his issue’s front cover features Central Foods who are one of our leading trading partners and a key supplier of frozen foods to the wider foodservice sector. They great friends of, and regular contributors to Fast Food Professional magazine. Congratualtions also to the Cod’s Scallops of Wollaton in Nottinghamshire who were named as the Best Fish and Chip Shop in the UK at a fabulous ceremony at London’s Royal Lancaster Hotel. The Awards grow year on year with 15 other varied categories and winners being presented with their trophies. The event was attended by around 600 guests and was hosted superbly by Michelin star winning chef, Mark Sarjeant, who is closely connected to our sector with his Smokehouse Fish and Chip Restaurant in Folkestone. Inge Halstensen, the owner of the superb Norwegian fishing vessel, Granit, gave a rousing speech in presenting the plaques to the Top 10 Finalists in the major award. He certainly gave an emotional and popular tribute to the UK with Brexit approaching fast. His standing ovation was well deserved. I was fortunate enough to be seated on a table with Terry Larkin and the team from JJ Foodservice who were sponsoring the Best Mobile Operator category. Also seated at the table were the three finalists and it was great to see the award going to The English Indian of Rugeley, Staffordshire, who are certainly expanding the market with their Indian flavours with Fish and Chips. Thank you, also, to Nikki Hawkins, Andy Gray and the Seafish team for their hard work making this year another outstanding ceremony and year of awards. Frymax is Committed to and Supports Sustainability. SUSTAINABILITY For several years Frymax has been made only from fully segregated certified sustainable palm fruit oil. This means that both palm oil and palm kernel oil are produced by palm oil plantations which have been independently audited and certified. The certification is provided by the official body, RSPO which has developed a set of environmental and social criteria member companies must comply with. Fundamental to this, is that no primary forests which contain significant concentrations of biodiversity, fragile ecosystems, or areas which are vital in meeting basic or cultural needs, can be cleared. This seeks to eradicate the threat of unsustainable palm oil plantations which damage both the regional and global environment and that of indigenous wildlife. Both Olenex and ADM, manufacturers of Frymax, support the global sustainability movement and RSPO. Olenex also has an additional supply chain policy which requires Frymax palm oil producers to respect the core sustainability principles of, no deforestation of high carbon stock forests, no development on peatland and no exploitation of communities.
PROJECT MARIPOSA Frymax sources the majority of its palm oil from Latin American countries and has undertaken to support producers by providing them with the tools and expertise to produce fully sustainable palm oil. The vehicle to do this is through a new initiative called Mariposa.

In the past three years Mariposa has undertaken three very successful Smallholder programmes to support sustainability. Says Andrew Marriott, Brand and Marketing Manager of Frymax “We are determined to promote sustainability in any way we can and support those who produce the oils for our product. CEASE THE GREASE P&G Professional Uncovers What it Takes to Keep Fish and Chips Top of the Take Outs One in four Brits believe fish and chips are still king when it comes to a takeaway, with a third enjoying a fish supper monthly Over half of Brits will choose a Fish and Chip shop on quality of hygiene The kitchen is judged to be the area of a Fish and Chip shop Brits would most likely scrutinise for cleanliness A new poll of 2,000 adults has revealed one in fiveBritons still visit their local Fish and Chip shop once a week, contributing to an impressive £1.2 billion revenue each year for the industry. The average person will travel almost 4 miles to get their hands on a decent fish supper. When P&G Professional, the away-from-home division of Procter and Gamble, asked Brits what tickles their taste buds about the Fish and Chip shop they choose to visit, food quality of course came out top (82%). However, good food was closely followed by an establishment’s hygiene rating. In fact, over half of those surveyed stated hygiene was more important than convenience, value, and even customer service. In addition, two in five would be put off visiting a Fish and Chip shop by dirty or sticky tables, and over a quarter are unlikely to return if the table tops and counter surfaces aren’t clean. In a bid to keep Fish and Chip shops in tip top shape, P&G Professional has partnered with Krispies- winners of the prestigious 2019 SeaFish National Fish and Chip Shop of the Year award. Together, they are on a mission to educate Fish and Chip shop owners on the importance of hygiene and cleanliness, with an ambition to ensure Fish and Chips remains the UK’s favourite takeaway. Armed with P&G Professional research that unveiled three key factors affecting business results, Krispies owners, Tim and Kelly Barnes, visited three London Fish and Chip shops to check out their winning attributes, and offer practical advice. 20

How the ‘Blue Planet effect’ is changing our eating habits Climate change is one of the biggest stories on the news agenda, and with more Brits than ever being increasingly aware of their impact on the environment, there has been a rise in the number of businesses trying to become more sustainable and innovative to offset their carbon footprint

innovation specialist MPA considers the biggest factors that are overhauling the industry. With a recent scientific study claiming that avoiding meat and dairy is ‘the biggest way to reduce your environmental impact’, it’s no surprise that there has been an increase in the number of Brits choosing an animal-free diet. Research by MPA, conducted through YouGov Profiles, found that one in 7 (14%) would class themselves as flexitarian, eating a reduced meat diet, 4% as a vegetarian and 3% pescatarian. Although only 1% of the respondents classed themselves as vegan, the research also found that one in 20 (5%) say they are likely or somewhat likely to go vegan in next 12 months.
Meanwhile, nearly half (47%) of respondents say they don’t mind paying more for goods that don’t contain artificial additives. The research revealed the food ingredients most avoided by Brits as: 1. Palm oil - 21% 2. Preservatives - 12% 3. GMOs - 10% 4. Polyunsaturated fats - 8% 5. = Stabilising agents - 5% 5. = MSG - 5% The pressure to provide products free from artificial

Hoshizaki UK & Ireland enthuses: “With zero ozone depleting potential (ODP), negligible global warming potential (GWP), and outstanding efficiency, the brand-new KMD-210AB-HC well and truly excels when it comes to sustainability. However, it’s not just the use of hydrocarbon refrigerant that makes this crescent ice maker so impressive, but also the unit’s CycleSaver® design. This unique design allows for a high quantity of ice to be produced in approximately half as many cycles as similar competitor models, thus allowing operators to make significant energy savings – benefits which will particularly appeal to large, fast selling establishments such as nightclubs, stadiums, entertainment venues and hotels” The slender shape of crescent ice will also appeal to these very venues and more for a whole host of reasons. For example, as well as this crystal-clear ice making for an exceptionally aesthetic addition to any drink, the curved shape of this ice allows for a splash-free serving. Furthermore, this ice structure is particularly ideal for operators that wish to slot bottles into filled champagne buckets and can be blended more easily than a standard square cube. Operators of the KMD-210AB-HC will also find this ice maker exceptionally easy to maintain. In fact, the only element of manual cleaning that needs to be done with the KMD-210AB-HC is the cleaning of the machines air filters, the rest is taken care of by the unit’s double flushing system with built-in self-cleaning. This high-quality system helps to extend the life of the unit at the same time as minimising cost of maintenance calls out – costs, which together with the exceptional energy savings of the KMD-210AB-HC make this ice maker exceptionally economical. The price of the KMD-210AB-HC starts from £4720 +VAT. This approach, coupled with all work being undertaken outside normal trading hours eliminating any potential disruption to trading or business operations. A result reflected in the fact that up to 18 stores were upgraded each evening, with the project being completed in a little over 30 days and ahead of schedule. Martin Haverson, Head of Store Solutions at Costa added: “Many thanks to you all for completing the upgrade to the last stores this evening. It has been a truly successful project and reflects the planning and coordination from all those involved at WRS, Celestra and Costa, including the engineers in store and the store teams during their busiest period of the year. A job well done by everyone.” The new, future-proof terminals are part of Costa’s ongoing programme of investment in its stores.
