This is a homely, sweet and nutty breakfast, which can double as a dessert. Serve it in pretty glass bowls or layer it in dessert glasses. Stewed apples, homemade biscuit, creamy yoghurt ... simply delicious.

GLUTEN-FREE BISCUIT CRUMBLE

• 25g linseeds

• 25g sunflower seeds

• 25g almond flakes

• 40g chia seeds

• 150ml hot water

• 150g butter

• 125g rice flour

• 125g castor sugar

APPLE COMPOTE

• 4 Granny Smith apples

• 6 tbsp castor sugar

• juice of 1 lemon

• 150ml water

• ½ tsp salt

• ½ tsp groundcinnamon

TO SERVE

• 720g plain yoghurt

BISCUIT CRUMBLE: Preheat the oven to 180°C and line a baking sheet with baking paper or a silicone mat. Mix the linseeds, sunflower seeds and almond flakes and blend into a fine powder. Mix the chia seeds with the hot water and allow to stand for a few minutes to become sticky. Melt the butter, combine it with all the other ingredients and mix to form a dough. Press the dough flat onto the baking sheet and bake for 15–20 minutes, or until golden brown. Remove from the oven and allow to cool. Once cooled, break the crumble into smaller pieces to be served with the compote and yoghurt.

APPLE COMPOTE: Peel, seed and dice the apples. In a saucepan, combine the sugar, lemon juice, salt and water and bring to a boil. Add the apple and cinnamon to the boiling syrup, and allow to boil until all the water has reduced and the apple has started to caramelise. Remove the apple compote from the saucepan and allow to cool completely. Layer compote, crumble and yoghurt in individual glasses or jars, or in a larger glass serving bowl.
