When ribs have cooked for a total of 1 1/2 hours, brush generously with sauce. Using tongs, slide the rib onto the grate directly over the hot coals. Grill, uncovered 5 minutes. Turn ribs over, baste again and grill another 5 minutes. Cut between bones, slicing racks into individual ribs. Serve immediately. Serves 6-8.
