Holiday Menu Planning For First-Time Hosts Novice holiday hosts often have a lot on their plates. Whether hosting family or friends or a combination of both, first-time hosts typically want to impress their guests while ensuring they get enough to eat and have an enjoyable evening. Since dinner is such a big part of holiday gatherings, hosts often place extra emphasis on what to serve, and that can be tricky when this is the first time they are hosting. When planning the menu for your holiday soiree, consider the following tips: Get a head count. Though other factors will influence what to serve, the size of your guest list may ultimately dictate what to serve. For example, a small gathering of four to five people will likely rule out turkey, as even a small turkey will prove too much effort and produce too much extra food. On the same note, a small dish like lasagna might not be doable for a larger crowd, as it will force you to prepare multiple entrees, which means more time in the kitchen juggling the various cooking duties and less time with your guests. Once you have confirmed just how many guests you will be hosting, you can then choose a main course that suits the size of your guest list. Decide which type of party you want to host. The type of party you want to host also will influence what you serve. A formal gathering should include an appetizer, a main course and a dessert, including both caffeinated and decaffeinated coffees. A less formal gathering gives hosts more leeway. For example, whereas a formal gathering may include soup as an appetizer, hosting a less formal gathering allows hosts to put out some snacks or bread for guests to whet their appetites before everyone sits down for the meal. The more formal the gathering, the more formal the menu. Hosts of less formal gatherings may even want to host a holiday pot luck buffet, inviting guests to bring a favorite dish or

side dish while the hosts take care of the main course. Ask guests if they have any dietary restrictions. Upon being invited to a holiday dinner, some invitees may let hosts know if they have any food allergies or medical conditions that restrict which foods they can eat. Solicit such information from all of your guests, and do your best to cater to each of your guests’ needs. Some guests might be on a gluten-free diet while others may need to limit their sodium intake. You might not be able to meet everyone’s demands. Let guests know if they should bring an appropriate snack if you cannot provide one for them. Include traditional holiday fare. People have grown to expect certain things from holiday meals, be it sweet potatoes on Thanksgiving, brisket for Hanukkah or holiday cookies or even eggnog at Christmas parties. When planning the menu, be sure to include at least one of these traditional items, even asking guests for suggestions. Such fare will give the party a genuine holiday feel, and guests will appreciate seeing some items on your dinner table they have enjoyed at their own holiday celebrations over the years. Don’t overdo it. First-time hosts want to ensure everyone gets enough to eat, so it’s easy to overdo things and prepare too much food. This can be expensive, and guests may feel obligated to overeat so hosts don’t have to discard any of the food they worked so hard to prepare. Though it might once have been a holiday tradition to overeat, many men and women now prefer moderation, and hosts should keep that in mind when preparing their holiday meals. Hosting a holiday dinner for the first time can be nerve-wracking.But there are a variety of steps first-timers can take when preparing their menus to come off looking like old pros.

Holiday Wreath Ideas Wreaths are synonymous with the holiday season, and they can range from intricate to simple to flashy to rustic. Creating festive wreaths does not necessarily require a lot of skill, and wreaths can be fashioned from a variety of different materials. The first step to crafting wreaths is to gather the foundation pieces. This usually involves a sturdy material that will serve as the wreath round. It can be vine, foam, branches, or even wire. You’ll also need decorative items that fit the theme of your wreath. These may be berries, ornaments, ribbons, bows and other trinkets that will be attached to the wreath. Florist wire and tape can be used to attach the ornaments to the wreath.

Purchase a premade evergreen wreath or wrap boughs of pine around a wreath frame to make your own. Glue or tie on small wooden frames with photos of the family to the wreath. Fill in the barren spots with small bows and ornaments.

DIRECTIONS

Preheat oven to 350 F. In large bowl, with mixer on low speed, beat butter and sugar until blended. Increase speed to high; beat until light and creamy. On low speed, beat in egg and vanilla. Beat in flour, baking powder and salt until blended. Divide dough into 4 equal pieces; flatten each piece into a disk. Wrap each disk with plastic wrap and refrigerate 1 hour or until dough is firm enough to roll. (Or place dough in freezer 30 minutes.) On a lightly floured surface with a floured rolling pin, roll 1 piece of dough 1/8 inch thick. With floured 3-inch to 4-inch cookie cutters, cut dough into as many cookies as possible; wrap and refrigerate trimmings. Place cookies, 1 inch apart, on ungreased large cookie sheet.Bake cookies 10 to 12 minutes or until lightly browned. Transfer cookies to wire rack to cool. Repeat with remaining dough and trimmings. When cookies are cool, decorate with frosting if you like; use along with sugars and candies to decorate cookies. Set cookies aside to allow frosting to dry completely, about 1 hour. First, keep in mind that wrapping lights around the tree horizontally is more work and often doesn’t produce a multi-dimensional effect. Rather, string the lights from the trunk up to the top, working vertically. This is actually how the tree decorators at Rockefeller Center in New York City do the famous tree year after year. This method helps eliminate tangled wires and empty spots. Remember to plug in the strands of lights before you begin to check for burnt-out bulbs and to adjust the spacing of lights to prevent dark spots. Think about varying light bulb sizes to add more dimension. String an inner layer of small LED white lights to produce an inner glow on the tree before adding larger, colored lightson top to increase visual appeal. Visit Santa Without All The Tears The holiday season means it’s time once again for parents to take their youngsters to visit Santa Claus. Pictures with little boys and girls lining up in their dress clothes with Santa are a holiday tradition, and youngsters are often anxious for their chances to share their Christmas gift wishes with the jolly man in red.

Visit during off-peak hours. Weekends and evenings are the busiest times to visit Santa. This means long lines and longer wait times. Instead of dealing with the masses, try to get to the mall when the doors first open. Otherwise, let the children skip a day of school and visit during the week when the lines are shorter.

But as integral as such photo sessions are to the holiday season, parents know they are one crying fit or meltdown away from having this tradition turn into trouble. After waiting in long lines to see Santa, it’s understandable when everyone’s patience starts to wear thin. The combination of antsy children and aggravated adults could set off a chain reaction that culminates in tear-stained cheeks and a sullied holiday memory. Pictures with Santa can go much more smoothly when you employ the following tips.

Consider another venue. Many different places of business host events where kids can meet Santa. Families may be able to share a meal with Santa at a restaurant or visit him at a nursery while selecting Christmas trees. A different environment may be less intimidating to children and take the pressure off waiting in line in a busy mall.

Prep children. While kids may love the idea of Santa, youngsters face to face with a man in a red suit and a big, white beard may be nervous. Begin talking up Santa a few months before Christmas, mentioning how nice and friendly he is. Gauge how kids act around costumed performers at fairs, circuses and birthday parties and help them grow accustomed to people in costumes. If costumes elicit screams of horror, wait another year before seeing Santa.

Go well-fed. There’s little worse than waiting in line and doing so hungry. Hunger pangs can turn even the most placid child into a menace. Pack snacks to enjoy while waiting. Opt for items that will not stain lips and teeth or drip onto clothing. Make it a family photo. Sometimes the only way to entice a little one to take a picture with Santa is to provide some added security. Dress your best and be prepared to have to step in and cozy up to Santa to ensure your child is all smiles.

Buy directly from the retailer. It’s easy to be duped by a counterfeit gift card, which can be embarrassing for both the gift giver and its eventual recipient. Counterfeit gift cards are big business for criminals who prey on gift givers during the holiday season. Only buy gift cards directly from the retailer, as cards sold by other sources, such as an online auction site, may be stolen or counterfeit. You don’t want to be the person who gave a stolen or counterfeit card, and your friend or family member does not want to be subjected to an inquiry as to why he or she is attempting to use a stolen or counterfeit card. Examine the card before leaving the store. Once a cashier or customer service employee hands you a gift card, examine it for tampering before leaving the store. Some criminals gain access to gift cards, even those that appear to be behind lock and key, to learn the PIN number associated with the card. Once they have the PIN, recipients can then recreate their own card,

using the stolen PIN to activate and make purchases on their counterfeit cards long before the real card is sold to you. If you detect any damage, ask for a new card before leaving the store. Include a gift receipt with the card. When giving a gift card, don’t forget to include the gift receipt. The gift receipt not only verifies the value of the gift card, but also includes the date the card was purchased. That’s important information, as many companies begin to charge fees, some of which may be exorbitant, on unused cards after a predetermined period of time. Recipients who have the gift receipt won’t have to haggle with retailers about the value of the card should that ever be in dispute, and the receipt also can serve as a reminder that the recipient needs to use the card before a given date to avoid fees. Consider a general purpose gift card. If that stickler on your holiday shopping list is especially difficult to shop for, then you might want to consider a general purpose gift card issued by a company such as American Express, MasterCard or Visa. These cards generally allow recipients to use their gift wherever they choose, whether it’s to put gas in their tank or buy groceries. That versatility is valuable if you truly have no idea what your friend or family member needs or where he or she likes to shop. One notable disadvantage to general purpose gift cards is that they tend to come with more fees than more traditional gift cards purchased directly from specific retailers. Investigate these fees and find a card that charges no fees or only minimal fees.

Creative Ways To Celebrate Hanukkah Many jokes have been shared about the complexity of growing up Jewish surrounded by Christian friends and the overwhelming influence of Christmas come the month of December. Seemingly everywhere you look, buildings, stores and homes are decked out in lights and decorations. But Christmas celebrants are not the only ones with reason to be festive this time of year, when Hanukkah is also cause for celebration. Perhaps due to its proximity to Thanksgiving and Christmas, Hanukkah tends to be the most widely celebrated Jewish holiday in America. Even though it is officially listed as a minor holiday, Hanukkah is important to families across the globe. In fact, because the basis of Hanukkah is rededication to the faith, it very well may be an instrumental celebration for families who may need to find their way back to the roots of their beliefs. Hanukkah celebrations may not feature lavishly decorated trees or scores of celebrants belting out carols, but it bears significance for the thousands of people who celebrate each year. While Hanukkah is steeped in tradition, the following are a handful of ways you can add a creative spin to your family’s festivities this year. Light: One of the major tenets of Hanukkah is how light can shine and lead a person through dark periods. This is typically exemplified by the lighting of the menorah, which is prominently placed in windows or other visible areas of celebrants’ homes. This Hanukkah, spend time with someone who may be dealing with an illness or the loss of a loved one. You may be the light that inspires this person each day. Give candles to friends and family members to symbolize the light that will shine in the future.

Oil: Another component of Hanukkah celebrations is the focus on how a one-day supply of oil somehow lasted eight days during the rededication of the temple’s menorah. Many ways to include oil in celebrations exist. Some people like to get creative in the kitchen, serving fried foods and desserts. Think about giving gifts of oil, such as fragrant essential oils that can be used in potpourri or in the bath or shower. Working alongside their parents, children can see how a wick drenched in oil can serve as an efficient lighting source and decorate the home with these homemade oil lamps. Twenty-Five: Bring attention to the number 25, which is significant when celebrating Hanukkah. The word Hanukkah can be divided into two: Chanu, meaning “they rested,” and Kah, which is the numerical value of 25. On the 25th day of the Hebrew month of Kislev, the Maccabees rested from their battle with the Greeks and triumphantly marched into the Holy Temple in Jerusalem. Make 25 a part of celebrations by inviting 25 people to celebrate with you, or ask children to make murals with 25 different adornments. Charitable Giving: Gift-giving is now a component of Hanukkah celebration, but it wasn’t always. Greater importance was once placed on the lighting of candles to publicize the miracle and evangelize the faith. Some poor people could not afford candles, and these people would go doorto-door for candle funds, or “gelt,” to be able to purchase candles and kiddush wine. Some Jewish families prefer to give money rather than gifts on Hanukkah to keep with the tradition of Hanukkah gelt. However, families also can incorporate charitable giving in their celebrations as a way to reinforce the customs of giving to the poor.

Gift Wrapping Tips & Tricks To Save Time Holiday shopping may be done, but that enormous pile of presents still needs to be wrapped. People have varying degrees of ability with regard to wrapping gifts. Some excel at those creased corners and perfect bows, while others are less adept at wrapping. The task of wrapping gifts may not be something to look forward to, but wrapping gifts is an essential element of the holiday season. Fortunately, there are a few tricks of the trade wrappers can lean on to make the process of wrapping gifts go as quickly and as smoothly as possible: • Stock up on double-sided tape. Wrapping with double-sided tape helps you avoid unsightly tape lines and creates a neat finished product. • Use a toilet paper tube to preserve wrapping

paper rolls and keep them from unravelling. Simply cut the tube lengthwise and snap it over the open roll of paper to serve as a handy clip to keep the paper tidy. • When you lose the edge of the tape on a roll, it can take precious time trying to find it again and then lift a piece of tape off the roll. Use a plastic bread clip to hold the place of the edge of the tape to prevent this from happening. • Turn snack containers into handy gift wrap options. Empty potato chip cannisters can be wrapped and used to hold other food gifts or smaller stocking stuffers. Turn a foillined chip or popcorn bag inside out, first cleaning away any grease and crumbs, and use the bag to wrap a gift and tie off the end with a decorative ribbon. • Wooden spoons or popsicle sticks can

Many studios now release big-budget films on December 25th, and audiences have recently flocked to the theaters to see some of their favorite stars in films that opened on Christmas Day or shortly before. According to Box Office Mojo, an online movie publication and box office reporting service, no film has fared better on Christmas Day than Sherlock Holmes, which premiered on December 25th, 2009, earning just under $25 million in its initial day onscreen. The ancient Romans also believed that holly prickles drove away evil spirits, and it held a place of honor at December festivals dedicated to the god Saturn. To avoid persecution during the Roman pagan Saturnalia festival, early Christians would participate in the tradition of hanging evil-repelling holly on their homes to appear like the masses. Eventually as the number of Christians grew, the tradition became less of a pagan one and more associated with Christians and Christmas. Some people have inferred that holly and its prickly edges is symbolic of the crown of thorns Jesus wore at his crucifixion, with the red berries representing blood.

As exemplified by this holiday hit by Henry Sanicola, Frank Sinatra and Dok Stanford, holly and mistletoe are an integral part of holiday imagery and tradition. Holly is used to adorn a home in green and red finery alongside evergreen boughs and wreaths. In addition, it has become customary to hang a bouquet of mistletoe under which people are encouraged to share a holiday kiss. While these elements of celebrations are now incorporated into many of the secular and religious components of Christmas, they have very different origins.

Make Your Own Holiday Ornaments Holiday decorating is a big part of the holiday season. Bins are taken out of the attic or garage, and decorations are once again given their opportunity to shine for several weeks before being packed away again. Among the many decorations families use to deck the halls are ornaments that were made by hand. This year, creating homemade ornaments can be a crafty project that helps families make new holiday memories. Christmas tree ornaments come in all shapes and sizes and often tell the stories of holiday traditions. There are several different ways to create personalized, do-it-yourself ornaments and leave the cheap, easily broken ornaments from the dollar stores behind:

Photo Ornaments

Fun photo ornaments showcase how a family has changed and grown over the years. Experiment with different ways to create these ornaments. You can glue a photo to a ceramic ornament and cover

it with decoupage glaze to set it permanently. Try purchasing clear, glass ornaments, then remove the top of the ornament, which is usually spring-loaded, before slipping a photo inside and replacing the top. You also can laminate a photo, punch a hole in the top and affix a ribbon.

Ceramic Ornaments

The popularity of paint-it-yourself pottery has led to an increase in ceramic and crafts shops across the country. During the holiday season such shops offer many holiday items that can be painted. Often the store will then fire the pieces after they are painted so that they are shiny and hardened for display. Those who want to do their painting at home can visit their local craft or hobby shop, where typically there are unfinished ceramic ornaments that can be painted with acrylic paints found right in the next aisle. A finishing coat of clear glaze will help protect the ornaments from year to year.

Wood Crafts

Many of today’s craft centers have expanded to include sections devoted to unfinished wood items. Everything from letters to animal cutouts to boxes and rocking horses can be purchased and finished. Turn keepsake boxes into painted and ribbon-adorned gift boxes. Stain a treasure chest that can be used to store reindeer snacks for Santa’s crew. Turn small decorative pieces into ornaments for the tree. Paint and affix wood initials onto stocking holders to identify to whom each stocking belongs. Crafty individuals also can turn plain wood plaques into signs with clever sayings, such as “Park your sleigh here.”

Scavenge Around The House

Young children can use any medium for making ornaments. Garlands made of macaroni or popcorn are traditional. Fabric scraps can be sewn and stuffed with potpourri for homemade scent satchels. Hand-drawn pictures can be made and laminated and hung on the tree. The only obstacle with regard to DIY ornaments is a limited imagination. Homemade items can add whimsy and a personal touch to the holiday season.

Poinsettia Plant Care Basics Although poinsettias are most often associated with the holiday season, they are actually tropical plants. In spite of their origins, poinsettias can thrive during the holiday season and even last long after the holidays have come and gone. Poinsettias are native to Mexico and Central America. Aztecs called the plant cuetlaxochitl. The flowering plant was first introduced to the United States by Joel Poinsett, the U.S. ambassador to Mexico, and was subsequently renamed the poinsettia. The flowers of the poinsettia are actually the yellow blooms at the middle of the bright red or white bracts that form on the plant. Perhaps due to the bright red of the bracts, the plant quickly became a popular Christmas plant. It’s important to note that poinsettias grow in a warm climate and therefore must be kept in tropical conditions to ensure the plant’s health. Furthermore, poinsettias bloom in response to shortening daylight hours. That means they will need ample darkness each night in order to simulate the dark nights of short, winter days. To achieve this, you may need to put the plant into a dark closet for 12 to 14 hours each night. During the day, the plant should be in a sunny window where it will have access to bright light. The more light the better. Keep the soil

While many poinsettia plants are discarded after the holiday season, these plants can actually be cut back and saved for next season. Trimming back any remaining leaves and continuing to care for the plant by keeping it moist can help. To force the blooms next season, start reducing the plant’s exposure to sunlight in mid-September to October. Again, this will mean removing the plant to an area that is shrouded in complete darkness. Even streetlights or indoor lighting can affect blooming. If the plant does not begin to turn color before the holiday season, you may need to purchase a new plant and try again next year.

Also, fill the overflow saucer on your flower pot with gravel to allow water seeping through the pot to evaporate from the gravel. Hot temperatures indoors combined with high humidity will help the plant to thrive. Even one day without adequate moisture can cause the leaves to drop. Furthermore, decreasing temperatures can cause leaves to fall off. The goal is to keep the indoor temperature consistent.

Did You Know? The first Christmas tree at Rockefeller Center was erected in 1931, two years before the opening of Rockefeller Plaza, where the tree now draws thousands of tourists each year. The tradition began when construction workers hard at work on building Rockefeller Center decorated a roughly 20-foot tall balsam fir tree on Christmas Eve in 1931. Strings of cranberries and tin cans were among the items used to decorate the tree.

The tradition of the Rockefeller Center tree continues to evolve to this day, but the evergreen it is no longer lit with incandescent light bulbs. LED bulbs that consumea fraction of the energy of traditional bulbs are the bulbs of choice now. In addition, in 2007 Rockefeller Center partnered with Habitat for Humanity, who used the tree after it was taken down to furnish lumber for home construction.

1 (12oz) can evaporated milk 1 (14oz) can sweetened condensed milk 1 (15oz) can coconut cream (Coco Lopez or Goya) 3 cups rum (light or dark) 2 teaspoons vanilla extract 1 teaspoon ground cinnamon 2 cinnamon sticks 1 vanilla bean, split in half lengthwise (optional)

DIRECTIONS:

Combine evaporated milk, condensed milk and coconut cream in a large blender and blend until well combined. Add the rum, vanilla and ground cinnamon, and blend in. You can do this in batches if necessary. When finished, pour into a pitcher or glass bottles with sealed lids, and drop in the cinnamon sticks and vanilla bean halves. Cover and chill in refrigerator until very cold. Mix vigorously before serving. Serve straight in small glasses, garnished; or on the rocks in larger ones. Garnish with a sprinkle of cinnamon and a cinnamon stick. You can even top it with a dollop of whipped cream. Leftovers will keep tightly sealed in the refrigerator for about one week.
