A New Mix In The Kitchen A perfect recipe of traditional, modern and transitional styles makes this kitchen as elegant as it is functional. The table does double duty as a work surface and a place to gather. Countertops invite collaboration — with the cook and with others seated nearby.

“MY KITCHEN IS MORE OF A SOCIAL GATHERING SPACE for company than my living room is,” observes chef and restaurateur Todd English about his own kitchen. English, one of the most decorated, respected and charismatic chefs in the world, shares his views on entertaining, cooking and what makes his own kitchen the hub of his home with Coldwell Banker Previews in “Luxury From The Inside Out.” Each issue of “Luxury From The Inside Out,” Coldwell Banker Previews’ new online e-zine, brings an insider’s perspective on the latest in residential design through intimate conversations with icons such as English, one of the visionaries shaping and redefining luxury as we know it. Even those of us who are not master chefs would agree with English; the kitchen has become the new living room. The transition has been decades in the making, but it began when Julia Child lit the spark for America’s love affair with cooking, setting the kitchen revolution on simmer as early as the 1970s. The wall between the family room and the kitchen crumbled, eventually leading to the great room/kitchen combo. Today, the kitchen easily eclipses the great room as the one place where everyone gathers. “Probably the No. 1 trend in America is the kitchen as the center of the home. The kitchen is about lifestyle, not about

the color or style of a cabinet door,” says Marcia Steer, director of development for SieMatic U.S.A. “The kitchen as the living room changes what people feel comfortable having around them,” explains Richard Landon, a certified master kitchen and bath designer (CMKBD) and owner of an eponymous Seattle design firm. “They don’t want to feel they are sitting in an appliance showroom.” Increasingly, some of those appliances are finding a home in an expanded pantry, which becomes, in essence, a kitchen behind the kitchen. In one recent design, Landon outfitted this area with a dishwasher, sink and double ovens, while the actual kitchen had dishwasher drawers for family dishes, a large cooktop and a steam oven. Other kitchens may use the

pantry as a cleanup area and include storage for china and serving pieces. Landon characterizes this trend as the “re-emergence of the scullery.” Historically, the scullery was the place where prepared game was brought into the house, but with the same level of finish as the main kitchen there is nothing second-best about the scullery today. “The old concept of the classic work triangle is long, long gone,” says Sigrid McCandless, CMKBD and owner of Avonbridge Interiors in Toronto, Canada. Rather, focused areas for specific activities such as cooking, cleaning, food prep and entertaining are distributed throughout the space. Even if the home has a formal dining room, most clients want a place to put food out in the kitchen.

Q. What are the keys to hosting a party? A. You don’t want to spend the whole night in the kitchen so make sure you have some foods that can be prepared in advance as well as left out—a fondue is always a good option. Have fun with the food and don’t be afraid to mix it up and put your own spin on dishes—I like to make an artichoke guacamole instead of using avocados. Most importantly always keep the drinks flowing—champagne cocktails are a

good fit to glam it up for the occasion. Q. How can you transform your home to entertain in style? What are the essentials? A. Good lighting really makes all the difference in turning any home into an enticing space for entertaining. Everyone looks great in candlelight, so lots of votive candles make any room look amazing. Fresh flowers can really help with the festive factor, as can bold splashes of color.

Mixing It Up What was once solely the domain of “the cook” has also become the most exciting room in the home. Frequently, says Landon, clients call for walls to be open for artwork or windows. “Typically, every kitchen needs to have a signature piece whether it’s a piece of art or something we create out of cabinetry, or it could be lighting,” says Steer. Banks of highly embellished cabinetry with the “musthave” granite countertop have given way to a refined sophisticated palette of finishes and materials. “What people want today is a transitional feeling,” pared down and less fussy, observes Marcia Fried, CMKBD, with Kitchens by Deane in Stamford, Conn. The overall effect is anything but boring, often mixing

Q. How has your kitchen evolved? A. Definitely high top and counter seating is a big part of the way we eat and entertain today—both in my home and my restaurants. My food hall at the Plaza Hotel in NYC is actually all counter seating and high top communal tables and it’s great because it’s comfortable, casual and social, plus they get to see and be a part of the action. It’s the same

symmetry with asymmetry; modern with traditional; gloss or matte velvet lacquers, polished metals and flamed or honed stone. “There is more experimentation with complex scaling of shapes, pattern, texture and color,” says Landon. Curves and ovals are making their way back into kitchens with gentle curves in islands and peninsulas or perhaps a round table slid into an arc carved into an island. Seating today invites interaction with others as well as with the cook. The dining room — even formal dining — may continue to occupy its own space, but now is almost certainly connected visually with the kitchen area. Wood continues to make a comeback, especially for islands and countertops. Warm and inviting, it is also “much

I have always believed that we eat with our eyes, and that presentation is just as important as taste. The restaurant experience is the same way. I wanted people to get a peek at all the magic and processes happening behind

How does opening up the kitchen impact the dynamic and the mood of the room in your restaurants? A. In addition to exotic species, there is also interest in some of the more rustic woods such as hickory as well as finer woods such as mahogany and walnut, according to Fried. Convenience, performance and value are also important to today’s savvy consumers. It’s no surprise that the one trend every designer seems to cite is greater acceptance and use of processed stones such as quartz. Todd English emphasizes the importance of lighting, especially for entertaining, and lighting all over the home is getting greater scrutiny today. “The designer usually drives the lighting, since most clients really don’t know much about it. It’s up to the designer to introduce LED lighting and educate

The experience is so interactive, and it makes for a really exciting dining experience. Q. How can you achieve the same type of dynamic when entertaining at home? A. When I entertain at home I love to have people in the kitchen while I’m

If the house were a meal, the kitchen would be the main course, so it’s a place to invest wisely. “It should function and be just as pretty 20 years from now as it is today. You’ve got to use classic materials, incredible quality and then you do it once,” Steer shares. The Tuscan design, which strongly resembles a castle, was inspired by some of Leight’s favorite properties in Europe, but has a state-of-the-art media room and is a completely computerized smart home. The entire structure, inside and out, is sheathed in French limestone once used as cobblestones in streets, reports Leight. Coldwell Banker Residential Brokerage’s Sally Forster Jones, who lists the property, insists, “With its award-winning vineyard, romantic Tuscan design and sensational views, there is nothing on the market in Southern California that rivals Rocky Oaks Estate.” Leight always imagined the villa would be ideal for a showy celebrity, noting, “Everybody will know where you are, yet it’s very private.” The property is offered at $49 million, which is exclusive even by Malibu standards. “I see a lot of spectacular properties up and down the coast, but this is clearly one of the most impressive,” Forster Jones says. “The legacy of Rocky Oaks Estate will endure as an irreplaceable landmark and incomparable treasure.” “It’s hard to pick a favorite room in a house like this,” says Leight, but admits to loving the grand room, whose ceilings rise more than 30 feet. The result is an airy space that vaguely feels like a Tuscan village courtyard, complete with three wrought-iron balconies overlooking the scene from above.

Her travels certainly have inspired her eclectic taste in décor, but they also have had a strong influence on her family values. “The European flavor creates an ambiance [of] being at home — with your family, with guests, whatever the case may be. Betty Graham is ready to take on the world. Graham, previously the president and COO for Coldwell Banker Residential Brokerage in Greater Los Angeles, in March was named the president of the Coldwell Banker Previews International division for NRT. In this new role, Graham will oversee the drive to increase visibility of Coldwell Banker Previews International’s luxury marketing program, which represents many of the world’s most prestigious real estate on the market today. “I THINK EXCEPTIONAL PROPERTIES SHOULD BE MARKETED EXCEPTIONALLY,” says Graham, who in April began her 36th year in the real estate business. Coldwell Banker Residential Brokerage in Greater Los Angeles, for which Graham oversaw 33 sales offices and more than 2,300 sales associates, is the market leader in Southern California. Graham was born in Alabama and later moved to Missouri, where she worked on the family’s cotton farm. When she was 15, the family moved to California and Graham settled in the Los Angeles area to go to school and study photojournalism. She got a job at CBS and at the age of 18 was hired as Johnny Carson’s personal assistant. Two decades later, she began a career in real estate, where her Hollywood connections were invaluable. “I was made for it,” says Graham. “I was so excited when I started that I couldn’t sleep the first several months. I was wired; it was so much fun. Johnny was a very selective and loyal person. To have a longstanding relationship with him was a great honor for me and he was instrumental with my springboarding into the field.” Graham recently spoke with Homes & Estates about her new position and her blueprint for success. H&E: Congratulations on the new position. How do you view your responsibilities in this role? BG: I’m excited! I simply want to shine a brighter light on our Previews accomplishments, and drive greater focus to the luxury division while we steer our marketing to the right eyes. An increasing number of our buyers are coming internationally, from Russia, the Middle East, Europe and Asia. What’s clear is that it doesn’t matter if it’s a beautiful apartment on the Il Saint-Louis in Paris or if it’s a showplace in Honolulu with views of Diamond Head, we have an incredible collection of beautiful properties. These properties deserve to have exceptional marketing and exceptional presentation. H&E: What is the key to accomplishing that goal? BG: People always ask how we have such success in LA. They want to have the formula. The formula is having smart, caring agents with deep relationships engaged in the same goal, which is to do the right thing, be professional, and be the most informed. An agent must be really truly equipped to handle the high-end buyer and the high-end seller. It doesn’t just happen without attention, wisdom and sensitivity to their needs.

Laurent Demeure, president and CEO of Coldwell Banker France and Monaco, reports that even a crisis of epic proportions barely slowed the Paris luxury real estate market, which he defines as starting at 1 million euros [approximately $1.35 million]. After a scant 5 percent retreat during the depths of the housing crisis, Demeure indicates that prices rebounded a remarkable 20 percent in 2010. He explains that France suffers a chronic shortage of housing in general; despite the government’s goal of adding 500,000 housing units annually, only 300,000 are being built. Lack of inventory is even more pronounced in the luxury market, particularly in the virtually built-out City of Light, where there is simply not enough product
