It’s almost summer and the sun is shining! Oh, wait…is the sun good for us or should we shy away from it? Or more importantly, should we enjoy the sun with or without sunscreen? This is a very controversial topic, and a decision that each of us needs to make individually. There are many factors to consider: Vitamin D absorption, free radical damage, cancer risk, painful sunburns…etc. Vitamin D Absorption Article after article in all of the top news sources are exclaiming the benefits of Vitamin D and the hazards of a Vitamin D deficiency. We have now linked a Vitamin D deficiency to MS, lowered immune function, and cancer. Vitamin D supplementation has skyrocketed over the last few years due to all of these new studies. The sun is our body’s favourite way of absorbing Vitamin D. 15 minutes in the sun with your arms and face exposed will allow most of us to absorb 10,000 IUs of Vitamin D. A sunscreen with an SPF of 8 or above reduces our Vitamin D absorption by 95%. So, if we wear sunscreen daily, it would take 3½–5 hours of sun exposure to absorb the same amount of Vitamin D. Actually, this has been seen in Australia as well. Recent studies found that those who followed the successful “Slip-Slop-Slap” health campaign encouraging Australians to use sunscreen when exposed to sunlight to prevent skin cancer, had an increased risk of Vitamin D deficiency. And ironically, a Vitamin D deficiency is linked to a higher risk of many cancers, including melanoma. Free Radical Damage Sunburn is a sign of free radical damage…and for many of us it’s a very painful sign. Free radical damage can lead to early aging of the skin and possibly skin cancer, which is the main reason we wear sunscreen and why it’s in most

cosmetics. But, what is forgotten is the free radical damage created by these very sunscreens!
Safe Sun Tips
A study published in October 2006 found that the three main sunscreen ingredients, octocrylene, octylmethoxycinnamate, and benzophenone-3 create an increase in free radical damage in the skin, which was higher for the sunscreen user than for the nonuser. Such an increase in free radicals might increase the chance of melanoma.

In North America, all new sunscreen ingredients must be tested for their photocarcinogenic effects, but as of 2008, most sunscreens on the market still contained known photocarcinogenic chemicals due to a grandfather clause. Since 1%–10% of the chemicals in sunscreen are absorbed into the skin, we need to take
a very careful look at what we slather onto our skin. To add fuel to the controversy, in August 2007 the United States FDA tentatively concluded, “The available evidence fails to show that sunscreen use alone prevents skin cancer.” The most important thing to remember this summer is to get outside! GMO in the Okanagan? A Farmer Attempts to Introduce a GMO Apple to the Okanagan
What are farmers sacrificing on their path to perfection?
Okanagan Specialty Fruits is a privately owned biotechnology company that is seeking approval to introduce a genetically modified apple to the orchards of the Okanagan Valley. When the white flesh of apples is exposed to air it naturally turns a shade of brown. Okanagan Specialty Fruits has developed a method of altering an apple’s genetic makeup to eliminate its tendency to brown when exposed to oxygen. The company has named their GMO apple the Arctic apple, and has taken it to the Canadian Food Inspection Agency and Health Canada in hopes of gaining permission to begin commercial planting. Neal Carter, the president of Okanagan Specialty Fruits, said that portions of the apple’s genetic makeup have been removed to eradicate the natural browning process. Carter’s rationale for the creation of this genetically modified apple is that people prefer to eat apples that have no brown pieces, and that they are willing 6 |

to consume genetically altered apples to achieve that result. Before the Arctic apple is approved by the CFIA and Health Canada – a process that Carter believes will happen within the year – Okanagan Specialty Fruit must first face resistance from local famers and consumers. Many BC fruit growers are concerned that the introduction of a genetically modified apple may cause the province’s stellar reputation of being a quality fruit supplier to become tainted. Most growers believe that apples are enjoyed by consumers regardless of their tendency to turn brown, and that many consumers are not supportive of genetically modified food items. BC Minister of Agriculture Don McRae stated that the province is taking the application very seriously, and that the government is intent on preserving the positive reputation BC fruit growers have
diligently earned. He insists that the government will take all scientific information into account and ensure that the relevant parties have an opportunity to voice their opinions. Some BC fruit growers do not feel that evaluating the apples simply from a science and health based approach is sufficient. The apple will also have serious effects on the local economy and severe market repercussions. Introducing a genetically modified apple into the valley has the potential to contaminate the other species of apples that are grown in the vicinity, and to become a slippery slope towards a Monsanto style domination of the local apple market. Genetically modified seeds are considered intellectual property and as such are subject to patent laws. Technically speaking, if seeds from the Arctic apple were blown onto a neighboring farm and pollinated, that farmer could be sued for patent infringement. Okanagan Specialty
Fruits could gain a monopoly on apples grown throughout the valley, effectually putting local farmers out of business. The Arctic apple will be available for consumer purchase, but a more lucrative market lies in the fast food sector. These non browning apples could be sold to companies that use pre cut apples in their outlets, such as McDonalds. Contracts with large fast food type companies would require massive output, resulting in factory style production and distribution methods, creating a change in the current holistic method of BC fruit farming. If the Arctic apple is approved, it could be devastating to local orchardists and the valley economy, and would have the potential to completely destroy the Okanagan’s organic fruit industry. Bees that help to pollinate the apple trees carry genetic information from one tree to the next, meaning that the altered DNA of the Arctic apple could result in the contamination of all
organic apple orchards. Farmers could lose their organic certification as a result of the contamination, and could have legal action taken against them for the unsanctioned use of a patented item. For those consumers that prefer to eat a pristine white apple, there are other species of apples, like Ambrosia, that naturally do not brown when exposed to oxygen. Consumers should also be aware that the browning enzyme that Okanagan Specialty Fruits has removed from their Arctic apple is also the enzyme that reveals bruising. This means that a very bruised Arctic apple would appear to be in perfect condition, meaning more sales for the producer and decreased quality for the consumer. Furthermore, the browning is a result of the apple beginning to decompose and become an organic compound. It is impossible to say if an apple without this enzyme would decompose and become compost, or remain perfectly intact in a landfill for years on end, contributing to waste like plastic
bags and Styrofoam which exist in our waste systems for decades. As consumers it is our responsibility to take a stand against GMO foods and the repercussions they have on our local environment and economy.

Email her at: www.DoctorKateND.com Iron deficiency is a common nutrient deficiency. Iron plays a central role in the hemoglobin molecule of our red blood cells where it functions in transporting oxygen throughout the body. Iron also functions in several key enzymes in energy production. Often the dietary intake of iron does not adequately satisfy the body’s needs. This is particularly common in menstruating women, who lose iron every month, and during pregnancy and breastfeeding. Vegetarians are at an increased risk for iron deficiency, since their iron intake is often low. Furthermore, since adequate stomach acid is needed to absorb iron, absorption tends to decline with age due to decreasing stomach acid levels. This puts the elderly at great risk for iron deficiency, as well as people who frequently use antacid medications.
Anemia is a condition in which the blood is lacking in red blood cells or hemoglobin. Iron dependent enzymes involved in energy production are the first to be affected by low iron levels, which is one reason iron deficiency causes fatigue. That being said, don’t assume you need an iron supplement just because your energy is flagging! A blood test that measures serum ferritin, the iron storage protein, is the best way to determine iron deficiency. Individuals that are at low risk for iron deficiency (like men and non-menstruating women) shouldn’t take iron “just because”.
The most easily absorbable form of dietary iron is red meat, especially liver. Good non-meat sources of iron include beans, molasses, dried fruits, whole grains and green leafy vegetables. The absorption rate for heme (meat) source of iron is up to 30% while the absorption rate for the vegetable sources is approximately 5%. Non-heme iron absorption is enhanced by vitamin C which is naturally present in many ironrich vegetables, like spinach. Iron supplementation is often required to raise iron levels. Ferrous sulfate is the most common iron supplement, but it is notorious for causing constipation. Ferrous pyrophosphate is a form of iron that is so gentle on the stomach it is used in infant cereals. Sunactive Fe is micronized (very small particle size) ferrous pyrophosphate that is microencapsulated to allow it to be dispersed and assimilated easily. Sunactive Fe is extremely safe, stable, has no taste and is free from gastrointestinal side effects. The Facts About Going Vegetarian Becoming a vegetarian may not be the easiest transition; however, eliminating meat and meat products from our diet holds numerous benefits for our overall health, the health of animals and the health of our planet. Most conventionally raised animals are subjected to incredibly inhumane treatment, the likes of which would disturb even the most dedicated meat eater. On factory farms animals are squished into filthy, windowless sheds where they will spend the rest of their lives. During the slaughter process cows are often skinned and dismembered while they are still alive. Shortly after birth, piglets are castrated, have pieces of flesh cut off of their bodies and their tails removed without the use of any painkillers. Chickens spend their entire lives cooped up in tiny cages without ever seeing the light of day. Not only is factory farming inhumane it is a major environmental pollutant. Factory farming leads to deforestation, an increase in greenhouse gases and wasted land. Many of the environmental issues that we as a civilization face today are the result of factory farming and increased meat consumption. According to the United Nations, meat consumption creates more greenhouse gasses than cars, planes, ships and trains combined. Chickens, turkeys, pigs and cows in factory farms produce billions of tons of drug laced feces each year, which frequently spills over into neighboring waterways and is the cause of death for thousands of fish and aquatic species. Because it can take over a hundred pounds of grain to produce one pound of meat, many habitats are destroyed in order to plant a single crop. Over 90% of the Amazon rainforest that has been cleared since 1970 has been for global meat production. For humans, reducing or eliminating meat from our diets can help lower the risk of heart disease, certain cancers, stroke and obesity. Although meat does provide nutrients that are necessary for life, there are other plant based sources where these nutrients can be found. There are a number of vegetarian recipes that 10 | July/August 2012
can be accessed on line or found in vegetarian cookbooks. If family cooking is a concern, try introducing vegetarian options slowly to help your family adjust to a different diet.. If you are the first person in your family to try vegetarianism, try cooking a vegetarian meal and then adding protein for your family members. Converting to a vegetarian diet doesn’t have to be difficult, and the planet, its animals, and your body will thank you! Not everyone is ready or able to switch to a strictly vegetarian diet and that’s ok! There are a number of ways to be an informed and responsible carnivore! Do your research before purchasing meat products. There are a variety of ethically raised meats available on the market today. Grass fed is a commonly used term to distinguish those cattle that are raised on a grass diet. These cows do not eat any grains, or GMO feeds, and are not given
any hormones, antibiotics, or animal byproducts in their feed. The cows are free to roam a grass pasture where they can express natural behaviors and grow at a normal rate. Raising cattle on pastures reduces CO2 emissions, improves soil quality, and preserves natural habitats. Certified organic beef is always grass fed because of certification standards. When choosing chicken, opt for certified organic if possible, as this certification means that the chickens are raised using certified organic feed and untreated drinking water. The chickens must have access to a pesticide free pasture for a minimum of six hours a day, weather permitting. If organic chicken is not available, choose free run, as these chickens do not live in cages but are allowed to run free either in a covered barn or outdoors. Melt butter in a large saucepan over medium-high heat. Add onions. Cook until onions just turn translucent. Reduce heat to medium low and cook until caramelized and brown, about 40 – 45 minutes, stirring often. Add salt and pepper to taste. TIP: If the onions start to stick, add a small splash of water.
Garbanzo Bean Patties 2 cups

organic garlic, finely minced

fresh organic cilantro, minced

Drain and rinse garbanzos. In a medium mixing bowl, mash garbanzos with a fork or potato masher. Add remaining ingredients (except for olive oil) and mix until well combined. Form into four 1" thick patties. Refrigerate several hours to set up the patties, or freeze until ready to use. Heat a heavy skillet over high heat. Add olive oil. When skillet is hot, add burger patties. Reduce heat to medium, and cook patties for approximately 5 minutes each side, until crisp and cooked through. TIP: You can use a grill for this recipe, but you must pre-cook the patties in a pan, and finish them on the grill; otherwise they tend to fall apart.

Lack of movement creates compensation and sends us on a journey of unhealthiness and unhappiness. So, what may happen for some during this
extra summer activity, is that an underlying dysfunction starts to sneak up. Slight aches and pains start to manifest. Some of the main reasons for this is a lack of variety in movement patterns – such as continued long distance running, a lack of mobility, or stability in joints. Exploring an optimal amount of variety of movements aids in recovery and helps increase movement efficiency. What does this mean? Take a look at children and how well they move. How they can jump,

THE BUZZ ON INSECT REPELLENTS The onset of warmer weather brings us outdoor activities like hiking, camping, sports and picnics. Unfortunately it also brings with it mosquitoes, black flies, and bees. To reduce the number of itches and ouches you experience this summer, try a natural insect repellent with active ingredients like essential oils.
Most conventional insect repellents contain the active ingredient DEET, which is an abbreviation for N, N-Diethyl-metatoluamide. DEET was originally created for use as a pesticide; however the United States army soon adopted the chemical for use in jungle warfare in Vietnam and Southeast Asia. It is a yellowish oil that can be applied to skin or clothing and can be quite helpful in repelling a majority of insects. Although effective at repelling insects, DEET has been known to cause skin irritations, and in some
cases insomnia, mood disturbances and impaired cognitive functions. Studies have shown that DEET inhibits the activity of a central nervous system enzyme in both mammals and insects, which, in serious cases, can cause paralysis and asphyxiation.

Glow on, glow on! Candles help set the mood in your home, and can add a sense of warmth and relaxation. However, there are some ingredients in many candles that add harmful pollutants to your homes air quality. Most of the candles on the market are made from paraffin wax, which is derived from petroleum also contain synthetic fragrances which are also derived from petroleum. Less common are candles that are made from plant oils such as soybean oil, palm oil, hemp oil, or from beeswax. Research has shown that when paraffin wax candles are burned for over five hours inside a chamber there are measurable amounts of chemicals emitted. Experts found varying levels of cancer-causing toluene and benzene, as well as other hydrocarbon chemicals called alkanes and alkenes, which are components of gasoline and can irritate respiratory tracts and trigger asthma. Chemicals that reduce your indoor air quality aren’t the only problem associated with paraffin candles. Previous research into candle pollution found paraffin that candles can emit ultrafine, lung-damaging particulate matter that’s capable of penetrating deep into the lungs. The harmful effects can be long lasting since candle soot can deposit on furniture, in carpeting, and in walls. Paraffin candles release chemicals because of improper combustion; meaning that the flame doesn’t get hot enough to burn the oil completely, and chemicals are released as a result.
Beeswax candles burn at lower temperatures and don’t have that problem. They also add a hint of sweet honey aroma to the air without any added chemical fragrances. Keep wicks trimmed to approximately ¼" to cut down on any soot that may come from candles – soy wax, beeswax or otherwise. Also, keep candles out of drafty windows where drapes may come into contact with the flame. Most importantly, never leave a burning candle unattended.
