This week... From the editor A couple of stories to warm your heart on these cold winter days this week. I was able to attend Knights training last week to see participants in Guide Dogs NSW/ACT’s Mobility Adventures program learning some of the basic skills of rugby league such as kicking, catching and passing. It’s a very important program teaching vision-impaired people the skills to allow them to move about the community with relative ease. Just think about all those things most of us take for granted like crossing the road or catching public transport. It was great to see the joy on the kids’ faces as they met their heroes and full credit to entire the Knights first grade squad for taking the time to high-five and chat to the youngsters. We also meet young James Kosy from Merewether who suffered a dislocated hip in a seemingly innocuous rugby tackle last year and has overlooked his own pain to think about those who may never recover from their injuries by organising a three-kilometre charity walk on his crutches. In our My Favourite Things section, we chat to current Newcastle Young Citizen of the Year, Kirk Upton who is achieving great things in the field of mental health care.

Knights lend a hand to teach key life skills Participants in Guide Dogs Mobility Adventures Program given a few pointers from their heroes hey may not be having the greatest on the field in 2015, but the Newcastle Knights’ commitment to the community remains strong, as evidenced by a visit to training by vision-impaired children. Seven young participants from Guide Dogs NSW/ACT’s Mobility Adventures Program were taught kicking, passing and catching skills by Knights’ players Jack Stockwell and James Taylor, who wore low-vision simulators to experience the challenges of vision-impairment. The Mobility Adventures Program is supported by the nib foundation and has been specifically developed for children and teenagers who are blind or vision-impaired. In 2014, Guide Dogs NSW/ACT assisted 447 children. Services are provided free of charge and the organisation continues to rely on the support of the Hunter community. It allows participants the opportunity to improve their physical ability, self-planning and social skills in a supportive group environment. Guide Dogs NSW/ACT’s Nathan Burford told Newcastle Weekly the rugby league skills session was just one of a number of activities planned for the day. “We do some exploring around the city. We’ll catch a bus, we go over to Hunter Stadium and help them negotiate around the venue,”
Mr Burford said. “Guide Dogs orientation and mobility instructors can work with the children in their school but we mostly work with them out in the community”. Mr Burford pointed out that, despite the name of his organisation, the services offered went far beyond assisting people in using guide dogs. “We provide orientation and mobility programs to people of all ages so they can travel as independently as possible anywhere they want to go. “A guide dog isn’t appropriate for everyone and certainly for children, they aren’t eligible for a guide dog until they are adults. “So our training for the children includes things like how to cross the road safely – where it’s age-appropriate, as well as being able to orientate around their school safely. “They might also learn how to use a mobility cane and we also help them to use the GPS on an iPhone. “Guide Dogs NSW/ACT relies on a lot of support from donations and the generosity of people leaving money in their wills, sponsoring puppies and buying merchandise online or over the phone and we’re very grateful for that support. nib foundation Executive Officer, Amy
Tribe said it was pleasing to see the athletes and children brought together by nib’s major sponsorship of the Newcastle Knights and nib foundation’s support of the mobility program. “It is a wonderful opportunity, not only for the kids to increase their participation in sport but to do so alongside some of the stars of the Newcastle Knights,” Mrs Tribe said. Regional Manager for Guide Dogs NSW/ ACT said the visit not only provided a unique experience for the children but for the players, an insight into the difficulties those with vision impairment face every day. Finding the silver lining s 11-year-old James Kosy sat in a wheelchair last year after suffering a dislocated hip in a rugby match, his thoughts turned to those whose recovery from injuries are far longer than his own. James spent three months in the wheelchair after the injury last August and, while the pain has now gone, is still under medical instruction to use crutches. Those crutches will be put to good use on Saturday, July 18 when James, accompanied by younger sister Katie, will complete a threekilometre walk around the athletics track at Hunter Sports Centre, Glendale to raise money for the McGrath Foundation to be put towards breast cancer support and education. “I was doing a raffle at work for the Salvation Army about a month ago and I mentioned it to the kids,” James’s mother Julie told Newcastle Weekly. “James said he really wanted to do something on his crutches. “He’s a mad cricketer – loves playing it, going to matches and watching on TV, so we thought of the

McGrath Foundation. “His surgeon approved the walk and then we were offered the use of the track. “The three kilometres is seven and a half laps of the track and the end of each lap, they will both be given a pink helium balloon to release. James and Katie have also invited their friends to join them for the last lap.” The Kosys are hoping the charity walk will be one of the last outings in which James will be required to use the crutches. “On July 30 we go back for another MRI and, all being well, he’ll be off the crutches,” Mrs Kosy said. Despite his year of pain, James is already eyeing off a return to the rugby field, but Mrs Kosy is yet to be convinced. “I’d love to go back,” James said. “I don’t want him to go back. Early blitz stuns Knights in Canberra he Knights are back in town this weekend desperately searching for the confidence that saw them win their opening four matches of the season. The Knights play the Gold
Coast Titans on Saturday evening following the 36-22 loss to the Canberra Raiders last Friday night in which Newcastle found themselves behind 24-0 after 25 minutes.
On statistics alone, the Knights’ performance was quite acceptable – an 85% completion rate, five linebreaks to Canberra’s three and only 16 missed tackles compared to the Raiders’ 41. But it was the clinical way the Raiders made full use of each of their chances that had the visitors scrambling to catch up. The strong defence which served the side well early in the season has also fallen away of late, with 154 points being conceded in the past four matches at an average of 38 a game. “We’re down on confidence, we’re struggling to know how to win a game at the moment,” Knights coach Rick Stone said. “The way we’ve started the last couple of games doesn’t give you confidence, that’s for sure,” he said. “I know injuries have had a little bit to do with where we’ve been at
some stages during the year - and we’ve still got a few players out, but every team’s got a few players out when you get to this stage of the season.” Beau Scott will return for the Knights after serving a one-game suspension incurred in the State of Origin decider. Earlier, the Knights’ under 20s side were defeated 24-18 by the Raiders after leading 14-4 at halftime. Saturday’s NRL match against the Titans gets underway at 5.30pm with the under 20s match beforehand at 3.15pm. The NSW team had a bye last weekend and will play the Wyong Roos (feeder team to the Sydney Roosters) at No.2 Sportsground on Sunday afternoon at 3pm. - Paul Monforte

Footy Facilities Fund The NSW Footy Facilities Fund is now open for applications until August 12. The program is a joint initiative of the National Rugby League and the NSW Government, and offers funding for projects throughout NSW. Cessnock open burning policy To promote a more consistent approach to open burning, Cessnock City Council is currently seeking community views on a draft policy on control of open burning (dead and dry vegetative material). The Protection of the Environment Operations (Clear Air) Regulation 2010 provides Council with the option to develop a policy identifying which fires can be granted approval and which fires are prohibited. The draft policy is on public exhibition until Wednesday, July 29. community to contribute to the sustainable future of our landscape,” he said. Flood alerts for Wallsend Newcastle City Council is introducing a trial Flash Flood Alert Service (FFAS) for residents in the vicinity of the Ironbark Creek floodplain, particularly Wallsend and Elermore Vale. The FFAS trial will be focussed on the Wallsend business district and will run for a period of 12 months, from July 2015 to June 2016. To register, complete the online early warning registration form, available from
www.newcastle.nsw.gov.au and receive free flash flood alerts for the Wallsend district. Registered participants may be contacted to provide flood advice and help evaluate the service provided. Following the trial, there may be a cost for the service if the FFAS continues. Council has engaged Early Warning Network (EWN) to trial the free flash flood alert service for the middle and lower reaches of Ironbark Creek, Wallsend.

ejuvenated by a recent holiday with his family, Australian country music superstar Troy Cassar-Daley is preparing to visit the Hunter as part of a multi-state tour consisting of 19 gigs across NSW, ACT, Queensland and Western Australia. Freedom Ride is Cassar-Daley’s ninth studio album and also features the talents of Paul Kelly and Peter Denahy. “I’m really looking forward to getting back down your way, the gigs we do through the Hunter have always been fantastic,” Cassar-Daley told Newcastle Weekly. “My fondest memory was of the Belmont 16-footers crowd. Between working on the It Takes Two show and touring I was so tired by the time I got to the gig, they just basically lifted me, they redeemed me, I felt like I was on a fresh start.
“I remember I was coming out of the studio at Channel Seven in Melbourne and (The Screaming Jets lead singer) Dave Gleeson said: “Mate, the old Belmont 16-footers will take care of you.” Peter Denahy who is opening the show and performing alongside Cassar-Daley is a fantastic solo artist in his own right, having co-written three songs on the new album including: This Old Hat, Another Australian Day and Something About Trains.

time out - meet the artist THE SEVEN PAINTERS When did you first know you wanted to be a professional artists? The usual answer - since we were children. But in more recent history Newcastle’s The Seven Painters have been going for 15 years. Most of us met at TAFE doing a fine art diploma. Since then we’ve been part of Newcastle Community Arts Centre (NCAC) and that that has been a blessing. For the last fifteen years NCAC has become almost a second home for us and without NCAC we would have a lot of difficulty finding somewhere to meet and exchange ideas and to critique each other’s work. NCAC has enabled us to grow both as individual artists and as a group. Describe your work. Each of the Seven Painters approach their art differently. Some of us are realists but most of us are verging toward an expressionist representation of the landscape - be it with oils paints, acrylics or collage. What inspires you? Many of the great painters - international and Australian. Many of the local artists resident in the NCAC.
But the most inspiration comes from the joy of learning - learning to not only make better works, but in learning to communicate the substance of what we are painting so that another human being, viewing the work, can take away some of that substance and use it to enrich their lives. What has been your greatest achievement? Starting the Seven Painters group and staying together for such a long time. We all have other jobs but that hasn’t stopped us making art the main driving force in our lives. This will be our 12th show together. We are lucky enough to have an enthusiastic following of art lovers and this has also been a great encouragement. What would be your advice for budding artists? Never give up making art. If you do then you didn’t have enough passion to start with. And remember, your work is good. If people don’t like it it’s just because they have no taste. ‘The First Fifteen’ celebrating 15 years painting together by The Seven Painters is currently on exhibition at Newcastle Art Space until July 26, newcastleartspace.blogspot.com.au

HEALTHY AND EXTREMELY DELICIOUS Kate Bradley made this cake first for her brother’s birthday. Because he is an ironman and all about health and fitness, she knew she couldn’t make him a normal birthday cake. It had to be healthy, and it had to contain two of his favourite things – coffee and chocolate. This was the result, and it’s the perfect cake for a celebration! This is an edited extract from Kenkò Kitchen by Kate Bradley, published by Hardie Grant, RRP $40.
CHOCOLATE, MOCHA AND COFFEE LAYER CAKE SERVES 6 INGREDIENTS

For the coffee layer, mix the espresso, stevia, buckwheat flour and brown rice flour into the second bowl and then pour into another greased cake tin. For the chocolate layer, mix the cacao into the third bowl and pour into another cake tin. Bake the cakes in the oven for 30 minutes or until a skewer comes out clean. Alternatively, if you only have one cake tin, you just repeat the process 3 times until you have cooked each cake. Let the cakes cool completely then remove from the tins.

240 g (8½ oz/1½ cups) brown rice flour
80 ml (2½ fl oz/⅓ cup) espresso or cold brew coffee
100 g (3½ oz/1 cup) ground almonds
1 tablespoon stevia
1 teaspoon bicarbonate of soda (baking soda)
To make the cake base, mix all the ingredients in an electric mixer until combined. Divide the batter into 3 separate bowls. For the mocha layer, mix the espresso and cacao into the mixture in one of the bowls then pour the mixture into a greased 18.5 cm (7¼ in) cake tin.

METHOD
Preheat the oven to 180°C (350°F).

1 tablespoon cacao powder To create the filling, mix the avocado, banana, cacao and stevia and beat with an electric mixer until light and fluffy. Place the coffee layer cake on a plate and spread the top with the avocado mousse filling. Next, top with the mocha cake, and spread over more mousse, and finally add the chocolate layer on top. To make the icing, mix all the ingredients, except the cacao, and beat with an electric mixer until combined. Halve the mixture and stir the cacao into one half. Spread the mixtures onto the cake, a little bit of each at a time (I use a cheese knife), swirling occasionally until the cake is fully coated. Place in the refrigerator until you’re ready to serve.

COLLABORATION ON HEALTH STAR RATING SYSTEM he federal government has awarded the National Heart Foundation a key role in monitoring the implementation of the new Health Star Rating system. The Health Star Rating system is a voluntary front-of-pack labelling scheme developed by the Australian, state and territory governments. Working in collaboration with industry, public health and consumer groups this system provides consumers with a simple way to make an informed choice about their food purchases. National Heart Foundation CEO, Mary Barry, said the Heart Foundation would be responsible for monitoring the uptake of the system by manufacturers and retailers. “We will be measuring consumer awareness of the system and reporting on changes
to the food supply over time,” Ms Barry said. “The Heart Foundation is leading a team, together with CSIRO and Deakin University to conduct this project.” The Health Star Rating system provides a rating of the overall nutritional profile of a given food through use of a ½ a star to 5 stars rating system.
