Manicotti - Yield 12-14 • 12 ounces Mozzarella • Cheese shredded • 28 ounces Whole milk Ricotta Cheese • ¼ cup Heavy Cream • 2 Eggs • ½ cup each Grated Parmesan, Grated Romano Cheeses • 1 Tablespoon Parsley chopped • ¼ teaspoon Granulated garlic • ¼ teaspoon Black pepper • ½ teaspoon Salt • ¼ pound fresh spinach leaves cooked, moisture removed (Optional) • 6 cups of Homemade or store-bought Marinara Sauce

In a large bowl combine all the ingredients except crepes and Marinara Sauce. Stir until well mixed. Spread 1 cup of Marinara sauce in bottom of casserole dish

Fill each crepe with 2 – 3 ounces of filling and roll

Place stuffed crepes in dish close together and cover with sauce

Sprinkle with additional grated cheese and bake in a 375 oven for 15 - 20 minutes until bubbly

Crepe - Yield 12-14 • 1 ¼ cup All-purpose flour • 1 teaspoon Sugar • ¼ teaspoon Salt • 4 Eggs • 2 cups whole milk • 2 Tablespoons melted Butter

Sift together allpurpose flour, sugar, and salt. In a bowl beat eggs and milk together. Add dry ingredients and whisk until smooth. Heat a vegetable oil sprayed sauté or crepe pan. Swirl ¼ cup of batter in pan to coat evenly and brown on both sides. Stack on plate until needed.

Laurie learned from an early age the importance of caring about her clients’ wants and needs. Her mother, Marie Powell, was an influential and iconic realtor who believed that the focus of her business should be on serving others, a view that she passed down to her daughter. Now Laurie, like her mother before her, is here to serve: “My passion and my mission is to help people,” she declares. After Laurie had finished high school, she followed in her mother’s footsteps and went on to get her own real estate license. Not long after that, she purchased one branch of her mother’s company and turned it into two very successful branches. Along the way, Laurie also earned a BA in Business and Real Estate, expanding her knowledge of the industry. Later on, she went to manage for another company before actively getting back into the game as an agent.

Over the course of 48 years, armed with many notable achievements, such as serving as president for three realtor associations in the Bay-area, including West Pasco’s own Board of Realtors; earning prestigious awards like Realtor of the Year twice, Humanitarian of the Year for Florida Realtors and her recent 2020 RE/MAX Chairman Award; and being named by Real Trends as one of the state’s top agents; among many more aweinspiring achievements, Laurie still lives by the same timeless and foundational principles taught to her by her parents: “to always follow the Golden Rule” and to be truthful about everything she says.

When asked what the most important things were that she has learned in the real estate business, Laurie said that listening to her clients “is the most important thing.” And of course, as in the golden rule, “that you treat people the way you want to be treated.” Laurie is truly grateful for each

transaction she completes and each person she helps in her business. As a spiritual person, she acknowledges that, “If it wasn’t for the Lord, I wouldn’t be where I am…We’re really blessed.” For Laurie, it really is all about caring for her clients, and this important trait, paired with her go-getter attitude, her extensive knowledge of the market and area, along with her personal commitment to achieve her clients’ dreams, have people amazed.

Client Kova C. wrote about Laurie: “She has been in the area and been a real estate agent her whole life and it shows!!!! She is a true professional with a huge heart. She wants to help make your dreams come true of owning a home.” Kova, who used Laurie several times to either sell or buy, was impressed with the long-term realtor’s marketing techniques, and proudly went on to state, “I got top dollar for my townhouse!”

She compares the individually run branches to having more of “a mom and pop” feel than that of big corporate offices. “They really care about their agents and their staff,” she says. Since buying or selling in the real estate industry can be extremely stressful, Laurie wants her clients to know that she is there to help make the situation smoother. And buyers like Dan are impressed with the awardwinning realtor’s expertise and professionalism. After purchasing his Timber Greens home, he wrote, “Laurie’s local knowledge of the property and tireless efforts on our behalf made the entire purchase process painless.” In addition to her real estate expertise, part of Laurie’s local knowledge is knowing just who to call when needed. Whether it’s the broken air conditioner, some electrical issues, or a much-needed roof repair, Laurie has a “guy for everything!” to get you through the crisis. Dan took notice of this as well: “When the deal was done Laurie continued to be a important resource for us,” he said. “She had all the right contacts and professional service providers we needed to address the projects needed to turn the house we purchased into our home. We look forward to living in it for many years to come.”

Being prepared is key, for both sellers and buyers, and, considering that it is currently a sellers’ market, and houses go very quickly, Laurie recommends getting prequalified so that you are ready to go when the right home starts calling your name. The road to finding the right place for you starts with the simple but crucial question of, “What are you trying to achieve?” Laurie asks this of her clients, so she knows how to best assist them in accomplishing their goals. For some people, their dream space might not have even been constructed yet, which is why Laurie also partners with builders to create more market options.
