Taking The Perfect Family Holiday Portrait If your family’s seasonal traditions include taking a holiday portrait, you probably have a stack of photos that all pretty much look the same. Rather than adding another stilted family photo to the pile this year, consider breaking out of the mold with a candid portrait instead. Think for a moment about one of your favorite photos. Is it the one where everyone is posed, sitting properly with a perfect smile, all eyes on the camera? Or is it the one where you caught an unexpected laugh? Candid photography is how you can really capture the personality and spirit of your subjects, say the experts. George Lange, author of the new book The Unforgettable Photograph: 228 Ideas, Tips, and Secrets for Taking the Best Pictures of Your Life, says the secret to great photography is shooting what a moment feels like, rather than what it looks like. He is offering all family photographers — whether they are using a point-and-shoot, a top-end manual camera, or smartphone — tips for capturing their loved ones in special and unique ways. *Be In The Moment: Fight the nostalgic impulse to take a picture designed to memorialize the moment for future generations. Instead, be in the moment, shoot in the moment. *Encourage inspiration by gathering your family in a place where everyday moments occur, such as the backyard or porch. *Ditch The Zoom: Move your feet, bend

your knees, get your pants dirty. Get low. Climb above. Get down to the eye-level of the subject. Don’t zoom the lens unless it’s completely necessary; push your camera right into things. *See The Light: Light is the photographer’s palette and toolbox, a kind of visual thesaurus that offers a thousand ways to portray the same scene or subject. Learn to play with it. *Feel The Rhythm. There’s a natural rhythm to life. Outside the studio, every scene has its own rhythm, every place its beat. Listen for that. If you’re in sync and just a little bit lucky, the shutter will open at just the right beat. *Keep Shooting. “Often I see people spending more time examining the shots they’ve just taken on their camera screen than taking more pictures. This is not productive,” says Mr Lange. “You can’t predict when you’ll get a good shot in a sequence, and you certainly can’t see it on a tiny screen. Just keep shooting. No harm asking most subjects for a do-over — and another. For kids it’s a game.” *Use Objects Out Of Context: Props often make portrait-taking easier by giving subjects something to relate to and play with, distracting them from the camera. Holiday Meals: When To Save, Where To Splurge BY MICHELE KAYAL ASSOCIATED PRESS Holiday meals are generally a sanctioned indulgence, but that doesn’t mean the meals have to break the bank. Strategic splurging can keep your budget — and your time — under control. “The elements of holiday meals in general are relatively inexpensive,’’ says Melissa D’Arabian, cookbook author and host of the FoodNetwork.com web series The Picky Eaters Project. Items like potatoes, bread for stuffing, and even the turkey are pennies per pound. “But even inexpensive things can become expensive if you’re making it for a lot of people and if you don’t shop well,” she said. Knowing which items to go big on depends on your menu, your skills,, and your family and friends. “The trick to this is know your audience,’’ says Rick Rodgers, author of numerous Thanksgiving cookbooks, including Thanksgiving 101. “If you have foodie friends who really enjoy discussing a meal, then maybe you do want the $100 organic turkey. It’s the same thing with the wine. If people are going to notice that you have a $50 pinot noir, go for it. But if they are average Joes, then cook for them, not for you.’’ Here’s a little more guidance from the experts. Turkey. Splurge on preparation, save on the bird. Many people have ethical and environmental reasons for buying a heritage, free range, or other high-end bird. But if your only consideration is taste, many experts say even the frozen supermarket bird will suffice if you

brine it and brown it. “The ecologist in me says buy a heritage breed turkey,” says Sarah Copeland, food director for Real Simple magazine. “But if you treat your turkey right, even a Butterball can be delicious.’’ Stuffing. Splurge on the produce, save on the bread. Stuffing was meant to be cheap. Its job is simply to soak up all the lovely juices from your bird. An ordinary loaf of white bread or baguette will do this just fine — Mr Rodgers even likes the prepackaged bread cubes — but load up on fresh herbs, crisp celery, and flavorful extras like excellent mushrooms. “If you can get higher-end mushrooms, that’s going to elevate your stuffing into something really special,’’ says Ms D’Arabian. A bit of minced shallot will add sweetness and depth. “Having high-end stuffing versus runof-the-mill is worth a few extra bucks. In a lot of people’s hearts, the stuffing is the star of the show, so that’s a good place to splurge,’’ she said. Mashed Potatoes. Splurge on the cream, save on the spuds. Starchy russets are your best bet for everyone’s favorite side because they soak up whatever flavors you throw at them. The 10-pound bag at Costco will do the job just as well as farmers market potatoes at four times the price. But using heavy cream instead of milk will make those potatoes silky and rich. “There’s nothing like heavy cream in mashed potatoes, and it’s such an indulgence,’’ Ms D’Arabian says. Leftover cream can be whipped for dessert. Another splurge? A little fleur de sel or

other crunchy finishing salt for the top. Sweet Potatoes. Splurge on fresh potatoes, save on the marshmallows. When it comes to sweet potatoes, skip the can. Fresh sweet potatoes are inexpensive, come in beautiful, mealenhancing colors like orange, yellow, and purple, and require little effort to cook. They can be roasted simply in the skins and topped with butter and herbs, or they can be candied, scalloped, or turned into a soufflé. Where to save? “Save money on the marshmallows,’’ says Mary Risley, director of Tante Marie’s Cooking School in San Francisco “They’re not food.’’ Green Bean Casserole. Just don’t. It’s a recipe that started on the back of a can, and many food folks say that’s where it should stay. “I get that it takes a green bean casserole to scratch the green bean casserole itch,’’ Ms D’Arabian says. “Any attempt to elevate the green bean casserole does not scratch the itch. Do not elevate. Go with your classic recipe.’’

If it’s not an itch your family has, upscale your green vegetable by sautéing fresh, shaved Brussels sprouts in excellent bacon. Pie. Splurge on the crust (and the cream), save on the filling. When it comes to pie crust, go allbutter or go home. And don’t even bother with premade crust or dough. “There are very few premade crusts on the market that taste and feel as good as a real butter crust,’’ says Ms Copeland. The filling is a different story. Why bother roasting and breaking down a fresh pumpkin when canned pumpkin consistently delivers great texture and flavor? “Canned pumpkin is a wonderful invention,’’ she says. As with the crust, premade toppings don’t even come close to the real thing — which requires almost no effort to make. “It’s amazing how a simple thing like homemade whipped cream as opposed to a defrosted whipped topping can elevate a dessert,’’ Mr Rodgers says.

Macy’s Breaks With Tradition With Artificial Tree ATLANTA (AP) — Macy’s is opting to use an artificial Christmas tree for its Lenox Square Mall store in Atlanta this holiday season. WXIA-TV reports that this year marks the first time it will use an artificial tree instead of a real one for its annual “great tree.’’ Macy’s said in a statement on November 5 that it would begin using an artificial tree to be consistent with its “commit-

ment to sustainable business practices.’’ The new tree stands about 56 feet tall and will be decorated by 45,000 white and multicolor sparkling LED twinkle lights. In the past, the store selected its trees from somewhere in Georgia. In 2011, a 60-foot tree snapped and had to be replaced with another one. The store said drought conditions that year made it difficult to find a healthy tree.

Recycled Christmas Trees Become Mulch, Dunes, Habitats BY BETH J. HARPAZ ASSOCIATED PRESS NEW YORK — It’s one of America’s great recycling success stories: Every year, hundreds of thousands of discarded Christmas trees are collected and reused. Many are picked up curbside by local garbage collection services and turned into mulch. But there are other second acts for Christmas trees, too: they are placed on beaches to shore up dunes and sunk in lakes as fish habitats. They’ve even been milled into lumber for use in building homes. How many of the 25 million to 30 million fresh Christmas trees sold each year are recycled is difficult to measure because most recycling programs “are implemented on such a local level,’’ said National Christmas Tree Association spokesman Rick Dungey. The good news, though, is that tree recycling efforts are now “ubiquitous’’ and recycling your tree is “easier than ever,” says Mr Dungey. This will be the 27th year for Christmas tree recycling in San Francisco, where nearly 600 tons of trees are fed into a giant wood-chipper outside City Hall each year and turned to mulch. New York City’s Department of Sanitation collects about 150,000 trees each year and mulches them in a joint program with the Parks Department. The mulch is used in parks, playing fields, and community gardens. Residents lucky enough to have their own urban backyards can take home a bag at Mulchfest events held around the city. New York’s Rockefeller Center is famous for its towering Christmas tree, and for the seventh year in a row, this season’s tree will be donated to Habitat for Humanity. The tradition began when the 2007 Rockefeller Center tree went to build a home in Pascagoula, Miss., for a survivor of Hurricane Katrina. Lumber from the milled Rock Center tree is marked so that the families know its origin. In some years, families that have benefited from the construction have attended the tree-lighting event in Manhattan. In Jefferson Parish, a suburb of New Orleans, Christmas trees help prevent marshland erosion. The trees are placed in

wooden cribs, in shallow water parallel to the shore, where they absorb the impact of waves. “It protects the shoreline,” explained Jason Smith, spokesman for the Jefferson Parish Department of Environmental Affairs. “The area behind it is calm, where vegetation can grow.’’ The trees decompose and must be replaced yearly. The program uses between 10,000 and 30,000 trees a year, and has been in existence since the winter of 199091. Shawnee Mission Park Lake in Shawnee, Kan., is also a final resting place for recycled Christmas trees. About 100 to 150 trees are sunk each year with concrete blocks to provide fish habitat. Many beaches also use recycled Christmas trees to protect against erosion. Strategically placed, the trees catch sand and are eventually covered by it, becoming part of the dune system. A number of beaches at the New Jersey shore were built up using Christmas trees after last year’s Superstorm Sandy. Beaches at the Rockaways, in New York City, which were also devastated by Sandy, benefited from a Christmas tree project as well. The Rockaways effort was sponsored by a California wine company, Barefoot Wine & Bubbly, an E. & J. Gallo Winery brand. Barefoot Wine has been working with the Surfrider Foundation, which promotes ocean protection, on beach cleanups and restorations for seven years. But the Rockaways program was Barefoot’s first using recycled trees. Those who prefer artificial Christmas trees usually don’t throw them out after one year. But when the time comes, there’s even a program to recycle them. Polygroup, one of Walmart’s largest suppliers of artificial Christmas trees, sends them — including lights and electric cords — to a recycling center in China where they are shredded and broken down for reuse in other products. The bad news: Consumers must pack and ship the trees back to Polygroup themselves. The good news: You can send in any brand of tree, and you need only ship to Polygroup’s Indiana offices, not to China.

Space-Making Ideas Create Room For Holiday Entertaining Every holiday party is as individual as the hosts and interesting as the guests. Yet whether planning a sophisticated dinner party or an afternoon buffet, all parties do have one thing in common: the need for entertaining space. What did you do last year to make room for your holiday party? Move some furniture into the garage, pile coats in the spare bedroom, and use the coffee table for dessert service? This may be your year to find a better way to maximize your entertaining space. To ensure holiday guests don’t spend the party dodging furniture or looking for a place to sit, several days before the festivities, start planning how to open up space. Start with the entryway. Guests should get a sense of welcome and festive atmosphere from the moment they arrive. Thoroughly sweep the front walk, doorstep, and the siding around the door. Make sure any outdoor decorations are out of the way, leaving a clear path into the house. If the foyer is big enough, consider adding a standing coat rack so that guests don’t have to hunt for their coats when it is time to go home. If the entryway is snug, don’t sacrifice space to add holiday decorations. Stick with decor that can go on the walls, such as garlands, wreaths, or lights. Living and family rooms are often main entertaining areas for holiday parties. Because so much of daily life goes on in these rooms, it is not uncommon for clutter to accumulate. In preparation for a party, remove clutter and unneeded furniture. If the sofa and chairs usually sit away from the wall, push them back to make more space in the center of the room. Once there is ample open space, use a combination of existing seating and some added chairs to create multiple, smaller seating groups. Getting electronic components out of the way can also help create space.

Holiday party prep is a perfect inspiration to finally get a flat screen TV up off that big, clunky stand and onto the wall. Wall-mounting a TV not only opens up floor space, it helps ensure everyone can see the screen if it will be used to show holiday films, and enhances safety by reducing the chance someone will bump into the TV and tip it over. Sturdy wall mounts make it easy to hang a flat screen on the wall. Fullmotion mounts can be assembled without tools and offer side-to-side sliding to perfectly position the TV. Some mounts also come with a tool that helps locate wall studs and check that the TV is level. Kitchens are also a popular area for entertaining. Remember, people will congregate wherever there is food, so it is important to maximize kitchen space — and to distribute food stations throughout the rooms where guests will be. Remove kitchen clutter, such as small appliances like a toaster or standing mixer, which probably won’t be needed during the party, from countertops to make room for food displays. Finally, don’t overlook the value of decorative touches that can make a room feel larger. If entertaining during the day, be sure to open all curtains and blinds to admit natural light that will make the room feel brighter and bigger. For evenings, adding a few strategically placed mirrors to walls can help make a room appear larger — and they give a delightful effect when they reflect twinkling holiday lights. While candles are a holiday favorite, if they take up valuable entertaining space on table tops, forego them for the party. For that matter, feel free to skip the centerpiece if it takes up too much room. More Americans Plan And Budget Around The Holidays Planning and budgeting are important all year long, but focusing on one’s finances becomes even more of a priority around the holidays. For a majority of Americans, holiday preparation — both financial and personal — is vital, according to the 2013 Measuring Optimism, Outlook and Direction (MOOD) of America study, conducted by Lincoln Financial Group. In fact, almost nine out of ten respondents say they always budget for holiday presents for loved ones each year. Nearly as many — 85 percent — say they are willing to go above and beyond planning to travel to see family for the holidays or to host a holiday get-together at home. But does that behavior last all year? “Our data shows that optimism, a ‘take charge’ attitude, and financial preparation are essential drivers that help Americans achieve meaningful goals during the holidays,” says Kristen Phillips, head of marketing and strategy for insurance and retirement solutions at Lincoln Financial Group. “While there’s a spike in personal and financial empowerment this

time of year, these same behaviors can carry over all year long with the right attitude. That mindset doesn’t end when we pack up our holiday decorations.” Lincoln Financial’s poll also shows that, more broadly, being empowered and living life with a proactive attitude is driven by everyday behaviors. This is true regardless of someone’s race, age, or socioeconomic status. Here are some specific behaviors that help Americans achieve their financial goals around the holidays that can be put into practice all year: Plan. It’s hard to save without having clear objectives in mind. Prepping for the holidays is a great example of identifying your goals. Now do it for the rest of the year. Perhaps it’s retirement savings, a down payment on a house ,or college tuition for your kids. Be positive. Optimism goes hand in hand with financial preparedness and a “take charge” attitude. Focus on things that make you happy — such as spending time with family and friends — after the

holidays, too. Budget. If you can make a budget and stay within it for holiday gifts, you’ll also be able to do it from month to month. Budgeting can keep you on track to meet short- and long-term financial goals. Invest “extras.” It’s tempting to spend holiday bonuses and other salary increases on splurge items, but putting those extra dollars toward savings goals will serve you better in the long run. Pay off credit cards. To avoid mounting debt after year-end shopping, pay your credit card bills in full each month. If that is not possible, make sure to pay more than the minimum. Get help. Meet with a financial professional to discuss a strategy for paying down debt, investing, and meeting goals. Nutty Twists On Traditional Holiday Recipes With the holidays fast approaching, it’s time to enjoy some of the season’s tastiest foods. Small twists can turn a traditional dish into a holiday classic. The good news is it’s simple to add a fresh twist to holiday favorites with easy additions like nuts. Chef Alex Guarnaschelli, an Iron Chef and expert on Food Network, says nuts are one of the most versatile ingredients to use when reinventing dishes. Here are her top five tips for cooking with nuts: 1. Cranberry sauce with a tiny grate of orange zest and a handful of toasted almonds stirred in at the last minute puts a simple but tasty twist on a staple Thanksgiving side dish. 2. Want rich, thick gravy with no lumps? Thicken gravy with ground nuts instead of flour. Simply separate a little of the gravy in a bowl and blend with ground walnuts until smooth. Then just whisk it back in the pot with the remaining gravy. 3. Spruce up holiday side dishes by stirring in some toasted pecans or almonds. Top gratins with a thin layer or stir a handful into sautéed or braised vegetables. The nuts bring out the earthy flavors of vegetables, adding richness without making dishes too heavy. 4. Stir together melted semi-sweet chocolate and a handful of chopped pecans or wal-

This recipe blends flavors reminiscent of a cinnamon-infused pecan coffee cake topping and pairs them with sweet potatoes for a change from the more traditional marshmallow topped casserole. Plus, it’s perfect for busy cooks because the potatoes can be microwaved in just 15 minutes. Prep Time: 25 minutes Cook Time: 15 minutes Yield: 8 servings 4 large sweet potatoes, about 3 pounds 1/2 cup melted unsalted butter, divided 1 teaspoon orange zest, packed 3/4 teaspoon salt, divided 3/4 cup pecan halves, coarsely chopped 1/2 cup all-purpose flour 1/4 cup granulated sugar 1/4 cup dark brown sugar 1 teaspoon ground cinnamon 1/4 teaspoon kosher salt Preheat oven to 375 F. Pierce sweet potatoes all over with a fork. Microwave on high for 15 minutes or until completely cooked through. Let rest 5 minutes or until cool enough to handle. Meanwhile, combine the pecans, flour, sugars, cinnamon and 1/4 teaspoon salt for the topping. Stir to blend. Mix in 1/4 cup butter. The topping should form sandy clumps. Refrigerate. Split the potatoes in half lengthwise and scoop out some of the flesh inside. Arrange the sweet potato halves on a baking sheet. In a medium bowl, combine the sweet potato flesh with the remaining 1/4 cup butter, orange zest and 1/2 teaspoon salt. Spoon the filling back into each potato half and top with the topping on a baking tray. Place the tray in the center of the oven and bake until the topping browns, 15 to 20 minutes. —BrandPoint
