Recipe courtesy of Prima Oliva 6 pounds yukon gold potatoes, unpeeled 1 stick (8 oz.) unsalted butter 2 medium cloves garlic 1 cup half & half 1 Tbsp. Prima Oliva White Truffle Oil 1 cup grated asiago cheese Sea salt & fresh cracked black pepper to taste Optional: Finely minced, fresh chopped or flat leaf parsley for garnish
1 can of Crescent Rolls 1 cup shredded Cheddar Cheese 1-2 Tbsp diced Jalapenos 5 slices crisp bacon, diced/crumbled 4 oz cream cheese, room temperature Preheat oven to 350 degrees. Mix cream cheese, bacon and jalapenos together in a small bowl and set aside. Roll out crescent roll dough and lightly press seems together to form a sheet. Layer ingredients evenly on the dough, reserving about 2 Tbsp of cheddar, and roll lengthwise. Cut into 3/4” slices and place 2” apart on a foil lined cookie sheet. Top with reserved shredded cheddar, if desired. Bake for 9-11 minutes, or until bread begins to brown. Allow to cool slightly before plating and serving.
Dice potatoes, making sure all are relatively the same size. Place in a large saucepan, add the salt, and cover with hot water. Bring to a boil over medium-high heat and then reduce heat to maintain a rolling boil. Cook until potatoes are tender throughout when poked with a fork. Heat the half-and-half, butter and the garlic in a medium saucepan over medium heat until simmering. Remove from heat and set aside. Remove the potatoes from the heat and drain off the water. Mash and add the garlic-half-and-half-butter mixture, grated Asiago and truffle oil. Stir to combine. Let stand for 5 minutes so that mixture thickens and then serve.

Heat oven to 370º degrees. Mix butter and seasonings until well blended. Pour over nuts in large bowl, toss to coat. Spread evenly onto 13x9 inch pan. Bake 7-10 minutes until lightly toasted.
Combine and simmer on stovetop for 8-10 minutes until liquid has reduced. Serve warm or cold. 21

2 lb. shredded hash browns 1½ stick butter 1 cup chopped onions 8 oz. cheddar cheese 1 can mushroom soup ½ tsp. salt ½ tsp. garlic powder 1 pint sour cream 2 cups crushed corn flakes
2 cups kalamata olives, pitted ½ diced red and ½ diced yellow peppers ½ lg. white onion, diced 1 Tbsp. minced garlic ¼ cup capers, drained ¼ cup toasted walnuts ¼ cup basil 1¼ cup Italian parsley ¼ cup to ½ cup olive oil (as needed to desired consistency) Pepper to taste
Melt ½ butter in 9x13 pan, add potatoes. Mix soup, onions, salt, garlic powder and sour cream and spread over hash browns. Add cheese. Melt second half of butter and mix with corn flakes and spread on top. Bake covered at 350° degrees for 1 hour. Uncover; bake for ½ hour more to crisp topping.
Sauté onions, garlic and peppers until translucent. Cool. Add all ingredients into food processor and add oil as needed to lubricate. Season to taste.

8-4 oz. boneless, skinless chicken breast 12 oz. basic brown gravy 8 whole artichoke hearts, halved 1 lb. large mushrooms, sliced 1 oz. garlic, minced 2 oz. blanched, sliced almonds Scallions, chopped ½ oz. lemon juice 6 oz. olive oil
2 lbs. broccoli cooked 6 slices cooked turkey, chicken or ham ¼ cup butter ¼ cup flour 2 cups milk 1 Tbsp. grated onion 2 /3 cup grated cheese 1½ Tbsp. prepared mustard ¾ Tbsp. salt Dash of cayenne
Sauté chicken in olive oil till cooked. Remove excess oil. Add brown gravy, artichoke hearts, mushrooms, garlic, almonds, and lemon juice. Cook till hot. Add scallions. Plate giving 2-4 oz. chicken breast per serving. Spoon gravy mixture over chicken with 2 pieces of artichoke per serving.
Place broccoli in bottom of shallow baking dish. Arrange slices of turkey or other meat over top. Melt butter, add flour and stir in milk and onion. Cook until smooth. Add cheese and heat until cheese is melted. Add seasonings. Pour sauce over turkey. Bake in preheated oven at 400 degrees for 25 minutes. SERVES 4-5

Recipe courtesy of Howbill Auto Parts, Inc. 2 tsp. cumin seeds ½ tsp. black peppercorns 4 cloves of garlic 2 tsp. salt 1 tsp. dried oregano ¹/³ cup orange juice ¹/³ cup dry sherry 3 Tbsp. lemon juice 3 Tbsp. lime juice 2 Tbsp. olive oil 4 lbs. of trimmed pork shoulder or 1 tenderloin
Recipe courtesy of Prima Oliva Four lamb shanks ½ cup flour 1 Tbsp. kosher salt fresh ground pepper, to taste 1 four inch sprig of rosemary, woody stems discarded 4 cloves fresh garlic, minced 1 medium onion minced 1 large carrot, finely diced ¹/³ cup Prima Oliva Gold Medal Coratina olive oil 3 cups robust red wine, such as Malbec 1 cup water
Heat small heavy skillet over medium heat. Add the cumin seeds and peppercorns to the pan. Stir constantly until fragrant and beginning to brown, about 2 minutes, cool. Using a mortar and pestle, crush toasted spices with garlic, salt and oregano to make a paste. Transfer to a small bowl, and stir in orange juice, lemon juice, sherry and olive oil. Place the pork in a large re-sealable plastic bag. Pour citrus marinade over meat, and seal. Refrigerate for 12-24 hours turning the bag over occasionally. Preheat the oven to 325º degrees. (I grill mine outdoors). Transfer pork and marinade to roasting pan. If oven roasting about 2 hours. Serve with black beans, rice and mango chutney.
*This recipe can be made in a dutch over or crock pot. If using the oven, preheat to 300° degrees. In a wide shallow dish or a gallon size Ziploc bag, mix the flour, salt and pepper. Rinse and pat the lamb shanks dry and dredge in the flour. In a large heavy bottom pan, heat the Coratina oil over medium-high heat, and brown the lamb shanks until golden brown on all sides, taking care not to overcrowd the pan, cooking for about 5 minutes per side and set aside. In the same pan, add all of the vegetables and saute over medium heat, scraping up any browned bits, until the onions are translucent, for approximately five minutes. Pour in the wine and simmer for another couple minutes and then add cup of hot water. Add the fresh rosemary to the bottom of the crock pot or dutch oven and arrange the shanks on top. Pour the wine and vegetables over the top. Cook, covered in a heavy dutch oven for six hours or in a crock pot set on low. After six hours, carefully remove the shanks from the liquid taking care not to allow the meat to slip off the bones. Cover to keep warm. Strain and de-fat the braising liquid. Place in a small saucepan and reduce by half. Adjust the seasoning with sea salt and fresh ground pepper. Pour the reduction over the lamb shank placed atop a bed of mashed potatoes. SERVES 4

Shot of espresso 8 oz of steamed milk 1 oz cinnamon Torani syrup Top with whipped cream and large red fireball.
2 Tbsp. (8 grams) medium-size loose-leaf Genmaicha or 4 Genmaicha tea bags One 5-inch cinnamon stick, broken into pieces 2 Tbsp. pure maple syrup 4 cups boiling water
Moroccan Mint Green Tea
Put the tea leaves or tea bags into a pre-warmed large teapot and set aside. Place the cinnamon pieces and maple syrup in a 4-cup heatproof measuring cup and add the boiling water. Stir to mix, then let the cinnamon infuse for 2 minutes. Quickly pour the infusion into the teapot straining carefully to prevent the cinnamon from going into the teapot. Steep the tea in the spice infusion for an additional 2 minutes. Strain the brewed tea into teacups and serve immediately. SERVES 2-4

(8 grams) Pinhead Gunpowder Tea or 4 Gunpowder tea bags 1 cup very tightly packed fresh mint leaves 2 Tbsp. brown or white rock sugar crystals 4 cup water, boiled and cooled to 175° to 180°F Put the teal leaves or tea bags into a large teapot. Pack in the fresh mint, then add the rock sugar crystals. Add the water, stir gently, and cover the teapot. Steep the tea mixture for 2 minutes. Strain the brewed tea into Moroccan-style tea glasses or teacups and serve immediately. SERVES 2-4

1 c. oil 3 eggs 1 tsp. salt 1 tsp. baking powder 2 c. flour 1 tsp. vanilla 1 ½ c. sugar
1 cup sugar 1 Tbsp. ground ginger 2 tsp. ground cinnamon 1 tsp. ground cloves ½ cup water ½ cup dark corn syrup 1 cup (2 sticks) butter 4 cup all purpose flour 1 ½ tsp. baking soda ¼ tsp. salt Colored Icings
Mix all ingredients together. Add.
½ c. chopped nuts 3 medium apples, sliced thin Topping ½ c. sugar ¼ c. brown sugar ¼ c. butter Flour (about ¼ c.)
Mix together adding just enough flour to make crumbs. Add some chopped nuts. Pour the dough into a greased, floured tub pan. Put the crumbs on top. Bake 375° F for 50 minutes. Let cake cool thoroughly before removing from pan. make crumbs. Add some chopped nuts. Sprinkle crumb topping on prepared dough. Bake 375° F for 50 minutes. Let cake cool thoroughly before removing from pan.
Combine sugar, spices, water and corn syrup in a small saucepan. Bring to a boil, stirring constantly. Remove from heat and pour over butter in a large mixing bowl. Stir until butter melts. Cool to lukewarm. Combine flour, baking soda and salt and add to butter mixture. Mix well. Cover and refrigerate overnight. Preheat oven to 375 degrees. Roll dough on lightly floured surface to 1/8 inch thickness. Cut with floured gingerbread cutters. Bake on unbuttered cookie sheets until golden. (about 7 to 9 minutes). Remove cookies to wire rack; cool completely. Decorate with icing. Store in tightly covered containers. Yield: approx. 3 Doz. 6-inch cookies 6 Doz. 2-inch cookies

Ingredients For the crust: 9 whole graham crackers 1/2 stick unsalted butter, melted For the filling: 2 (8-ounce) packages cream cheese, at room temperature 1 cup granulated sugar 2 large eggs 1 large egg yolk 1 vanilla bean, split and scraped 1/2 tsp fine sea salt For the brulee topping: 1/4 cup granulated sugar
Cake ingredients 11/4 cups flour 1 cup sugar 1/3 cup unsweetened cocoa powder 1 tsp. baking soda 1/2 tsp salt 1 cup warm water 1 tsp vanilla 1/3 cup vegetable oil 1 tsp white/apple vinegar Chocolate Glaze 1/2 cup sugar 4 Tbsp margarine 2Tbsp milk 2 Tbsp cocoa powder 2 tsp vanilla
For the crust: Preheat the oven to 350°F. Line an 8-inch square baking dish with foil, leaving an overhang. In the bowl of a food processor, pulse the graham crackers until finely ground. Add the butter and pulse until moistened. Press into the bottom of the prepared pan. Bake until lightly browned and set, about 8 to 10 minutes. Let cool and reduce the oven temperature to 300°F. For the filling: Place the cream cheese in the bowl of a food processor and pulse until smooth (you can also use an electric mixer). Add the sugar, eggs, egg yolk, vanilla bean seeds, and salt and pulse until well combined and smooth. Pour the mixture into the prepared pan. Bake until the cheesecake is set but still slightly jiggly in the center, about 45 minutes. Do not overbake. Place the cheesecake on a cooling rack to cool completely in the pan. Cover and chill until firm, at least 2 hours. Using the foil overhang, transfer the cheesecake to a work surface and cut into squares. On a heat-safe work surface, sprinkle the tops of each square with sugar and torch the tops with a kitchen torch until it turns a deep amber color. Alternatively, use a broiler to brown the sugar. Refrigerate until ready to serve.
Mix all together and fill cupcake liner. Bake 350° for 15 minutes. Cool and drizzle with chocolate glaze.
Eggless Cut Out Cookies Provided by HowBill Auto
1 stick unsalted butter softened 1/2 cup sugar 1/2 tsp vanilla 3 Tbsp milk 1 1/2 cups flour 1/2 tsp salt 2 tsp baking powder
Preheat oven 350 degrees. Line cookie sheet with parchment. In a bowl mix the flour, salt and baking powder. Set aside. Cream the butter and sugar till light and fluffy. Beat in the vanilla and milk. Add the flour mixture to the creamed butter and fold till combined. Do not over mix or you will activate gluten toughening the cookies. Roll the dough out to desired thickness but not too thin. I roll out the dough between two pieces of parchment paper. And then place the rolled out dough in the refrigerator to chill before stamping the shape out. Place on baking sheet. Bake 8-10 min. Do not overbake. Let cool on the tray for 1-2 min till cool enough to handle. Transfer to wire rack to cool completely. Enjoy These made 24 cookies. But yield depends on the size cutter you use.
