and the final days of school h a v e come. I'm surprised how quickly the seasons have gone by --- Winter, Spring, and now Summer.

My daughter finished an amazing Disney Themed Dance Recital at Ave Maria Dance Company we are so proud of her little twirls and spins. Visit www.avemariadance.com My husband and I celebrated our 16th Wedding Anniversary and enjoyed a trip to Animal Kingdom with the kids. It was a beautiful trip and the fast pass was the best part so we could get right to the front of the line. I have several new apps that I'm enjoying on my iPhone and will be reviewing some Alaska apps as this is our favorite place to visit in the summer.

This month we have a new heart to heart resource for yummy jam at Jacquie's Jamming. They have homemade jam from local tropical fruits, all fresh ingredients, and no preservatives. I've also been enjoying some fun children's books and have a few friends that have published their books for teaching, inspiring, and motivating children! Summer Cooking Cheryl Flothe shares her thoughts on traditional foods and some special recipes! FATHER’S DAY RECIPES Mark your calendars for the 19th this month! It’s Father’s Day again---time to break out the barbeques, make Dad breakfast, or otherwise honor the fathers in your life. I have found no religious or other references to Father’s Day before the 20th century, except an informal observance by Elmesu, a young Babylonian who put his hopes for a long life and good health for his father on a clay tablet. Although Mother’s Day was officially recognized in the earlier part of the 20th century in the U.S., it took longer for the Father's Day idea to be widely accepted. Some people held celebrations honoring fathers at churches and communities by 1910, and the YMCA and YWCA continued to support the idea. Finally, after many years of unofficial Father’s Day events and at least one proposal by the U.S. Congress, in 1966 President Lyndon B. Johnson signed a bill creating a nationally recognized Father’s Day to be held the third Sunday in June every year. Today, Father’s Day is recognized on different dates all over the world. As Father’s Day is associated with family activities, here are a few simple recipe ideas Dad or his loved ones can whip up:

Creamy Blue Cheese ‘n Bacon Topping for Burgers Ingredients: 4 slices bacon, cooked and crumbled 1 cup finely chopped onion (or to taste) 1/2 cup mayonnaise 4 oz. crumbled blue cheese 2 T. finely chopped fresh parsley 1/8 t. ground black pepper Cooking oil Directions: Cook onions over medium heat in a small amount of cooking oil until golden brown (about 8 minutes). Combine mayonnaise with blue cheese, parsley and black pepper in a small bowl. Add onions and bacon. Top your favorite hamburgers with blue cheese ‘n bacon mixture and ENJOY!

Citrus Grilled Salmon Serves 4 Ingredients: 2 T. Mrs. Dash Lemon Pepper Blend 4 slices of orange 4, 4 oz. salmon fillets 2 T. white wine 4 slices of lemon Cooking spray Directions: Preheat oven to 375 degrees, F. Spray a 9x9x2 inch pan with cooking spray. Lay fish in pan. Coat each fillet with lemon pepper blend.Alternate slices of lemon and orange on top of fish. Sprinkle with wine. Place in oven for 5 minutes. Lower heat to 325 degrees F and continue to cook For 5 minutes. Rest fillets 3-4 minutes before serving.

Peanut Butter Oatmeal Rounds Makes about 4 dozen cookies. Ingredients: 3/4 c. butter, softened 1/2 c. peanut butter (smooth or creamy) 1 c. granulated sugar 1/2 c. packed brown sugar 1 t. baking powder 1/2 t. baking soda 2 large eggs 1 t. vanilla 1-1/4 c. flour 2 c. oatmeal 1 c. chopped peanuts or semisweet chocolate pieces Directions: In large bowl, beat butter and peanut butter with electric mixer on medium to high speed about 30 seconds or until combined. In separate bowl, combine granulated sugar, brown sugar, baking powder, and baking soda. Add to butter and peanut butter mixture until combined. Beat in eggs and vanilla until combined. Beat in as much flour as you can with the mixer, then stir in remaining flour. Stir in oatmeal and peanuts or chocolate pieces (or both). Drop dough by rounded teaspoons 2 inches apart onto ungreased cookie sheet. Bake at 375 degrees F. about 10 minutes or until edges are lightly browned. Transfer to wire rack and let cool. Store in airtight container.

Getting ready for summer trips!

To keep the kids happy in the car, my mother-in-law just gave me a bag of pencils, word find books, some etch n sketchs and a fun list of games to play. This should keep them occupied for a few hours while we travel the roads this summer. So now would be a great time to get organized for our family road trip and I loved reading Beth's tech tips to help me out! Most people can use a little help remembering things they need to do, and making ToDo-Lists is a great way to help. By using Apps like Seize the Day and Pocket ToDo you can make lists of things you need to do, as well as set simple reminders that can alert you in many ways including text or email. Remember the Milk is another great app that lets you create lists with alerts and more on either your smartphone or PC. With the GPS ToDo List you will be alerted when you are near places on your list in addition to the reminders you set. Astrid is another App worthy of checking out if you have an Android device, and Blackberry users may want to take a peek at Honey dew. Of course you can always use the calendars on your smartphones and email programs but most require a lot more information that just a simple reminder or creating a To-Do List. For those that like to print out their list's, check what’s available on Printable ToDo Lists and Ta Da Lists where you can create lists for everything including things to pack for your trip and thank you notes to write. pps for Alaska Travel! I just recently downloaded some great Alaskan apps to enjoy and learn some insider tips with news updates for the summer.

I found "The Alaska App," it's the official mobile guide to Alaska's Best Places. Whether you're visiting Alaska for the first time or live there, The Alaska App claims to be the ultimate interactive Alaskan discovery guide. This is a FREE app. I also use "ADN," which is the Anchorage Daily News and offers the latest Alaska news, photos, weather, sports, fishing reports and events. FREE "KWHL" is a fun app that offers the ability to listen to Live Alaska Rock for FREE.
