Introduction

Therearemanynamesforcottoncandyworldwide,didn'tyouknow? It's referred to as papa's beard in France, old lady's hair in Greece, and candyflossinEngland.

In 1897, Tennessee dentist James Morrison invented cotton candy, ironically co-inventing a cotton candy machine that used centrifugal forces to spin melted sugar in the same manner. Creating a fluffy, sweet cloud of fairyflossisthenameitisknowninFinlandandAustraliatoday. No matter where you live, does anyone not like eating cotton candy at the moviesorthefair?

This book offers 40 cotton candy recipes, from easy ones to advanced confectionsthatwillmakeyouwantmorecottoncandy. Enjoy National Cotton Candy Day on December 7 by spinning some cotton candy.

a) Preheatthemainovento350℉.

b) Lightly mist a 9" square baking pan with cooking spray and line it withparchment.

c) In a mixing bowl, using a spatula, combine the cake mix, along with theoil,eggs,and1packageofcottoncandyflavormix.

d) As soon as the ingredients are combined, fold in the white chocolate chips.

e) Transferthedoughtothebakingpan,spreadingitoutevenly.

f) Transfertotheovenandbakefor15minutes.

g) Allowthecaketocoolcompletelybeforefrosting.

h) To make the frosting: In a mixing bowl combine all the frosting ingredients and the second packer of cotton candy flavor mix and beatuntilfluffy,thiswilltakebetween2-3minutes.

i) As soon as the cake is cooled, evenly spread the frosting on top, and scatterwithlotsofrainbowsprinkles.

j) Refrigeratefor1-2hoursbeforeslicingintobars.

HowtoCook:

a) In a small bowl combine the cold water with the cotton candy syrup. Divide the mixture between the 6 popsicle molds and fill to threequartersfull.

b) Sprinkle 1 tablespoon of sugar sprinkles on top of the syrup in the molds.

c) Transferthemoldstothefreezerovernight.

d) Whenyouarereadytoserve,rununderhotwaterfor2-3seconds.

e) Sprinklewithmoresugarsprinklesandenjoy.

a) Pop the corn on the stove by adding the oil to a cold saucepan along with the kernels. Place the pot on the stovetop on medium heat. Swirl thepanbackandforth.Youshouldbegintohearthekernelspopping. Remove from the heat when the popping slows down. Remove the poppedcornintoabowl.

b) Using a double boiler, melt the white chocolate. As soon as it's melted,andwhilestillonthedoubleboiler,addthecottoncandy.

c) As soon as the cotton candy is mixed in, add it to the popcorn in the bowlandstirtocombine.

d) Laythepopcornonasheetofparchmentpapertosetanddry.

5.BunnyCottontailCake

HowtoCook:

a) Preheatthemainovento325℉.

b) Prepare the cake mix as per the package instructions. Pour the batter into just 2 cups of a lightly greased muffin tin and 1 lightly greased ovenproofmixingbowl.

c) Transfer the cupcake tin to the oven for 15-17 minutes and the cake for 50 minutes. Set the baked cupcakes to one side to cool for 10 minutes.Shavethetopofthecakeoffuntilflat.

d) Invert the bowl and place the upturned dome shaped cake on a platter.

e) Setthe2muffinstoonesidetocool.

f) Cutthesidesoffthemuffinstocreatebunnyfeet.

g) Ice the cake and then ice the undersides of the bunny feet with white icingtomakethemsticktothemaincake.

h) Using a piping bag or tube, pipe tiny pads onto the bunny feet using pinkicing.

i) Makeabunnytail,usingaballofcottoncandy.

c) Divide the mixture between 12 dessert shot glasses and transfer to therefrigeratortochillovernight.

d) Topwithassortedcolorfulcandybeforeserving!

7.Vanilla-LavenderGourmetCottonCandy

Equipment:

HowtoCook:

a) Lightly wet a pastry brush and brush down the sides of a heavybottomed, large saucepan to prevent the formation of stray sugar crystals.

b) Add the sugar, corn syrup, and water to the pan and set over medium heat.Keepstirringuntilthesugarhasdissolved.

c) Clip your candy thermometer onto the side of the pan. Cease stirring andheatthemixtureto320℉.

d) Pour the molten mixture into a microwave-safe bowl. Add the edible lavenderoil,vanilla,andfoodcoloring.Stirtocombine.

e) Line a large work surface with parchment. Cover the surrounding floorareawithparchmenttocatchanyrandombitsofflyingsugar!

f) Carefully dip your decapitated whisk into the sugar syrup, holding it over the pot for a couple of seconds to allow the mixture to drip back intothecontainer.

g) Holding the whisk approximately 12" away from the parchment, swing the forwards and backward so that fine strands of sugar syrup fallontotheparchment.Continueuntilyouhaveanestofspunsugar.

h) To store the cotton candy, all you need to do is transfer it to a resealablefreezerbag(s).Gentlyexpelanyexcessairfromaroundthe sidesofthecandy,takingcare,nottosquash.Sealthebag(s).

i) Place the sealed bags in an airtight, lidded container and seal them. This double barrier will prevent any air and moisture from getting to thecottoncandy.

j) Either transfer the bag(s) to the freezer for as long as you need or storeitinadarkplaceforupto8weeks.

k) As soon as you need the candy, remove it from your place of storage and use it Exposure to the elements will cause the candy to clump andshrink.

a) Take4candycanesandplacetheminaZiplocbag.Takearollingpin and crush canes until they are finely ground. Transfer the ground candycanetoasmallmixingbowl.

b) Prepareyourcottoncandymachine.

c) Carefully pour the ground candy canes into the floss head of the machine, evenly on each side, and switch the machine on. The strandswillbegintoform.

d) Take a paper cone and hold the cone at a vertical angle with the pointy end facing toward Rotate the cone as you circle it around the bowl.

e) LeaveoutforSanta!

HowtoCook:

a) In a medium saucepan, over medium heat, add the cream along with the milk, half the white sugar, sea salt, and vanilla essence, and allow tocometoaboil,intermittentlywhisking.

b) In the meantime, in a large mixing bowl combine the egg yolks with the remaining sugar and whisk to incorporate. Next, add the cotton candysyrupandmixtocombine.

c) As soon as the mixture comes to a boil, pour a third of it into the yolk mixture and whisk well. Next, pour in another third and stir, and finallythelastthirdandstir.

d) Pour all of the mixtures back into the pan and heat, while constantly stirring for 2-3 minutes, but do not allow the mixture to come to a Addadroportwoofpinkcoloring.

e) Transfer the mixture to a fresh mixing bowl and allow the mixture to come toroomtemperature before transferring ittothe refrigerator for between2-3hours.

f) As soon as the mixture is sufficiently chilled, make the ice cream in your ice cream churner according to the manufacturer’s directions. Addahandfulofcandyflosstotheicecreammakerduringitsfinal3 minutesofchurning.

g) Transfertheicecreamtoacontainerforstoringinthefreezer.

h) Whenyouarereadytoserve,topitwithadditionalcottoncandy.

10.ChocolateCottonCandyApples

HowtoCook:

a) Rinse the apples, pat dry, remove their stems and insert a popsicle stickintoeachone.

b) Using a medium-sized saucepan, over medium heat, melt the white chocolate chips. Gradually, stir in sufficient milk to encourage the chocolatetomelt.

c) Once the chocolate is completely melted, dip each apple into the mixture. Place each chocolate-dipped apple onto wax paper, with the

popsiclestickpointingupwards.

d) Using a metal fork, pull fine shreds of cotton candy and drape them overthechocolate.

e) Transfer the apples to the refrigerator for 12-15 minutes, or until the chocolateisset.

a) Preheatthemainovento375℉.

b) In a mixing bowl combine the cream cheese along with the cotton candysugar,flavoring,vanilla,andsprinkles.

c) Prepare the pastry according to package directions and roll out to a ¼”thick,trimmingtheedges.Cutthepastryintotworectangles,then foursquares.Cutthesquaresintotriangles.

d) Spread a generous tablespoon of the cotton candy-cream cheese mixtureontoeachtriangle.

e) Carefully roll each triangle by starting at the fat end and working towardsthesmallerend.

f) Placethecroissantsonabakingsheetlinedwithparchmentpaper.

g) Brush each croissant with white and sprinkle with 1 tablespoon of candysugarandanother1tablespoonofsprinkles.

h) Bake in the preheated oven for between 12-15 minutes, or until the croissantsarepuffedandgolden.
