Welcome to the New “Normal”
A
light is appearing at the end of this awful tunnel that we are going through with Covid 19. That is of little comfort to those who have lost loved ones already and we send our deepest sympathies to all of our readers that have suffered loss. Slowly, the economy is opening up with many more businesses due to begin the gradual recovery in June as the economy gets the chance to capitalise on the increasing public freedom. The new “Normal” is a phrase used frequently now and it is a tribute to our sectors that the bravery and resilience of so many operators are investing and redesigning the way that they work to build their model for the future. In this issue we are featuring our regular Q&A sessions by speaking to Kevin McWhinney, the Northern Irish sausage guru, and I am sure you will enjoy his take on the sector and his thoughts. Our cover features Preoday who are seeing a boom in pre-ordering systems which are fundamental to the development and success of the new “Normal”. Mark and Pete Petrou, National Fish and Chip Shop of the Year winners and Mark with a Lifetime Achievement Award took the brave lockdown decision to invest in the refurbishment of their Chatteris shop and to build Preoday systems into the business and Mark tells FFP about his experiences and how it is helping them to run their operation more efficiently and profitably as these systems give you the opportunity to control both the quality and waste, and also to encourage on-line customers to order additional items At Fast Food Professional, we would like to thank all of our business partners and readers for the support that they are giving us at this time. We will get through this and the sector will be stronger for it. Thank you, Athol

seafood throughout these troubling times, says CEO of the Norwegian Seafood Council, Renate Larsen. In Norway, like in most other European countries, the government has taken drastic steps to halt the spread of the Covid-19 virus. Schools, cinemas, restaurants and bars have been told to close and citizens encouraged to stay at home as much as possible. As an industry of critical importance, the seafood industry will have access to childcare, and the transport industry is exempt from some of the strictest quarantine regulations for personnel, to ensure the flow of goods across borders. Borders are not shut for goods transport Despite many borders across Europe now being shut, they are not closed to goods transport. This is confirmed in a statement from the Norwegian government on the 15th March, and also reflects the issued guidelines from the European commission. For overseas markets extra air freight routes are being established as passenger flights are suspended. Norway exports 95 percent of its seafood, and many countries depend on Norwegian seafood to meet local demand. The Norwegian industry is now working together with the Norwegian government to ensure deliveries and logistics can continue to operate as smoothly as possible in a very uncertain situation. - These are unprecedented times. Nobody really knows what we are facing around the corner. What we do know is that people need to eat. And we have some of the best and healthiest foods around. Ensuring a stable supply really is a critical function of society, and as a seafood nation we take our responsibility very seriously, says Larsen. Stay up to date on the latest developments The Norwegian Seafood Council will follow developments and aim to update industry and other interested parties on export development and logistics on a regular basis through this

regular newsletters from specific markets here. The Norwegian Seafood Council works with the Norwegian fisheries and aquaculture industries to develop markets for Norwegian seafood through local market intelligence, market development and reputational risk management. The Seafood Council is headquartered in Tromsø and maintains local representatives in twelve of Norway’s most important international markets. The Norwegian seafood industry finances the activities of the Norwegian Seafood Council via a tariff on all Norwegian seafood exports. The Norwegian Seafood Council is a public company owned by the Ministry of Trade, Industry and Fisheries. 7

An owner’s perspective Before Covid 19, if I were to be able to offer you a full order book of customers and know what meals they wanted in advance from a tight menu of your best selling or highest margin items, and to have those orders staggered over an entire shift instead of a business with unpredictable trade patterns, a wide menu and no idea of what you would be selling. Then, you’d think you’d have died and gone to chip shop heaven…

To use, customers simply select ‘Curbside Collection’ on their chosen outlet’s online menu, and a preferred collection time. During checkout, they will be asked to fill in their car registration number and colour. These details are then transmitted, along with the order details to the food operator’s ordering screen; they’ll also appear on printed receipts. The feature can be used for any outlet with accessible parking, that is curbside or a car park. Nick Hucker, CEO of Preoday, comments: “So many in the hospitality industry, our community, are fighting to survive right now. It’s the duty of companies like ours to seek ways to support businesses and neighbourhoods through this time. We can do that by getting businesses up and running with online ordering as fast as possible we’ve committed to a 48 hour turnaround, and without the complications of long-term contracts or hefty fees. We can also do it by thinking about the problem, how can we truly help people stay safe while operating their takeaways, Curbside Collection is a response to that thinking.”

5. What do you do the wind down outside of work? I play snooker and have played competitively in local leagues. I attend the gym as I feel physical well-being is as important as mental well-being. I also play classical guitar and am an avid film buff. 6. What has been to biggest change for your job over the last 5 years? Over the last 5-10 years the advances in technology, particularly the mobile phone has resulted in the biggest change. I am able to carry my office in my pocket and this

public. I always remember being able to ‘dip into’ the pan and get something delicious. 8. What do you regard as being the most important factors for success in your role? The single most important factor for success in my role is my refusal to compromise. I have always prided myself on the quality of the products that we at McWhinneys produce and will not compromise on the quality ingredients that we use, even if I might make more profit. The recipe we use is the original recipe dating back to 1898 and the only changes we have made were those required by legislation. I see no point in saying something is ‘new and improved’ when we already produce the highest quality products. 9. How would you describe your desk? My desk is ultra-tidy. I am not a fan of paperwork and therefore keep my desk free of anything but the current projects. My wife tells me that I have OCD and I would probably have to agree with her as my excessive behaviour is a feature of my home life as well as my business life. 10. If you were someone else, what/who would you have liked to be? I have thought about this and truthfully, there is no-one else that I have ever wanted to be. I am very content to just be me. 13

Captain Quality without any doubt. Like our sausages, he has no equal. 17. What is your favourite movie or food programme? My all-time favourite film has to be The Shawshank Redemption. I do not have a favourite food programme. 18. What do you always carry with you? Elaine laughs at me as I have a ritual which I always go through when I am leaving home or somewhere, I have been. I always pat myself down to make sure I have my mobile phone, my watch and my glasses. When on holiday, I am like Royalty as Elaine always takes care of the money, credit card etc. 19. What do you regard as your biggest threat, opportunity or challenge for the next 12 months? The challenge we have faced in recent times has been Covid-19 and I fear it will be with us for some time yet. Our sector will face challenges when dealing with the ‘new normal’ as I have mentioned in point 3 earlier. 20. What do you predict to be the next big Food trend/fad and where from? I think the new trend will be an increase in home eating as people come to terms with the aftermath of Covid-19.
23. What is your favourite fish and how do you like it cooked? I do not have a favourite fish, but I have to admit that I like eating the batter off the fish and Elaine eats the fish. 24. Coke or Pepsi? Without a doubt it has to be Coke. When you hear someone ordering Coke in a pub or restaurant when only Pepsi is available, the response is usually accompanied with a statement along the lines of “sorry, we only have Pepsi”. In the same way when I order ketchup, I expect Heinz, or when ordering brown sauce, I expect HP. I expect the best and do not like to compromise!!! 25. What is your favourite Fast Food branding? I don’t really have a favourite, but I believe that McDonald’s golden arches are the most iconic. 26. Where is your favourite worldwide holiday destination? Anywhere in the world on a cruise ship as long as there is heat and sunshine. 27. Dogs or Cats? Cats every time.
Many restaurants have prepared delicious meals for eating at home and I think this trend will continue, at least until we get a vaccine for Covid-19.

Hot2Home keeps fries hot and crispy for an amazing 20 minutes and has wowed the industry, scooping a Silver Award for Foodservice Best New Ingredient, Component or Accompaniment Product in the British Frozen Food Federation’s (BFFF) Product Awards last year. The Hot2Home concept works in a winning combination of two parts: newly developed fries with a special ultrathin starch coating (a closely-kept secret recipe!) to ensure they stay crispy and flavourful longer – plus a patented packaging that works with the fries coating to stay hot and crispy for 20 minutes. A Skin-On version is available too, with that delicious extra potatoey taste that will keep all fries lovers satisfied. Available in two cut sizes 6x6mm and 9x9mm, Skin-On comes in 9x9. Like all Hot2Home products, these new fries are available as a single product for dining in or as part of the revolutionary one-fry solution for home delivery and takeaway with the patented package.
Consumers’ expectations of and demand for tasty food has no waned so now, more than ever, it’s important to get the offer right with takeaway and you can explore Lamb Weston’s vast, exciting range of quality fries and potato products to enhance your menu. Regular cleaning is essential Fast food shops often contend with high footfall and limited space, which can increase the risk of cross contamination, so it is essential that those managing these sites take action, to ensure their premises don’t serve as a hotbed for viral infection. Kitchen, seating areas and washrooms should be subject to vigilant daily and weekly cleaning routines due to their high footfall. We advise that this regular clean is scheduled and tracked, ensuring that it takes place consistently and on time. It might sound simple but encouraging proper handwashing amongst employees is essential. Our hands are a natural breeding ground for germs and one of the principal carriers of harmful pathogens – in fact, 80% of infections are spread by hand. Ensuring your employees and customers have access to the essential handwashing tools – warm water, soap, drying facilities and ideally, hand sanitiser, as well as handwashing reminders – goes a long way to encouraging good hand hygiene practices.
touch points as well as moving all furniture or equipment away from the walls, to make sure no areas are missed from the standard cleaning routine. One powerful tool in the deep cleaning arsenal is Ultra Low Volume (ULV) disinfection fogging. This involves using a fogger to generate a mist of disinfectant which settles on top of, underneath and on the sides of objects, enabling specialist technicians to disinfect a large area in a short period of time. Regarding the Coronavirus outbreak, takeaways that have remained open would be wise to review and update their cleaning regimes. They should also consider proactively preparing in case a deep clean is required, such as in the event they have a suspected or confirmed Coronavirus diagnosis onsite. This would require a contingency survey of the premises, typically offered by experts to enable them to gather key information in advance, including preparing a site-specific risk assessment, to enable a quick response in the event of a confirmed or suspected case of Coronavirus being reported on the site at a later date. If there are no confirmed or suspected cases of

your premises will need. For businesses with a confirmed or suspected case of Coronavirus on the premises and where the site needs to be up and running quickly, then Rentokil Specialist Hygiene can implement stringently risk assessed infection control measures that go beyond the minimum World Health Organisation guidance. Firstly, a service manager will survey the site wearing the appropriate personal protective equipment (PPE) and respiratory protective equipment (RPE). Then, guided by the site-specific risk assessment, method statement and safe operating procedures, Royal Society for Public Health qualified staff would meticulously disinfect rooms and
Final words When it comes to cleaning regimes in fast food shops and takeaways, proactivity is essential to help prevent the spread of disease, particularly during an outbreak such as Coronavirus. Confined spaces and high footfall increase the standards of hygiene required. While hand hygiene will help stem cross contamination, specialist deep cleans will offer that extra level of protection and businesses should consider booking one in. areas that pose a threat of causing cross contamination, using a high-level surface disinfectant on surfaces such as floors, walls, ceilings and any objects. ULV disinfection fogging may also be used when required, to allow for the treatment of large areas in a short space of time. For locations who can afford to wait 72 hours, then a slightly different process would be followed which could include disinfecting key touchpoints, such as door handles 35

This is done by resting your cup/ glass against the lever and pressing the ice/water button to start; seconds later, and your high quality, Hoshizaki refreshment is ready!” In addition to eradicating the need for users to handle ice by hand, Hoshizaki has taken hygiene precautions yet further by developing a unique, new lever design which prevents the lip of the cup/glass touching the machine, therefore minimising the risk of bacterial transfer. Ideal for venues with various capacity demands, the DCM dispenser range features models with various production capacities which start at 60 kg and end at 230 kg of ice per day – an impressive production capacity which doesn’t come at the expense of space due to the compact design of each DCM model.
