editor’s note W as it barely a month ago that the world celebrated International Women’s Day? Yes, it was on March 8 that we made a special mention to honour women for their achievements. It was also a time to applaud the ladies for the struggles they have waged in the past and the leaps they have taken in the social, economic and political fields. Amidst all this, a little known fact went virtually unnoticed. Many of us are probably not even aware that the country’s tourism business — according to a poll by the Associated Chambers of Commerce and Industry of India (ASSOCHAM) of 1,200 tour operators from different Indian cities — had seen a dip of a whopping 25 per cent since the beginning of this year. To top it all, the number of female foreign visitors is believed to have gone down by 35 per cent. While one reason that is being handed out is the deteriorating global economic scenario, the other – and embarrassingly for a country that continues trotting out that an “Atithi is God” — is the deteriorating safety levels. So bad is the situation that the regular advisories from western nations make it a point to mention the high-profile rape cases that have been appearing in our press. The same ASSOCHAM poll pointed out that around 72 per cent of tour operators said that women from UK, US, Canada and Australia made up the bulk of cancellations. And such figures are not merely from the top cities but also from Tier-II and III cities like Goa, Agra and Jaipur. The ASSOCHAM figures led its Secretary General, D S Rawat, to comment that the attacks on women “has raised concerns about the safety of female travellers to the country”. Of course, the figures were contradicted by the Tourism Ministry (February 2013 figures from the tourism department said that the arrivals were 1.6 per cent higher year-on-year). Figures notwithstanding, one cannot look away from the fact that there is an urgent need to pay special attention to women travellers. And though we may have taken an initiative to classify our
hotels, what purpose would the whole exercise serve if women are harassed even in starred hotels? No, there have been no cases yet. The recent one of a British tourist in an Agra hotel, however, brings home the point that our hotels — starred or unstarred and in the most ‘touristy’ cities — are not safe. First and foremost, hotels need to appreciate the fact that women are today active in almost all spheres of business and many of them travel alone. The challenge — if one may term it that — for our hotels is to understand what women travellers expect or would like here experience in hotels to be. Incidentally, Business Traveller magazine (the leading publication for the frequent business traveller, with ten editions worldwide) did a recent survey to find out whether hoteliers in the US were aware of women travelling alone and if at all they were accommodating to adapt their services. Strangely, the survey pointed out that at least 65 per cent of hoteliers treated women travellers in the same way as others. For hotels to set up special standards and facilities for women, it is essential to understand the services a lone woman traveler would want. Simply put, hoteliers would have to put themselves in women’s shoes to get an insight into what their expectations are. Even before facilities or services for women are put into place, hotels must ensure that a woman travelling alone has to feel safe. The creation of a perfect atmosphere should be foremost on the minds of hotel bosses. Second only to safety is to change the rooms to suit women. Most hotels — give or take a handful — have rooms that are male-centric. For women, then, hotel rooms have to undergo the feminine touch: fresh-smelling interiors, big mirrors, glossy magazines, flowers and fruits, a hair dryer and room service by women. That’s not too much to ask for, is it?

In line with the cause of promoting tourism in India, private bodies including the Federation of Indian Chambers of Commerce and Industry (FICCI) have started engaging with government and local service industry.
ndia’s tourism industry as a whole contributes approximately `95,000 crore towards foreign exchange, 6.4 per cent to the nation’s GDP and 7.8 per cent of the total employment. The GDP of the tourism sector has expanded 229 per cent since 1990. The figures do justice to the fact that the World Travel and Tourism Council ranked India fifth in the fastest growing tourism destinations segment. Foreign tourists are spending more in India than almost any other country. These are very positive signs for the industry and indicate a significant potential going forward. Rise in foreign tourist arrivals is clearly an example of the stellar growth performance of India. Pilgrimage and health tourism are sectors that show potential for the near future. However, the factor deterring foreign tourist arrivals into India and also hindering any extended stays is that many of our hotels do not conform to any internationally recognised rating standards. In a move to bring transparency in the approval of hotel projects and classifying Hotels, the ministry has launched a web based Public Service Delivery System for hotel approval and classification. Hotel promoters and owners can Tx hospitality
seek approval from the ministry for their projects and classification from one star to five star deluxe by submitting applications. These requests would then be processed for a final decision. Applicants currently remain unaware of the status of their applications till the final decision is conveyed to them. With the new move, all information relating to such applications indicating the latest status will be put on the website of the ministry. All applicants will be given a password to access the details posted on the web. The web details will indicate the date of receipt of applications, status regarding project approval, proposed date of the visit of Hotel and Restaurant Classification Committee, final recommendation of the committee and final status of classification. This system will make certain, that an application is examined within 15 working days of being received and it will ensure a hotel inspection within the next 15 working days. This measure would bring in more transparency, make officials more accountable and enable applicants to access information and check status of their applications sitting at their own places. This initiative was widely accepted by the hotel industry and was described by some as, “a big leap from red tape to red carpet,” and “a great transition from bureaucratic to highly transparent state.” Hospitality is hugely impacted by ratings but the methods of these ratings vary by country. The Hotel and Restaurant Approval and Classification Committee (HRACC), a division of the Tourism Ministry, takes care of such ratings in India. India’s Tourism Ministry has taken on the project of classifying all hotels in operation with the classic star ratings and its own unique Heritage ratings of Heritage Basic, Heritage Classic to the prestigious Heritage Grand. A hotel earns Heritage status if at least 50 per cent has been built prior to 1950 and no considerable change has been made since then. Obtaining a good hotel rating today means having all standard amenities along with ecofriendly exercises such as sewage treatment plants, rain water harvesting, pollution control methods, solar energy and introduction of non-toxic equipment for refrigeration and air conditioning and other eco- friendly initiatives. It’s also important for hotels to focus on human resource development initiatives to meet the manpower needs of the tourism and hospitality industry.

The rating system will certainly help India’s hospitality industry maintain consistency and reliability in its services. Having a government run organisation will help keep tabs on private hotels and maintaining cultural heritage. This would help both Indian and foreign tourists. In line with the cause of promoting tourism in India, private bodies including the Federation of Indian Chambers of Commerce and Industry (FICCI) have started engaging with government and local service industry. FICCI also conducted a small survey to gauge the current mood of the industry and the challenges faced so that it could take the sector to greater heights. The survey revealed that the highest growth potential was in the leisure segment with business and medical tourism coming in second. It also bought out the importance of hygiene and sanitation for choosing India as a destination. Other revelations included the need of budget hotels, knowledgeable guides and last mile road connectivity.
MINISTRY OF TOURISM
Designing national policies for development and promotion of tourism is done by the Ministry of Tourism, which consults and collaborates with other stakeholders in the sector. The Ministry has taken many initiatives in the past decade, most notably the ‘Incredible India’ campaign, which in the last decade resulted in an increase in the flow of foreign tourists into India. One must also applaud the ministry’s ‘Atithi Devo Bhavah’ campaign that targets local population to educate them regarding etiquette when dealing with foreign tourists. The campaign helped in creating awareness about the positive effects of tourism industry and thus, sensitised locals about preservation of the nation’s heritage, culture and hospitality.
WAY FORWARD
India has a huge, scarcely tapped tourism potential that is reliant on concurrently addressing multiple challenges thrown up by facility constraint and bridging the implementation gap of sector policies. This is no meagre task at a time of an economic slowdown and increased competitiveness in the world and in particular the Asia-Pacific region. In order to promote India as a tourism hotspot, both the Union and State Governments need to continue innovative marketing campaigns and improve tourist services to remain attractive tourist destinations. Another major factor is word of mouth promotion. Foreign tourists have often complained about the services provided and this has created a negative image for India. These complaints range from lack of quality hotels at remote destinations to lack of clean toilets at public places. Tourism in India has yet to reach its complete potential. With untapped virgin sites and destinations still waiting, India has the potential to be one of world’s best year-round destinations. Hotel room shortage in India is estimated at about 1,80,000 rooms. All we need now is a true and concentrated effort by government and industry... n

Award for The Lalit Suri Hospitality Group

he Lalit Suri Hospitality Group has been awarded with the National Award for Excellence in Hospitality Education 2011-12 on April 5, 2013. The group was awarded in the category of Hotel Undertaking Skill Development in the Hospitality Sector. The award was presented by Tourism Minister K. Chiranjeevi to Jyotsna Suri, Chairperson and Managing Director, The Lalit Suri Hospitality Group, at a ceremony at DRDO Bhawan, New Delhi. The Lalit Suri Hospitality Group has a project called Disha, implemented under the Corporate Social Responsibility (CSR) policy of the group. The project assists school students and local youth to achieve a quality education. At present, there are 3500 students who have completed courses from Disha centre and over 75 per cent of these have been recruited across India.

ingapore based Banyan Tree Holdings, which manages and develops premium resorts, hotels and spas, is planning to open 20 properties in India in next six years. Angsana Hotels and Resorts is the sister brand of Banyan Tree, and was launched in 2000. It has more than ten resorts and over 40 spas globally. The company is also looking forward to develop big projects like resorts, spas, hotels and golf course together similar to its Banyan Tree Lang Co in Vietnam, while it is actively considering to develop a mid-market brand. unich can never be separated from partying or celebrating festivals without beer drinking. Munich is all set to celebrate its 49th Frühlingsfest (spring festival from 16 April to 2 May). The Munich Spring Festival is also called the 'Kleine Wiesen'
(Little Oktoberfest) or the 'Kleine Schwester des Oktoberfestes' (Oktoberfest's Little Sister). The festival is celebrated under a big beer tent called the Festhalle Bayernland with the seating arrangement of about 2000 people. Munich's favourite Augustiner beer is splashed out from traditional wooden kegs.
The festival starts with a big Parade and Böllerschützen, which shows aging artillery enthusiasts shoot mini hand-cannons in air. The first Saturday of the Munich Spring Festival will be one of Munich's greatest flea-markets — around 100 stands peddling everything from boomerangs to Beethoven. Some other special events that pop up sporadically at the fest included a vintage car exhibition and a couple of days where visitors can pay with (now extinct) Deutschmarks.

The focus was also on interacting with the person behind the restaurant's menu — the head Chef — and letting him or her showcase the best each restaurant has to offer. The real achievement of Zerzura is in being able to walk the fine line between kibbeh and hummus that no Middle Eastern restaurant can afford to miss, and never seen before items that are common in that region. You can begin your tryst with taste by Chicken Shawarma, Chicken Mahi Kebab Sumac, Zatar that are best recommended by the chef at Zezura. Extremely nourishing and appetising, these starters only pave the way asking for more! If you are a pizza lover, you can try the thin crust based Pizza Casablanca Cous Cous with roasted summer vegetables. Among the hot mezze, sheefas are the most irresistible. Not unlike a cocktail pizza, albeit with a bread base, even the cubes of lamb atop the pie are soft and succulent; packed with flavour. The kebab section shows off the talent in the kitchen, displaying the Iranian jujeh kebab, is a masterpiece of softness and succulence: chicken has obviously been marinated in curd and the result is outstanding. The gentle, subtle flavour of the minced lamb chelo kebab (`585) is exactly the same as it is in Iran. But it was the kebab tabei (`585) that was the most unusual, served as it was in a skillet. Tomato chunks and garlic pods gave it another dimension of taste altogether. Hummus with meat is common enough in the Middle East which is served with cold hummus and pita bread. Muhammara, a flavoured dip is made of red bell peppers and walnuts. Sweet nothings are really something’s to end your extraordinary meal. The Tagine Zerzura Dessert Sampler is a platter with the best desserts reminiscent of the Arabic land. Take home memories of the fabled land and come back to devour the delicacies of the mystery called Zerzura!

festival Turkey is well known for its tourist attractions, but what Delhi wasn’t aware of was Turkey’s culinary offerings. In line with that, Turkish Embassy hosted a food festival to woo Delhiites.

urkey has successfully ticked the taste buds of the capital. A week-long festival of Turkish delights were spread at the Café, Hyaat Regency from March 21-26, 2013. In association with Turkish Airlines, the Turkish Embassy hosted the food festival that was inaugurated by Dr. Burak Akcapar, Ambassador of Turkey. Gracing the launch of the food festival, he addressed the guests with few words about Turkish cuisine and culture and most importantly, stressed on the Indo-Turkish relations. He said, “We already have a very good restaurant in Delhi, but people are curious to know more about Turkish life, cuisine and culture and therefore we thought of bringing the best before Tx hospitality
you.” He further added, “There is deep interest in Turkey and its culture and culinary acumen. Four chefs have been flown down from Turkey to pull some magic from their cooking hats.” The Ambassador felt that the love for food is something which is common in both countries and wanted to give the authentic experience to Delhi. “There can be only one purpose of an event like this — promoting Turkish culture in India. And what better way to spread cheer than with via food?” The famous doner chicken kebabs also called shawarma or the Turkey-style fish was displayed well. “We have used chicken instead of beef in our dishes to honour Indian traditions and values” said Chef Koray Turk, vice president, Chefs and Tourism Association of Ankara. The Turkish-style mashed potato salad and sautéed button mushrooms were Vegetarians delights but the highlights of the lavish menu was the Turkish desserts including firin sutlac — an oven-baked Turkish rice pudding — and baklava. The appetisers in the festival were Eggplant salad (Patlican Salatasi), Tomato onion dip romun salad (Gavurdagi salastasi),Fried diced liver (Arnavut Cigeri), Chicken salad with walnut (Aerkez Tavugu), Lentil bull (Mercimek latté) and Soup Red lentil soup with rice and burgal (Ezogelin corba). Main delights of the food festival were Lamb shawarma, Kebab Chicken doner kebab, Farmer kebab (Ciftlik Kebap), Turkish style fish (Bogaz Usulu Balik) while the Desserts had varieties like Firin Sutlac, Kemal Pasa, Gullag Cevizli and Baklava Lokma. The festival was not just about pleasing the palates, but was a treat to the eyes with some scintillating performance by dancers showcasing the Turkish fervour. n

For nearly two decades, Shatranj Napoli ruled as ‘the undisputable’. Things changed with the turn of the decade. With the rise of the new generation, and the old patrons already gone, the restaurant soon was relegated to oblivion.

ine dining restaurant are aplenty in Mumbai. In fact, in recent times, ‘fine diners’ have been the norm in the city, with every second restaurant claiming to be one. So what’s so special about Shatranj Napoli to land it into our pages, you may wonder. To answer this, we need to rewind a bit. Shatranj Napoli is an icon of Bandra. Back in the early 80s when fine dining meant five star hotels only, Shatranj Napoli became a game changer, by being the first to introduce the same finery in a standalone restaurant. As the first ‘fine dine’ place from Bandra to Borivali, Shatranj introduced the denizens of Mumbai not only the famous pasta in red sauce, but the extremely addictive dessert called ‘tiramisu’. Shatranj had everything: international menu, privacy and the perfect setting to impress your date, woo your wealthy fiancé, make the big proposal, or celebrate success. Little wonder that soon it became the favourite watering hole for celebs and nobility alike. It is said that superstar Rajesh Khanna would often come here late in the night to dine after a successful film premier. Tx hospitality

With the rise of the well-travelled, well-eaten new generation, and the old patrons already gone, the restaurant soon was relegated to oblivion. The novelty disappeared, the fame waned, and last year, after 23 long years of being The Spot, Shatranj Napoli, to the disappointment of many, shut shop without much of a hint of ever making a comeback. But Shatranj Napoli did come back, not just as Shatranj Napoli, but with two new additions. The opening night saw a bevy of celebrities descend to rekindle the affair with the place that once defined fine dining. But did it get it right? This was the very thought when we visited the Shatranj Napoli—now also famous for Polpo Café and Polpo Up—on a rather sunny Sunday afternoon for a lavish lunch. The new Shatranj still looks just as majestic as the days of yore—with a promise of finer things. Spotting Shatranj Napoli is easy. It is perhaps the only multi-restaurant in that vicinity with wooden panels masquerading as the

boundary wall. The main structure has a glass façade and is divided into three distinctively designed places — Polpo Café and Bar (casually Mediterranean), Polpo Up (a classic lounge) and Shatranj Napoli (an Italian finer diner). Now the new structure may not exactly make Shatranj Napoli inviting, but it works perfectly fine for those looking for a little sunlight and complete privacy. The first thing you notice about the place are the styles — while Polpo Up has a contemporary setting, Polpo Café and Bar has a typical coffee shop feel complete with chequered flooring, indigo-tiled walls, plants and chic seats. It is however Shatranj Napoli’s design of low arches, glass and pastel upholstery that comes across as something soothing yet romantic. A good thing is that both Shatranj and Polpo have quite a few dishes in common so our last minute deviation from Polpo to Shatranj was smooth. The third addition to the re-launch, Polpo Up has a stationed exclusive bar and is placed on the first level. This one is built for bigger groups and parties and will also serve the fine dine Italian and Continental menu. Shatranj Fine-Dine restaurant retains its original persona and serves Italian and Continental cuisine, regaining its classic dishes like Stake Tit - Bits, Napoli Pastas add Paprika Fish. The menu designed by Chef Dev Singh Negi has new additions of appetizers like Fonduta di Funghi (Fresh mushroom caps filled with fondue, served with spicy tomato sauce), Melanzane all’Aglio (Batter fried aubergine tossed with garlic and butter), Zucchini Fritte (Batter touch sliced zucchini, served with tartar sauce), Pollo della Chef and more. Given the familiar menu, ordering here is a cinch. What doesn’t work is the lack of surprise element and the rather small portion sizes. For a restaurant that once worked as an ‘introduction’ to Italian fare, the new Shatranj Napoli comes across as a tepid affair, with a few sparkling
moments like the cinnamon flavoured Octopus Bite, a sangria made of table wine and perfect for lunch or dinner. Like the Tres Leche, that could brighten even the dullest meal with its three layer flavour - not too sweet, not too dense, just, perfect. An interesting find was the Gamberetti Foscana, a full bodied Tuscan flavour soup with prawns. Though a little bland for the Indian palate, it was the perfect appetizer. Another ‘shinning’ star was the pesto base pizza, a try worthy dish for those looking for something completely different from the tomato base dishes. These aside, finding something extra-ordinary in the menu was a tough task. The starters of Carpaccia di Manzo and Apollo Della Chef were strictly average. The Gnochhi Pomodoro Sauce was every cooked, but came slathered with sauce, and the Filetto de San Pietro was bone dry. Considering John Dory is such a flavourful fish, a grill, just like the Apollo Della Chef would have been preferred. This Bombay Duck kind of preparation did little to excite the palate, especially when the dish reached the table stark cold. The Filetto de Manzo, essentially the thigh meat of beef, didn’t make the grade either. The meat, in spite being well done, was chewy and tough to slice through. While the onion sauce was a saving grace, it was the desserts that abated the meal from being a total disaster. The fact that the new Shatranj Napoli doesn’t have anything extraordinary to offer is clearly disheartening. As a restaurant, it does have the trappings of a fine dine place, and with a few tweaks in service, it would reach the spot of being one among the best in town. But to be an icon again, Shatranj Napoli needs more than just shine and sheen - its needs a better kitchen and a fantastic food spell. What I have felt after reading the book is that it has an important message to people who believe in love. How Minu has this concern is simply unimaginable. If a person does not have pain or fear, it is useless. Minu handed me the book to find flaws, but the book is flawless. I wanted people to understand this feeling. For me, Shabana is the correct person and when Ritu Beri designed the book, it gave a designer feel.” “Tishnagi is the desire which keeps us alive — a desire to hold on to things that we have and at the same time, wanting to have the things we do not possess. The book is my personal journey as an ardent follower of Begum Akhtar and since I penned my first verse. It is an honest effort to bring alive the dying spirit of Urdu poetry in India.” expressed Bakshi at the launch event. Minu says, “I have been attached to Shaiyree since childhood. Each night, I woke up to write on paper. When Blackberry arrived, I started writing down in BBM. My friend Ritu Beri in-
spired me to get it published and after Muzzafar (Ali) encouraged me, I begun writing. Releasing the book Shabana Azmi said, “Minu Bakshi’s poetry is felt through. Her verse is steeped in love and even more importantly in romance — a virtue fast disappearing in today’s world. There is a simplicity with which she surrenders to love and makes the reader yearn for more”. Farooq Sheikh who was simply floored by the poetry adds “There is the fragrance of honesty in Minuji’s poetry, rather than the odour of effort, which is why it engrosses you quickly and stays with you longer. Urdu is not limited to a community. I had the privilege of reading the book and it is re-readable. The book is put in beautiful language.” Ritu Beri also praised the multi-talented artist, saying “ This book had been a creative journey. I do not understand Urdu but the sense is truly majestic. It’s special; feels beautiful and so the book had to be beautiful.” Many connoisseurs have hailed Minu as a fresh voice in classical Urdu Poetry, and this book — her first — bears testament to the veracity of their praise. Anjaly debunks all common myths associated with travelling. She continues travelling and still has her dream of conquering Mt Everest. That is the strength of a backpackers resolve, after all travelling alone can also be fun at times.
hile backpacking the globe is an idea close to the heart of Europeans who love adventure, Indian travellers have always seemed to shy away from the idea of holidaying alone or with people they’ve never met. Rarely would you see an Indian abroad without any set itinerary. Jaante ho duniya kaisi hai? (Do you know what the world is like) is what an Indian mother would ask if the topic of backpacking across the globe was ever bought up at home. Society will dissuade anyone who has this ‘preposterous’ idea of being a lone traveller. And here I speak of just boys. Let’s not even enquire into what would happen if a girl was to tell her friends, colleagues and family of any backpacking plans. Amidst all the above, Anjaly Thomas’ inspiring tales of travel come as a breath of fresh air. Her book — Almost Intrepid* — presents a chronological account of her travels. Almost Intrepid presents to you the story of a lone woman journeying across the world, sailing the seas, camping in jungles and climbing mountains, be it Egypt, Cambodia or Tanzania. A lawyer by qualification and a journalist by profession, Anjaly Thomas ultimately gave in to the travel bug and set out to chart a voyage of her own, travelling to Dubai for her first international trip. For Anjaly, it was Dubai that was the starting point of a romance with multicultural experiences stretching beyond imagination. And it was her trip to Thailand, that taught her of the dark under-belly of a backpackers world. But I won’t ruin that for you, get a chance to read those tales. Her experience at Indonesia’s Komodo National Park can be best visualised for her writing, “The sight of a female dragon guarding her eggs was mesmerising. It made me ignore the Ranger’s warning and pushed me closer to the beast for a perfect close-up. There was no way to establish whether the dragon mama-tobe was camera friendly or not till I was within biting distance from her.” Anjaly’s tales takes you on a jarring traverse Tx hospitality
through the mind of a woman with a dream, a backpack, and whose only reason to travel was to beat the monotony. But, what began as a foray into the world of free-spirited travelling, turned into a passion. Be it mountaineering in Tanzania, some disastrous rides in Cambodia to going jungle trekking in Papua New Guinea and maybe just a few episodes of shoe-flinging in the bazaars of Egypt to nearly tying-the-knot at Kilimanjaro — while you think it — Anjaly has lived it. Anjaly has befriended all kinds of strangers across the world. She learnt the art of finding cheapest accommodation and wined and dined with unknown men. She experimented with drugs of all kinds, tasted foods of every cuisine and experienced sun, sand and eroticism at Pattaya. As she writes, “I became fully aware that Pattaya, whether you experience it by day or night, culminated in one Big Happy Ending.” Anjaly is not an expert on traditions, cultures or history of the places she travels to. She doesn’t believe in the one ‘best’ thing about any destination because as she sees it, every little experience makes a journey special. Her book carries tales both exciting and harrowing. A backpacker can be faced with any challenge, as is evident with her African experience, “With so many warm feelings towards Africa, I really hate to bring up the incident of the nasty thug who stuck the business end of a homemade gun into my back as I bargained for a bead necklace in Arusha, no less. No one likes to be poked in the back and not for the fifty dollars left in my wallet, so without thinking, I spun around and pushed him away, screaming bloody murder. Taken by surprise, the thief had run away. So what if I don’t measure up to the average African woman in size, I am an expert in kicking and screaming my way out of trouble, especially when I am taken by surprise.” But no incident is enough to get the travellers spirit out of Thomas. In her book, Anjaly debunks all common myths associated with travelling. She continues travelling and still has her dream of conquering Mt Everest. That is the strength of a backpackers resolve, after all travelling alone can also be fun at times. She ends on a beautiful note, “I return home with a transformed view of the world. It is correctly said that you are not the same person you were once you have set foot on the road, for every trip enriches you in ways that can never be recreated or reproduced.” So — if there is even the slightest hint of a adventure freak in you — when you do get a chance pick up a copy of Almost Intrepid and disappear into the mythical world of the life of a lone backpacker. n
