his year seems to be flying by and we are well into the chase to find out who will be the best Fish and Chip operators this year. Good luck to all who have entered for the various awards and a very big thank you to Seafish for this prestigious competition that continues to drive the standards of the industry forward and makes sure that it stays at the forefront in the Nation’s media. I was fortunate enough to accompany one of the judges on two visits and was extremely impressed to see the depth that the selection process goes to make sure that the best are rewarded. We would also like to congratulate all of the sponsors of these awards for their contribution as they help to make it all possible. Research commissioned by VisitEngland in association with Hitachi Personal Finance reveals the most cost-effective place to staycation in Great Britain this summer using the cost of fish and chips* as a barometer.

ooking at the top 25 domestic holiday destinations from the Great Britain Tourism Survey**, the Fish and Chip Index takes into consideration prices in 250 food outlets to discover the average cost of fish and chips across the Great Britain, and uses
this as the benchmark to see which locations offer better value for money. Blackpool towered above the rest as a portion of fish and chips came in at just £5.19, over £1.00 cheaper than the national average of £6.20. It was closely followed by Harrogate at £5.24 and Leeds at £5.39. Unsurprisingly, London charges the most for our national dish, with an average cost of £8.90, followed by Weymouth at £7.03 and Brighton at £6.70. The difference between the most expensive and cheapest fish and chips across the country is £3.71, a 71.5% uplift

offee machine specialist Caffeine Limited offers a service package that promises to deliver a top quality, practical, planned preventative maintenance contract backed by emergency call-out with the highest possible first time fix rate. It’s available on all Gaggia,
Conti and Schaerer coffee machines, plus a selection of other brands. The service package is designed to ensure machines are regularly
maintained, to maximise coffee quality and consistency as well as machine ‘up-time’. Caffeine’s service package can be tailored to each site and is delivered by a highly experienced, proactive service team. Meanwhile Caffeine’s service desk can provide telephone support for troubleshooting issues that can be easily fixed without an engineer visit or unnecessary charges. Services provided can range from a simple front-end maintenance to a full workshop service and descale. “What operators want is minimum downtime and a reasonable contract cost,” says Justin Stockwell, managing director of Caffeine Limited. “Regular maintenance is key but it’s also vital that, when things do go wrong, customers know they will be up and running as quickly as possible. “The trouble with a lot of companies servicing coffee machines is that they promise more than they can deliver,” he says. “The four hour call out is the biggest issue. So what you get is an engineer arriving inside four hours, but saying he can’t fix it because he doesn’t have the part, so he’ll be back tomorrow. That may tick his ‘inside four hours’ box, but it just ends up frustrating the customer – and the machine isn’t fixed.” Caffeine’s service package avoids the pitfalls of the four hour call out guarantee – although in busy urban areas, it often achieves it. It does guarantee to be on site within 24 hours and, more importantly, it has a very high first time fix rate of 98.8%. “Our job is to make sure those machines are pumping coffee. So we aim to give the customer what they want – their machine, working, in the shortest possible time,” says Justin. Recent research has revealed that more than a quarter (28%) of meateating Brits have cut or limited their meat intake in the past six months, so it’s wise to cater for this trend in the fast-food market, says frozen food distributor Central Foods.

he Mintel report also suggests that a further one in seven (14%) adults say they are interested in limiting or reducing their consumption of meat or poultry in the future. It therefore

Can mobile ordering drive more reusable cup adoption? Mark Anderson, Director of Strategic Solutions, Preoday

offee retailers, quick service restaurants and live events operators have long recognised that reusable takeaway cups are better for the environment than singleuse cups, even when they are recycled. The scale of the challenge is colossal. Annually, it is thought that UK consumers dispose of about 2.5 billion single-use coffee cups, but less than 1% are recycled because most recycling facilities cannot handle the plastic film lining which coats the inside of the paper cup. Estimates of the number of paper and plastic throwaway cups used each year worldwide range from tens of billions to more than one hundred billion. Starbucks’ customers alone are known to consume approximately 4 billion cups a year globally. Current efforts to drive more re-use Retailers have made substantial efforts to encourage takeup of reusable cups by their customers. In 2013 Starbucks launched a reusable cup priced at $1 in the US and Canada and £1 in the UK, and the chain offers customers 10 cents and 25p respectively off certain drinks when served in a reusable cup. Costa also gives customers a 25p discount on drinks in reusable cups and they will shortly launch two new multipurpose reusable cups. Despite these efforts, persuading customers to use reusable cups has been difficult and the sector has struggled to increase re-use rates much above 1.5%, even after many years of trying. In 2011 Starbucks announced a global goal to serve 5% of beverages made in companyowned stores in reusable cups by 2015, but the goal was not achieved and only 1.6% were served in them. Changing customer behaviour away from single-cup use has proven hard, whether it is the convenience of not having to carry a cup into the store, or not having to wash it after every use. In the German cities of Berlin, Freiburg and Hamburg,

initiatives are being put in place to drive coffee cup reuse. Coffee shops in Hamburg have started a reusable cup scheme called Refill It!. The cup can be obtained with a €1.50 deposit and customers have the option of keeping the cup and having it refilled at participating coffee shops, or returning it and receiving their money back. Once returned the cafe will wash the reusable cup and offer it to another customer. There are examples outside of Germany too: a few US universities have started re-use schemes and in April this year the City of London’s Square Mile Challenge was launched, organising more than 100 recycling points and calling everyone in the City of London to collect and recycle half a million coffee cups in the first month to reach a total of 5 million by the end of the year. Music festivals have also taken steps to encourage reuse. The Bonnaroo music and arts festival in Tennessee, USA, sells reusable stainless steel beer cups and gives a $1 discount on all refills made with the cup at beer stands at the event. Last year, the UK’s Glastonbury Festival launched a sustainable, recycled stainless steel pint cup for use at its event. The result was over 200,000 cups in circulation across the site, with customers paying a £5 deposit when they bought their first pint. How mobile ordering and loyalty technology can help The good news is that mobile ordering and loyalty technology can help change customer behaviour and increase reusable cup uptake. New training initiative explains Principles of Food Service to newcomers to the industry The catering industry is suffering from a skills shortage and the need to recruit more staff. Brexit is likely to increase this pressure. What’s needed is a way to encourage people to enter the industry and, once here, to quickly pick up the basics and build a career. That’s why CESA has launched the Principles of Food Service (PFS) training initiative. It aims to give newcomers the knowledge they need to understand the industry, to help them make the most of their career choice – and to help them start making a positive contribution.
