Barramundi Tacos with Pineapple Salsa

Directions Ingredients (serves 4)
• 600g Australian barramundi fillets
• 1 tbsp Cajun seasoning
• 1 tbsp olive oil
• 350g packet kale slaw mix
• 2 pickled jalapeño chillies
• 220g packet pre-chopped fresh pineapple
• 2 limes
• 8 mini flour tortillas
• Fresh coriander sprigs, to serve
1. Heat a large deep frying pan over medium-high heat.
2. While the pan heats up, remove the skin from the fish and cut it into 2-3cm pieces. Place in a bowl, add Cajun seasoning and oil, and toss to coat.
3. Cook half the fish in the pan, turning gently, for 2-3 minutes until just cooked through. Transfer to a bowl and repeat with the remaining fish.
4. Prepare the kale slaw according to packet directions. Slice the jalapeño and mix with pineapple in a small bowl. Squeeze the juice of half a lime over the mixture and toss to combine.
5. Warm the tortillas in the microwave. Assemble tacos by dividing slaw among tortillas, topping with fish and pineapple salsa, and garnishing with coriander. Serve with remaining lime halves.
