Chocolate and chestnut Christmas log

Ingredients 225g/8oz plain chocolate, roughly chopped 1 tsp strong instant co�ee powder 5 free-range eggs, separated 140g/5oz caster sugar icing sugar, for dusting holly leaves and berries, to decorate (optional) For the filling 150ml/5fl oz double cream 3 tbsp sweetened chestnut purée Recipe tips Method Take a 33x23cm Swiss roll tin or baking tray and cut a double layer of non-stick baking parchment slightly bigger than the tin. Lay the parchment in the tin. Don’t worry if the edges stick up untidily round the sides. Preheat oven to 200C/400F/Gas 6. Put the chocolate and co�ee into a heavy-based saucepan with 85ml/3fl oz water and put over a low heat to melt the chocolate. Beat the egg yolks and the caster sugar until pale and mousse-like. Add the melted chocolate. Whisk the egg whites until sti� but not dry. With a large metal spoon, stir a small amount thoroughly into the chocolate mixture to loosen it. Fold the remaining whites in gently. Spread the mixture evenly in the lined roasting tin. Bake in the preheated oven for about 12 minutes, or until the top is slightly browned and firm to touch. Slide the cake parchment out of the roasting pan onto a wire rack. Leave to cool completely (do not cover). To make the filling, whip the cream in a bowl, then mix in the sweetened chestnut purée. When the sponge base is cooled all the way through (check underneath) you are ready to assemble the roulade. Put greaseproof paper on a work surface. Turn out the roulade onto the paper. Carefully remove the paper used to line the tin. Spread the filling evenly across the surface of the cake. Using the paper under the cake to help, roll it up firmly from one of the narrow ends. Rest the cake on its seam. Wrap tightly with the greaseproof paper and refrigerate for at least 30 minutes and up to overnight. (It doesn't matter if the cake breaks apart when rolling - a little si�ed icing sugar will do wonders for its appearance.) Serve dusted with icing sugar and garnish with holly leaves and berries.

arts & crafts guide �e Reel Poster Gallery is the creation of Bruce Marchant, who owns and manages the business today. Originally trained as a sculptor, Bruce started collecting in the late 1980s dealing with a handful of private clients. As many collectors start out, he never thought he’d deal. Within a year or two, however, he’d amassed a volume of posters and the business of selling began. Collecting is very addictive and emotionally driven. Bruce bought what he liked; either for the film title, or more o�en, for the design merits of the poster itself. Bruce founded �e Reel Poster Gallery in 1991.

�e Arts and Cra�s movement was a design movement that originated in Britain in the late 19th century. It was a reaction to the damaging e�ects of industrialization and the relatively low status of the decorative arts. �e movement aimed to reform the design and manufacture of everything from buildings to jewelry, and to develop products that not only had more integrity but which were also made in a less dehumanizing way1. �e movement was comprised of a number of di�erent artistic societies, such as the Exhibition Society, the Arts Workers Guild, and other cra�speople in both small workshops and large manufacturing companies1. �e movement’s leaders wanted to create products that were both beautiful and functional, and that were made by hand rather than by machines1. �e movement’s influence can still be seen today in the popularity of handmade cra�s and the use of natural materials in design.
