Healthy Food on the Go

N

ice weather often equates to an uptick in road trips. During such trips, motorists and their passengers need to refuel both their vehicles and their bodies. Rest stop and convenience store snack options are often unhealthy, and it can be difficult for nutrition-minded travelers to find acceptable fare. But a little creativity coupled with some smarter choices can ensure road trips don’t derail healthy diets. Bring food along. One of the easiest ways to eat healthy while traveling is to bring meals and snacks with you. Look for portable foods that may not require much refrigeration, such as fruit bars or trail mix. If you have room in the car for a small cooler or insulated lunch packs, fill them with fresh fruits and sandwiches. Opt for lean lunch meats like chicken and turkey. Avoid using cheese or dressings like mayonnaise that can quickly spoil. Some other easily portable foods include applesauce cups, oatmeal packets (all you need is hot water from a rest stop) and low-sodium, low-fat jerky. Pack plenty of water, a healthier choice than soft drinks that will also keep you hydrated when sitting in the car for extended periods of time. Find healthy fast food. If packing food is not an option or if you just prefer the convenience of getting something along the way, you can still make informed choices. Opt for foods that are roughly 500 calories or less and boast plenty of protein and whole grains to

help you feel full longer. You may not be able to enjoy low-sodium foods, as many fast food options go heavy on the salt. Just steer clear of extra condiments that only increase those already considerable sodium levels. If you must opt for fast food, do not order sides of fries or chips, which will only make meals less healthy. Also, avoid sugary sodas. Many fast food restaurants offer some healthy fare, such as grilled chicken sandwiches. Order such sandwiches plain or with extra lettuce and tomato for a healthy crunch. Order sandwiches on wholewheat buns when possible. Kids’ meals tend to have healthy portion sizes. If possible, purchase a meal and opt for a side of sliced apples or another healthy alternative. Make smart choices at restaurants. It’s important to stay focused on healthy fare even when you pull off the highway and patronize more traditional sit-down restaurants. Again, think smaller portions. Consider splitting an entree with another person in your traveling party. Some chains will offer the nutritional information right on the menu, or put a special symbol next to their healthiest offerings. Substitute steamed vegetables for starchy or fattening side dishes and always ask for sauces to be served on the side. It’s not always easy to eat healthy when traveling. But travelers can often find healthy fare, even if they need to bring it along themselves.

Farm to Table Business is Booming

C

onsumers’ appetites for local foods are growing, and restaurants have taken notice. Today, many local businesses, including farms and restaurants, have mutually satisfying relationships that make it possible for residents and visitors to enjoy nutritious, locally produced meals. According to the market research firm Packaged Facts, local foods generated $11.7 billion in sales in 2014 and will climb to $20.2 billion by 2019. Farm-to-table remains a growing trend that benefits farmers, restaurateurs and consumers. This is evidenced by the rising number of farmers markets cropping up in neighborhoods all across the country, as well as the niche offerings by regional food purveyors. The U.S. Dept. of Agriculture says that, in the last 20 years, the number of farmers markets has grown by more than 350 percent. Many consumers are now choosing ‘local’ whether they’re dining at home or heading out on the town, and this is making a major impact on the nation’s food systems. Foodies, as well as industry experts, predict that the local foods movement is a permanent and mainstream trend. In 2014, the National Restaurant Association found the desire for local foods dominated its Top Food Trends. The most in-demands foods include locally-sourced meats and seafood as well as locally sourced produce. While visitors to the Crystal Coast are assured an abundance locally caught seafood, from flounder and blue crabs to shrimp and shellfish, however, few realize just how many farms are in the area as well. Consumers also are interested in farm/estate-branded foods, like those found locally at the Friendly Market in Morehead City. Some restaurants are even producing hyper-local food, with herbs and produce grown right on the property. As the demand for local foods has evolved, so has the term ‘local foods.’ Today, it can be a wide-ranging term that refers to foods 20 | fork & spoon

produced in a particular town, state or even a region. The 2008 Farm Act defines a locally or regionally produced agricultural food product as one that is marketed less than 400 miles from its origin. However, a few states have established more stringent rules that indicate ‘local’ constitutes food produced within the borders of a state or within a small perimeter of the state. Feel assured, in Carteret County, local refers to foods produced in our small corner of coastal Carolina. A variety of small farms in the area produce everything from collard greens to strawberries. Add in locally-sourced food products like honey and crab cakes, and one could eat all year without ever having to reach for something outside of the area. Keep in mind, the Open Ground Farm in Down East Carteret County is the largest contiguous farm east of the Mississippi – now that’s a lot of produce! The growing preference for locally produced foods is great news for the farmers and small food producers that have long fought for footing among the mega-importers. According to the trade publication Produce Business, even though ‘local’ does not place limits on the size of the farm, the growing desire among consumers to go local is benefitting many small and midsized farms, as consumers are increasingly buying foods grown closer to where they live. In addition to meats, fruits and vegetables, consumers can find many locally made items that expand the potential for farm-to-table. These include, but are not limited to, artisanal cheeses, wines, beer, baked goods, milk and other dairy. Local, sustainable foods are in demand, helping not only local restaurants and merchants, but also the small and medium farms that service these establishments.
