For the love of chocolate An interview with Kellymarie Otto of The Chocolate Stache

I

caught up with Kellymarie Otto at her booth at the Tin City Cider Sunday Market recently and we once again found ourselves talking about chocolate and how much we love good — and I mean good — chocolate. I was interviewing the Ottos in their kitchen where I was introduced to Raspberry Chipotle Chocolate as Kellymarie was busy working on a batch. Her husband, Nick Otto (the man behind the stache) is their business namesake. Nick, who is the cook of the duo, brings his experience on flavor profiles from more than a decade as a sous chef working at Villa Creek Restaurant, Vics Restaurant and now at Kitchenette in Templeton. Kellymarie started in the wine industry more than 14 years ago, doing everything from working in

tasting rooms to working in the lab. She also is a proficient bartender and that experience mixing flavors together helped her in making chocolate and the fun pairings the Chocolate Stache does with beer, wine and cider. Kellymarie loves a challenge when it comes to pairing. The Chocolate Stashe’s products — made with top-quality, local ingredients — can be paired with not only wine, but also cider, champagne and beer. Or the chocolates can be devoured on their own as well. “It doesn’t have to pair,” Nick said. “You can just eat it. Any of our flavors are great.” They are constantly testing their palate with bold combinations and even ones that are a twist on comfort foods, such as their latest rendition of a PB&J, made of a nut butter made in-house from mesquite almonds and continued on page 8

hen I first met Bricklyn and Tom, I knew they were going to have an amazing wedding day. They are two of the sweetest and most genuine people you will ever meet. Their hospitality on their wedding day made my husband and I feel like a part of the family. They opted for a first look with her dad and also a first look with each other before the ceremony. I bursted into tears when Bricklyn saw her dad that morning as they embraced and exchanged a few words. And then it was time for Bricklyn to see her groom. Leading up to that moment, Tom was so anxious and nervous to see his bride. And once they met back to back, squeezed each other’s hand, and turned around, he gave her a hug that meant so much more in that moment. This moment I will never forget and why I love it when my couples opt for seeing each other before the ceremony. Getting to spend a little more time together, just the two of them, was important on their wedding day. The day included more genuine expressions of love from their friends and family, from the ceremony to her dad’s toast. Now, Bricklyn waits patiently for her soldier to return home. T

he 2018 North County Wedding Expo is just a few short weeks away. The Expo, in its third year, highlights northern San Luis Obispo County as a destination wedding location and features wedding professionals and venues from the area. This year, in response to the devastating fires and floods that shook the Santa Rosa and Santa Barbara communities, several vendors are offering discounts on their services to help brides who lost venues or other wedding related necessities.

Central Coast Party Helpers, one of the main sponsors for the 2018 show, will offer 20 percent off their planning and staffing services. CCPH owner, Brigitte Faulkner, said she wanted to help brides from the two devastated areas, many of whom lost deposits on wedding related services due to the tragic weather related events. “A lot of brides from those areas are just devastated,” Faulkner said of the recent fires and floods. “Whoever lost their venue in a fire, I’m not going to put a limit on it, I know they’re out there, and I want to help.” Faulkner said the wedding industry is booming in San Luis Obispo County and that the Paso Robles area is one of the top

destinations in the area. After recent fire and flood devastation, she predicted the area would become even more inundated with brides. “They’re all just coming to the Central Coast, especially now that the north and south have been devastated,” Faulkner said. “People call me from New York, Canada, and all over the United States, for my help.” Faulkner began her party service business five years ago after being in the catering and event service in Los Angeles for several years. She moved up to San Luis Obispo County from Los Angeles to raise her daughter and was in Paso Robles before it became a wine tasting destination. She said she brought her business to Paso Robles after seeing the area rise in status as an end destination. “I started seeing the jaguars and the mercedes and the limos and I thought, ‘I think the town is ready for this’,” She said of her decision to open up shop. Faulkner said she prided her business on being able to fill in the gaps at weddings and events and be the bridge between wedding professionals to provide the best experience possible. “We setup, service, and cleanup so you can be the guest at your own party,” Faulkner said. “We’re the first ones there and last ones to leave, we’ll run the

whole event start to finish.” Faulkner recently celebrated her new office space at 503 13th Street in Paso Robles with a red carpet ribbon cutting ceremony. She said the new space would help with her growing business and she has already seen some walk-ins. “It’s wonderful having this space,” Faulkner said of the new office space. “When this opened up, we we’re so excited, we’ve already had three walk-ins since January!” Faulkner loves her business helping people manage their weddings and events and she said she would do this job even she didn’t have to. “I love what I do, if I played the lottery and I won, I’d still do this,” she said. The Groves on 41 Featured Venue

ocated in the rolling hills east of Templeton is the beautiful Groves on 41, a pristine country estate available for your special day and less than five miles away from Highway 101. Not only is the Groves on 41 a reasonably-priced event venue, it’s also a working 4,000-tree olive orchard. The olive trees are trellised and planted in the super high-density mode and with their delicate green-gray foliage they create an oasis
