Fried Twinkies
Freeze twinkies for 2 hours. Heat oil in fryer to 375 degrees. Mix batter: milk, vinegar, oil. In another bowl blend flour, baking powder and salt. Whisk wet ingredients into dry, mix 6 Twinkies 6 wooden popsicle sticks until smooth. Refrigerate until oil reaches temperature. Insert sticks into twinkies, leaving vegetable oil enough of a end to hold. Dust with flour and BATTER dip into batter, be sure batter covers the entire 1 cup milk twinkie. Place twinkie in hot oil with utensil 2 tbsp vinegar being sure the twinkie browns evenly (the 1 tbsp oil twinkie will float) about 3- 4 minutes. Remove 1 cup flour to paper towel- cool 5 minutes. Serve with a Berry Sauce Raspberries or mixed Berry pre1 tsp baking powder serves heated until warm. Use for dipping. 1/2 tsp salt

Make sure your carnival trip is enjoyable and safe! Carnivals, county fairs and street festivals can make for fun family outings. The nice weather just beckons people outdoors, and weekend after weekend resourceful carnival goers can probably find a fair nearby. But revelers need to make sure their experiences are as safe as they are fun. The Outdoor Amusement Business Association estimates 500 million guests visit carnivals, fairs and festivals each year. More than half of them participate in mobile amusement rides, among other recreational pursuits. Such pursuits can not only be fun, but they also can be dangerous, especially for young children. As a result, parents taking their kids along to enjoy this wholesome fun should consider the following precautions. * Be prepared. Research the fair or carnival and know what to expect when you arrive. How big is it? What are the types of attractions and what vendors will be included? What is the parking situation? Are strollers allowed? Knowing what to expect can make the occasion a little less stressful. If your child is old enough to understand, explain what the fair entails and how it can be crowded and noisy. * Dress for the weather. It is important to wear sturdy, comfortable footwear. Many carnivals are set up in fields or empty parking lots. There will be a lot of walking, and you want to be sure you are comfortable. Check the weather before going and dress for the temperature. Wear hats to shield your faces from the sun and lather on plenty of sunblock for protection. Avoid wearing any dangling clothes and jewelry. Tie back long hair to reduce your risk of accidents on rides. * Identify security guards or a security kiosk upon entering. Let children know where safety personnel are stationed. Establish a meet-up point that is very conspicuous should anyone get separated from the group. This central location will be checked first and should be easily identifiable for young children. Instruct the child to stay there until you find him or her. * Put your mobile phone number in your child’s pocket. Put your name or “Mom/Dad” on a sheet of paper with a contact number and put it in your son or daughter’s pocket. Should he or she get lost, the child can approach a security guard and give that person your phone number. * Take a current photo of the kids. Use your smartphone or camera to snap a picture of your children when you arrive at the event. This way you will have a method of helping others identify them should they get lost.
* Observe the rides in advance. Watch rides before you get in line to try them out. Figure out if it is appropriate for a child and acclimate anyone who is nervous. Carnival rides often have a “you must be this tall to ride” sign at their entrance gates. * Look for inspection stickers. Carnival rides often have to be inspected for safety. If the ride doesn’t have a current inspection sticker, don’t ride it. * Stay hydrated. Pack plenty of bottled water for the day. Fairs make a lot of money on concession sales, and buying beverages all day can get expensive. Dehydration is common when spending hours outdoors in warm weather. It can make a person dizzy and feeling sick to their stomach. If you feel thirsty, you already are dehydrated. * Eat light. If you will be riding a lot of rides, it’s better to eat light meals beforehand. Heavy, greasy foods in your stomach coupled with motion sickness can lead to trouble. Wait until after you have gotten your fill of the rides before indulging in funnel cake. * Stick together. It can be tempting to separate when you get to the carnival, as older children may not be interested in the same rides as their younger siblings. But separating increases the risk of someone getting lost. * Seek shelter in a storm. Thunderstorms can roll in unexpectedly. Remember, lightning will seek the easiest method to reaching the ground. Tall rides could be strike points. Get out of the weather and move indoors or to a car if possible. Carnivals and fairs are staples of the warm-weather season across the country. These enjoyable outings are even more fun when families play it safe.

Elephant Ears Ingredients 8 tablespoons melted butter 1 cup all-purpose flour 5 tablespoons white sugar 1/2 teaspoon salt 1/2 teaspoon baking powder 1/3 cup milk 1 teaspoon ground cinnamon Directions 1. Preheat the over to 425 degrees F (220 degrees C). Grease a cookie sheet. 2. Stir flour, 2 tablespoons sugar, baking powder and salt in a medium bowl. Stir in milk and the 1/4 cup melted butter until dough forms. 3. Turn dough onto a flat, floured surface. Knead dough 10 times. Roll dough with a rolling pin or pat with hands into a rectangle, 9x5 inches. Brush with remaining melted butter using a pastry brush; sprinkle with 3 tablespoons sugar and cinnamon. Roll dough up tightly, beginning at narrow end. Pinch edge of dough into roll to seal. Cut into 4 equal pieces with sharp knife. Place cuts sides up on cookie sheet; pat each into a 6-inch circle. 4. Bake until golden brown, 8 to 10 minutes. Immediately remove from cookie sheet with a spatula. Let cool on wire rack.

Funnel Cakes Recipe
2 large eggs 2 1/4 C. milk 1/2 t. pure lemon extract 4 C. flour 1 C. light brown sugar 1 T. baking powder 1/2 t. salt Oil for frying Cinnamon powdered sugar for dusting
Preheat the oil to 375 degrees F. In a mixing bowl, whisk the eggs, milk, and lemon. Whisk well. Sift the flour, sugar, baking powder, and salt together. Fold the flour mixture into the egg mixture. Stir until smooth. Hold your finger over the funnel opening, fill with 3/4 cup of the filling. Place your hand over the oil and carefully re move your finger. Scribble and crisscross the filling into the hot oil. Fry until golden on both sides. Remove from the oil and drain on paper towels. Dust with cinnamon sugar mix. Repeat the process until all of the batter is used.

12 frozen dinner rolls 1 lb ground beef 1 package taco seasoning mix 2 cups chopped lettuce 1 tomato, chopped 2 cups shredded cheese Place frozen rolls on a greased cookie sheet. Let rise until nearly double. In the meantime, brown the ground beef, drain, add taco mix and 1/4 cup water. Heat about 2” cooking oil in skillet or frying pan. Stretch the dough quite thin, fry until golden brown, turning once. Drain on paper towel. Top each taco with seasoned meat mixture, layer with lettuce, tomatoes and cheese. You may garnish with black olives, taco sauce and sour cream.

16, is a longtime lover of the Umatilla County Fair, first through volunteering with family and later through 4-H. The Junior 4-H Leader is in the Hermiston High School Color guard, Winter guard and Marching Band. In Sharp’s free time she enjoys the great outdoors, with a special fondness for sheep. She hopes to attend Eastern Oregon University and eventually run her own chiropractic office. 17, has plenty of ambassadorial expertise. She was a two-year junior ambassador for the City of Umatilla and one of last year’s Fair Ambassadors. Prindle said her experience at last year’s Fair was the best yet, and couldn’t wait to represent her county again. The Umatilla High School junior is involved in track, cheer, 4-H, basketball, cross country, volleyball, Key Club and student government — to name a few. She also takes online college classes to get ahead on her dream of going to medical school.
16, is set to finish her associate’s degree in accounting by the time she graduates Hermiston High School in 2014. She manages to take both high school classes and Blue Mountain Community College courses while maintaining a part-time job at Maurice’s in Hermiston. Outside of work and school, McDonough enjoys cheerleading, racing cars, reading and photography.
Cassie Poumele 17, gives back to her community, volunteering at the Agape House, Hermiston Talent Show and canned food drives. The Hermiston High School junior is a member of the tennis team and marching band as well as a youth leader at her church. Teachers describe Poumele as hardworking and professional.
Ashlyn Holwegner
16, was a 2012 Fair Ambassador. With a passion for dance and faith, the Hermiston High School junior hope to attend Whitworth University to become an athletic trainer at a private dance academy. She is heavily involved in her church and Color guard. Holwegner said her motto is “Always do your best, for what you plant now will harvest later.”
Janay Woodward 15, is the youngest of the group. Involved in both 4- H and FFA, the Hermiston High School sophomore said dogs are her favorite animal to train, although she does have a special fondness for pygmy goats. Woodward is her 4-H club president and takes part in her church youth group. She wants to open her own bakery after attending culinary school in Portland.”
The Umatilla County Fair Ambassadors serve as the public relations entity promoting benefits of living and working in Umatilla County while meeting the public and promoting the Umatilla County Fair and related activities. The program is for high school aged young adults who have displayed leadership qualities in their high school and communities. New Ambassadors are appointed in January of each year through an application process by the Umatilla County Fair Board of Directors. The year-long appointment brings together students from across Umatilla County who will have a passion for the fair and all its activities.
