his year seems to be flying by and we are well into the chase to find out who will be the best Fish and Chip operators this year. Good luck to all who have entered for the various awards and a very big thank you to Seafish for this prestigious competition that continues to drive the standards of the industry forward and makes sure that it stays at the forefront in the Nation’s media. I was fortunate enough to accompany one of the judges on two visits and was extremely impressed to see the depth that the selection process goes to make sure that the best are rewarded. We would also like to congratulate all of the sponsors of these awards for their contribution as they help to make it all possible. Zohaib Hussain always fries in To run a successful Fish and Chip shop in a busy capital city for over twenty years is not easy, but that is exactly what the Hussain family have achieved in the Zero Plus Fish Bar in Cardiff. Zohaib Hussain always wanted to be in the business. He has been in charge for over five years now and in 2012 won the coveted Drywite Young Fish Frier of the Year Award. The secret of the Hussain family’s success has been to ensure that they produce consistently great tasting Fish and Chips. They have always been particular about the frying medium they use and the Hussain family have used Frymax since opening in 1991. Frymax is produced from top quality pure white sustainable premium palm, which is additive free and contains no hydrogenated oils. Not only does it guarantee consistently good results, its performance is long lasting without any deterioration in quality. Zohaib Hussain knows that to continue to meet his family’s high standards, there is no better partner than Frymax.

Research commissioned by VisitEngland in association with Hitachi Personal Finance reveals the most cost-effective place to staycation in Great Britain this summer using the cost of fish and chips* as a barometer.

L

ooking at the top 25 domestic holiday destinations from the Great Britain Tourism Survey**, the Fish and Chip Index takes into consideration prices in 250 food outlets to discover the average cost of fish and chips across the Great Britain, and uses

this as the benchmark to see which locations offer better value for money. Blackpool towered above the rest as a portion of fish and chips came in at just £5.19, over £1.00 cheaper than the national average of £6.20. It was closely followed by Harrogate at £5.24 and Leeds at £5.39. Unsurprisingly, London charges the most for our national dish, with an average cost of £8.90, followed by Weymouth at £7.03 and Brighton at £6.70. The difference between the most expensive and cheapest fish and chips across the country is £3.71, a 71.5% uplift

Though a light-hearted ‘fish-cal’ measure of how far staycation spending money will stretch this summer, the message is serious: “As with international destinations, better value holidays can be enjoyed in some British holiday destinations than others,” says Theresa Lindsay, Head of Marketing at Hitachi

Westaways have grown and established themselves as a brand producing retail packs of fresh pork sausages. However over the last eight years they have invested in the capacity and capability to produce frozen and also fully cooked products and now offer a range of products with clear differentiation to competing meat processors. Currently fresh products represent around 40% of the business with frozen and cooked each at 30%. This gives flexibility to plan around the seasonal nature of the business

Ever wanted a fridge that’s a work of art? Or covered in leopard skin print? Or made out of marble? Chameleon from Williams is the answer.

C

hameleon allows operators to personalise their refrigeration. Using food safe vinyl wrapping, the company can provide completely bespoke designs. There are virtually no limits to what Chameleon can achieve: it can be used to cover just about any Williams model with any colour or pattern and can

even be textured to create a truly realistic finish.

CHAMELEON

“Businesses are under constant pressure to innovate and stand out from

the crowd,” says Malcolm Harling, sales and marketing director of Williams Refrigeration. “Chameleon is a show-stopper, it’s the perfect way to personalise equipment and make an impact.” Operators can have any design they like, in a huge variety of finishes. Chameleon can also match any RAL or Pantone colour. “It means the fridge can finally fit in with any design and décor – from industrial bricks to Art Deco, from the muted to the outrageous,” says Malcolm. As part of the Chameleon service, Williams will create graphics in-house. Alternatively, customers can provide their own designs. The Chameleon vinyl meets all food hygiene requirements, is heat resistant from -40°C up to 140°C and has been awarded a BI fire rating. With an eight-year shelf life, it is tough enough to cope with the most hectic working environments. It’s possible to add Chameleon to almost everything in the Williams product range, from undercounters to upright cabinets to modular coldrooms. This makes it ideal for chef’s tables or theatre-style kitchens. “What better way to add a touch of theatrical flair than with a fridge wearing a tiger print? Or a Moonscape?” says Malcolm. “Operators can have whatever design they want – imagination is the only limit!” The cost of Chameleon will depend on the selected model and the complexity of the graphic. The price is available on application.

Williams Refrigeration offers a comprehensive range of commercial refrigeration including gastronorm cabinets and counters, specialist bakery equipment, coldrooms, merchandisers and blast chillers. To learn more about Williams extensive product range visit www.williams-refrigeration.co.uk. 33

Caffeine Limited’s no-nonsense service package for Gaggia, Conti and Schaerer aims to get those machines pumping coffee, ASAP

C

offee machine specialist Caffeine Limited offers a service package that promises to deliver a top quality, practical, planned preventative maintenance contract backed by emergency call-out with the highest possible first time fix rate. It’s available on all Gaggia,

Conti and Schaerer coffee machines, plus a selection of other brands. The service package is designed to ensure machines are regularly

maintained, to maximise coffee quality and consistency as well as machine ‘up-time’. Caffeine’s service package can be tailored to each site and is delivered by a highly experienced, proactive service team. Meanwhile Caffeine’s service desk can provide telephone support for troubleshooting issues that can be easily fixed without an engineer visit or unnecessary charges. Services provided can range from a simple front-end maintenance to a full workshop service and descale. “What operators want is minimum downtime and a reasonable contract cost,” says Justin Stockwell, managing director of Caffeine Limited. “Regular maintenance is key but it’s also vital that, when things do go wrong, customers know they will be up and running as quickly as possible. “The trouble with a lot of companies servicing coffee machines is that they promise more than they can deliver,” he says. “The four hour call out is the biggest issue. It’s unreasonable and what’s more it’s not practical. So what you get is an engineer arriving inside four hours, but saying he can’t fix it because he doesn’t have the part, so he’ll be back tomorrow. That may tick his ‘inside four hours’ box, but it just ends up frustrating the customer – and the machine isn’t fixed.” Caffeine’s service package avoids the pitfalls of the four hour call out guarantee – although in busy urban areas, it often achieves it. It does guarantee to be on site within 24 hours and, more importantly, it has a very high first time fix rate of 98.8%. “Our job is to make sure those machines are pumping coffee. So we aim to give the customer what they want – their machine, working, in the shortest possible time,” says Justin. Caffeine Limited’s service package is delivered by a nationwide network of specialist engineers.

The core product is a planned

preventative maintenance contract, with regular service schedules based on the site’s requirements, backed by the service desk and emergency call out support. Caffeine Limited is one of the UK’s leading coffee machines specialists, distributing brands including Schaerer, Conti and Gaggia. The company also offers a comprehensive choice of coffee service accessories. For more information visit www.caffeineonline.co.uk September and October 2017 • Fastfood Professional

I

t is a unique new coffee concept with superb presentation, it is easy to set up and serve, and it represents a great new alternative beverage with fantastic margin enhancement. Nitro, the best iced coffee you will ever serve.

The History of Nitro Cold brew Coffee Cold Brew Coffee and Nitro Cold Brew Coffee are, of course, products first popularised in the USA. Cold brew, also called cold water extract or cold press, is the process of steeping coffee grounds in water at a cool temperature. Coarse-ground beans are soaked in water for a prolonged period of time, usually 12 hours or more. Cold Brew Coffee in cans or bottles, is beginning to be more widely available in both UK catering and retail sectors. However “Nitro Cold Brew Coffee” is the next step. It was first served in Austin, Texas by Cuvee Coffee with the initial goal, according to the inventor, being “simply learning how to make a more complex, flavourful cold brew coffee.” Mike McKim, Cuvee CEO said “I watched the cascading nitro of stout beer being served and thought, ‘Why can’t I do that with coffee?’” Next, he figured out the ideal method to infuse nitrogen into the product for a creamier, smoother texture. And here it is – Nitro Cold Brew Coffee.

Nitro Cold Brew Coffee – The Current UK Market Currently, Nitro Cold Brew Coffee is most certainly not well known But Nitro Cold Brew Coffee is going to be BIG! – and these are some of the reasons why:

It offers an excellent alternative to the traditional coffee currently served. It offers tremendous margin enhancement. It offers great theatre in serving. It can be mixed with milk for a superb Nitro Cold Brew Latte. It can be mixed with various alcoholic drinks for a great coffee liqueur. However, currently, it is only available in a small number of outlets. In the UK a company called Sandows make and supply it but just to 2 outlets in London and in 40 litre kegs, which are difficult to transport. But most importantly, Starbucks, who have been serving Nitro Cold Brew in the USA for some time, have just brought it to London! Now you can get it in an easy-to-use bag-in-box format from the Nitro Cold Brew Coffee Co. - for more information, contact info@ nitrocoldbrew.com 41

Be prepared for flexitarianism, advises frozen food distributor Central Foods

Recent research has revealed that more than a quarter (28%) of meateating Brits have cut or limited their meat intake in the past six months, so it’s wise to cater for this trend in the fast-food market, says frozen food distributor Central Foods.

T

he Mintel report also suggests that a further one in seven (14%) adults say they are interested in limiting or reducing their consumption of meat or poultry in the future. It therefore

makes good commercial sense to be prepared for customers asking for meat-free products by stocking suitable items. “As a leading frozen food distributor supplying a selection of products to the fast-food sector, our advice at Central Foods is to ensure that takeaways and other outlets have a range of easy-to-prepare and cook frozen items in stock that will suit customers that are looking for meat-free food and snacks,” said Gordon Lauder, MD of Central Foods. “Tasty products like meat-free sausage rolls or cheese and onion rolls are perfect to suit the rising trend in flexitarianism. Baked from frozen, they are great hand-held snacks to offer customers at any time of the day.” The meat-free sausage rolls and cheese and onion rolls are part of a wide range of vegetarian items that Central Foods offers. “The younger generations are the most likely to be following a meat-free lifestyle, and this is a key sector for the fast food industry,” added Gordon. “The Mintel report said that one in five (19%) Brits under the age of 25 say they do not eat red meat

Can mobile ordering drive more reusable cup adoption? Mark Anderson, Director of Strategic Solutions, Preoday

C

offee retailers, quick service restaurants and live events operators have long recognised that reusable takeaway cups are better for the environment than singleuse cups, even when they are recycled. The scale of the challenge is colossal. Annually, it is thought that UK consumers dispose of about 2.5 billion single-use coffee cups, but less than 1% are recycled because most recycling facilities cannot handle the plastic film lining which coats the inside of the paper cup. Estimates of the number of paper and plastic throwaway cups used each year worldwide range from tens of billions to more than one hundred billion. Starbucks’ customers alone are known to consume approximately 4 billion cups a year globally. Current efforts to drive more re-use Retailers have made substantial efforts to encourage takeup of reusable cups by their customers. In 2013 Starbucks launched a reusable cup priced at $1 in the US and Canada and £1 in the UK, and the chain offers customers 10 cents and 25p respectively off certain drinks when served in a reusable cup. Costa also gives customers a 25p discount on drinks in reusable cups and they will shortly launch two new multipurpose reusable cups. Despite these efforts, persuading customers to use reusable cups has been difficult and the sector has struggled to increase re-use rates much above 1.5%, even after many years of trying. In 2011 Starbucks announced a global goal to serve 5% of beverages made in companyowned stores in reusable cups by 2015, but the goal was not achieved and only 1.6% were served in them. Changing customer behaviour away from single-cup use has proven hard, whether it is the convenience of not having to carry a cup into the store, or not having to wash it after every use. In the German cities of Berlin, Freiburg and Hamburg,

44

Fastfood Professional • September and October 2017

initiatives are being put in place to drive coffee cup reuse. Coffee shops in Hamburg have started a reusable cup scheme called Refill It!. The cup can be obtained with a €1.50 deposit and customers have the option of keeping the cup and having it refilled at participating coffee shops, or returning it and receiving their money back. Once returned the cafe will wash the reusable cup and offer it to another customer. There are examples outside of Germany too: a few US universities have started re-use schemes and in April this year the City of London’s Square Mile Challenge was launched, organising more than 100 recycling points and calling everyone in the City of London to collect and recycle half a million coffee cups in the first month to reach a total of 5 million by the end of the year. Music festivals have also taken steps to encourage reuse. The Bonnaroo music and arts festival in Tennessee, USA, sells reusable stainless steel beer cups and gives a $1 discount on all refills made with the cup at beer stands at the event. Last year, the UK’s Glastonbury Festival launched a sustainable, recycled stainless steel pint cup for use at its event. The result was over 200,000 cups in circulation across the site, with customers paying a £5 deposit when they bought their first pint. How mobile ordering and loyalty technology can help The good news is that mobile ordering and loyalty technology can help change customer behaviour and increase reusable cup uptake. Preoday’s pre-ordering solution enables retailers to: • Reward mobile pay customers bringing back their reusable cups with a discounted drink or loyalty points – these could be returning coffee shop customers or sports fans attending their team’s next match • Drive increased reusable cup purchases by customers • Inform customers of the benefits of using reusable cups • Track reusable cup usage with data analytics. September and October 2017 • Fastfood Professional

44

Guard your Ice Hygiene with the Saf-T-Ice This is on top of the established benefits of Preoday’s mobile ordering and loyalty platform, which include: • 25-40% higher average transaction values for mobile and online versus in-store transactions • Queues which move 2-3 times faster • Better utilitisation; non-standard pick-up slots receive one third of orders • A high 76% of Preoday app downloads result in a transaction • The capability to offer merchandise purchases, vouchers and discounts • Options to integrate with different EpoS systems, payment processors and third party loyalty apps. Preoday is also able to offer assistance to clients on marketing mobile ordering to ensure strong uptake, and advise on any required operational changes, which as Starbucks’ recent experience has shown require careful planning. Last, but not least, our new strategic solutions service, launched in response to requests from customers and offered on an impartial basis, helps larger clients define their mobile and online e-commerce strategies in a rapidly changing market, and avoid pitfalls. Of course, mobile ordering and loyalty is only part of the solution. It needs to be combined with financial or other incentives, the provision of reusable cups and clear messaging reminding customers of the re-use choice and its financial and environmental benefits. When mobile ordering and loyalty is embedded in food and beverage retailer strategies, we believe that rapid growth in reusable cup adoption will be achievable.

As the media lights up with unhygienic ice stories again, FEM is offering a solution: the Saf-T-Scoop from San Jamar. Its radical design has a guard that protects the ice from contact with the user’s hand, so that ice is kept as safe and contamination-free as possible.

T

he Scoop is supplied with the Guardian storage system. This can be easily sited beside the ice machine, and fully encloses the scoop when not in use, ensuring it is not contaminated by contact

with, for example, the counter top. When it’s required, staff can quickly grab the scoop’s handle and get to work. The Guardian has a variety of mounting systems, including brackets and suction pads. Another key hygiene danger area is transporting ice, for example from a back of house storage area to the front of house counter or bar. The solution is the Saf-T-Ice Tote, a dedicated transport system for ice. The Tote has a hook that fits on the side of the ice machine, so there’s no need to hold it while filling takes place. Once full, staff pop the lid on and can either carry it to where it’s required or load it onto the Saf-T-Ice Dolly, which can hold and easily transport up to two full Totes. The system ensures that ice can be transported hygienically. “Ice hygiene is regularly in the spotlight,” says Mark Hogan of FEM. “As well as being a major food safety issue, the bad press can have a huge impact on business. These systems are an inexpensive and simple way to control the problem.” The Saf-T-Scoop with Guardian storage system comes in a variety of sizes, starting from £38.90 List prices for the Saf-T-Ice Tote start from £59.20 They are available through FEM distributors nationwide. For more information and details of local stockists call FEM on +44 (0) 1355 244111, email sales@fem. co.uk or visit www.fem.co.uk

F

alcon Foodservice Equipment has extended its Dominator Plus series of prime cooking appliances with three new models – two electric chargrills and a twin-pan electric fryer. All three deliver the

rugged construction, high performance and good looks that have made Falcon’s Dominator Plus so popular with chefs across the UK. The two electric chargrills feature powerful elements that reach temperature even more quickly than gas, making them ideal for kitchens that can’t, or prefer not to, use gas appliances. Food is cooked directly on the elements delivering the classic chargrill branding. The E3925 is a 900mm-wide unit with two elements, with independent controls so that in quiet periods only one needs to operate, saving energy. The E3625 is 600mm wide and has one element. In both models the elements can be swivelled upwards for ease of cleaning. The E3865 electric fryer has two independently controlled pans, offering great flexibility, efficiency and performance. The two 10kW elements deliver fast heat-

up times, reaching frying temperature from cold in just nine minutes and giving an output of 54kgs of chips per hour from 48 litres of oil. The fryer offers a temperature range of 130 - 190°C, with a safety thermostat which automatically switches off the unit if the oil gets too hot. As with all Dominator Plus appliances, the new models include a host of practical features to make life easier for kitchen staff. For example, the chargrills have magnetic side screens that prevent spatter on adjacent equipment and a removable drip tray that doesn’t need water, while the fryer is supplied with a lid and has a large-diameter drain valve for quick and efficient oil draining. List prices start from £2725 for the chargrills and £4345 for the new fryer. Falcon’s Dominator Plus series is available through distributors. Consumer demand for Donuts on the rise (That’s American for Doughnuts) It’s not just cafes, coffee shops and service stations where the clamour for the US delicacy - now a firm UK favourite, is rife. European foodservice suppliers - Moy Park has uncovered a significant opportunity for pubs and restaurants to get in on the action with recent research following Doughnut week (6th-13th May) revealing that 60% of diners surveyed – driven by 18-35 year olds would like to see pubs and restaurants offering a choice of more USthemed desserts, such as doughnuts, on restaurant menus.

M

iniature desserts and sharing also rank high in the minds of UK diners. 68% of respondents said that seeing more miniature or sharer desserts on pub and restaurant menus would make them more inclined to opt for a third course,

laying bare the sheer profit potential for operators. Frannie Santos-Mawdsley, Senior Customer Marketing Manager, European Foodservice, Moy Park explains: “Doughnut Week is a fantastic initiative, but where some may have thought that celebrations were consigned to cafes and coffee shops, our research tells us that, with the right products, consumer demand is there for less traditional sites such as takeaways and restaurants to join the party. Our research shows that it is 18-35 year olds who are driving this demand. Received wisdom tells us that it is these so-called Millennials who crave difference and lead the way when it comes to emerging food trends, which means the industry should sit up and take note. We’re here to tell takeaway and restaurant operators, particularly in the burgeoning casual dining market, that doughnuts and Americana equal profit.” Moy Park Foodservice has the perfect range of Mini Donuts (using the US spelling), to help non-traditional outlets make money. Supplied frozen for absolute convenience, the delicious mini cakestyle Donuts come in Chocolate, Plain, Sugared and Cinnamon varieties. They can be customised with a host of decorations, and made personal to outlets, and served in a number of innovative ways, including dessert sharing boards for larger groups For more information on Moy Park Foodservice visit www. moyparkfoodservice.com

New training initiative explains Principles of Food Service to newcomers to the industry The catering industry is suffering from a skills shortage and the need to recruit more staff. Brexit is likely to increase this pressure. What’s needed is a way to encourage people to enter the industry and, once here, to quickly pick up the basics and build a career. That’s why CESA has launched the Principles of Food Service (PFS) training initiative. It aims to give newcomers the knowledge they need to understand the industry, to help them make the most of their career choice – and to help them start making a positive contribution.

It explains how the food and equipment supply chains work and looks at areas such as food safety and hygiene. Based around a pictorially-based online presentation, the PFS course takes two hours to complete. It is designed as a framework, allowing it to be adapted by the business using it to suit the audience. It will be delivered by suitably qualified CFSP graduates.

How SuperSorb CarbonPads work. ®

Technology doesn’t stand still

Sieving: Particles large enough to see with the human eye are Superpad SuperSorb the top surface of the pad. White Clearmechanically Flow sieved and stopped onCarbonPad Single Pass Entrapment: When SuperSorb CarbonPads are manufactured, ®

Since we introduced the white Superpad to the frying trade in 2003 we have continually worked with the manufacturer to achieve what we considered the perfect solution for cooking oil/fat filtration. After extensive research, development, testing and comparisons we are so impressed with results using the new SuperSorb CarbonPad. We intend to offer the new version as an updated alternative, alongside the white product. Activated carbon was chosen as the "active" agent due to its large reactive and adsorptive surface area. It has thousands of interconnected graphite-based platelets, which create interior channels, holes, and pockets. This increased adsorptive capacity over other filter types, results in a filter media that achieves superior particulate and organic contaminant removal. Each level teaspoon of activated carbon particles exceeds the surface area of a football field.

Single Pass

before the final drying process, the wet pad mixture is pulled through a vacuum in a process that makes each pad a depth filter. This makes one side of the pad porous and the other side very fine.

Box Quantity 80 As the oil is pulled deeper in to the matrix of the pad during filtration, smaller and smaller particles are caught in a process called entrapment.

Absorption: This is the process whereby inorganics, metallic ions and fine particles are absorbed in to the pad’s cellulose matrix, much like a sponge absorbs water. The carbon powder makes the pad extremely absorbent. Adsorption: This is the process whereby macromolecules, oxidants and organic compounds are neutralised by the active ingredients, such as carbon powder, that is incorporated in the matrix of the pad.

ORDER ONLINE FOR 25% OFF SHIPPING COSTS. The compounds are attracted to the structure of the pad rather like a magnet. These neutralised compounds cannot contaminate the oil. The activated carbon powder removes off-odours and tastes from the oil.
